유과 제조 시 제조 시간을 단축할 수 있는 소재를 개발하기 위하여 찹쌀 전분을 4가지 상업용 α-amylase 효소와 반응시켜 효소처리 찹쌀 전분을 제조하고 이들의 이화학적 특성을 연구하였다. 효소처리 찹쌀 전분의 팽윤력 및 용해도는 일반 찹쌀 전분에 비해 많이 증가되는 경향을 보였다. 등온흡습곡선에서는 효소처리에 따른 유의적인 차이는 나타나지 않았다. RVA특성을 검토한 결과 최대 점도, holding strength, final viscosity, break down, setback은 일반 찹쌀 전분보다 낮아지는 결과를 나타냈다. 열적특성에서는 아밀로펙틴 용해 개시온도, 아밀로펙틴 용해 종결온도 그리고 아밀로펙틴 용해 온도범위(△T)는 각 전분간에 유의적인 차이가 나타나지 않았으며 아밀로펙틴 용해 엔탈피 역시 유의적인 차이를 나타내지 않았다. X-ray 회절 분석 결과로 볼 때, 효소처리 찹쌀 전분 및 일반 찹쌀 전분 모두 A형의 결정 형태를 나타내었고, 상대적 결정화도의 차이가 나타나지 않는 것으로 보아 효소처리가 찹쌀 전분의 결정형영역에는 영향을 주지 않는 것으로 보여진다. 효소처리 찹쌀 전분을 사용하여 제조한 유과의 경우 과도한 점도손실에 의해 반죽을 제조하지 못하여 본 연구에서 사용한 효소치리 정도가 부적합한 것으로 판단되었다. Physicochemical properties of partially hydrolyzed waxy rice starches with various α-amylases were investigated to reduce processing-time of yukwa (Korean traditional puffed rice snack). Four commercial α-amylases (Fungamyl, Termamyl, Liquozyme, Kleis tase) were used in this work. Waxy rice starches (20% solid content) were treated with same unit of four α-amylases at 40℃ and pH 6.0 for 1 hour. Partially hydrolyzed waxy rice starches showed higher swelling power and solubility than native waxy rice starch. Pasting temperature and peak viscosity of partially hydrolyzed waxy rice starches were lower than those of native starch. DSC thermal transitions of partially hydrolyzed waxy rice starches shifted to higher temperature than native waxy rice starch possibly due to hydrolysis of amorphous region and some double helical structure. X-ray diffraction patterns of both native and partially hydrolyzed waxy rice starches were typical A-type pattern indicating that alpha-amylase cannot disrupt the crystalline structure in this condition.
변이주인 Trichoderma reesei YC-3156이 생산하는 Cellulase에 관한 연구

After the treatment 15 strains of Trichoderma sp. and 4 isolates with N-methyl-N´-nitro-nitrosoguanidine, T. reesei YC-3156 among the mutants showed the highest cellulase activity. The Avicelase of T. reesei YC-3156 was purified by 70% ammonium sulfate fractionation, dialysis, DEAE-Sepharose column chromatography and Sephadex G-100 Gel-filtration. With the result of the procedures, its purification degree was 13 folds, yield 9.3% and specific activity 0.9 unit/mg. The homogeneity and the molecular weights of the purified Avicelase were determined by SDS-polyacrylamide gel electrophoresis, it was electrophoretically homogeneous and showed the molecular weights of 46,000-48,000. The purified Avicelase was stable between pH 4.0 and pH 5.0 and it was inactivated rapidly above 60℃.

춘천시대 3개 대학에 재학 중인 513명을 대상으로 차에 대하여 어떠한 생각을 갖고 있는지, 그리고 춘천지역에서 차재배를 통한 그린투어사업에 대하여 어떠한 생각을 갖고 있는지를 이해하기 위하여 1:1 설문조사를 실시하였다. 춘천지역 대학생들은 녹차에 대하여 향(35.9%)과 웰빙(34.7%)의 이미지를 가지고 있었으며, 건강(53.2%)을 위하여 마시는 것으로 나타났다. 응답자들은 연한 녹색(82.4%), 개운한 맛(35.3%), 은은한 향(41.3%)을 선호하는 것으로 조사되었다. 녹차에 대한 효능에 대해서는 81.3%가 알고 있다고 응답하였으며, 가장 추구하는 녹차의 효능으로 비만과 심장질환 예방효과를 선택하였다(53.9%). 대학생들은 녹차를 구입시에는 품질(33.5%)과 가격(31.5%)을 고려하여 가까운 마트에서 티백(80.4%)제품을 구매하는 것으로 조사되었다. 대학생들은 맛이 없다는 점(39.3%)을 녹차소비에 있어서 가장 큰 장애 요인으로 들었는데, 이들 세대에 어필할 수 있는 향을 첨가하고, 음용이 쉬우면서도, 가격이 저렴한 제품을 개발하는 것이 녹차소비를 확대하는 방법이라고 사료된다. 춘천지역에서 녹차를 관광상품으로 개발할 가능성에 대해서는 응답자의 44.54%가 공감하였으며, 그 이유로 춘천이 수도권과 지리적으로 가깝다는 점을 들었다(31.7%). 춘천에서 녹차제품을 만들 경우 고품질의 지영ㄱ특성을 살린 녹차막국수(37.9%)나 녹차 닭갈비(31.7%)가 성공할 가능성이 높은 것으로 조사되었으며, 춘천의 바이오산업과 연계한 제품개발의 경우 가능성 식품(36.0%)역시 유망한 것으로 조사되었다. The objectives of this study were to understand how university students as the present and future consumers think of Korean green tea and to understand how they think of the green tourism business in Chuncheon by growing tea(Camellia sinensis L.) trees. Examiners took a face-to-face interview with 513 students from three universities in Chuncheon. Images of green tea was associated with flavor(35.9%) and well-being(34.7%), and the green tea was consumed for the health-related purpose(52.3%). A majority of respondents preferred the green tea with light yellow color(82.4%), refreshing taste(35.3%), and soft sweet-smelling flavor(41.3%). Many university students (81.3%) replied that they pursued the green tea efficacy: obesity and heart disease prevention. When purchasing green tea products, they primarily considered the quality(33.5%) and price(31.5%), and they purchased tea-bag products for easy preparation (80.4%). Thirty-nine percent of the respondents considered unpalatability of green tea as a major obstruction for its market expansion. About half of the respondents replied that the green-Tourism project using green tea in the Chuncheon area could be successful because of easy accessibility of Seoulites to Chuncheon. In addition, respondents selected buckwheat noodles(37.9%), spicy roast chicken(31.7%), and functional foods (36.0%) are promising tourist attractions in conjuction with green tea.

Background/Aims: While drug-eluting stents (DESs) have shown favorable out-comes in ST-segment elevation myocardial infarction (STEMI) compared to bare metal stents (BMSs), there are concerns about the risk of stent thrombosis (ST) with DESs. Because intravascular ultrasound (IVUS) guidance may help optimize stent placement and improve outcomes in percutaneous coronary intervention (PCI) patients, we evaluated the impact of IVUS-guided BMS versus DES implan-tation on long-term outcomes in primary PCI. Methods: In all, 239 STEMI patients received DES (n = 172) or BMS (n = 67) under IVUS guidance in primary PCI. The 3-year incidence of major adverse cardiac events (MACEs) including death, myocardial infarction (MI), target vessel revas-cularization (TVR), and ST was evaluated. Results: There was no difference in all cause mortality or MI. However, the in-cidence of TVR was 23.9% with BMS versus 9.3% with DES (p = 0.005). Thus, the number of MACEs was significantly lower with DES (11.0% vs. 29.9%; p = 0.001). The incidence of definite or probable ST was not different (1.5% vs. 2.3%; p = 1.0). IVUS-guided DES implantation (hazard ratio [HR], 0.25; 95% confidence interval [CI], 0.08 to 0.78; p = 0.017), stent length (HR, 1.03; 95% CI, 1.00 to 1.06; p = 0.046), and multivessel disease (HR, 3.01; 95% CI, 1.11 to 8.15; p = 0.030) were independent predictors of MACE. Conclusions: In patients treated with primary PCI under IVUS guidance, the use of DES reduced the incidence of 3-year TVR versus BMS. However, all cause mor-tality and MI were similar between the groups. The incidence of ST was low in both groups.
