        국내 시판 액상요구르트의 품질특성

        Yogurt is produced by fermentation of milk using bacteria known as "yogurt cultures". Most of these bacteria are probiotics such as Lactobacillus delbrueckii subsp. bulgaricus, Lb. rhamnosus, Streptococcus thermophilus, and Bifidobacterium. The domestic fermented milk market is increasing, and about 30 companies are producing yogurt. The purpose of this study was to analyze the quality characteristics of domestic commercial liquid yogurt. Total 30types of commercial yogurts were sampled and their physicochemicial properties, including pH, sugar content, acidity, viscosity, and microbial characteristics of lactic acid bacteria counts, were measured. Commercial liquid type yogurt showed a pH of 4.5, sugar content of 7.4-21.2%, total acid content of 0.4-0.9%, and viscosity of 0.1-250 cP. In terms of microbial populations, lactic acid bacteria counts were 7.2-11.3 log CFU/mL and anaerobic lactic acid bacteria counts were 8.0-11.5 log CFU/mL. The quality characteristics differed depending on the constituents of the sample and the microorganisms used. These results are related to the quality characteristics of yogurts and are useful for identifying new trends in the domestic fermented milk industry. 요구르트는 유산균을 이용하여 제조한 대표적인 유발효식품이다. 국내 유통되고 있는 요구르트는 약 30개의 업체에서 생산되고 있으며, 최근 당 저감화 정책 실시로 저당제품이 출시되고 있다. 본 연구는 국내 시판되고 있는 액상타입의 요구르트를 수집하여 제품의 일반적인 특성을 조사하였고, pH, 산도, 당도, 점도, 호기성 혐기성 유산균수를 측정하여 기초자료로 사용하고자 하였다. 탈지분유(97%) 및 원유(57%)가 주된 원료로 높은 빈도로 사용되고 있으며, 발효스타터는 요구르트에 100% 이용되고 있으며 주로 수입균주가 이용되고 있다. 당은 sucrose, oligosaccharide, xylitol이 첨가되었고, 그 외 구연산, vitamin C, gum류 등이 요구르트의 기능성과 물성 등을 개선하고자 하는 부원료로 사용되고 있는 것을 확인하였다. 30종의 요구르트의 품질특성을 분석한 결과 pH는 3.6-4.6, 당도는 7.4-21.2%, 총산도는 0.4-0.9%, 호기성 유산균수 7.2-11.3 log CFU/mL, 혐기성 유산균수는 8.0-11.5 log CFU/mL로 분석되었다. 본 연구에서 도출된 시판 액상타입 요구르트의 품질분석 결과는 다양한 소재를 접목한 요구르트 개발의 품질규격설정의 기초자료로 유용 할 것으로 사료된다.

        Me-Too products which are copied from brand-name products have recently appeared on various products group, and have become popular with consumers. In cosmetic industry, Me-Too products have been launched for cosmetic companies to be more competitive. In spite of this situation, this research concluded that related research should be needed because there is lack of study on Me-Too products. For this reason, we tried to find out purchase determinants and awareness about Me-Too cosmetics targeting female college students in their twenties. We have conducted a survey targeting 300 female college students in Cheong-Ju from May 11st 2015 through June 11st 2015, and made use of SPSS Windows 21.0 statistics program, for analysis with descriptive-statistics analysis, factor analysis, regression analysis and a chi-squared test. Conclusions based on the result of the study are as follows. First, female college students generally have positive awareness on Road-shop cosmetic brand. It showed especially high satisfaction in Shop accessibility and Discounts but low in Beauty service . Second, most of the female college students refer to blogs when purchasing cosmetics. Some female college students answered that information in the blogs, however, is subjective and unreliable since there are many bloggers who are being sponsored from cosmetic companies. Third, as s result of analyzing spending habit of female college students, it resulted the highest rank in Efficiency and the lowest rank in Impulsivity . With this result, we could find out that female college students prefer Me-Too products of competitive Road-shop brand to high price brand and tend to spend their money more reasonably than impulsively. Fourth, considering involvement of female college students, Involvement is the most influential factor among factors affecting Me-Too cosmetics selection. We can find that female college students consider cosmetics invaluable and necessary since the highest mean value appeared in a question : Cosmetics is valuable for me . Fifth, financial independence of female college students were mostly low. The higher their financial independence is, the more they spend their money on cosmetics.

        위장관 ; 경도 및 중등도 활동성 궤양성 대장염 환자에서의 VSL#3의 효능

        Background/Aims: Ulcerative colitis (UC) is a chronic disease that characteristically has a relapsing and remitting course. Probiotics might possibly induce remission in the treatment of active UC. Aims of our study were to assess the efficacy of VSL#3 on clinical response and colonic tissue cytokine concentration changes in patients with active UC. Methods: Twenty-four eligible patients with mild to moderate UC received open-label VSL#3 4 sachets daily in 2 divided doses for 8 weeks. The disease activity pre- and post-VSL#3 therapy was assessed by ulcerative colitis disease activity score and colonic tissue cytokine profiling done at baseline and at week 8. Results: Twenty-four patients (mean age, 43.7 years; range, 20-70 years; male/female, 15/9) were enrolled and 2 patients did not have the final endoscopic assessment. A total of 22 patients were analyzed. Intent to treat analysis demonstrated remission in 45.8% of subjects (n=11); partial response in 20.8% (n=5); no change or worse in 25.0% (n=6) of subjects. The mean ulcerative colitis disease activity index (UCDAI) scores decreased from 7.09±1.81 to 1.45±1.29 in patients with a remission (p<0.001). The mean endoscopic scores had also significantly decreased from 1.91±0.54 to 0.63±0.50 in patients with a remission (p<0.001). The concentrations of colonic cytokines did not change significantly during treatment in patients with a remission. Conclusions: Our study demonstrated that VSL#3 is effective in achieving clinical responses and remissions in patients with mild-to moderately active UC, further supporting the potential role in UC therapy.         아로니아즙 첨가에 따른 단감잼의 품질특성

        본 연구는 최근 안토시아닌 등 항산화 활성이 우수하다고 알려지면서 재배면적이 급증가하고 있는 아로니아와 충북남부의 대표작물인 감의 소비촉진을 위하여 아로니아 즙을 혼합하여 단감잼을 제조한 후, 그 품질특성을 조사하였다. 100% 단감만 넣은 잼이 가장 높은 pH를 나타냈고, 아로니아즙을 첨가할수록 pH는 유의적으로 감소하였으며, 총산은 반대로 증가하였다. 색도 중 명도는 아로니아 즙의 함량이 증가할수록 계속 감소하였고, 적색도는 증가하였으며, 황색도는 감소하였다. 생리활성 중 총 폴리페놀과 전자공여능은 아로니아즙의 첨가량이 증가할수록 유의적으로 증가하였고, 마지막으로 기호도 평가에서 아로니아 즙을 60~80% 첨가한 실험구가 색상, 향 및 전반적인 기호도에서 높은 평가를 받았다. 따라서 생리활성, 관능적인 면 및 가격을 골고루 고려했을 때 60~80% 아로니아 즙을 첨가한 것이 아로니아와 단감의 이용성을 증진시킬 수 있을 것이라 생각된다. This study investigates the quality characteristics of sweet persimmon jam added with aronia juice. Sweet persimmon jam was prepared with sweet persimmon, sugar, pectin and various amounts (20, 40, 60, 80%) of aronia juice, and it was assessed for pH, total acidity, color, sensory evaluation and hydrogen donating ability on 1,1-diphenyl-2-picrylhydrazyl (DPPH), 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical scavenging effects and content of the total polyphenols, respectively. Increasing the amount of aronia juice decreased the pH, whereas the total acidity gradually increased. In addition, with an increased amount of aronia juice, the lightness (L) and yellowness (b) significantly decreased, while redness (a) gradually increased. By increasing the amount of aronia juice, the polyphenol contents, DPPH and ABTS radical scavenging activities were increased. The results of the sensory evaluation showed that the sweet persimmon jam added with 80% aronia juice had the highest overall-acceptability scores. The results suggest enhancing the quality, palatability and acceptability of sweet persimmon jam by adding 60~80% of aronia juice.

        Background: In spite of harmfulness of smoking, the smoking rate of adult is high in Korea. Korea is one of the heavist smoking countries, due to the tolerant environments towards smokers, the weak anti-smoking police and the undeveloped smoking cessation programs. Recently, though those who succeed in stoping smoking and maintaining it are increasing, there are few studies about the characteristics of those who successful in smoking cessation. The purpose of this study is therefore to identify what factors are likely to influence the effectiveness of smoking cessation in adult Korean smokers. Method: Participants were 108 smokers(success group 45, failure group 63), registered at an public health center(80) and working area 28) smoking cessation program from Apr. to Nov. 2006 were included, the questionnaire consisted of questions of health perception(HP), satisfaction(SA), vality(VA), emotional function(EF), fagerstrom tolerance questionnaire, (FTQ) and the why test. Result: There was no relationship between the two groups in the demographic characteristics. In view of success of smoking cessation that can influences them such as physical pain, Nicotine dependence, stress rating pain and counselor of smoking cessation Conclusion: The results of logistic regression analysis was shown that the factor that is most associated with success of smoking cessation is the counselor of smoking cessation. This means that the more people who smoke consult with nurse and the longer the period of utilizing the smoking cessation clinic is, the more successful they are in smoking cessation.

        선박의 직접 이산화탄소 포집기술 타당성 분석

        This study proposes a feasibility of direct carbon dioxide capture and storage process for reducing the CO₂ emission on ships. Reduction of CO₂ emission from ship using conventional CO₂ reduction process is a great challenge mainly because of space constraints and utility consumptions. In this study, to overcome those constraints, HIGEE (High gravity rotary device) reactor which use the centrifugal force for the drastic increase of gas & liquid reaction was considered. For the analysis of feasibility of direct CO₂ capture from ship, based on a container ship with 20 MW diesel engine, conceptual design of Higee CO₂ capture process was performed. The results showed that using a Higee reactor, CO₂ emission from the ship could be drastically reduced without excessive energy consumption and space requirement. And it could be concluded that present novel CO₂ capture process using Higee rector could be one of the promising technology options for the direct CO₂ reduction from ship.

        네트워크 기반의 참여적 디자인 프로세스 프레임 개발

        현대 사회의 흐름이 사용자, 참여자 주도형으로 변화하면서 디자인 분야 역시 사용자가 전체 디자인 프로세스에 적극적으로 참여하는 양상을 띠고 있다. 네트워크 기반 환경 구축으로 사용자는 디자인 프로세스 전반에 세부적인 참여가 용이해졌으며 이에 생산자와 사용자 간의 개방적이며 쌍방향적인 프로세스가 요구되고 있다. 그러나 현재까지 소비자 참여를 고려한 개방적인 디자인 프로세스에 대한 연구는 그리 활발하다고 볼 수 없으며 또한 참여의 범주나 형태가 다소 제한적이었다. 이에 본 연구는 문헌연구와 국내외 사례 조사를 통해 네트워크 기반의 참여적 디자인 프로세스를 규명하고 각 프로세스 단계 별 사용자의 참여 유형과 방법을 프레임 별로 나누었으며, 전문가 심층면담을 통한 검증 및 보완으로 소비자가 참여할 수 있는 네트워크 기반의 참여적 디자인 프레임 및 방법을 제안하였다. 참여적 디자인 사례 연구에서는 공공, 서비스, 패션, 제품디자인 사례를 수집, 사용자의 참여 수준에 따른 참여도와 특성을 도출하여 차이점을 분석하였다. 전반적으로 공공디자인 영역은 전 프로세스에 걸쳐 비교적 높은 참여강도를 띄고 있었으며 제품과 패션디자인 영역은 초기 단계인 정보수집 및 의견제시에 참여가 높고 디자인을 구체화하고 실행하는 단계에는 낮은 참여를 보이고 있었다. 사례분석을 통해 참여적 디자인 프레임은 강한 참여단계와 약한 참여단계를 구분되었고, 단계의 강한 참여 유형에 따라 5가지로 나뉘었으며 전문가 인터뷰를 통하여 각 프레임의 프로세스 별로 참여를 강화 시킬 수 있는 방법을 도출하였다. 본 연구의 결과는 쌍방향적 네트워크 환경의 소비자가 참여하는 개방형 프로세스 제시를 통해 디자인 산업전반의 다각화 및 디자인 결과물의 다양성뿐만 아니라 소비자와의 소통을 이끌어 내는데 기여할 수 있을 것이다. The cultural circumstances of user driven society influenced on the design process. The network based society made the user easy to participate to the whole design process, and the users requested an interactive and open design process gradually. However, the previous studies on the design process for participation have been limited and the ranges and types of user participation were limited also. In this study, we clarified the participatory design process through literature reviews and case studies, furthermore, the participatory design framework using the strength level of participation were proposed. The participatory design framework were classified into five types according to the participatory design process and the methods to increase user`s participation were proposed through the expertise interviews. The results of this study can be used as the basis of participatory design study and be applied to the industrial diversification.
