      • FESWMS-2DH를 이용한 하천의 흐름 해석

        In this study, flood stage was computed by HEC-RAS, 1-D numerical analysis model and FESWMS-2DH, 2-D numerical model. Flood stages computed by two different models were compared for straight line, dot axle watercourse, dead-zone watercourse, section sudden-changing watercourse, and curved watercourse. From the results, flow velocity and water level were similar in straight watercourse and dot-reduction watercourse. However, there was difference of flow velocity and water level in dead-zone watercourse, sudden expansion, dot-reduction, and curve-watercourse. This result might be influenced by rapid change of watercourse due to dead-zone, the angle of inflow and outflow, and the curvature. Especially in this study, numerical model was applied to Wol-Song-Cheon at Chuncheon in order to analyze the effect of flood stage by two different models. By flowing properties around the bridge and confluence of rivers, it was found that flow velocity and water level was changed. Therefore, it was concluded that a lot of uncertainties are contained in the present bank.

      • 서울 지역 사업체 급식의 위생 관리 수행 평가

        This study was conducted to investigate the sanitary management proceedings of the industry foodservice in Seoul area. Total 247 foodservice managers participated a survey and 159 participants among them were selected for analysis. Topics investigated include time-temperature and other sanitation, personal sanitation, and equipment-facilities sanitation. Foodservice managers responded were 27.3 years in average age and 2.4 years in duration of employment. 36.5% of participants employed service work and they mainly concerned sanitation within foodservice as a critical point (49.7%). Total mean score of sanitary management proceedings on HACCP was evaluated by 5-point scale. Time-temperature/etc. fall 3.91 out of 5.00, personal sanitation 4.02 out of 5.00 and equipment and facilities sanitation 3.85 out of 5.00. Of sanitary management proceedings, the 30-34 year old group had high score in time-temperature/etc. and equipment and facilities sanitation & the 25-29 year old group in personal sanitation, compared to other age groups. However, both were not significant(p>0.05). 95.6% of foodservice managers had sanitation checklist, and sanitary management proceedings were significantly(p<0.05) higher in personal sanitation than the group without checklist.

        사업체 급식의 HACCP 제도 도입을 위한 인지도 조사

        For the introduction of HACCP to industry food service, a survey was conducted from 150 dieticians and 40 managers on their recognition on HACCP system. The questionnaire of the survey included the status of current food safety management, management responsibilities, recognition on HACCP, problems in HACCP introduction. The majority of respondents was satisfied with the current food safety management, and the food service managers were more confident than dieticians in terms of food safety. Foodservice managers (100%) and dieticians (96%) recognized HACCP system; however, they responded the application of HACCP to industry food service were only 27% and 12.5%, respectively. They pointed out the reasons that they cannot introduce HACCP to their industry food service were the lack of benefits and good facilities. Dieticians strongly recognized the need of correction of food safety management in industry food service, compared with food service managers. The results suggest that the introduction of HACCP to industry food service should be accomplished by continuous education and information on food safety, improving facilities and a variety of benefits to HACCP-implemented companies from the government.

      • Streptomyces viridochromogenes의 균사체발달 과정에서 나타나는 단백질 다형현상

        The polymorphism of malate dehydrogenase in Streptomyces viridochromogenes was detected during the submerged growth. The lipid was extracted from TMPD-oxidizing enzyme which also showed the enzyme polymorphism on native gel. The lipid was characterized to be non-phosphate aminolipid (TOE-aminolipid). The level of TOE-aminolipid was higher in trophophase and in the presence of 0.1 M K-phosphate. Non-differentiating mutants, BR-2 and DR-41 strains appeared to differ from wild type in the aminolipid patterns. It appears, therefore, that aminolipid patterns alter significantly during mycelial differention of Streptomyces viridochromogenes.

        식품 위해 요소중점 관리 기준에 대한 서울지역 사업체 급식관리자의 위생관리평가

        Hazard Analysis Critical Control Point(HACCP) is becoming an important component of food safety worldwide. The aim of this study was to investigate comprehensively the education and knowledge level of food service managers on HACCP as well as applying HACCP system to industrial foodservice. Total 247 foodservice managers participated in the survey and 159 responses were used for analysis. The results were as follows; 1) 89% of foodservice managers were educated about HACCP, and 40.9% felt they did fully understand HACCP and 47.8% did half. 2) The score for the implementation of HACCP was in the order of apparatus and facility sanitation, personal sanitation, and time-temperature/etc. sanitation. 3) Foodservice managers who were taught HACCP kept a deep attention to food and personal sanitation, compared with those without education(p<0.05). However, the education time on HACCP affected conducting safety management. The results suggest that education and understanding of HACCP are positively related, and understanding of HACCP has a positive influence on conducting safety management.

      • 콩 이소플라본이 성장기 쥐의 골대사에 관한 연구

        Soybean has been consumed in Asia as a lot of soyfood products. Soy isoflavones, particularly genistein. have preventive effect on breast and prostate cancer, atherosclerosis and osteoporosis. To investigate if the influence of soy isoflavones on bone metabolism we used 3-week- old female Wister Rat ovariectomized. All the rats were divided into sham (SH) , ovariectomized (OVX) , OVX- 17β-estradiol (10 ㎎/㎏ b.w.), OVX-genistein (5 ㎎/㎏ b.w.). They were freely fed foods and drinking water for 8 weeks. Results show that body weight had significantly decreased in SH group, compared to OVX groups. The serum alkaline phosphatase (ALP) was increased in SH, OVX-GEN and OVX-ES groups but not significant. Creatinine and hydroxyproline level lowered in SH group but not significant. Femur, feces, serum and urinary Ca level was significant and femur, serum P level did not differ. Bone mineral density (BMD) decreased OVX group but increased slightly isoflavone group. It suggests that estrogen may affect bone mineralization in growing rats and soy isoflavones may involve prevention of bone loss. More studies are needed to identify the mechanism of soy isoflavones and bone formation.

      • 수용성 비타민 C의 기능성에 대한 고찰

        Vitamin C is one of the most water-soluble vitamins and an essential nutrient for maintaining normal metabolism in body. The major deficiency syndromes of vitamin C are scurvy, dry eyes and connective tissue damages. Vitamin C is classified into two forms the reduced ascorbic acid and the oxidized dehydroascorbic acid(DHA). The reduced ascorbic acid is transported by sodium vitamin C cotransporter (SVCP) and th oxidized DHA by glucose transporter(GLUT). Additionally, vitamin C is an important dietary antioxidant under various oxidative stress circumstance. It plays also role in the prevention of certain chronic degenerative disorders such as coronary heart disease and cancers. Vitamin C is relatively nontoxic but daily dose above 1mg might cause some problems such as nausea or diarrhea. This article highlights several functionality of vitamin C. In addition, we discussed on mechanism of vitamin C transport, bioavailability and current limitations related vitamin C.

        Objective : The use of herbal therapy is becoming an increasingly attractive approach for the treatment of various inflammatory disorders. The Alpiniae officinari Rhizoma is popular in Aisa as a traditional herbal medicine. Alpiniae officinari Rhizoma is a species of the ginger family(Zingiberacease). Method : This study was performed to investigate the anti-inflammatory effect of Alpiniae officinari Rhizoma extract by the methods of "carrageenan induced paw edema" and "Lipopolysaccharide-induced inflammatory mediators in mouse macrophage RAW 264.7 cells". Result : We suggest that Alpiniae officinari Rhizoma extract decreased paw volume induced by plantar injection of carrageenan. Also Alpiniae officinari Rhizoma extract inhibited nitric oxide, prostaglandin E₂production and induced nitric oxide synthase, cyclooxygenase-2 protein expression in Mouse macrophage RAW 264.7 cells stimulated with lipopolysaccharide. Conclusion : This study shows that Alpiniae officinari Rhizoma extract seems to have anti-inflammatory effect by inhibition of nitric oxide, prostaglandin E_(2) production and nitric oxide synthase, cyclooxygenase-2 protein expression.
