The objective of this study was investigated to apply the fucoidan and laminarin extract from low-grade Undaria pinnatifida to real food product, a pork patty. Pork patties added with fucoidan and laminarin showed lower lipid oxidation and the inhibition against lipid oxidation was shown to be dependent on the irradiation doses. The Hunter color values of pork patty added with fucoidan increased significantly with an increase of irradiation dose. The hardness profiles of the patties with fucoidan and laminarin was decreased, but the amount of water in the patties was increased. Also, the combination of gamma irradiation and addition of fucoidan and laminarin was shown to be effective for the microbiological control. These results suggested that gamma irradiation and fucoidan and laminarin treatment showed the positive effect on microbial stability and quality of the pork patty.
자녀의 학업성취에 미치는 가족배경, 사회자본 및 문화자본의 영향

본 연구에서는 부모의 사회경제적 지위가 자녀의 학업성취를 통해 재생산되도록 만드는 변수들의 영향을 밝히려고 하였다. 가족의 사회경제적 변수, 극히 사회자본과 문화자본이 독립적으로 또는 가족배경을 맥락으로 자녀의 학업성취도에 미치는 영향에 대해 분석하였다. 연구대상으로는 중고등학생 총 2771명의 사례를 분석하였다. 중학생에 비해 고등학생들의 학업성취에 미치는 부모의 사회경제적 배경변수의 영향력은 감소하였다. 그러나 사회자본과 문화자본의 영향력은 증가하였다. 성별에 따라 분석한 결과, 남학생의 경우는 부모의 사회경제적 변수와 가족의 사회자본과 문화자본의 영향력이 동시에 존재하나 여학생의 경우에는 사회자본과 문화자본의 영향이 거의 없고, 부모의 사회경제적 변수 중에서 아버지의 직업과 자산이 영향을 미치는 것으로 분석되었다. 사회자본과 문화자본의 영향력은 상당부분 부모의 사회경제적 자원에 흡수되는 경향이 있으나 가족의 자녀에 대한 관심은 여전히 학업성취도에 중요한 영향을 미치는 사회자본임을 발견하였다. 이번 연구결과를 통해 경제적 지원만으로는 자녀의 학업성취를 높이기 어려우며 사회자본이나 문화자본과 함께 결합된 사회경제적 지원이 자녀의 학업성취에 기여함을 발견하였다.
감마선 조사에 의한 바닐라 아이스크림의 물리화학적 및 관능적 특성 평가

This study evaluated the physicochemical and sensory characteristics of vanilla ice cream treated with gamma irradiation. The general composition of the vanilla ice cream used for the study was 45.4-53.3% moisture, 5.5-5.9% fat and 3.9-4.1% protein, and these values did not change following gamma irradiation. The Hunter L, a and b values were slightly decreased following gamma irradiation. The fatty acid composition of the ice cream included caprylic acid, capric acid, lauric acid, myristic acid, palmitic acid and stearic acid, and there was no detectable change following irradiation. There was no significant difference in TBARS (2-thiobarbituric acid reactive substances) values between non-irradiated and irradiated samples at a dose of 3 kGy or less (p<0.05). Sensory evaluation indicated that gamma-irradiated vanilla ice cream did not show any difference in color relative to non-irradiated ice cream. However, gamma irradiation did affect the flavor, taste and overall acceptability of ice cream at doses above 3 kGy. These results indicate that gamma irradiation at 3 kGy is an effective treatment for sustaining the physicochemical characteristics of vanilla ice cream with minimal changes in sensory characteristics, though further studies should be carried out to reduce the deterioration of sensory qualities induced by gamma irradiation.

With the ever-changing medical tourism environment. the study has delved into issues rangmg from judged value on medical tourism service quality. The survey result on the questionnaire done by the medical specialist on tourists reveals the necessity for adopting the following policy measures in order to facilitate medical tourism industry; new tourist package product development through the revision of medical stipulation, discriminating associated package tourist program, busmess infrastructure buildup for the institutional and policy readiness for medical tourist, institutionalized national certificate for the medical tour service and reparation system with legal safeguard. Lessons learned from the study are; the necessity for the prompt issuance of Visa for medical tourists of American Citizens, the improvement of medical tourism and immigration control service and the development of various medical tourism packages. Matching marketing approaches are needed to meet the needs of various medical tourists per each diverse form.

수산 가공 부산물을 천연 기능성 소재로 개발하기 위한 기초 자료를 마련하고자 문어 자숙액 에탄올 추출물을 전자선 조사하여 이에 대한 항산화, 항고혈압 및 미백효과를 평가하였고, 이와 더불어 대조군(0 kGy)의 생리활성과 비교하였다. 전자선 조사 문어 자숙액 에탄올 추출물의 색도를 측정한 결과 감마선 조사와는 달리 조사선량이 증가함에 따라 색상이 변화되었음을 확인하였다. DPPH 라디칼 소거능은 전자선 조사선량의 증가에 따라 유의적으로 증가하였으며, 이러한 소거능의 증가는 단백질의 항산화력의 증가가 원인인 것으로 판단되었다. ACE 및 tyrosinase 저해 활성 측정결과 조사선량이 증가함에 따라 각 활성이 증가하였다. 따라서 수산가공 폐자원인 자숙액이 전자선 조사에 의하여 생리활성이 개선된 기능성식품 소재로 활용될 수 있으며, 또한 전자선 조사의 산업적인 활용이 더욱 활발할 것으로 기대한다. Effect of electron beam irradiation on various physiological property changes of the ethanol extract from the cooking drips of Enteroctopus dofleini was investigated. The Hunter's color values of extract were increased with increasing irradiation doses. The radical scavenging activity of the extract was increased depending on the irradiation dose. The inhibitory activities against tyrosinase and angiotensin Ⅰ converting enzyme were also increased with irradiation dose. It was also shown that the contents of proteins and polyphenols were increased by the irradiation. It was reasoned that the antioxidant activities were increased by proteins modified by the irradiation.
재즈댄스 프로그램이 초등학생의 운동능력과 창의력 향상에 미치는 영향

The purpose of this study was to investigate the effect of a jazz dance program for a group of elementary school students on their motor ability and creative thinking abilities. Another purpose was to provide data from a jazz dance course and contribute to the literature in the field of jazz dance, regarding the improvement in the jazz dance students` motor ability and creative thinking abilities. The subjects of this study were seventeen female first graders enrolled in an after-school program at an elementary school in Suwon, Kyeong-gi, Korea. The students had two sessions a week(ninety minutes for each session), for the period of twelve weeks. The students` motor ability and creative thinking abilities before the program and those after the program were compared and analyzed to answer the research questions. the results were follow; 1) Regarding the students` motor ability after the course: the students` Muscle strength, Muscular endurance, agility, power, flexibilty, balance improved and balance showed the biggest improvement. 2) The analysis of the students` creative thinking showed that their fluency, originality, and delicaty improved and their delicaty improved the most among the three. There was no significant improvement in the students` abstractness of titles and resistance to premature closure even though there was a slight difference was noticed in average. In conclusion, this study showed that the jazz dance program was satisfied the young students` desire to move and improved their motor ability and creative thinking abilities.
감마선 조사에 의한 문어 자숙액 에탄올 추출물의 생리활성 개선

수산가공 폐기물 중 하나인 문어 자숙액을 이용하여 천연기능성 소재로 개발하기 위한 기초자료를 마련하고자 감마선 조사(0, 1, 3, 5, 7, 10 kGy)에 의한 문어 자숙액 에탄올추출물의 생리활성 변화를 알아보았다. 감마선 조사한 문어자숙액의 전자공여능 및 총 폴리페놀 함량을 측정한 결과 전자공여능의 경우 조사선량이 증가함에 따라 65.87%에서 72.88%로 증가하였으며, 총 폴리페놀 함량의 경우는 406.32 ppm에서 476.25 ppm으로 증가하는 경향을 보였다. 그리고 tyrosinase 저해 효과를 측정한 결과 조사선량이 증가함에 따라 57.49%에서 86.27%로 활성이 증가한 것으로 확인하였다. 따라서 감마선 조사기술은 수산가공 폐자원인 문어 자숙액의 생리활성을 개선하여 식품 및 공중보건산물의 첨가제로 활용할 수 있다고 사료된다. Physiological activities of the 70% ethanol extract from boiled-water of Enteroctopus dofleini (BE) upon a gamma irradiation were determined to examine the possible use of the food processing by-product as a functional material for food or cosmetic composition. Electron donating ability and the content of total phenolic compounds increased from 65% to 72% and from 406 ppm to 476 ppm, respectively, by 10 kGy gamma irradiation. A Salmonella mutagenicity assay indicated that the gamma-irradiated BE did not show any mutagenicity. Tyrosinase inhibition activity of the irradiated BE also increased from 57% to 86% with irradiation doses. These results show that irradiation can be used to increase the physiological activities of BE for its potential use as food or cosmetic materials.
