        Fatty Acid Composition and Volatile Constituents of Protaetia brevitarsis Larvae

        A total of 48 different volatile oils were identified form P. brevitarsis larvae by gas chromatography/mass spectrometry (GC/MS). Acids (48.67%) were detected as the major group in P. brevitarsis larvae comprising the largest proportion of the volatile compounds, followed by esters (19.84%), hydrocarbons (18.90%), alcohols (8.37%), miscellaneous (1.71%), aldehydes (1.35%) and terpenes (1.16%). The major volatile constituents were 9-hexadecenoic acid (16.75%), 6-octadecenoic acid (14.88%) and n-hexadecanoic acid (11.06%). The composition of fatty acid was also determined by GC analysis and 16 fatty acids were identified. The predominant fatty acids were oleic acid (C18:1, 64.24%) followed by palmitic acid (C16:0, 15.89%), palmitoleic acid (C16:1, 10.43%) and linoleic acid (C18:2, 4.69%) constituting more than 95% of total fatty acids. The distinguished characteristic of the fatty acid profile of P. brevitarsis larvae was the high proportion of unsaturated fatty acid (80.54% of total fatty acids) versus saturated fatty acids (19.46% of total fatty acids). Furthermore, small but significant amounts of linoleic, linolenic and γ-linolenic acids bestow P. brevitarsis larvae with considerable nutritional value. The novel findings of the present study provide a scientific basis for the comprehensive utilization of the insect as a nutritionally promising food source and a possibility for more effective utilization.

      • Effect of synthetic and food waste-derived volatile fatty acids on lipid accumulation in <i>Rhodococcus</i> sp. YHY01 and the properties of produced biodiesel

        <P><B>Abstract</B></P> <P>Food waste-derived volatile fatty acids (VFAs) can act as a renewable feedstock for biodiesel production. In synthetic media, <I>Rhodococcus</I> sp. YHY01 was able to utilize various organic acids (acetate, butyrate, lactate, and propionate) as a carbon source. Butyrate was the optimal carbon source, having a minimum inhibitory effect on growth, and a maximum growth yield coefficient (Y<SUB>x/s</SUB> 0.288 g dcw/g butyrate) and fatty acid yield coefficient (Y<SUB>f/s</SUB> 0.206 g/g butyrate), compared to other organic acids (lactate, propionate, and acetate). Acetate, butyrate, and lactate mostly supported the production of fatty acids with an even number of carbons, whereas propionate enhanced the content of odd-numbered fatty acids. Response surface methodology (RSM) design study resulted in maximum biomass (2.8 g/L) and fatty acid yield (1.9 g/g) with acetate:butyrate:lactate (0.333:0.333:0.333) as a carbon source. Culture of <I>Rhodococcus</I> sp. YHY01 in media containing food waste-derived VFAs as the carbon source had a biomass (3.2 g dcw/L), fatty acid yield (2.2 g/L), and fatty acid accumulation (69% w/w) under nitrogen-limited condition. Biodiesel produced from food waste had an iodine value (IV, 37), cetane number (CN, 63), high heating value (HHV, 39), density (υ, 3.9), and viscosity (ρ, 0.868) that meet international standards.</P> <P><B>Highlights</B></P> <P> <UL> <LI> <I>Rhodococcus</I> sp.         Correlation of Volatiles and Fatty Acids in Thermally Oxidized Fatty Acid Model Systems Using Statistical Approaches

        Distributions of volatiles and fatty acids from thermally oxidized free fatty acids (FFA) at 93℃ for 200min were analyzed and results were statistically compared using principal component analysis (PCA) and multiple factor analysis (MFA). Mixtures of FFA were composed of linoleic (57.54%), oleic (29.99%), linolenic (5.10%), palmitic (2.95%), stearic (0.26%), and arachadic (1.68%) acids. As thermal oxidation increased for 200 min, peak areas of total volatiles increased from 0.497 to 1.619 (1×107 ion counts), the ratio of unsaturated to saturated fatty acids decreased from 21.65 to 17.65, 3 kinds of pattern changes of fatty acids, and 5 types of pattern changes of volatiles were observed. First principal component (PC1) and second principal component (PC2) expressed 77.34 and 10.02% of the data variability for the fatty acids during oxidation,respectively and 73.09 and 15.66% for the headspace volatiles, respectively. PCA and MFA analyses on fatty acids and volatiles showed that 2-heptenal had the highest correlation with the changes of linoleic acid compared to other volatiles under current oxidation conditions.

        호맥 사일리지의 급여가 비육돈의 생산성, 혈액성상 및 도체특성에 미치는 효과

        본 연구는 조사료인 호맥 사일리지를 배합사료와 혼합급여 시 비육돈의 성장, 혈액성상 및 도체특성에 미치는 영향을 알아보기 위해 시험을 실시하였다. 3원 교잡종($Landrace{\times}Yorkshire{\times}Duroc$) 비육돈 18두를 공시하였으며 시험개시시 평균체중은 $74.22{\pm}0.71kg$이었고 28일간 개체별 사양시험을 실시하였다. 시험설계는 호맥 사일리지 첨가에 따라 1) Con(basal diet), 2) S1(basal diet+1.66% rye silage), 3) S2(basal diet+3.32% rye silage)로 3처리로 하여 처리당 6반복, 반복당 1마리씩 $1.8{\times}1.8m$ 크기의 돈방에 개별 수용하였다. 생산성에서 $4{\sim}7$주 동안 일당사료 섭취량에서는 CON구가 S1구와 S2구와 비교하여 유의적으로 높게 나타났다(p<0.05). 전체 사양시험기간 동안($0{\sim}7$주) 일당사료섭취량에서는 CON구와 S2구가 S1구와 비교하여 유의적으로 높게 나타났다(p<0.05). 혈중 스트레스 관련 호르몬인 코티졸 함량의 변화는 대조구와 비교하여 호맥 사일리지를 급여한 S1구와 S2구에서 유의적으로 감소하였다(p<0.05). 육색에서 명도를 나타내는 $L^*$값은 S2구가 CON구와 비교하여 유의적으로 높게 나타났고(p<0.05) 황색도를 나타내는 $b^*$값은 S1구와 S2구가 CON구와 비교하여 높게 나타났다(p<0.05). 도체 등지방 두께는 CON구가 S1구와 S2구와 비교하여 유의적으로 높게 증가하였다(p<0.05). 살코기 내 지방산 조성에서는 포화지방산 중 palmitic acid와 stearic acid의 함량은 CON구가 S1구와 S2구와 비교하여 유의적으로 높은 함량을 나타내었다(p<0.05). 불포화 지방산에서는 eicosenoic acid와 linolenic acid의 함량이 S2구가 CON구와 S1구와 비교하여 유의적으로 높았다(p<0.05). 총 포화지방산 함량은 CON구가 다른 처리구와 비교하여 가장 높았으며(p<0.05) 포화지방산과 불포화지방산 비율에서는 S1구와 S2구가 CON구와 비교하여 유의적으로 높은 결과를 보였다(p<0.05). 지방 내 지방산 조성에서는 불포화지방산 중 linolenic acid의 함량은 S2구가 S1구와 CON구와 비교하여 유의적으로 높았다(p<0.05). 건물 소화율에서는 S1구와 S2구가 CON구와 비교하여 유의적으로 높게 나타났고(p<0.05) 질소 소화율에서는 S1구가 처리구중에서 가장 높은 결과를 보였다(p<0.05). 분변 내 휘발성 지방산 발생량에서는 분을 1일간 발효 후 측정한 결과 S1구와 S2구가 CON구와 비교하여 유의적으로 높게 나타났다(p<0.05). 결론적으로, 비육돈 사료 내 3.32%의 호맥 사일리지의 혼합급여는 혈액 내 코티졸 함량, 도체육의 명도와 황색도, 지방산 조성 및 영양소 소화율에 영향을 미치는 것으로 사료되나 이에 대한 보다 많은 연구가 필요할 것으로 판단된다. This study was conducted to evaluate the effects of feeding rye silage on growth performance, blood and carcass characteristics in finishing pigs. The total of eighteen($Landrace{\times}Yorkshire{\times}Duroc$) pigs($74.22{\pm}0.71kg$) were used for 49-day assay. Dietary treatments included 1) CON(basal diet), 2) S1(1.66% rye silage) and 3) S2(3.32% rye silage). In growth performance, from 4 to 7 weeks, average daily feed intake(ADFI) in pigs fed CON diet was higher than pigs fed S1 and S2 diets. Through the entire experimental period($0{\sim}7$ weeks), a ADFI in CON and S2 treatments was higher than S1 treatment (p<0.05). Serum cortisol concentration of pigs fed rye silage decreased significantly compared to pigs fed basal diet (p<0.05). The Hunter's $L^*$(lightness) value of loin in the pigs fed S2 diet was higher than that of loin in the pigs fed CON diet(p<0.05). The $b^*$(yellowness) value of loin in the pigs fed S1 and S2 diets were higher than CON treatment(p<0.05). Backfat thickness in CON treatment increased significantly compared to S1 and S2 treatments(p<0.05). Among fatty acid contents of lean meat, the contents of palmitic and stearic acids were significantly higher in CON than others(p<0.05), where as eicosenoic and linolenic acids were the highest in S2 treatment among treatments(p<0.05). Total SFA(saturated fatty acid) was the highest in CON(p<0.05) and S1 and S2 treatments were higher USFA/SFA(unsaturated fatty acid/saturated fatty acid) ratio than CON treatment. In fats, linolenic acid was higher in S2 treatment than those of S1 and CON treatments(p<0.05). Digestibility of dry matter in pigs fed S1 and S2 diets was greater than that of pigs fed CON diet(p<0.05) and S1 treatment was higher than others on digestibility of nitrogen(p<0.05). VFA(volatile fatty acid) emission from focal, measured after 1 day, increased significantly in pigs fed S1 and S2 diets(p<0.05). In conclusions, our results showed that feeding rye silage might be beneficial in decrease of cortisol concentration, hunter's $L^*$(lightness) value and $b^*$(yellowness), fatty acid contents, and nutrient digestibility. However, there should be more study on the relationship between feeding rye silagr and finishing pigs.

        초임계 이산화탄소를 이용한 참치안구유로부터 지방산 및 휘발성 성분의 분리 동정

        참치 안구유 원시료의 분석결과 모두 129개의 peak가 검출되었으며, 이중 99개의 peak에 대해서는 각 성분을 동정하였으나, 신빙성이 낮은 30개의 물질에 대해서는 미동정으로 처리하였다. 동정된 성분은 모두 99종으로, alkene류 24종, aldehyde류 20종, alkane류 15종, alchol류 13종, ketone류 9종, alkyne류 7종, 황화합물 3종, furan류 2종, 방향성화합물 2종, acid 2종, phenol류와 prydazine이 각 1종씩 검출 동정되었다. Aldehyde류 중 hexanal (threshold=4.5ppb), heptanal(threshold=31ppb)은 특징적인 풀 냄새를 갖지만 어유의 비린내와는 크게 밀접한 관련이 없는 것으로 보인다. 반면, 어유의 불쾌취에 크게 관여하는 것으로 보이는 2-octenal, (E)-2-nonenal (threshold=0.08ppb), 및 (Z)-4-decenal(threshold=0.5ppb)이 검출되었으며 이들은 각각 강한 지방취와 card-boardlike을 나타내는 물질로 나타났다. 이들 aldehyde류 중 (Z)-4-decenal의 경우 arachidonic acid의 산화생성물로 알려져 있다. 또한 (E,E)-2,4-hepadienal의 경우 진한 지방취와 비린내를 유발하는 물질로 알려져 있다. 초임계 이산화탄소를 이용한 참치 안구유의 휘발성 성분의 분리에는 $50^{\circ}C$, 200bar의 조건에서 99.4%의 감소율을 나타내어 참치 안구유의 휘발성 성분에 가장 효과적인 조건으로 판단되었다. 이 조건에서는 소량의 heptanal을 제외한 대부분의 악취유발 가능성 성분이 분리되었으며, 비린내와 같은 어유 특유의 이취를 유발하는 성분은 모두 분리되는 것으로 나타났다. 참치 안구유속에서 동정된 21종의 악취 유발 가능성분의 분리에 있어서는 $40^{\circ}C$와 $60^{\circ}C$의 모든 압력조건에서 각각 유사한 분리효율을 나타내었으며, $40^{\circ}C$와 $50^{\circ}C$의 온도조건에서는 압력이 증가할수록 분리효율이 증가하는 경향을 나타내었다. 반응온도 $50^{\circ}C$에서는 200bar의 압력에서 가장 높은 분리효율을 나타내었고 안구유속의 휘발성 성분의 분리효율은 99.4%q에 달했다. 초임계 이산화탄소를 이용하여 참치안구유의 휘발성성분을 분리 할 경우 다량으로 함유되어있는 고도불포화 지방산의 산화를 억제하면서도 높은 이취성분의 분리가 가능할 것으로 생각된다. Isolation and Identification of fatty acid and volatile compounds in tuna fish oil were successfully carried out using supercritical carbon dioxide. Samples of the oil were extracted in a 56 ml semi-batch stainless steel vessel under conditions which ranged from 80 to 200 bar and 40 to $60^{\circ}C$ with carbon dioxide flows from 10 ml/min. Volatiles in the oil extracted from the samples with supercritical carbon dioxide were analyzed by gas chromatography, mass detector with canister system. The extracts were contained with various fatty acids, 57.0% of unsaturated fatty acids such as docosahexaenoic acid(DHA) and eicosapentaenoic acid(EPA), and 43.0% of saturated fatty acids. The aroma compounds in the oil showed over 129 peaks, of which 100 compounds were identified. Volatile components included 2,4-hepatadienal(fishy), dimethyldisulfide (unpleasant), dimethyltrisulfide (unpleasant) and 2-nonenal(fatty). The isolation efficiency of the volatile compounds from the samples was 99.4% at $50^{\circ}C$ and 200 bar.

      • Decomposition of volatile fatty acids using electron beam irradiation

        <P><B>Abstract</B></P> <P>Volatile fatty acids (VFAs) are representative odorous compounds. This study was carried out to decompose VFAs using electron beam irradiation. Acetic acid, propionic acid, butyric acid, isovaleric acid, and valeric acid were used as target VFAs. In order to confirm the decomposition efficiency and characteristics by various influential factors, experiments on the absorbed dose, background gas, and initial concentration were performed. The results confirmed that the removal efficiency increased with an increase of the absorbed dose. In addition, the removal efficiency was increased with an increase of the molecular weight of these compounds (in the following order: acetic acid < propionic acid < butyric acid < isovaleric acid < valeric acid). The removal efficiencies of all target VFAs were highest when used with O<SUB>2</SUB> as a background gas. We found the lowest removal efficiency at the He atmosphere. The results of by-product analysis confirmed that valeric acid was decomposed into butyric acid and propionic acid, and then decomposed into acetic acid.         쑥 분말의 급여가 계육의 저장기간 중 VBN, TBARS 및 지방산 조성에 미치는 영향

        The goal of this study was to investigate the effects of dietary mugwort on the proximate composition, volatile basic nitrogen (VBN), thiobarbituric acid reactive substance (TBARS) and fatty acid in chicken meats. One hundred sixty broiler chicks (1 d old) were assigned to one or four dietary groups: Control; commercial feed supplemented with 1% mugwort (T1); commercial feed with 3% mugwort (T2) and commercial feed with 5% mugwort (T3). After 42 d, broilers from each group were slaughtered and meat samples were vacuum packaged and stored at $4{\pm}1^{\circ}C$ over a period of 0, 1,2,3, and 4 wk. Chicken breast was not influenced by all treatments in moisture, crude protein and crude fiber, while crude fat was lowered (p<0.05) in chickens fed with the T2 and T3 diets compared to the control and T1 diets. All treatments with mugwort diets tended to have decreased VBN values for chicken breast and thigh compared to control. As storage time increased, VBN was increased for all chickens (p<0.05). No significant differences in TBARS were observed among all treatments at 0 wk. TBARS values were reduced with the T2 and T3 diets and initially increased from 0 through 3 wk, then abruptly decreased at 4 wk. Dietary mugwort supplementation resulted in increased stearic acid (excepted T2) and oleic acid and decreased linoleic acid. Stearic acid in thigh meat was decreased in the T1, T2 and T3, however linoleic acid levels tended to increase with mugwort powder supplementation. It is concluded that dietary mugwort has a positive effect on increasing unsaturated fatty acid contents and decreasing saturated fatty acids.

        Biogenic Amine, Fatty Acid, and Volatile Compound Contents in Ivorian Traditionally Fermented Fish “Adjuevan”

        This study identified biogenic amines, fatty acids, and volatile compounds in adjuevan, an Ivorian traditionally salted and fermented fish. Samples were obtained from two processing methods (method 1: entire fish adjuevan; method 2: both sides filleted adjuevan) with the fish species Galeoides decadactylus. Biogenic amines found in freshly produced adjuevan were histamine, putrescine, cadaverine, tyramine, β-phenyl ethylamine, and spermidine. Among these, the most prevalent were β-phenyl ethylamine and cadaverine. Biogenic amine contents varied according to the processing method but remained lower than levels considered hazardous for human health. The major fatty acids present in adjuevan from method 1 were docosahexaenoic acid, palmitic acid, and oleic acid. In adjuevan from method 2, the major fatty acids were oleic acid, stearic acid, and palmitic acid. The omega (ω)-3/ω-6 ratio was 8.87 and 4.12 for adjuevan from methods 1 and 2, respectively. Most of the fatty acids are considered healthy fats, making adjuevan a useful food for treating and preventing lifestyle diseases. The volatile compounds found composed of 19 aldehydes, 12 alcohols, 7 esters, 7 ketones, 3 furans, 10 aromatic compounds, and 7 acids with aldehyde, alcohol, and ester compounds as the predominant groups. Among the aldehydes, 2,4-heptadienal (E,Z), octanal, and 2-octenal (E) were most prevalent in adjuevan from method 1, whereas 2-nonenal (E), 2,4-heptadienal (E,Z), and octanal were most prevalent in adjuevan from method 2.

        Quantification of volatile fatty acids from cattle manure <i>via</i> non-catalytic esterification for odour indication

        <P><B>Abstract</B></P> <P>This report proposes a new approach to evaluate the odour nuisance of cattle manure samples from three different cattle breeds (<I>i.e.</I>, native cattle, beef cattle, and milk cow) by means of quantification and speciation of volatile fatty acids (VFAs). To this end, non-catalytic esterification thermally induced in the presence of a porous material (silica) was undertaken, and the optimal operational parameters such as the derivatizing temperature (330°C) for the maximum yield (≥99±0.4%) of volatile fatty acid methyl esters (VFAMEs) were established. Among the VFA species in cattle manure based on quantification of VFAs, the major species were acetic, butyric and valeric acid. Considering the odour threshold of each VFA, our experimental results suggested that the major contributors to odour nuisance were C<SUB>4–5</SUB> VFA species (<I>i.e.</I>, butyric and valeric acid). Hydrothermal treatment was performed at 150°C for 0–40min to correlate the formation of VFAs with different types of cattle feed formulations. Our experimental data demonstrated that the formation of total VFAs is linearly proportional to the hydrothermal treatment duration and the total content of VFAs in native cattle, beef cattle, and milk cow manure samples reached up to ~1000, ~3200, and ~2800ppm, respectively. Thus, this study demonstrated that the degree of VFA formation is highly dependent on cattle feed formulations, which rely significantly on the protein content. Furthermore, the hydrothermal treatment provides a favourable condition for generating more VFAs.
