        튀김횟수에 따른 튀김식품(돈까스, 감자튀김) 및 식용유지(대두유, 카놀라유, 팜유, 돈지)의 변화

        본 연구는 축산물에 사용되는 식용유지의 기준설정을 위하여 모니터링을 실시하였다. 축산물에 사용되는 유지(대두유, 카놀라유, 팜유, 돈지)를 선정하여 식품공전에 고시되고 있는 규격과 비교하여보았다. 상관관계를 구축하여 축산물에 사용되는 식용유지와 일반식품에 사용되는 식용유지의 신선도여부를 파악하였으며, 축산식품과 일반식품의 사용유지 실험값 비교분석을 통한 식품공전에 따른 유지기준(산가 2.5 mg KOH/g 이하, 과산화물가 50meq/kg 이하)을 축산물에도 적용 가능한 지의 여부를 검토하였다. 또한 튀김유지 뿐만 아니라, 유지별 튀김횟수에 따른 튀김식품에 대한 산가, 과산화물가 값을 측정하여 축산물(돈까스)이 일반식품(냉동감자)보다 적은 튀김횟수에서 일반식품의 산가 기준치(5.0 mg KOH/g), 과산화물가 기준치(60 meq/kg)에 도달하는 것을 알 수 있었다. 따라서 본 연구를 통하여 축산물에 사용되는 유지의 기준 규격마련을 위한 기초자료로 사용될 수 있다. The purpose of this study was to investigate the effect of frying number on oxidative changes in edible oils and fried foods. According to the frying number, the extracted edible oils from pork cutlet and fried potato were used as experimental samples. The Ministry of Food and Drug Safety (MFDS) regulations permit edible oils to have <2.5 mg KOH/g of acid value and <50 meq/kg of peroxide value in food. However, there are no regulations for edible oils used to fry livestock. Animal foods contain protein and fat, and should be held to a different standard than ordinary food. Therefore, we present basic information and suggest the establishment of regulations for livestock frying oil and fried livestock.

        한국인 직무 스트레스 측정도구의 개발 및 표준화

        Background and Purposes: Over the past three decades, numerous studies performed in Korea have reported that job stress is a determinant risk factor for chronic diseases and work disability. Every society has its own culture and occupational climate particular to their organizations, and hence experiences different occupational stress. An occupational stress measurement tool therefore needs to be developed to estimate it objectively. The purpose of this study is to develop and standardize the Korean Occupational Stress Scale (KOSS) which is considered to be unique and specific occupational stressors in Korean employees. Subjects and Methods: Data were obtained from the National Study for Development and Standardization of Occupational Stress (NSDSOS Project: 2002-2004). A total of 12,631 employees from a nationwide sample proportional to the Korean Standard Industrial Classification and the Korean Standard Occupational Classification were administered. The KOSS was developed for 2 years (2002-2004). In the first year, we collected 255 items from the most popular job stress measurement tools such as JCQ, ERI, NIOSH and OSI, and 44 items derived from the a qualitative study (depth interview). Forty-three items of KOSS, in the second year, were retained for use in the final version of the KOSS by using Delphi and factor analysis. Items were scored using conventional 1-2-3-4 Likert scores for the response categories. Results: We developed eight subscales by using factor analysis and validation process: physical environment (3 items), job demand (8 items), insufficient job control (5 items), interpersonal conflict (4 items), job insecurity (6 items), organizational system (7 items), lack of reward (6 items), and occupational climate (4 items). Together they explained 50.0% of total variance. Internal consistency alpha scores were ranged from 0.51 to 0.82. Twenty-four items of the short form of the KOSS (KOSS-SF) were also developed to estimate job stress in the work setting. Because the levels of the subscales of occupational stress were gender dependent, gender-specific standard norms for both the 43-item full version and the 24-item short form using a quartile for the subscales of KOSS were presented. Conclusion: The results of this study suggest that KOSS might be an appropriate measurement scale to estimate occupational stress of Korean employees. Further and more detailed study needs to be conducted to improve the validity of this scale.

        인스타그램에서의 페르소나와 패션을 통한 자기표현에 관한 연구 -20~30대 여성을 중심으로-

        This study qualitatively explored the case of users utilizing multiple accounts on one social network service to create their own multiple spaces and different personas. The purpose of the study was to understand the behavior of people who use multiple accounts to express their identity online using Carl Jung's personality theory. We used in-depth interviews and the Zaltman metaphor elicitation technique (ZMET), targeting 19 people in their 20s and 30s who use more than one personal account on Instagram. Creating a shared consensus map using the configuration concept of ZMET derived six personas in relation to Instagram accounts. The motivations for the respondents' self-presentation associated with their personas and self-presentation types shown on Instagram were analyzed in terms of persona and fashion and subdivided into five dimensions: relationship management strategic presentation, self-monitoring presentation, competence demonstration presentation, anonymous presentation, and persona-centered presentation. Each respondent's persona and self-presentation formed by the Instagram account was analyzed.

        일개 중소도시에서의 보건소 주도 NPO 참여유도형 건강도시 추진모형에서의 도시건강 개발계획 개발사례

        Background: The aim of this study was to develop City Health Development Plan(CHDP) which based on the situations of public health center supported NPO participatory style Healthy cities model of mid-sized city. Methods: The beginning of planning is Jan, 2006 and it completed in Jan, 2008. Overall planning process were consist of 21 steps which categorized in 6 stages and the process was based on the working tools for CHDP of WHO centre for Urban health. Jinju public health center and research team of Kosin University conducted every steps of processing with participation of NPOs(Non Pofit Organizations) of Jinju city. Results: Jinju CHDP was consist of three part. First part was goals and objectives, and second part was subjective plans which categorized in 6 divisions. Third part was approaching strategies for CHDP. Conclusion: This study was the first case of development of CHDP in Korea. Following the steps in this study, improved city health development planning will be conducted in another cities in Korea which are in similar public health conditions.

      • Piano Group Lesson에 관한 고찰

        Group Pian Lesson denotes a learning situation in which two or more students interact under the guidance of the teacher in a dynamic learning complex. Each person in the group is constantly involved whether in performance, aural and visual analysis, or constructive criticism of self and peers. Each member feels a responsibility to others for adequate preparation and all have a real sense of personal involvement. At the more advanced level, group instruction may be structured for 1 two-hour session per week(maximum 4 students), 2 one-hour sessions per week, or may involve 1 dyad session(two students for one hour)with a larger group session (1 hour). Shorter lesson periods are scheduled for younger students. A man taking this group Lesson properly can improvise spontaneously and as he is excellent in sight-reading and note memory power, even if he is not a professional Pianist, he plays piano willingly in spare time. We should not view this as "Private lesson versus group lesson". Instead we should consider the best ways to give our students the most in the amount of available time. Not every person can or will teach in group, but all should strive to give students the broad elements of good musicianship. Our society could benefit from more people who have a genuime concern for each other's well-being, success and happiness and a desire to help individuals develop their creative potential. It could be that group learning provides some of the best settings in which this can happen. But, of course, it goes without saying that the private or individual very effective in special cases as follows; ① to perform in concert ② when the special lesson is needed to take part in a contest ③ to prepare the specific performance And, a superior teacher will get good results regardless of the mode of teaching.

      • 해녀콩(Canavalia lineata)의 자엽에서 Concanavalin A의 특성 및 양적 변화

        . The properties of concanavalin A(Con A) was investigated in the mature seeds and the quantitative changes of Con A was studied in the cotyledons during germination and growth of Canavalia lineata. Con A was isolated from the crude extract by Sephadex G-50 in mature seeds and the isolated Con A was separated as four subunits with molecular weights of 30 kD, 21 kD, 17 kD and 11 kD by SDS-PAGE, but Con A subunits with 21 kD, 17k/d and 11kF did not have immunoaffinity for 30kD subunit. About 75㎍ of Con A agglutinated 50μ1 of 1% human erythrocytes and Con A was bound to horseradish peroxidase. Con A subunit with 30kD decreased rapidly 8 days after sowing and the subunits with 17 kD and 11kD decreased remarkably 12 days after sowing, indicating that Con A is hydrolyzed by proteases at late stage of germination.

        수은화합물이 마우스 복강대식세포와 EMT-6 세포에 미치는 효과

        Balb/c 마우스의 복강대식세포 및 유선암에서 기원한 EMT-6 세포를 배양하는 조건에 여러농도의 수은을 첨가하여 nitrite와 nitrate 생성의 변화를 관찰한 결과는 다음과 같다. 복강대식세포 및 EMT-6 세포가 생성하는 nitrite와 nitrate 양은 배양시작 12시간째의 생성량에 비해 24시간 후에는 2배, 36시간 후에는 3배의 농도로 측정되어 된다. 이때 nitrite와 nitrate 농도사이에는 매우 높은 상관관계를 나타냈다. 수은첨가에 따라 nitrite 및 nitrate 생성량은 용량의존적 관계로 현저한 감소를 보이며, 24시간 또는 36시간 후의 세포생존률도 역시 수은농도에 비례하여 감소되는데, 복강대식세포의 생존률이 EMT-6 세포의 생존률보다 더욱 큰 폭으로 감소하였다. 이상의 결과로 배양조건에 수은의 첨가로 인하여 nitrite 및 nitrate 생성량이 감소하는 바 수은이 면역세포의 대사과정에 영향을 주어 nitric oxide 생 성능을 억제시키며, 결국 세포성 면역을 저하시키는 것으로 사료된다. The effect of treatment of mercury chloride on the nitrite and nitrate synthesis was observed in peritoneal macrophages from Balb/c mice and EMT-6 cells in vitro. The cells were cultured in Dulbecco's modified Eagle's medium (DMEM) with cytokines. Amounts of nitrite and nitrate in the culture media after 24 and 36 hours of culture were about 2-fold, 3-fold of those measured after 12 hours respectively. There were very close associations between the amounts of nitrite and nitrate measured in the culture media, according to culture time. The survival rate of peritoneal macrophages was significantly decreased by mercury chloride added into the media in dose-dependent manner, however the survivals of EMT-6 cells were not influenced by mercury chloride concentration in media. Nitrite and nitrate syntheses were dose-dependently decreased by mercury chloride added in culture media. These results reported here suggest that the disorder of cell mediated immunity by mercurials could be related to the inhibition of nitric oxide synthesis which seems to be caused by the inhibition of metabolism of cells.

        Sulfites are easily oxidized by oxigen or air. In this experiment, H_2O_2 was used to oxidize the Ammonium Sulfite. And it was known that as increasing the concentration of solution, the order of its reaction is different. And when the solution reach certain concentration the reaction is zero order. We determinated the variation of concentration of sulfite ion with iodometry which is ever used. On the other hand, we could determinate with refractometry which is new method. On each method the rate constant of the reaction was calculated and it was treated with statistics. In this result, it was known that refractometry can be used instead of Indometry.

      • 네일 디자인의 표현기법과 작품제작에 관한 연구

        This study focused on the expression technique and work manufacturing of nail design. Any woman that wants to be pretty is interested in nail design which is considered as a means to express beauty, intelligence and sensuality. These days, nail design carries heavy weight in completion of total fashion coordination. Good dress, elegant hair style, bright make-up and well-trimmed nails are requirements of modern women. These days, the range of nail design is more expanding and its importance is getting bigger. To maintain and establish such developmental flow properly, we have to break our stereotyped view on nails and accept it in open view. And we have to actively participate in development of new products and technologies and perform academic research on nail design. For the purpose, we have to consider further studies which contribute to understanding exact meaning of nails and necessity and importance of nails.
