        기계골발계육 ( 機械骨拔鷄肉 )을 이용한 Sausage 의 인산염 효과에 관한 연구

        This study was designed to utilize the waste by-products of chicken in food. The meat of neck parts of chicken were separated and prepared by means of Paoli deboning machine for this experiments. Mechanically deboned chicken meat were accordingly mixed in the course of sausage processing. The phosphate was added to this MDCM sausage according to the design of this experiment and its physical and chemical properties were examined, determined and compared. The results obtained were summarized as follows; 1. In chemical composition, the more MDCM in sausage, the more moisture, fats, ash and calcium were contented, but the less protein and carbohydrate in it. Ash and calcium were increased with addition of phosphate. The contents ranged from 62.78-64.36% moisture, 11.54-13.07% protein, 17.21-17.75% fat, 1.05-2.07% ash, 4,51-5.61% carbohydrate, and 10.07-327.66 ㎎% calcium. 2. pH ranged from 6.0-6.2 at 0 week. With addition of phosphate and MDCM, pH increased slightly and rose to the extent of 0.2-0.3 during cold storage. 3. Water holding capacity ranged from 81.39-92.74% and decreased with addition of MDCM. But it was somewhat compensated with addition of phosphate. 4. In texture, compression value and Warner-Bratzler shear force decreased with addition of MDCM, but somewhat increased with addition of phosphate. 5. In sensory test, the addition of MDCM effected adversely on panel test but those of phosphate was slightly well result. All experimental lots were determined as above medium except for T_(30) experimental lot. 6. Peroxide value and TBA number increased with addition of MDCM for storage period, but was reduced slightly with addition of phosphate. Peroxide value and TBA value ranged from 4.66-16.36 and 0.178-0.240 respectively, which means lipid oxidation was very slight. 7. In the content of VBN, there was not a correlation between addition of MDCM and phosphate, but a trend to increase with storage periods. VBN rangc,d from 7.25-11.23 ㎎% and there was no sign of denaturation. 8. In microbial quality, coliformbacteria was not detected and viable bacterial counts were slowly increased during cold storage but even the highest count, 4.8×10⁴ cells/g, was acceptable for the standard basis.

        우박저항성과 관련된 감자품종의 줄기 특성

        BACKGROUND: Recently, weather disasters such as hail and typhoon occur frequently. These threaten the stable cultivation of potatoes. It is very important to cultivate potatoes with stable under unexpected weather disasters. This study was performed to investigate the correlation between mophological characteristics of potato stem and its resistance to hail damage in different potato cultivars. METHODS AND RESULTS: Hail fall occurred for 8 minutes on May 31, 2012 in the field of Highland Agriculture Research Center located in Jinbu-myeon Gangwon-do. Potato crop grown in the field was affected by hail due to which the stems of potato were broken. The percentage of broken stem of potato was investigated as the level of damage by hail. To determine the difference in theratio of broken stem among the potato cultivars, physical characteristics of potato stem such as diameter and hardness were measured. To evaluate recovery phase after hail damage, ground coverage and yield were measured. The percentage of broken stem of cv. Goun and cv. Saebong were 30%, 26%, respectively, whereas it was 5% in the cv. Atlantic. Damage by hail was the lowest in cv. Atlantic. Diameter of the stem was 15 mm in cv. Atlantic, 13 mm in cv. Goun and 11 mm in cv. Saebong. The hardness of potato cultivars was measured which was 74 N in cv. Atlantic. 71 N in cv. Goun and 59 N in cv. Saebong. The ground coverage in cv. Atlantic was 79%, which was the highest followed by 73% in cv. Saebong and 56% in cv. Goun. The yield of cv. Atlantic was monitored at 90 days after planting which was 40 MT/ha and that of cv. Saebong was 36 MT/ha, whereas in cv. Goun, it was 30 MT/ha which was the lowest. CONCLUSION: The ratio of broken stem in cv. Atlantic was the lowest compared to cultivars. In the physical characteristics of stem, cv. Atlantic was the highest in value of diameter and hardness. Based on these results, it wasconsidered that cv. Atlantic was resistant to hail damage compared to other cultivars.

        한국산 맥각의 알칼로이드 성분 연구 ( 1 )

        Korean ergot sclerotia which were collected from Agropyron semicostatum Nees, Miscanthus sinensis Anders. var. purpurascens Rend., M. sacchariflorus Benth. et Hook., M. sinensis Anders., Eulalia speciosa O. Kuntz, Themeda triandra Forsk. var. japonica Makino, and Phalaris arundinacea L. were investigated for their alkaloid constituents. Quantitative determinations of alkaloids were carried out using a modified procedure of van Urk and Michelon-Kelleher methods. The results showed that the two ergots from Agropyron semicostatum and Phalaris arundinacea contained total alkaloids up to 0. 137 per cent. The alkaloids of these two ergots are mostly water-insoluble alkaloids. The ergot parasitizing Reed canary grass was found to contain both water-soluble and water-insoluble alkaloids. The TLC and PPC tests for the ergot alkaloids from Agropyron semicostatum and Phalaris arundinacea revealed that they contain at least two alkaloids respectively and that the ergot from Themeda triandra Forsk var. japonica has one. The lipid contents of the seven ergots ranged from 13 to 29 per cent.

        한국에서 자라는 화본과(Graminae) 식물인 Agropyron semicostatum Nees, Miscanthus sinensis Anders. var. purpurascens Rend., M. sacchariflorus Benth. et Hook., M. sinensis Anders., Eulalia speciosa O. Kuntz, Themeda triandra Forsk. var. japonica Makino, 및 Phalaris arundinacea L.의 7종에 기생하는 맥각을 채집하여 그 알칼로이드 성분을 분석하였다. 알칼로이드의 정량으로써 van Urk 법과 Michelon-Kelleher 법의 장점을 취하여 개량한 방법을 이용하여 시행하였던 바 Agropyron semicostatum과 Phalaris arundinacea의 각 맥각이 0.137%까지의 알칼로이드 총량을 함유하였다. 이 두가지 맥각의 알칼로이드의 종류는 주로 비수용성 알칼로이드였다. 후자의 식물에 기생한 맥각은 수용성 및 비수용성 알칼로이드를 모두 함유하고 있었다. 이 두가지 액각의 알칼로이드를 TLC 및 PPC 법으로 분석하여 본바 각각 적어도 2종의 알칼로이드를 함유하고 Themeda triandra Forsk. var. japonica에 기생한 맥각은 1종을 함유하고 있음을 알았다. 7종의 맥각의 지질 함량은 13~29% 였다.         한국의 발톱진균증 환자의 삶의 질에 관한 연구

        Background: Onychomycosis, especially toenail onychomycosis has become one of the common fungal infection and has historically been regarded as a cosmetic rather than medical problem by many patients, even by physicians. Recently, however, there are several reports that is a refractory disease which may cause a deleterious effect on patiets quality of life (QOL). Objective: The purpose of this study was to investigate the impact of toenail onychomycosis on QOL in Korea and to assess the chandes of QOL after treatment. Methods: Total 1004 patients with toenail onychomycosis which was confirmed by clinical findings and KOH preparation were were enrolled at 47 dermatologic centers in Korea, and interviewed with standardized QOL questionnaire before and after sytemic antifungal treatment. Responses to the questionnaire were scored by 5-point scale (1∼4) and averaged, and were analyzed for 5 dimensions of emotional impact, social impact, symptorn and functional impact, patients views concerning treatment, and relationship with doctor. Results: 1. Before and after treatment, the most serious impact was emotional dimension showing 1.90 and 1.30 in average score (AS), and social (AS: 1.14 and 0.83) and symptom and functional impact (AS: 1.05 and 0.92) was also affected. 2. In female rather than male, statistically more significant impact on patients QOL was observed in all dimensions. 3. After treatment, 3 of 5 dimensions were improved significantly - emotional dimension (AS : from 1.90 to 1.30), social dimension (AS: from 1.14 to 0.83), patients view concerning treatment (AS: from 1.34 to 1.02). 4. The drgree of patients satisfaction at the therapeutic effect was very high- 62.4% (immediately after treatment) and 65.8% (9 months affer initiation of treatment) of patients answered excellent or good. Conclusion: This study confirms that toenail onychomycosis has significant impact on the overall QOL of patients. Also the effect of antifungal therapy on patients QOL were watisfactory. Therefore, both doctor and patient should pay more attention to the treatment of onychomycosis. [Kor J Med Mycol 3(1): 115∼124]
