        United States beef quality as chronicled by the National Beef Quality Audits, Beef Consumer Satisfaction Projects, and National Beef Tenderness Surveys - A review

        Meat quality is a very difficult term to define because it means different things to different people. When purchasing beef, consumers in the United States are likely to consider color, price, marbling level, subcutaneous fat trim, or cut thickness when determining the quality of beef. Once consumers have consumed the product, meat quality becomes exponentially more difficult to define due to the subjective nature of this term. Traditionally, tenderness, juiciness, and flavor have been considered the three most important factors that determine the palatability of beef. Therefore, American meat science beef research and industry focus has turned to measuring and quantifying these 3 attributes objectively and subjectively, and to determining what influences them. In reviewing the scientific literature, attempting to meaningfully summarize the findings of the thousands of studies on beef meat quality is impossible due to the inherent differences in the objective and methodology of studies. Fortunately, the United States beef industry and their national trade association, the National Cattlemen's Beef Association (NCBA), have conducted numerous surveys and audits to characterize the quality of the products being produced and marketed by their cattlemen and the palatability perceptions of their consumers. The data produced by these studies is quite large and impossible to summarize in entirety in this review. Therefore, this review concentrates on the most important attributes that determine the value of a beef carcass and objectively measured and consumer-assessed palatability characteristics of fresh meat from these carcasses from 1987 through 2010.

        단체급식소 쇠고기 이용 실태 및 영양사의 쇠고기 품질에 대한 인식

        The purpose of this study was to compare the usage of beef and foodservice managers` perceptions of beef quality by foodservice type. A survey was conducted on 546 dietitians, and 499 acceptable responses were used for data analysis. By weight, pork was the most used meat in foodservice institutions, followed by poultry and beef. More than half of the foodservices selected meat suppliers by competitive bidding. Approximately 85.8% of the respondents used Hanwoo beef, followed by Australian beef and Youku beef. Beef type differed significantly by foodservice type (P<0.001): most of the schools and social welfare facilities used Hanwoo beef, whereas most hospitals and business/industry operations used Australian beef. When purchasing beef, safety of beef was rated the most important, while eco-friendliness was rated the least important. Most of the dietitians understood that marbling is one of the determinants of the beef quality, but were not aware of other components. Dietitians that selected Hanwoo and Youku beef were more satisfied with quality, taste, nutrition, freshness, country of origin, package, customer, preference, and availability for various menus than those who used imported beef. Dietitians who used Hanwoo beef were the most satisfied with country of origin, whereas the others were the most satisfied with safety. Since the dietitians are in charge of planning menus and selecting meat suppliers at foodservice institutions, they should make knowledgeable decisions by understanding meat supply systems and quality of beef.

        연구논문: 쇠고기에 대한 소비자의 위험지각과 품질평가에 관한 연구 -국내산과 수입산 쇠고기에 대한 기혼여성의 비교평가를 중심으로-

        The purpose of this study was to compare how the country of origin(COO) of beef made differences the level of risk perception and the quality evaluation of beef. Consumers` risk perception on beef was measured by the physical risk, trading risk, functional risk and consumers` quality evaluation of beef was measured by absolute quality and price-relative quality. Data for this study were collected by online survey from April 16 to 19, 2010. Five hundred married women who were over 20 years old answered a structured questionnaires. Focus Group Interview and Online analysis method were used to compensate the quantitative survey result. Statistical techniques used to analyze data were descriptive statistics, ANOVA, t-test, and regression. Results showed that the level of risk perception on beef was so high in general, and hence it influenced quality evaluation on beef. The difference of risk perception level was statistically significant by COO. Married women consumers perceived relatively safer domestic beef than foreign beef. Specifically imported American beef was perceived as the most risky one while imported Australian beef and domestic dairy cattle beef (Yokwoo) were perceived as somewhat risky one at a similar level by respondents. Based on this result it was suggested that the policy should be developed to eliminate the risk perception of Korean beef consumers. The strategy to increase competitiveness of domestic beef, Hanwoo and Yukwoo was also proposed.

        비선호 부위 소고기의 저온처리에 의한 품질향상 및 소고기의 숙성효과

        In this study, quality improvement of beef was attempted according to the low temperature treatment and aging period of grade 1 compared to grade 1++ beef. The fat content and shear force of beef grade 1++ were 13.03% and 114.26N, but beef grade 1 was 3.21% and 149.67N. Meanwhile, after low-temperature treatment of grade 1 beef at -26° C for 12 hours and low-temperature aging at 0 ° C for 14 days, the shear force was greatly reduced to 87.85N, improving overall preference, softness, dripping gravy, flavor, and chewing texture. The essential free amino acid content was as low as 22.17mg/100g in grade 1++ beef, but the contents were high at 41.31~45.11mg/100g in three samples of grade 1, and there was no change in content according to cold treatment conditions. As a specific component of beef, Taurine was 30.94~34.41mg/100g, and the difference in content was small according to beef grade, but Anserine and Creatine were low at 19.68mg/100g and 70.01mg/100g in beef grade 1++ and high at 26.38~31.23mg/100g and 154.09~167.26mg/10g in beef grade 1. The content ratio of oleic acid (c18:1)/stearic acid (c18:0) as an monounsaturated fatty acid/saturated fatty acid ratio was low at 5.29 for grade 1++ beef, but high at 6.13~6.78 for grade 1 beef. In addition, there was no trend in the content ratio of these fatty acids according to the low-temperature treatment conditions and aging period in beef grade 1. As a result of this study, it was possible to improve the quality of beef grade 1 by low-temperature treatment at -26 ° C for 12 hours and then aging at 0 ° C for 14 days.

        소비자 만족도에 영향을 미치는 한우고기의 관능 특성

        Eating quality is a reflection of consumer satisfaction, while beef quality grade describes carcass characteristics of chiller assessment which are largely influenced by production systems including breeding and feeding schemes. On the other hand, it should be emphasized that high palatability of beef is a function of production and processing components including breed, nutrition, animal handling, post-slaughter intervention and cookery. Numerous efforts have been made by Korean beef industry and research institutes to deliver high quality beef with which domestic beef consumers are satisfied. However, majority of studies have tended to focus on improvement of intramuscular fat content with little attention on its effect on consumer-based eating quality. Furthermore, there is very limited accessible information(if any) on relative importance of eating characteristics (eg, tenderness, juiciness and flavor intensity) to consumer satisfactory rate and palatability grade. On this regard, our recent results indicated, for example, that when m. longissimus was prepared by a thin-slice style BBQ, relative weightings of tenderness, juiciness and flavor intensity for consumer satisfactory rate were 0.4, 0.35 and 0.25, respectively. When eating quality was graded into 4 groups by a sum of tenderness, juiciness and flavor intensity after multiplying these coefficients, consumers responded that the palatability score for high quality beef should be higher than 79 points. Based on our recent experiments, the current report is intended to highlight relative importance of eating quality characteristics on consumer satisfactory rate, and threshold of eating quality grade. In addition, post-slaughter intervention techniques such as electrical stimulation and tenderstretch are given as examples of critical control points of palatability assurance program of Hanwoo beef.

        한우고기 및 호주산 Wagyu 쇠고기 채끝육의 이화학특성과 관능특성

        The objective of this research was to evaluate the chemico-physical and sensory traits of Hanwoo beef quality grade $1^{++}$ ($HW1^{++}$), grade $1^+$ ($HW1^+$), grade 1 (HW1), and Australian Wagyu (AUW) beef. The Longissimus Lumborum (LL) of $HW1^{++}$ beef had the lowest (p<0.05) moisture contents (54.07%) while it had the highest (p<0.05) CIE L, a, b value and water holding capacity (WHC). Fat contents of LL were significantly different (p<0.05) among the beef groups: $HW1^{++}$ (25.58%), $HW1^+$ (16.39%), HW1 (11.29%), and AUW (11.87%) beef. Warner-Bratzler shear force (WBSF) values were the lowest in the beef from AUW (2.81 kg) beef. Cooking loss of AUW beef had the highest value (23.77%) among the beef groups. Quality grade affected sensory traits, with $HW1^{++}$ receiving highest (p<0.05) tenderness, juiciness and flavor. In Hanwoo beef, from grade 1 to $grade1^{++}$, there were significant increases in fat content (from 11.29% to 25.58%), CIE L value (37.56 to 43.15), WHC (55.97% to 60.05%), tenderness (4.63 to 5.28), and decreases in moisture contents (66.84% to 54.07%), protein contents (20.35 to 19.76%), and WBSF value (5.43 kg to 2.93 kg) value. In sensory evaluation, overall acceptability score for Hanwoo $1^{++}$ grade beef was significantly higher than for Australian Wagyu beef. However, there were no significant differences in sensory properties between Hanwoo 1, $1^+$ grade and Australian Wagyu beef.

        Comparison of meat quality, fatty acid composition and aroma volatiles of Chikso and Hanwoo beef

        Objective: Although Hanwoo has been selected as the superior commercial beef cattle breed in Korea, Chikso (Korean brindle cattle) is still recognized as a valuable breed for beef production. The aim of this study was to compare the meat quality, fatty acid composition and aroma volatiles of beef from Chikso and Hanwoo steers maintained under identical feed management, as information regarding these characteristics is still limited. Methods: A total of 19 carcasses with a quality grade of 1 were selected, and strip loin (longissimus lumborum) cuts were collected from 11 Hanwoo carcasses and 8 Chikso carcasses. Meat quality and aroma analyses were performed at day four postmortem. Results: Though Hanwoo strip loin tended to have higher fat content (15.37%) than Chikso (12.01%), no significant differences were observed. Meat pH, water-holding capacity, cooking loss, shear force value, instrumental surface color (Commission International De L'eclairage $L^{\star}$, $a^{\star}$, $b^{\star}$, chroma, and hue angle) and fatty acid composition were not significantly different. Roasted Chikso beef released more intense aroma than roasted Hanwoo beef based on the total area units of identified volatiles. Among identified volatiles, the amounts of toluene, heptanal, octanal, and nonanal were higher in roasted Chikso beef than in roasted Hanwoo beef. In addition, the aroma pattern of the roasted beef from these breeds was well-discriminated by electronic nose. Conclusion: No distinct differences were found in terms of meat quality between Hanwoo and Chikso beef in this study. However, the aroma pattern and volatiles of roasted Hanwoo and Chikso beef were different according to instrumental analysis.

        한우고기와 호주산 냉장수입육의 육질 및 영양성분 비교

        본 연구는 거세한우(26-28개월) $1^+$, 1등급육과 호주산 수입 흑우 및 교잡육으로부터 채끝, 등심, 우둔, 꾸리부위를 공시시료로 이용하여 원산지별 부위간의 일반성분, 육색, 전단력, 콜라겐함량, 가열감량, 지방산조성, 아미노산조성 및 무기물 함량을 비교하였다. 단백질 함량은 채끝과 등심부위는 한우고기 $1^+$, 1 등급육이 호주산 앵거스 또는 교잡종육 보다 유의적으로 높은(p<0.05) 반면에 우둔과 꾸리부위에서는 비교구간에 유의적인 차이가 없었다(p>0.05). 지방함량은 채끝부위에 있어서는 한우 $1^+$ 등급육이 15.48%로 8.83%인 호주산 교잡육보다 유의적으로 높았고, 등심 부위에서는 한우육 $1^+$, 1 등급육이 각각 17%, 15.52%로 호주산 앵거스 흑우육(10.59%) 및 교잡육(9.21%)보다 유의적으로 높았다(p<0.05). 육색 비교에서 채끝부위는 호주산 교잡종이 CIE $L^*$(백색도)이 한우고기보다 유의적으로 높았고 적색도(CIE $a^*$)은 동일한 부위내에서 비교구간에 유의적인 차이가 없었으며 CIE $b^*$(황색도)는 채끝, 등심, 우둔 및 꾸리 부위 모두에서 유의적으로 가장 높은 것으로 나타났다(p<0.05). 부위별 전단력 비교 결과 채끝부위는 호주산 교잡종이 유의적으로 가장 높았던(3.02 kg) 반면에 호주산 앵거스 흑우가 유의적으로 가장 낮았다(p<0.05). 한편 등심, 우둔 및 꾸리 부위는 전단력에서 유의적인 차이가 없는 것으로 분석되었다. 총 콜라겐 함량은 한우고기가 4개 부위 모두에서 호주산 쇠고기보다 유의적으로 더 높은 것으로 분석되었다(p<0.05) 지방산 조성에서 호주산 교잡종육이 채끝, 등심, 우둔부위에서 한우고기보다 palmitic acid, stearic acid, linolenic acid 함량이 유의적으로 높은 반면에 palmitoleic acid, vaccenic acid, eicosenoic acid 함량이 유의적으로 낮은 것으로 분석되었다(p<0.05). Oleic acid 함량은 한우고기 $1^+$, 1등급육이 호주산 교잡종육과 비교했을 때 채끝, 등심, 우둔 및 꾸리부위에서 유의적으로 더 높은 것으로 나타났다(p<0.05). 한우고기 $1^+$, 1등급육은 호주산 교잡육보다 포화지방산 함량이 낮고 단일불포화지방산 함량(MUFA) 함량이 높은 것으로 분석되었다(p<0.05). 한우고기 $1^+$ 등급육은 우둔과 꾸리부위에서 glycine 함량이 가장 높았고 한우 1 등급육은 채끝과 등심 부위에서 cystein, methionine, glycine 함량이 호주산 앵거스 흑우육 보다 유의적으로 더 높았으며, 우둔과 꾸리부위에서는 valine과 leucine 함량이 유의적으로 더 높았다(p<0.05). 무기물 조성에서 Ca, Fe, Zn 함량은 비교구간에 유의적인 차이가 없는 것으로 분석되었다(p>0.05). This study was conducted to investigate the proximate composition, meat color, Warner-Bratzler shear force (WBS), total collagen content (%), cooking loss (CL), fatty acid composition, amino acid composition, and mineral content of loin, strip loin, top round, and chuck tender Hanwoo beef and imported Australian beef. Protein content was significantly lower for strip loin and loin of Hanwoo QG $1^+$ and 1 beef when compared to that of Australian black Angus or cross beef (p < 0.05), whereas it was not significantly different for top round and chuck tender. Intramuscular fat content was higher for QG $1^+$ Hanwoo beef strip loin (15.48%) than that in Australian cross beef (8.83%) and it was also higher in loin for QG $1^+$ (17%) and 1 (15.52%) Hanwoo beef than that in Australian Angus beef (10.59%) and cross beef (9.21%) (p < 0.05). The CIE $L^*$ value was significantly higher for Australian cross beef strip loin than that of Hanwoo beef but the CIE $a^*$ value was not significantly different between the same cuts from different origins. However, CIE $b^*$ values were significantly higher for the Australian cross beef than those for four cuts of Hanwoo beef and Australian Angus beef (p < 0.05). No significant difference in WBS of loin, top round, or chuck tender was observed among the different beef sample origins except that strip loin had significant higher WBS for Australian cross beef (3.02 kg) but lower for Australian Angus beef (2.13 kg). Australian cross beef contained significantly higher palmitic acid, stearic acid, linolenic acid, but lower palmitoleic acid, oleic acid, eicosenoic acid content in strip loin, loin, and top round than those of QG $1^+$ and 1 Hanwoo beef (p < 0.05). QG $1^+$ Hanwoo beef had significant lower saturated fatty acid and higher monounsaturated fatty acid content than those in Australian cross beef (p < 0.05). Hanwoo $1^+$ beef had more glycine in top round and chuck tender, whereas Hanwoo QG 1 beef and Australian Angus beef had higher cysteine, methione, and glycine levels in strip loin and loin and valine and leucine in top round and chuck tender than the same cuts of Hanwoo $1^+$ beef (p < 0.05). No significant differences were observed for Ca, Fe, or Zn content among the different beef samples.

        Effect of Repeated Freeze-Thaw Cycles on Beef Quality and Safety

        The objectives of this study were to know the effect of repeated freeze-thaw cycles of beef on the sensory, physicochemical quality and microbiological assessment. The effects of three successive freeze-thaw cycles on beef forelimb were investigated comparing with unfrozen fresh beef for 75 d by keeping at $-20{\pm}1^{\circ}C$. The freeze-thaw cycles were subjected to three thawing methods and carried out to know the best one. As the number of freeze-thaw cycles increased color and odor declined significantly before cook within the cycles and tenderness, overall acceptability also declined among the cycles after cook by thawing methods. The thawing loss increased and dripping loss decreased significantly (p<0.05). Water holding capacity (WHC) increased (p<0.05) until two cycles and then decreased. Cooking loss increased in cycle 1 and 3, but decreased in cycle 2. pH decreased significantly (p<0.05) among the cycles. Moreover, drip loss, cooking loss and WHC were affected (p<0.05) by thawing methods within the cycles. 2-Thiobarbituric acid (TBARS) value increased (p<0.05) gradually within the cycles and among the cycles by thawing methods. Total viable bacteria, total coliform and total yeast-mould count decreased significantly (p<0.05) within and among the cycles in comparison to the initial count in repeated freeze-thaw cycles. As a result, repeated freeze-thaw cycles affected the sensory, physicochemical and microbiological quality of beef, causing the deterioration of beef quality, but improved the microbiological quality. Although repeated freeze-thaw cycles did not affect much on beef quality and safety but it may be concluded that repeated freeze and thaw should be minimized in terms of beef color for commercial value and WHC and tenderness/juiciness for eating quality.

        Microbial, Physicochemical, and Sensory Characteristics of Quality Grade 2 Beef Enhanced by Injection of Pineapple Concentrate and Honey

        This study investigated the effect of injecting pineapple concentrate and honey into low marbled beef in order to enhance its sensory qualities, particularly tenderness and flavor, without compromising its fresh appearance. Beef loin was injected with a solution of 6.0% pineapple concentrate, 2.5% honey, 0.5% monosodium L-glutamate, 0.5% phosphate, and 0.3% salt (w/ w) to 120% (w/w) of initial meat weight and stored for 14 d. Non-injected beef loin served as a control. Total aerobic bacterial counts, surface meat color, shear force, reducing sugar content, and sensory evaluation of the beef were analyzed at 0.5, 7, and 14 d of storage. Injection did not affect the total aerobic bacterial counts or color of the beef. However, injection increased the stability of meat color, compared with that of the control, during storage. The shear force value was significantly lower in the injected beef than that in the control. The injected beef had a significantly higher reducing sugar content compared with that of the control. In sensory evaluation, tenderness, juiciness, flavor, and overall acceptance of the injected beef were significantly higher than those of the control at 0.5 d. In conclusion, injection of pineapple concentrate and honey can improve the sensory qualities of low marbled beef, during short storage periods, without changing the fresh appearance of the beef.
