        국내 육성 귀리 품종의 이화학적 특성 및 식이섬유 함량 분포

        Consumption of oat-based food is rapidly increasing due to consumer preference for functional foods. Until now, breeding is focused on the development of naked oat for food in Korea. Hulled oats recognized as forage have strong merits for yield and stability in cultivation except milling properties. Lately, advanced milling technology provides an opportunity to use hulled oats for food. Therefore, the processing characteristics of hulled oats are of great importance for food use. This study examined the physicochemical properties and dietary fiber of 9 Korean oat cultivars (4 hulled oats as compared with 5 naked oat cultivars). Findings showed that the color values (i.e. L and W) of hulled oat cultivars in seed and flours are lighter than the naked oats. The protein and ash contents are higher in hulled oats as compared with naked oats. The unsaturated fatty acid (USFA), mainly C18:1, C18:2 were 80~83%. USFA of ‘Daeyang’ (DY, naked) and ‘Jopung’ (JP, hulled) were 82.0 and 81.9% respectively. Total Dietary fiber and Total β-Glucan contents ranged from 13.2 to 20.6% and from 3.4 to 4.1% in oat flours. The ‘DY’ (4.10%, naked), ‘JP’(4.09%, hulled) and Highspeed (4.07%, hulled) showed high levels of β-Glucan contents. Findings of the study will provide useful information in extending the use of hulled oats for food.

        국내 귀리품종 탈부특성에 따른 품질 및 유연관계 분석

        The consumption of oats (Avena sativa L.) with high nutritional utility is accelerating due to the increased consumers’ demand for functional foods. In Korea, naked oats are used as food, while covered oats are used for animal feed. However, it is difficult to distinguish naked oats from covered oats when the husk is removed from the grains by a special process. The present study was carried out to investigate experimental methods that would be beneficial in the segregation of different types of oats after husk removal. Grain quality-related biochemical compounds were analyzed in a bid to differentiate the oat dehulling characteristics. In addition, 61 SSR markers were examined for genetic relationship and variety identification of oats using five naked and seven covered oat varieties. Results showed that, the contents of protein, lipid, and β-glucan were not significantly different among the oat varieties and this could not be used as an index for distinguishing oats husk character. However, in the fatty acid composition ratio,, naked oats had a higher ratio of stearic acid (C18:0) and oleic acid (C18:1) than covered oats, and covered oats had a higher ratio of linoleic acid (C18:2) and linoleic acid (C18:3) than naked oats. The assessment of SSR marker genotype revealed that 33 polymorphic bands among 12 oat varieties and 1 variety could be distinguished through the combination of polymorphic markers thus indicating the usability of these markers for variety identification in oats.

        소비가 폭발적으로 증가하고 있는 귀리 관련 식품 수요에 대처하기 위해 국내 육성 품종의 식용 및 가공소재로 이용하기 위한 품질 특성이 매우 중요하다. 본 연구에서는 겉귀리의 식용으로 이용성을 제고하고, 최근 국내 육성 귀리 품종의 식품소재 확대를 위해 쌀귀리 5, 겉귀리 4품종을 대상으로 외관품질, 이화학적 특성, 베타글루칸을 포함한 식이섬유 함량을 분석하였으며, 그 연구 결과를 요약하면 다음과 같다. 1. 귀리 종실 및 가루의 L값, 백도값이 겉귀리가 쌀귀리에 비해 전체적으로 밝았으며, 겉귀리인 ‘하이스피드’가 가장 높았다. 겉귀리는 쌀귀리에 비해 지방함량은 적고 단백질 함량은 많았다. 지방산 조성은 C18:1, C18:2, C16:0, C18:0,C18:2 순이었으며, 불포화지방산은 79.7 ~ 83.0% 수준이었으며, 쌀귀리인 ‘대양’(83.0), 겉귀리인 ‘조풍’(82.0)%이 불포화지방산이 높았다. 2. 총 식이섬유는 품종별로 차이를 보였으며, 총 식이섬유함량은 13.2(‘중모’) ~ 20.6%(‘대양’)이었으며, 수용성 식이섬유도 쌀귀리인 ‘대양’, ‘조양’ 품종이 4.0%로 가장 많았다. 베타글루칸 함량은 3.4% ~ 4.1% 이었으며, ‘대양’(쌀귀리), ‘하이스피드’(겉귀리), ‘조풍’(겉귀리) 품종이 4.10, 4.09, 4.07%로 가장 많았다. 3. 전분의 호화특성은 쌀귀리는 ‘대양’, 겉귀리는 ‘삼한’ 품종이 혼반용으로 좋은 특성을 가지는 것으로 판단되었다.         국내 귀리품종 탈부특성에 따른 품질 및 유연관계 분석

        귀리(Avena Sativa L., Oat)에서 이삭모양과 탈부특성이 다른 겉귀리와 쌀귀리를 품질특성으로 구분하고자 12 품종 귀리종실의 이화학적 특성 및 식이섬유를 분석하였고, 61개의 SSR 분자마커를 이용하여 근연관계 및 조양 판별 마커조합을 설정하였으며 결과를 요약하면 다음과 같다. 1. 공시한 12개의 귀리 품종을 생육조사 한 결과 쌀귀리는 이삭의 한 소수에서 영화수가 4~5개 생기는데 비해 겉귀리는 2~3개 생겼으며, 탈곡 후 종실의 껍질 유무 또한 쌀귀리는 없었고 겉귀리는 껍질이 남아있는 형태로 기존에 알려진 것과 같은 결과를 보였다. 2. 단백질은 쌀귀리가 13.45 ~ 16.56%, 겉귀리는 12.95 ~ 15.31%의 함량 분포를 나타내었으며, 지방은 쌀귀리가 7.26 ~ 10.34%, 겉귀리는 7.53 ~ 10.82%의 함량 분포를 나타내었으며, 베타글루칸은 쌀귀리가 4.19 ~ 5.05%, 겉귀리는 3.49 ~ 5.60%의 함량 분포를 나타내어 귀리 품종 간에는 품질특성이 차이가 나타났으나 쌀귀리와 겉귀리를 구분 할 수 있을 정도는 아니었다. 3. 지방산 조성 비율은 쌀귀리가 겉귀리에 비해 올레인산(C18:1, Oleic acid, 40.2 ~ 50.9%)과 스테아르산(C18:0, Stearic acid, 1.2 ~ 2.5%)이 높은 비율을 나타냈으며, 겉귀리는 쌀귀리에 비해 리놀레산(C18:2, Linoleic acid, 30.6 ~ 41.2%)과 리놀렌산(C18:3, Linolenic acid, 0.7 ~ 1.3%)이 더 높은 비율을 보였다. 4. 귀리의 근연관계는 계수(Coefficient) 1.22에서 그룹 하여 정리한 결과 겉귀리 6품종과 쌀귀리 1품종으로 그룹 되었고 유전적 거리(Genetic Distance)는 '동한'과 '태한'이 가장 가깝게 나타났으며 다음은 '풍한', '삼한', '옥한', '조풍', '중모2005' 순으로 나타났다. 계수(Coefficient) 1.22에서 그룹 되지 않은 귀리는 겉귀리 1품종과 쌀귀리 4품종으로 '수양', '다한', '대양', '선양', '조양' 순으로 그룹에서 먼 것으로 나타나 대체적으로 겉귀리와 쌀귀리가 서로 멀게 나타났다. 5. 12개의 귀리품종에 61개의 SSR maker를 이용하여 분석한 결과 '조양'은 AM28, 29, 32, 34, 36의 5개 SSR마커에서 다른 품종과 다른 밴드 패턴을 나타내어 품종 구분이 가능하였다.         Adaptation and quality of naked oat(Avena nuda L.) cultivars in Korea

        The naked oat varieties are promising for human diet and for feed of race horse if they adapt well in Korea. We investigated adaptability of oat cultivars, Avena nuda L. obtained from U. K., USA and Canada etc. The naked oats were generally shorter than the Korean hulled oats, therefore, naked oat cultivars were tolerant to lodging. In fall sowing, naked oat cultivars, Pendragon and Kynon showed about 81% and 69% of winter survival rates, respectively, while no hulled oat cultivars survived through the winter. Grain yield was higher in fall sowing than in spring sowing. Grain yields per unit area of Pendragon and Kynon were rather decreased by the polyethylene plastic mulching culture, compared to non mulching culture. Thus, mulching was unnecessary for cultivation of those cultivars in Korea. Grain yield of naked oats were higher than that of hulled oats after removing hull. The contents of crude protein and essential amino acids in naked oat cultivars were higher than that of hulled oat. The content of beta-glucan as an index of dietary fiber amount in the naked oat grain were also higher than that of hulled oat grain. These results indicated that naked oats were superior to hulled oats in aspects such as winter survival rate, kernel yield, and grain quality, and could be introduced successfully in Korea.

        개혁주의생명신학에서 본 웨인 에드워드 오오츠(Wayne Edward Oates)의 목회신학과 목회상담학에 관한 연구

        웨인 오오츠는 남침례교출신의 목사이며, 목회상담가이자 목회상담학자이다. 그는 현대 목회상담학의 선구자 중의 한 사람으로서 많은 임상 경험과 깊은 신학적 통찰을 통하여 목회상담학과 종교심리학, 그리고 기독교 정신의학에 많은 공헌을 하였다. 특별히 그의 교회사역으로서의 목회상담에 대한 강조는 개혁주의생명신학이 추구하는 ``교회를 위한 신학``과 일맥상통한 것으로 그의 목회신학과 목회상담학에 관한 연구가 지니는 의미가 크다 할 수 있다. 어린 시절의 가난으로부터의 자유를 시작으로, 열등감으로부터의 해방, 획일화된 사고로부터의 자유, 외로움으로부터의 자유, 그리고 규격화 된 신학교육의 탈피 등으로 이루어진 그의 인생은 자신의 표현대로 ``자유를 향한 투쟁``으로 설명될 수 있다. 비록 그가 매우 성경적인 태도를 견지하고 있으나 그렇다고 그가 사람들의 영혼의 유익을 위한 다른 학문, 특히 심리학을 무시하지는 않았다. 그는 학제적 연구에 매우 충실하였던 학자였다. 광범위하고도 심도 있는 학문적 배경을 바탕으로 한 그의 목회상담 및 목회신학은 매우 성경적일 뿐만 아니라 나아가서 매우 실천적 신학을 강조하는 개혁주의생명신학의 관점과 일치한다. 목회상담학에 끼친 오오츠의 공헌은 다음과 같다. 첫째, 그는 현대목회상담학을 심리학의 영역이 아닌 신학의 한 영역으로 정립하고 발전시키는데 공헌하였다. 둘째, 그는 현대 목회상담학이 심리학과 목회전문화의 물결에 의해 교회사역의 영역에서 멀어지는 추세를 비판하고 교회사역으로서의 목회상담학의 위치를 새롭게 정립하였다. 셋째, 목회상담학에서의 사회적 관심을 새롭게 조명하였다. 넷째, 그는 자신의 인생을 통하여 신학교육현장에서 임상적 훈련을 통한 신학교육이 교회현장에서 생명을 살리며 실천되는 일에 힘을 기울였다. Wayne E. Oates is a southern baptist pastor, pastoral counselor, and scholar. As a pioneer of modern pastoral counseling movement, Oates, based on many clinical experiences and deep theological reflections, had contributed a lot to the areas of pastoral counseling, psychology of religion, and Christian psychiatry. Especially, the meaningful contribution of this study to ``the reformed life theology`` is Oates` emphasis on the pastoral counseling as a church ministry. Oates describes his whole life as ``the struggle to be free`` such as to be free ``from poverty,`` ``from a feeling of inferiority,`` ``from pack thinking,`` of loneliness,`` ``from factory education,`` and, etc. Even though Oates is very biblically oriented, he has never abandoned his interest in the interdisciplinary study between theology and psychology. Based on his broad and solid academic backgrounds, he has been able to cultivate and develop pastoral counseling and pastoral theology practically as well as biblically. There are several Oates` contribution to pastoral counseling. First, Oates firmly defines pastoral counseling as a part of theology not as of psychology. Second, Oates reestablishes the congregational aspect of pastoral counseling which has been eroded by modern psychology and ministerial specialization. Third, the social emphasis of pastoral counseling has been refocused by Oates. Fourth, throughout his life, Oates has emphasized the practicality of theology with clinical training in theological education settings.

        Validation of avenanthramide and other phenolic compounds in oats and sprouted oats and their antimicrobial properties against Escherichia coli O157:H7

        Oat contains a variety of phenolic compounds, including avenanthramides, which are found only in oats. This study was conducted to establish the quantitative analysis of seven phenolic compounds in oat powders and sprouted oat powders and validate an efficient high-performance liquid chromatography (HPLC) method. All calibration curves represented good linearity (R2 ≥ 0.9997) in the concentration range (0.5−50 mg/kg) with LOD and LOQ of 0.01−0.21 and 0.02−0.64 mg/kg, respectively. Intra-day accuracy (%) and precision (%RSD) were 90.7−103.8% and 1.5−4.9%, respectively. Inter-day accuracy (%) and precision (%RSD) were 90.4−107.9% and 2.2−4.8%, respectively. Moreover, relative expanded measurement uncertainty results complied with CODEX guideline. In addition, selected oat and sprouted oat powder extracts showed anti-microbial activities against Escherichia coli O157:H7. These results demonstrated that this HPLC method is suitable for the qualification and quantification of seven phenolic compounds in oat and sprouted oat.

        조이스 캐럴 오츠의 「사슴」과 윌리엄 포크너의 「에밀리를 위한 장미」의 서술적 관계: 상호텍스트성과 그로테스크를 중심으로

        Inspired by many writers, Joyce Carol Oates has rewritten her stories. William Faulkner in particular seems to affect Oates's writing considerably. I think one of Oates's short stories, “The Buck”, is closely related to Faulkner's famous short story, “A Rose for Emily.” At the base of the story rewritten by Oates, some archetypal Faulknerian elements grow into a very different story as Oates's story continues to develop and evolve. In addition, as the layers of Oates's story get thicker, her rewritten story creates various perspectives and delves into human nature. In this paper, I will explore the narrative relationship between Oates's short story “The Buck” and Faulkner's “A Rose for Emily.” I examine how the intertextual relationship between the two works appears as well as the intertextuality with fairy tales. I will also trace the Grotesque elements common to the two works, “The Buck” and “A Rose for Emily.” Oates keeps on evolving her work based on the Grotesque. Since there is no research paper on the relationship between the two works, “The Buck” and “A Rose for Emily,” it is expected that this study will broaden the horizons in the research into Oates's works.

        The Gastrointestinal Metabolic Effects of Oat Product Based-β- glucan in Mice

        Most physiologicalstudies studies of oat beta(β)-glucan have shown positive effects on regulation ofblood glucose and lipid metabolism related to β-glucanmetabolism in the gastrointestinal tract. The effects of oatβ-glucan (OG), oat bran (OB), oat flour (OF), and oatmeal(OM) containing different levels of β-glucan on digestibilityand degradation were investigated in normal mice. Chymeviscosity, the gastric emptying rate, the gastrointestinaltransit rate, the activities of intestinal digestive enzymes,the levels of plasma cholecystokinin (CCK) and motlin(MOT), and degradation of β-glucan in oat products weredetermined. β-glucans from different oat products increasedintestinal chyme viscosity, delayed gastric emptying,promoted enterokinesia, decreased amylase, trypsin, lipase,and Na+, K+-ATPase activities, and promoted secretion ofCCK and MOT, especially for oat derived β-glucan.

        팽화 귀리에서의 총 폴리페놀 함량 변화 및 항산화능 비교

        Puffing process modifies the chemical and physical properties of the grains. In this study, oats were puffed by subjecting them to pressure of 1.0 and 1.2 MPa, following which the bioactive constituents and antioxidant activities in the oat extracts were investigated. The polyphenol content in puffed oat extracts increased in a pressure-dependent manner (109 and 157 mg gallic acid equivalent/100 g at 1.0 and 1.2 MPa, respectively). In addition, gallic acid was synthesized after puffing (518 μg/g of extract at 1.0 MPa) and was the most abundant phenolic acid in puffed oats. The antioxidant activities, which were determined by 1, 1-diphenyl-2-picrylhydrazyl (DPPH) and 2, 2-azino-bis-3-ethylbenzothiazoline-6- sulphonic acid (ABTS) radical scavenging activities, were improved in oat extracts after puffing (+245 and +184% at 1.2 MPa, respectively). In conclusion, puffing process of oats increased the extractability of polyphenols, including gallic acid, which positively affected its antioxidant activities. These results will provide useful information when using puffed oats for food production.
