        2조 겉보리로 만든 몰트의 품질 특성 및 항산화 활성 효과

        본 연구는 국내에서 육성된 2조 겉보리의 품질 특성, 2조 겉보리를 이용해 만든 호품, 광맥 몰트의 품질 특성 및 항산화 활성을 보여주었고 외국산 몰트와 비교하였다. 호품보리와 광맥보리의 단백질 함량은 13.83%, 10.57%로 측정되었다. 호품, 광맥보리를 이용해 제맥 과정을 거쳐 몰트를 만들었을 때 호품 몰트와 광맥 몰트의 단백질 함량이 14.95%, 11.65%로 증가하는 경향을 보였으며, 호품 몰트의 단백질 함량이 실험대조군인 덴마크산 몰트(9.78%)와 독일산 몰트(11.8%)보다 높았다. 호품과 광맥 몰트의 콜박지수는 17.18%, 16.39%이고 덴마크산과 독일산 몰트는 19.53%, 16.19%로 측정되었으며 덴마크 몰트의 콜박지수가 가장 높았다. 효소역가는 호품 몰트 163.39 W.K, 광맥 몰트 157.79 W.K, 덴마크산 몰트 175.79 W.K, 독일산 몰트 154.92 W.K로 보여졌다. 4종의 몰트를 이용해 총 폴리페놀, 탄닌, 플라보노이드 함량을 측정하여 비교했으며, 덴마크산(228.13 ㎎ GAE/g) 몰트가 총 폴리페놀 함량이 높았고 탄닌 함량은 몰트 간의 유의적인 차이가 없었으며, 광맥(148.88 ㎎ CHE/g) 몰트가 플라보노이드 함량이 가장 높았다. 국내산 몰트과 외국산 몰트의 항산화 활성을 비교했을 때 DPPH 라디칼 소거능 활성은 1,000 ㎍/mL의 농도에서 호품(42.73%), 광맥(42.92%), 덴마크산(42.99%) 몰트의 유의적인 차이가 없지만, 호품이 500 ㎍/mL의 농도에서 34.93%로 다른 몰트보다 높은 활성을 나타내었다. ABTS 라디칼 소거능 활성은 호품(81.19%), 덴마크산(81.17%) 몰트가 1,000 ㎍/mL의 농도에서 높게 활성이 보였다. 환원력은 1,000 ㎍/mL의 농도에서 호품 몰트가 0.55로 측정이 되었고, 700 ㎍/mL의 농도에서도 호품 몰트가 0.46으로 다른 몰트보다 유의적인 차이를 보이며 가장 높게 나타났다. 본 연구 결과에 의하면 국내산 몰트의 총 폴리페놀 함량이 낮게 나타났고, 광맥 몰트의 플라보노이드는 높게 측정이 되었다. 또한, 국내산 몰트는 항산화 활성에서 높은 활성을 보여주었으며, 외국산 몰트와 비교했을 때 국내산 몰트가 항산화 활성이 우수하게 보인다. This study was carried out to investigate the quality characteristics and antioxidant activities of domestic and foreign malts. The protein content of Hopum and Gwangmaeg barley was 13.83% and 10.57%, respectively. Also, the protein content of the Hopum and Gwangmaeg malts showed a higher increase at 14.95% and 11.65%, respectively, compared to barley, Denmark malt (9.78%), and German malt (11.8%). The Kolbach index of the Hopum and the Gwangmaeg malts was 17.18% and 16.39%. Diastatic power of the Hopum malt was observed at 163.39 W.K and Gwangmaeg malt at 157.79 W.K, which was higher than the malts from Denmark and Germany. The Gwangma eg malt had a total flavonoid content of 148.88 ㎎ CHE/g which was higher than other malts. The DPPH radical scavenging activity of the Hopum malt showed high activity at 500 ㎍/mL concentration. The ABTS radical scavenging activity observed in the Hopum malt was higher (81.19%) compared to the Gwangmaeg malt (72.97%), and malt from Denmark (81.17%) at 1,000 ㎍/mL concentration. The extracts of the Hopum malt had the highest ABTS activity (81.19%) among the tested groups. The ABTS and DPPH scavenging ability and reducing power increased significantly with increasing malt concentration (P<0.05). These results suggest that domestic malts can be used effectively as functional foods with antioxidant activity or free radical scavenging activity.

        Clinicopathologic Study of Chromosomal Aberrations in Gastric Lymphomas of Korean Patients

        Background : The incidence and clinical correlation of MALT1 translocation and numerical aberrations in Korean gastric MALT lymphoma patients have been rarely reported. We studied the incidence and clinicopathologic relationship of these chromosomal aberrations in Korean gastric lymphomas. Methods : Seventy-six gastric lymphomas, which consisted of 40 low grade MALT lymphoma, 4 high grade MALT lymphoma and 32 diffuse large B-cell lymphoma (DLBCL) cases, were analyzed for the detection of t(11;18) API2-MALT1, t(14;18) IgH-MALT1 and aneuploidies of chromosomes 3 or 18 using fluorescence in situ hybridization. Results : The t(11;18) was demonstrated in 3 low grade MALT lymphomas (7.5%) and one DLBCL, which was associated with advanced stage, deeper invasion, and disease progression or relapse. The t(14;18) was demonstrated in none of these cases. Trisomy 3 and 18 were detected in 8 (11%) and 11 of 76 cases (12.5%) respectively, and found only in translocation-negative cases. Two of 4 high grade MALT lymphomas showed trisomy 18. All patients survived with successful second treatment after progression or relapse. Conclusions : The t(11;18) API2-MALT1 was not quite frequent in Korean low grade gastric MALT lymphomas and was associated with advanced clinical situations. Overall prognosis was good for long-term follow-up regardless of progression or relapse.         제균 치료에 반응하지 않은 유전자 전좌를 동반한 MALT 위림프종 1예

        About 90% of low-grade gastric mucosa-associated lymphoid tissue (MALT) lymphomas are strongly related to Helicobacter pylori infection. The eradication of the H. pylori by antibiotics leads to complete regression of the gastric MALT lymphoma in 80% of cases, and this is currently recommended as the first-line treatment for this tumor. However, no standard treatment for H. pylori-negative and H. pylori-eradication-resistant gastric MALT lymphomas has yet been devised. The association between H. pylori-negative MALT lymphoma and the t(11;18)(q21;q21) translocation, resulting in an API2-MALT1 chimera gene, was reported, and is now considered one of the possible causes of and a reliable predictive marker for unresponsiveness to H. pylori-eradication treatment in patients with low-grade gastric MALT lymphoma. We report a case of H. pylori-eradication-treatment-resistant low-grade gastric MALT lymphoma that was treated successfully with radiotherapy after recognizing the API2-MALT1 chimera gene.         맥주 보리 “호품” 선별체 크기별 파일럿 스케일 제맥 및 맥아 품질 특성

        Consumer demand for imported and craft beer is increasing. Almost all the malt used by craft beer companies is imported. This study sought to develop a malting technology to expand the use of domestic barley, the main raw material for beer, and to examine its influence on the quality of domestic malt. The Hopum cultivar of beer barley was purchased and used at the Jeollanam-do Seed Management Center. A pilot-scale malting facility built by the National Institute of Crop Science was used. One sack (40 kg) of barley was sieved through screening sieves, and the barley was classified according to size (3.1, 2.8, 2.5, 2.2, and 2.2 mm), with the size-related composition being 18.1, 48.9, 23.3, 6.4, and 1.0%, respectively. The malt yields were 89.0, 87.6, 86.6, 82.2, and 76.1%, respectively. The coleoptiles elongation decreased as the barley size decreased. The protein content of malt tended to be high at small particle sizes of 2.2 mm. The soluble solid content of wort prepared from malt revealed good values of 17.4-17.5o Bx, except for 15.3o Bx for particles <2.2 mm in size. According to barley size in the malting process, these findings should be valuable quality indicators of malt.

        Clinicopathologic Study of Chromosomal Aberrations in Ocular Adnexal Lymphomas of Korean Patients

        Purpose: The incidence and clinical correlation of MALT1 translocation and chromosomal numerical aberrations in Korean patients with ocular adnexal mucosa associated lymphoid tissue (MALT) lymphoma have not yet been reported. We investigated the incidence and clinicopathologic relationship of these chromosomal aberrations in ocular adnexal MALT lymphomas in a Korean population. Methods: Thirty ocular adnexal MALT lymphomas were investigated for the t(11;18) API2-MALT1, t(14;18) IgHMALT1 translocations and chromosomes 3 and 18 aneuploidies using fluorescence in situ hybridization. Patient medical records were reviewed retrospectively for information on demographics and clinical characteristics, including treatment response. Results: The MALT1 gene rearrangement was found in one out of 30 cases. The t(14;18) IgH-MALT1 translocation was demonstrated in only one case (3.3%), and the t(11;18) API2-MALT1 translocation was not found in any of the cases. Trisomy 3 was observed in three ocular adnexal MALT lymphomas (10.0%), and five cases showed trisomy 18 (16.7%). Translocation positive cases also showed trisomy 18. One case of tumor relapse showed trisomy 18 only in the recurrent biopsies. There were no statistically significant correlations between chromosomal aberrations and clinical characteristics and treatment responses. Conclusions: Translocations involving the MALT1 gene are not common in Korean ocular adnexal MALT lymphomas. The t(14;18) translocation was detected in only one out of 30 cases, and the t(11;18) translocation was not found at all. Furthermore, the chromosomal aberrations found in this study had no prognostic implications.

        엿기름 추출액의 첨가량에 따른 증편의 저장 중 품질 특성 변화

        This study evaluated the effects of different levels of malt extract on the hardness, moisture, water soluble starch (WSS)contents, and in vitro starch digestibility (IVSD) of Jeungpyun during storage at room temperature (25±1oC) and refrigeration temperature (4±1oC). Resistant starch (RS) and soluble starch (non-RS) contents were also evaluated. During storage at both temperatures, hardness increased in Jeungpyuns with the malt extract-added Jeungpyun groups (maltadded Jeungpyuns) exhibiting lower hardness than the control. The rate of retrogradation was faster upon storage at refrigeration temperature. Moisture and WSS contents as well as IVSD of Jeungpyuns decreased, whereas these levels were higher in malt-added Jeungpyuns compared to control. Storage increased RS contents in Jeungpyuns stored for up to 4days, particularly at 4oC, whereas there was a decrease in RS content after 7 days of storage. However, RS content was lower in malt-added Jeungpyuns compared to control. Soluble starch (SS) contents of Jeungpyuns decreased. However, SS content was higher in malt-added Jeungpyuns than that of control. The reduced hardness and RS content as well as the rate of increase in other parameters of malt-added Jeungpyuns were dependent on the concentration of malt extract. These results reveal that addition of malt extract delayed retrogradation of Jeungpyun, whereas retrogradation possibly increased the content of RS during storage at both temperatures, however, that of RS decreased with increasing level of malt extract,suggesting that the level of malt extract as well as the storage conditions are important for obtaining acceptable texture and retaining the RS content of Jeungpyun, which is known to possess physiological activity.

        Case Reports : High-grade Hepatic Mucosa-associated Lymphoid Tissue (MALT) Lymphoma Probably Transformed from the Low-grade Gastric MALT Lymphoma

        The Mucosa-associated lymphoid tissue (MALT) lymphoma, which was first described in 1983, is known to be caused by chronic Helicobacter pylori (HP) infection, which triggers lymphoid infiltration and formation of organized lymphoid tissue. In approximately two thirds of cases of MALT, the lymphoma has been observed to regress after treatment of H. pylori infection; this provides strong evidence of a causative role of HP in the etiology of MALT. We report a case of a 67-year-old female patient with a high-grade MALT lymphoma of the liver; this occurred six years after complete remission of a low-grade gastric MALT lymphoma and after complete eradication of H. pylori. there was no recurrence of the previous low-grade gastric MALT lymphoma. Based on radiological and pathologic findings, the high-grade MALT was considered to result from transformation of the low-grade gastric MALT lymphoma.

        보리의 발아정도가 맥아의 β-glucan 용해성 및 맥주의 점도에 미치는 영향

        발아시간에 따라 덜 변형된 맥아(60시간 발아)와 적절히 변형된 맥아(96시간 발아)의 총, 불용성 및 수용성 β-glucan 함량을 측정하였다. 보리의 총 β-glucan 함량은 3.96%였으며 발아 중에 감소하였는데 덜 변형된 맥아에서는 1.02%인 반면에 적절히 변형된 맥아에서는 0.18%로 급격히 감소하였다. 적절히 변형된 맥아는 21℃와 45℃ 추출온도에서 β-glucan 용해성이 덜 변형된 맥아에 비해 현저하게 증가하였다. 변형정도가 다른 두가지 맥아에 대하여 당화온도별로 당화 후 맥즙과 맥주의 점도를 분석하였다. 당화온도가 45-75℃로 증가함에 따라 맥즙과 맥주의 점도가 증가하였으며 적절히 변형된 맥아가 덜 변형된 맥아에 비해 점도의 상승이 크지 않았다. 이는 적절히 변형된 맥아는 덜 변형된 맥아에 비해서 당화과정중에 β-glucan 용해성이 상대적으로 높지만 초기 β-glucan의 함량이 낮을 뿐 만 아니라 맥아에 충분히 합성되어 발달된 β-glucanase의 활성에 의해 당화과정 중에 용출되어지는 β-glucan의 분해가 이루어지기 때문인 것으로 판단되었다. Two barley malt samples were selected at two different stages of germination, a well-modified malt germinated for 96 hr and a poorly-modified malt for 60 hr, and were analyzed for total, insoluble, and soluble β-glucan contents. The total β-glucan content in raw barley was 3.96%, and the content was reduced during malting. The total β-glucan contents of the poorly- and well-modified malts were 1.02% and 0.18%, respectively. After 4 days of germination, approximately 95% of the β-glucan present in the barley was degraded. A significantly higher proportion of water-soluble β-glucan was found in the well-modified malt, suggesting that β-glucan solubility was dependent on cell wall modifications in the malt (β-glucan breakdown). The proportion of water-soluble β-glucan was also affected by the extraction temperature. The two differently modified malts were mashed isothermally at 45, 55, 65, and 75℃ for 2 hr. An increasing mashing temperature resulted in increased viscosity for the wort and the resulting beer. The viscosity of the wort from the well-modified malt was significantly low, due to its low initial malt β-glucan with increased solubility as well as a presumably sufficient β-glucanase activity during mashing.

        Barley Malt Treated with Enzymes Increases Polyphenol Content and Antioxidant Activity

        The purpose of this study was to improve the functionality of a healthy drink with examining the possibility of manufacturing different enzymes (alpha-, beta-, glucose-amylase) in barley malts (BM) produced in various malting periods. The study showed that enzyme treatment increased significantly total polyphenol content (TPC), DPPH radical scavenging activity and hydroxly radical scavenging activity in malted liquid samples (MLS) which obtained from various malting periods. The highest of TPC were found in Gluco-24M with 1.981 ㎎TAE/㎖, followed by Beta-24M and Alpha-72M with 1.878 ㎎TAE/㎖ and 1.845 ㎎TAE/㎖, respectively. The DPPH result revealed that percent of inhibition increased by 71-75% compared to the control. No statistical difference was found between MLS obtained by 24 hr of malting (24 M) and 72 hr of malting (72 M) after enzyme treatment. In addition, an increasing of hydroxyl radical was in the same trend to the TPC and DPPH. The hydroxyl radical scavenging activity of enzyme treated samples was 1,5 times higher than the control. These results suggest the possibility of enzyme application to barley malts obtained in various germination periods for improving quality and functionality of barley malts.
