        영양·위생교육 프로그램 수행이 충북지역 노인의 건강한 식습관 및 식행동에 미치는 영향

        Purpose: This study was conducted to effectively apply the nutrition and hygiene education program for improving the nutritional status of the elderly aged 65 years and above. Methods: The first study was conducted by enrolling 121 willing elderly subjects from welfare centers in four regions of Chungbuk. The second study included 347 people from 10 regions of Chungbuk. Data were analyzed using the SPSS (version 12.0) and SAS (version 9.2) programs. Results: Most participants in both studies were women, ranging from 70-79 years of age. In the first study, the performance rates of subjects, after imparting the education on hygiene, eating habits, and nutritional knowledge, were significantly increased for all factors. Goesan and Boeun areas were highly effective in hygiene practice and eating habits after education. In the second study, Chungju had the most educational effect on hygiene education, with a score of 6.41 points before education and 7.68 points after education. The greatest impact of education on eating habits was obtained at Goesan, with 9.23 points and 11.26 points before and after education, respectively. Large regional differences were determined for the effect of the education program. For nutritional knowledge, the combined average score of Boeun and Goesan showed a maximum increase after education. When considering satisfaction, the scores of Cheongju and Jeungpyeong increased the most after education, whereas Goesan showed that the average scores before and after education were close to perfect. Surprisingly, the Okcheon area, where there was no significant difference in the educational effect after the education program in the first study, showed significant improvement for all factors after the second education program. The current study indicates that continuous education programs are essential for improving the nutritional status of the elderly. Conclusion: Therefore, continuous nutrition and hygiene education programs are recommended to improve the nutritional status of the elderly.

        Dietary Calcium and Framingham Risk Score in Vitamin D Deficient Male (KNHANES 2009–2011)

        Purpose: The association between excess calcium intake and cardiovascular mortalityhas already been reported. In the present study, we investigated the relation between dietary calcium intake and Framingham Risk Score (FRS) according to serum 25-hydroxyvitamin D [25(OH)D] status. Materials and Methods: A total of 7809 subjects (3452 males and 4357 female) aged over 40 years were selected for this cross-sectional study from data obtained from the Korea National Health and Nutrition Examination Survey (2008‒2011). Daily dietary calcium intake was categorized into <300, 300‒600, 600‒900, 900‒1200, and >1200 mg/day and serum25(OH)D concentration classified into <50, 50‒75, >75 mmol/L. The FRS was compared by the daily dietary calcium intake categories according to 25(OH)D concentration after adjustment with relevant variables in both genders. Results: Higher FRS was observed in males with both <300 mg and >1200 mg of dietary calcium intake and females with <300 mg of dietary calcium intake without adjustment. The significantly higher FRS remained in the <300 mg and >1200 mg of dietary calcium intake groups in both genders after adjustments for relevant variables. FRS was significantly higher in the group with >1200 mg of dietary calcium intake and serum 25(OH)D <50 nmol/L, which was the male only vitamin D deficientgroup. Conclusion: Very low (<300 mg/day) and excess (>1200 mg/day) dietarycalcium intake were related with higher FRS in both genders. In particular, higher FRS was observed in the excess (>1200 mg/day) dietary calcium intake male group under vitamin D deficiency (<50 nmol/L).

        콩 품종별 품질특성과 전두유 식미의 상관관계

        The correlation between the nutritional composition of soybeans and whole soymilk palatability was investigated using nine soybean cultivars (Teagwangkong, Daewonkong, Saedanback, Jinpung, Daechan, Miso, Cheongmiin, Cheongja 3, and Socheongja). Physicochemical analysis of soybeans, showed that the protein and lipid contents were 37.7-46.0 and 15.2-20.9%, respectively. Unsaturated fatty acids were 81.1-84.8% of total fatty acids, of which linoleic acids was 49.7-56.8%. Total tocopherol was 243.5-361.3 μg/g of extract, of which γ-tocopherol was 67.14-86.49 μg/g. Total isoflavone contents varied within cultivars from 495.4-1,443.8 μg/g of extract. Daidzin and genistin were 252.1-556.0 and 241.8-730.7 μg/g, respectively, which were major isoflavones in soybeans. For the sensory evaluation, whole soymilk was made from nine soybean cultivars and 20 panels investigate its palatability. The Daechan cultivar had the highest (9.1), and Cheongmiin the lowest (5.6), overall palatability score. Interestingly, sensory results were strongly correlated with linoleic acid (0.746) and stearic acid (-0.716) content. In summary, the fatty acid composition of soybeans is the key factor in determining the palatability of whole soymilk. This study could be applied to determine the suitability of cultivars for soybean products, including whole soymilk. 국내산 콩 9 품종(태광콩, 대원콩, 새단백, 진풍, 대찬, 미소, 청미인, 청자3호, 소청자)의 조단백, 조지방, 회분, 토코페롤, 지방산, 이소플라본 함량을 분석하였다. 국내산 9품종의 콩 단백질 함량은 37.7~46.0%이었으며, 지질함량은15.2~20.9%이었다. 총 토코페롤의 함량은 243.5~361.3 μg/g 으로, γ-토코페롤이 총 토코페롤의 67.14~86.49%을 차지하였다. 지방산 조성분석 결과에서는 리놀레산(C18:2)이 49.7~ 56.8%로 가장 높은 비율을 나타내었다. 이소플라본 분석에서는 다이드진이 252.1~556.0 μg/g, 제니스틴이 241.8~730.7 μg/g으로 분석되었다. 식미검정 결과에서는 대찬콩이 9.1 로 가장 높은 기호도를 보였으며, 청미인이 7.4로 가장 낮은 기호도를 나타냈다. 상관성 분석결과 전두유의 기호도는 콩 품종의 지방산조성과 가장 높은 상관계수(correlation coefficient)를 나타냈으며, 리놀렌산 함량이 높을수록(0.746), 스테아르산 함량이 낮을수록(-0.716) 두유의 기호도가 증가하는 경향을 나타냈다. 이상의 연구결과는 전두유 제조에있어 품종별 특성을 고려하여 적합 품종을 선택하는 기초자료로 활용될 수 있을 것으로 생각된다.

        矯導所 在所者의 對人關係 經驗에 관한 硏究

        본 연구는 교도소 재소자의 수형생활 가운데 재소자 간의 대인관계 경험에 대해 보다 심층적인 이해를 위하여 ○○교도소에 수감 중인 재소자 4명을 대상으로 심층면담에 기초한 질적연구를 수행하였다. 그 결과 재소자 간 대인관계 경험의 핵심범주는 ‘재소자 간 갈등관계 사회적 지지관계 주고받으며 수형생활 해 나가기’로 도출되었고, 범주 간의 관계를 지속적으로 확인한 결과 재소자의 대인관계 유형은 갈등관계 측면에서는 ‘참고살기’, ‘방관하기’로, 사회적 지지관계 측면에서는 ‘제한적으로 도움주고 받기’, ‘상대방 이용하기’로 도출되었다. 재소자의 대인관계 경험을 분석한 결과 재소자 간 갈등관계는 가석방 혜택 및 행형점수에 부정적인 영향을 미치기 때문에 갈등을 적극적으로 해결하기보다 ‘회피’ 또는 ‘인내’, ‘방관자적인 태도 취하기’ 등으로 나타났다. 사회적 지지관계 형성에 있어서는 재소자 사이의 사회적 지지관계가 통제되기 때문에 제한적 혹은 부정적인 사회적 지지관계를 형성하는 것으로 보였다. 이러한 연구결과들을 근거로 재소자 사이의 갈등관계 해결 및 사회적 지지관계 활성화를 위한 교정사회복지 실천방안을 제시하였다. This study tried to understand in great depth about the experience of inmates' interpersonal relationships and how they affect prison life through using a qualitative research method. The core category of the experiences of interpersonal relationship between inmates is indicated as 'managing a giving and taking relationship in their social support between inmates while they feel conflicts in interpersonal relationships'. As the result of confirming relationships between categories that were continually shown as centering on the core category, the interpersonal relationship types were divided into 'living with patience' and 'living like a bystander' in the area of conflict relationships, and 'helping each other restrictively' and 'using other people' in the area of social support relationships. As one of main proposals that are based on the results of this research, it is necessary to devise a correctional welfare program relating to conflict resolution and mediation program to activate social support relationships between inmates to help inmates have an amicable prison life.
