        This paper showed the summarization of the preservative method of wild vegetables in the house and the precessing method of Japanese pickles. The preservative methods of wild vegetables were explained devided into long, short term, fresh state, heat treatment and drying. Salt, soybean fermented sauce, soybean fermented paste, lees of refined rice wine and residue in the preparation of bean curd were used as the materials of Japanese pickles.

      • 냉장화 상자에 의한 딸기의 유통중 품질변화

        딸기의 유통기간 연장과 품질보존을 목적으로 냉장화 유통방법과 유통중의 품질변화를 조사하였다. 이 경우 전처리로서 예냉처리는 유통기간의 연장과 품질보존에 상당한 효과를 나타내었다. 또 냉매는 드라이 아이스가 양호하였으며 그 양은 딸기 ㎏당 150g정도가 적당하였다. 5-6월경에 생산된 딸기를 냉장화 유통시킬 경우 일반유통법에 비하여 약 2일정도 유통기간이 연장되었다. To investigate the effect of refrigerate case on the quality of strawberry during circulation, the temperature changes on the amounts of dry ice cube were examined. And also, the effect of precooling on the changes in temperature and quality of the fruits were studied. Strawberry precooling-treated at 4℃ for 24hours was prolonged the shelf-life, and quality was progressed. 150g of dry-ice per ㎏ of the strawberry was kept quality. It was prolonged more 2 days than present circulation system.

        말초성 신경아세포종 : 두개골 발생 증례 보고 Involving Skull

        The peripheral neuroblastomas are malignant neoplasms that originate from the adrenal gland and sympathetic nervous tissues. They usually occur in childhood. They exhibit such malignant features that they metastasize early to lung, liver, bone, rarely skull and other structures. The patients with peripheral neuroblastoma have short duration of symptom and short survival period. They reveal the characteristic light microscopic features that resemble other small cell carcinomas. The establishment of final diagnosis of peripheral neuroblastoma needs various special stainings for small cell carcinomas, and the electron microscopic findings are the most reliable. The authers recently experienced a case of peripheral neuroblastoma in a 26-year old man which involved right frontoparietal skull vault. The only chief complaint was a local non-tender mass at right frontoparietal scalp. Neither headache nor any neurological deficits was detected. Simple skull X-ary revealed a punched out rediolucency at right frontoparietal bone and brain CT showed a superficial elliptical high density mass that enhanced strongly. The mass was totally removed by wide craniectomy. The tumor invaded and penetrated the dura but the arachnoid membrane. at the tumor bed was not invaded by the tumor. The tumor was confirmed as peripheral neuroblastoma by various special stainings for small cell carcinomas. Following surgical resection of the mass, post-operative radiotherpy was offered(4800 rads for about 5 weeks). The patient aggrevated progressively and showed numerous metastases to such bones as lumbar vertebrae, pelvis and humerus to became paraplegic. 8 months after the operation, the patient died.

      • 백금(Ⅳ)착체의 약리학적 연구

        The platinum complex, PtCl₄(2-CEen), was previously synthesized and shown to have anti-tumor activity. In the present study, toxicologic profile of PtCl₄(2-CEen) and its acute anti-inflammatory activity on carrageenin edema was observed with oral administration. The ef-4feet of this agent on acetic acid-induced writhing in mice were also examined. In male and female mice given a single intragastrical dose of PtCl₄(2-CEen), we determined that LD_(50) values were over lOOOmg/kg B.W. In the method of carrageenin edema and writhing test, the PtCl₄(2-CEen), orally administered in a single dose, tended to inhibit the development of hind paw edema in rats, and the number of writhing induced by acetic acid in mice. These facts suggest that PtCl₄(2-CEen) may have weak anti-inflammatory effect.

To investigate the cold circulation system of strawberry by shipping case, changes in the temperataure, concentration of carbon dioxide on the different amounts of dry ice in the cold circulation case were examined. And also, the effect of precooling on the quality maintaining of the fruits were studied. The self-life of strawberries were prolonged by precooling at 4℃ for 24hours, and the quality was maintained better than non-precooling. Quality of the fruit which packed in the cold shipping case with 150g of dry ice per 1㎏ of the berries was able to keep during circulation. The cold circulation system was prolonged more 2 days than common circulation system in present.

      • 딸기의 유통실태와 성숙중의 품질변화

        딸기의 유통실태와 성숙중 품질변화를 조사하였다. 딸기의 수확 및 선별시에 상당한 품질손상이 있었다. 또 포장, 수송은 과일의 품온을 고려하지 않은채 이루어지고 있었다. 고령 딸기단지에서 생산된 딸기는 소매상 까지 약 25시간이 소요되었고, 계절별 가격차이가 매우 심하였다. 2-3월의 유통수명은 5-6일, 5-6월은 24-30시간이었다. 착색도 즉 a값과 색상변화도로서 본 숙도는 개화 후 28-32일째가 적숙기이였으며, 40일째 이후는 과숙기이였다. 개화후 24일째의 미숙과, 32일째의 적숙과, 40일째의 과숙과를 시료로 하여 품질을 평가한 결과 비타민 C, 당, 종합적인 품질은 적숙과가 미숙과나 과숙과에 비하여 현저히 높은 값을 보였고, 산도는 숙도의 진행에 따라 점차 감소하여 당산비는 증가하는 경향이었다. 또 과숙과는 다소 검붉은 빛이 났으며, polyphenol함량은 숙도의 진행에 따라 감소하였다. Circulation state and changes in quality during ripening of strawberry were investigated. Tissue damage of the fruit happened when it was harvested and selected. Strawberry has been harvested without considering of fruit temperature in the farm. It takes 25 hours from Goreung which is main production area of strawberry to retailer, and seasonal variation in the price was severe. Shelf-life of strawberry from Feb to Mar was 5-6 days, and was 24-30 hours from May to June. Desirable ripening stage was 28-30th day after blooming and 40th day and after this was over ripening stage when the degree of ripening estimated by color “a” value and color saturation. Overall eating quality and vitamin C content, and sugar content were more higher in the fruit of the desirable ripening stage than that of unripening and over ripening stage. The dark redness degree was high in the over ripening stage.

      • 김치담금재료의 미생물 오염상태, 배추의 오존수 세척과 김치숙성

        배추김치 담금재료의 미생물 오염상태를 조사하고 동시에 ozone처리에 의한 청정화 효과를 검토하였다. 배추, 고추, 마늘 및 생강의 오염정도를 부위별 또는 상태별로 조사해 본 결과 세균수는 25~335×10 exp (4) 범위이었다. 미생물 오염 정도는 배추의 경우 겉부분보다 속부분에서 그리고 상부에서 높았다. 또 고춧가루는 무포장이 포장한 것보다 높은 오염도를 나타내었다. 마늘은 깐마늘의 경우가 까지않은 것보다 높은 오염도를 보였다. 고추의 미생물 오염도는 숙도가 높을수록 높았으며 표면보다 내부의 오염도가 높았다. 배추를 흐르는 수돗물로 세척한 결과 세척 20분 동안에 총균의 44%가 제거되었으나 그 이상의 세척효과는 없었다. 배추에 오염된 균수를 줄여 김치의 보존성을 향상시킬 목적으로 0.5ppm의 오존수 처리효과를 검토한 결과 상온(20℃)에서의 30분 처리로 오염균이 10^6/g에서 10^5/g 수준으로 감소하였다. 그러나 이정도의 감소로서는 보존성에 효과가 거의 나타나지 않아서 균수를 더욱 줄이기 위해서 오존수의 처리 온도별(20℃, 15℃, 10℃, 5℃)로 균수의 감소효과를 검토하였는데 10℃ 이하에서 30분간 처리시에 10^6/g에서 10^4/g 수준으로 현저하게 감소되었다. 오존수 처리구에서는 대장균도 검출되지 않았으며 젖산균>세균>효모>곰팡이 순으로 젖산균과 세균의 감소효과가 컸다. 오존수로 처리한 배추를 사용하고 autoclave에 15분간 살균처리한 고춧가루, 70% 알코을에 10분간 담구었다가 살균증류수로 세척한 마늘과 생강을 사용한 김치숙성 실험에서는 pH 감소와 산도의 증가가 둔화되었다. 오존처리 배추로 담근 김치의 보존성이 현저하게 향상되지 않는 것은 오존처리 후 잔존하는 미생물에 의하여도 발효가 충분히 일어날 수 있음을 나타낸다. 김치담금재료를 청정화시켜 김치의 보존성의 증진을 꾀할 경우 재료내의 미생물 수가 적어도 10^3이하로 떨어뜨릴 수 있어야 가능 것이라 생각된다. 따라서 재료의 청정화는 김치의 보존성 증대을 목적으로 하기 보다는 김치의 대장균 등의 균수를 떨어뜨려 보다 위생적인 김치를 만드는데 더욱 기여할 수 있을 것이라 판단된다. The conditions of microbial contamination in raw materials of Chinese cabbage and effects of ozone treatment on decontamination of them were investigated. The bacterial number of Chinese cabbage, red pepper, garlic and ginger was different with their parts and conditions, the ranging was from 25×10 exp (4)CFU/g to 33×10 exp (5)CFU/g. Microbial contamination was higher in the inner part of Chinese cabbage than in the external part and unpacked red pepper powder was higher than packaged one. Bacterial number in peeled garlic showed higher than that of unpeeled one. Bacterial number in Chinese cabbage was eliminated to 46% by washing with tap water for 20 min. The washing for more than 20 min had a negative effect on decontamination of Chinese cabbage. To improve the shelf-life of kimchi the efficacy of using ozonation for microbial decontamination of Chinese cabbage was investigated. In case of Chinese cabbage exposed to 0.5ppm ozone water for 30min at 20℃, no desired results for removal of microorganisms were obtained. So, the effects of ozone treatment by various temperatures(5, 10, 15 and 20℃) on removal of microorganisms were investigated; best result was achieved for less than 10℃ of ozone treatment. The decrease in microorganisms by ozone treatment were lactic acid bacteria>yeast>mold and E. coli was completely eliminated. The pH and acidity of the kimchi made with materials such as ozone-treated Chinese cabbage, red pepper powder sterilized for 20 min, galic and ginger soaked into 70% of alcohol for 10 min and washed with sterilized water were measured. The decrease in pH and increase in acidity of the kimchi were low. It is concluded that a better decontamination of making materials of kimchi is required before it can be enhanced shelf-life. Therefore, the clarification of making materials of kimchi may be not so much the shelf-life enhancement as making wholesome kimchi.

      • 환자, 간호사, 의사가 지각하는 교육요구도와 교육제공정도에 관한 연구

        The purpose of this study was to provide the basic data for the planning of education of patients by exploring and comparing patients', nurses' and doctors' perception of the educational needs and degree of providing education. 66 hospitalized patients undergoing chemotherapy and 44 nurses, 42 doctors assigned for the direct care were sampled in 1 university hospital in Taejon from August 30, 1993 to September 30, 1993. For the comparing patients', nurses' and doctors' perecption of the educational needs and degree of providing education, the researcher used Kims' Educational need scale which is composed of 20 item Likert type 5 point scale. Data were analyzed by means of percentile score, SPSS, t-test, ANOVA, Pearson correlation. The result were as follows 1. Comparision of total Mean score patients', nurses' and doctors' perception of the educational need ordering nurses(M=4.0465), patients (M=3.9803), doctors (M=3.8309). The difference between the three group's total Mean score is showed no statistical significant difference. 2. Comparision of total Mean score patients' educational need, patients' percetion of nurses' and doctors' degree of providing education, patients' educational need is scored 3.9803, patients' perception of nurse is scored 2.3431, patients' perception of doctor is scored 2.5022. The difference between the patients' educational need and medical teams' degree of providing education is showed statistical significant difference(P<.001). 3. Comparision of total mean score nurses' educational need is scored 4.0465, nurses' perception of nurses' degree of providing education is scored 2.9920, patients' perception of nurses' degree of providing education is scored 2.3431. The difference of between the nurses' educational need and nurses' perception of nurses' degree of providing education is showed statistical significant difference(P<.001) 4. Comparision of total mean score doctors' educational need is scored 3.8309, doctors' perception of doctors' degree of providing eduation is scored 3.1726, patients' perception of doctors' degree of providing education is scored 2.5022. The difference of between the doctors' educational need and doctors' perception of doctors' degree of providing education is showed statistical difference(P<.001).
