국내에 보급되어 이용 가능한 돼지 품종의 부위별 육질특성 탐색

국내 소비자 기호에 적합한 한국형 비육돈 생산을 위한 국내에 보급된 돼지 품종의 육질 특성을 비교하기 위하여, Landrace(L), Yorkshire(Y), Duroc(D), Berkshire(B) 및 Chester White(C)의 다섯 가지 품종의 등심, 목심 및 삼겹살 부위에 대한 육질특성 분석 및 관능평가를 실시하였다. 등심 부위에 있어서 D품종의 지방함량이 다른 품종에 비해 높았으며, 목심과 삼겹살에서는 B품종의 지방함량이 가장 높았다. 육색에서는 C품종만이 등심과 목심 부위에서 $a^*$ 및 $b^*$값이 낮았으며, 삼겹살에서는 지방층의 간섭으로 육색지수 차이가 크지 않았다. 지방함량이 낮은 부위인 등심과 목심에서는 Y품종이 D 및 B품종에 비하여 보수력이 우수하였으나 삼겹살의 가열감량은 D 및 B품종이 낮아, 보수력이나 가열감량과 같은 물리적 특성은 부위별로 매우 다른 양상을 보였다. 삼겹살의 경우 B품종은 높은 지방함량 수치에도 불구하고 가열하여 7일간 보관한 시료에서도 낮은 TBARS값을 보였다. 지방산의 경우 품종 및 부위별로 미세한 차이만 있었으며 품종보다는 사료의 성분 차이로 사료된다. 이화학적 분석 및 관능검사를 토대로 등심에서는 D품종이, 목심에서는 B품종의 육질특성이 상대적으로 우수한 것으로 평가되었으며, 삼겹살에서는 C품종만이 열등한 것으로 평가되었다. 품종별 육질특성을 비교하였을 때 부위별 육질특성이 일치되지 않는 경향을 보였으며, 본 연구결과는 국내 소비자의 선호부위로 알려진 목심과 삼겹살 부위의 육질특성을 간주하면서도 비선호 부위로 알려진 등심의 이용도를 높일 수 있는 돼지선발 체계에 기초적 자료로 이용될 것이다. To compare pork quality from different pig species domesticated for Korean consumers, the meat quality characteristics of 5 different pure breeds of Landrace (L), Yorkshire (Y), Duroc (D), Berkshire (B), and Chester White (C) were determined from the 3 parts of loins, butts, and bellies. The fat content of loins was higher in breed D than in the other breeds, while that of butts and bellies was higher in breed B. The CIE color $a^*$ and $b^*$ values of the loins and butts from breed C were lower than those of the other breeds, but the color values of the belly part did not significantly differ by breed due to the high fat accumulation. The drip loss and cooking loss significantly differed depending on meat parts: breeds D and B were inferior in loins and butts but superior in bellies. The lipid oxidation of raw meat did not increase during the 7 d storage. The cooked butts of breed C had less thiobarbituric acid-reactive substances values than those of the other breeds at 7 d, and the cooked bellies of breeds D and B had less. Moreover, there were only minimal differences in fatty acid compositions by pork breed and part. From the view points of the physicochemical and organoleptic analysis of pork from different pig species, it is estimated that breed D had better meat quality in the loin part and breed B had better meat quality in the butt. The belly meat quality of breed C showed the least value. Although the meat quality of pig species differed depending on the parts and it was difficult to compare the meat quality of a part using the meat quality parameters of another part, the result of this study could provide basic information that can be used to improve the meat quality of different parts of pig species.
Growth Curves Fitting for Body Weight and Backfat Thickness of Swine by Sex

The purpose of this study was to establish proper shipping weight and backfat thickness by applying the growth model to backfat thickness, measured by means of not only body weight, but also ultrasonography, and predicting the changes by age. Three breeds, i.e. Duroc, Landrace, and Yorkshie, were analyzed, and the Gompertz, logistic, and Von Bertalanffy model were used for inference with the parameter of the growth model being sex. As a result, both body weight and backfat thickness showed different growth curve parameters and characteristics at inflection points depending on model selection and sex. As for backfat thickness, in estimating the inflection point, unlike the case of body weight, the inflection ages of the boars of the Duroc breed was earlier than that of sows, whereas the inflection ages of the sows of the Landrace and Yorkshire breeds was earlier than that of boars. More than anything else, in the analysis of the changes in backfat thickness according to body weight, as the body weight reached 145kg, the backfat thickness showed much variation as great as 1.7-3.2 cm in each breed and sex. In addition, unlike the other breeds, the boars of the Landrace breed showed an exponential type of relationship between body weight and backfat thickness. As they grow to become 100 kg or heavier, abrupt change in back fat thickness was confirmed. If the growth of body weight and backfat thickness is understood and the genetic relationship is taken advantage of like this, it would be possible to set desired body weight and backfat thickness, and thus help effectively set the shipping time. If not only the phenotype, but also genetic parameters about growth characteristics are estimated and analyzed additionally, more effective data can be generated.
감초폴리페놀 추출효율에 있어 열처리, 에탄올 농도, 추출시간 및 용매비율이 미치는 영향 탐색

Effects of pretreatment and extraction conditions on total polyphenol yield from licorice root were investigated using statistical method. For pretreatment, heat treatment at $121^{\circ}C$ for 10 min was applied. Licorice root content in solvent (10, 20, and 30%) ethanol concentration (20, 40, and 60%) and reaction time (1, 2, and 3 h) were used as variables for extraction conditions. Two experiments, with heat treated and no treated licorice, were prepared with same experimental design. Box behnken design was employed and produced a total of 15 trials. Total polyphenol yield from licorice root was not affected by heat treatment. Among variables, licorice content in solvent showed most significant effect regardless of other variables (p<0.05). Finally, optimum conditions for the extraction of total polyphenol from licorice root was detected as following: 10% of licorice in solvent, 52% ethanol as solvent, 2 h of reaction time and non-heat treatment and the extraction yield from optimized condition was 17.6 mg/g licorice root.

The objective of the study was to evaluate the quality characteristics of sun-dried Hanwoo beef jerky added with the extract of Citrus junos seib. or Prunus mume. Hanwoo beef shank muscles were sliced, marinated, and sun-dried at $25^{\circ}C$, relative humidity of 35%. The physicochemical quality and microbiological safety of the Hanwoo beef jerky aerobically packaged were analyzed during the storage of $25^{\circ}C$. The moisture content of beef jerky with Citrus junos seib. was the lowest among the treatments after 20 d. Citrus junos seib. and Prunus mume jerky after 10 d had significantly lower aw than those after 0 and 20 d (p<0.05). The pH values of jerky generally ranged from 5.76 to 5.84. The pH value of Prunus mume jerky was significantly higher than those of other jerky samples (p<0.05). Prunus mume jerky showed significantly lower TBARS value than the others after 20 d (p<0.05). Citrus junos seib. jerky showed a significantly lower lightness ($L^*$), redness ($a^*$) and yellowness ($b^*$) than the others during the storage (p<0.05). Prunus mume samples after 10 d had significantly higher $L^*$, $a^*$, and $b^*$ values than the others (p<0.05). With regard to sensory properties, Citrus junos seib. and Prunus mume jerky showed significantly higher flavor and overall acceptability scores than the control (p<0.05). The extracts of Prunus mume will be used in sun-dried Hanwoo beef jerky as a natural agent to retard lipid oxidation and to improve meat color.

Backgroud: Hepatitis C virus(HCV) is well known major cause of posttransfusion hepatitis. There were a lot of studies about the prevalence of anti-HCV. But, most of these focused on healthy blood donors or patients with liver diseases in urban areas. So they may not represent the prevalence of anti-HCV in the entire Korean population. This study focused on people of a rural area which consisted of six towns near Reservoir Juam in the Chonnam province in Korea, Methods: Nine hundred and sixty three persons were selected by multi-stage cluster sampling method from January to February in 19%, Anti-HCV and HBsAg were examined by microparticle enzyme immunoassy(MELA; Abbott Co., USA). Alanine aminotransferase(ALT) was examined by enzyme kinetic method. Results: 1) The positivity of anti-HCV in all subjects was 0.9%. 2) The positivity of anti-HCV in male(1.1%) was not significantly higher than in female(0.9%). 3) The positivity of anti-HCV was 0% below the 5th decade, 0.7% in the 6th decade, 1.4% in the 7th decade, 1.7% in 8th decade, 0% above the 9th decade. There was no significant relationship between the positivity of anti-HCV and age. 4) The positivity of anti-HCV was 0.8% in normal ALT( 435U/L) subjects, and 1.6% in elevated ALT(>35U/L) subjects. There was no statistical relationship between the positivity of anti-HCV and ALT level. 5) HBsAg was serologically negative in all of nine anti-HCV positive subjects. Conclusion : The positivity of anti-HCV was 0.9% in rural area of Korea and was similar to the prevalence of anti-HCV in urban areas.
유전 및 육종 : 종돈의 성장 및 체형 형질에 대한 유전력 및 유전모수 추정에 관한 연구

본 연구에서는 18,668두의 자가검정 및 입회검정된 돼지 자료를 이용하여 유전모수를 추정하였다. 2007년부터 2011년 4월까지 전라남도 영광 소재 N 종돈장에서 검정된 Duroc, Berkshire, Landrace 및 Yorkshire종 18,668두에 대한 자료를 근거로 하여 돼지의 주요 산육형질인 일당증체량, 체고 및 체장에 대한 유전력, 유전상관 및 표현형상관을 다형질 Animal model을 이용하여 추정하였다. 본 연구에서 추정된 Duroc종에 대한 일당증체량, 체고 및 체장에 대한 유전력은 0.22, 0.37, 0.4로 추정되었으며 Berkshire종의 유전력은 0.58, 0.34 및 0.48로 나타났고 Landrace종의 각 형질의 유전력은 0.26, 0.41 및 0.52이었으며 Yorkshire종의 유전력은 0.28, 0.39 및 0.43을 나타내었다. 본 연구에서 추정된 Duroc의 주요 경제 형질간의 유전 상관 및 표현형 상관은 일당 증체량과, 체고, 체장, 체고와 체장간에 각각 유전, 표현형 상관 0.33, 0.47과 0.42, 0.48 그리고 0.57 및 0.41로 추정되었으며 Berkshire종 유전 상관 및 표현형 상관은 0.75, 0.70 및 0.53, 0.58 그리고 체고의 대한 체장은 0.69 및 0.57을 나타내었다. Landrace종의 경우 유전 상관 및 표현형 상관이 일당증체량과, 체고, 체장, 체고와 체장간에 각각 유전, 표현형 상관 0.17, 0.38과 0.34, 0.46 그리고 0.61 및 0.52로 추정 되었으며 Yorkshire종은 0.50, 0.53 및 0.47, 0.56 그리고 0.71, 0.59로 추정되었다. The purpose of this study was to estimate genetic parameters for productive traits in swine. Productive traits were considered on average daily gain(ADG), body height(BH) and body length(BL). Genetic analysis was consisted of 18,668 heads for productive traits which were based on on-farm performance tested from May, 2007 to Apr, 2011. For estimating genetic parameters on productive traits, single best model was fitted after finding source of variance on fixed and random effects and estimated with a multiple trait animal model by using DF-REML(Derivative-Free Restricted Maximum Likelihood). The estimated heritabilities of Duroc, Berkshire, Landrace and Yorkshire 0.22~0.58 for the average daily gain, 0.34~0.41 for the body height and 0.4~0.52 for the body length, respectively. Phenotypic correlations of average daily gain with body height and body length for the four breeds were 0.42~0.48, 0.53~0.58, 0.34~0.46 and 0.47~0.56, respectively. Phenotypic correlations of body height with body length were 0.41, 0.57, 0.52, 0.59, respectively. The estimated genetic correlation coefficients of average daily gain with body height and body length estimated for the four breeds were 0.34~0.47, 0.70~0.75, 0.17~0.38 and 0.50~0.53, respectively. The estimated genetic correlation coefficients of body height with body length were 0.57, 0.69, 0.61 and 0.71, respectively.
