Taste-related and volatile organic compounds of fresh and frozen–thawed chicken breast meat

The effect of frozen storage (−18℃ for 2 months) and thawing (4℃ for 16 h) on the taste-related compounds and volatile organic compounds (VOCs) in chicken breast meat was studied. After freeze–thawing, inosine monophosphate levels in chicken meat decreased and inosine levels increased. Free amino acid content increased significantly, regardless of bitter, sweet, or umami amino acids. Increase in arachidonic, eicosapentaenoic, adrenic, and docosahexaenoic acids after freeze–thaw cycle was observed suggesting the impact of lipid oxidation during freezing and thawing. Total 95 VOCs were detected, and multivariate analysis discriminated the differences in aroma- and taste-related compounds. The variable importance in the projection score indicated that the total amounts of sweet and bitter amino acids, inosine monophosphate, ketones, oxetane, and 3,3-dimethyl-2-butanone were important in discriminating between fresh and frozen–thawed chicken meat. The freeze–thawing altered the flavor of fresh chicken meat, and these important compounds could be utilized as markers for characterizing fresh or frozen-thawed meat.
미래사회 핵심역량 함양을 위한 미술 영재 VR 미술 표현 수업 개발 실행연구

The purpose of this study is to improve the field training through the process of cultivating and applying classes for nurturing core competencies of future society for students gifted in art. A VR art expression class was planned and applied to develop communication and collaboration skills for 4th grade students at the Art Gifted Education Center, and the revisions were reflected and re-introduced into the class for the next year. To this end, the practical action research method of the cyclical process of planning, execution, observation and reflection was applied. Having extensive usability and scalability when applied through various programs and apps, VR is useful for learning the intrinsic value of the subject. It can also be used students to learn values not directly presented in the subject. It is hope that this research will be used as a valid reference for those who go through the similar difficulties and errors conducting researches in this field.
감성 리더십과 진성 리더십이 임파워먼트, 혁신행동, 그리고 직무성과에 미치는 영향 : 외식산업 종사원을 대상으로

This study was to investigate the structural relationships among emotional leadership, authentic leadership, empowerment, innovative behavior, and job performance in the foodservice industry. For these purposes, the authors developed several hypotheses and collected data from 325 employees working for restaurants in Seoul area. The data were analyzed using frequence, reliability, and confirmatory factor analysis, and structural equation modeling(SEM). The findings can be summarized as follows: First, emotional leadership and authentic leadership had a positive effect on empowerment. Second, empowerment had a positive effect on innovative behavior. However, empowerment did not have a statistically significant impact on job performance. Third, innovative behavior had a positive effect on job performance. 본 연구의 목적은 리더십 이론을 중심으로 서울 소재 외식기업에 근무하고 있는 325명의 종사원들을 대상으로 이들의 임파워먼트, 혁신행동, 그리고 직무성과를 예측할 수 있는 모형을 개발하고, 이러한 연구단위들 사이에서 임파워먼트와 혁신행동이 직무성과 증대에 미치는 영향력을 실증적으로 분석하고, 이러한 연구결과를 기반으로 외식기업들의 효율적인 인적 자원관리를 위한 전략방안을 제시하고자 시도되었다. 배포된 450부의 설문지 중에서 회수된 325개의 표본으로 SPSS 18.0과 AMOS 20.0을 이용하여 분석을 진행하였다. 본 연구의 실증분석 결과는 다음과 같다. 첫째, 외식종사원의 감성 리더십은 임파워먼트에 유의한 정(+)의 영향을 미치는 것으로 나타났다. 둘째, 외식종사원의 진성 리더십은 임파워먼트에 유의한 정(+)의 영향을 미치는 것으로 분석되었다. 셋째, 외식종사원의 임파워먼트는 혁신행동에 유의한 정(+)의 영향을 미치는 것으로 나타났으나 직무성과에는 유의한 영향을 미치지 않는 것으로 분석되었다. 넷째, 외식종사원의 혁신행동은 직무성과에 유의한 정(+)의 영향을 미치는 것으로 나타났다. 이러한 실증분석 결과를 바탕으로 외식종사원의 혁신행동과 직무성과를 증대시키기 위해서는 상사의 감성 리더십과 진성 리더십이 중요한 역할을 한다는 점이 제시되었다.
독일연방은행과 유럽중앙은행의 정책대립 : 전통적인 독일통화당국의 역사를 중심으로

This paper intends to identify the difference of the behavior of monetary policy between the German Bundesbank and the European Central Bank. The German Bundesbank, as a monetary authority, has not collected its capital from the private financial institutions. Instead, it has only been invested by the German federal government, and has returned its profit to the government. Moreover, the German Bundesbank has emphasized to maintain the minimum reserve ratio as a primary monetary policy. The reason that German Bundsbank has kept this policy steadfastly as a primary one is that it anticipates this policy plays a role of a conerstone of the social market economic system. Also, this policy is not viewed as the market functioning system until the late of 90s in that German Bundesbank has not paid amy interest to the deposit of commercial banks. In this sense, we can argue that German Bundesbank's monetary policy is mainly based on a social market system, and differs from European Central Bank's monetary policy, which is functioning on the global market system. Without exception, this conflict has been revealed in the process of economic and monetary integration between Germain and European Union, which started on the same date.
