        우리나라 영.유아용 조제식의 영양소 규격기준 개선방안 연구

        영 유아의 정상적인 성장과 발육에 도움을 줄 수 있는 영 유아용 조제식의 영양적 완전성을 강화하기 위하여 우리나라, CODEX, 미국, 일본, EU, 호주 및 뉴질랜드의 관련법령 및 개선안을 비교 분석 후, 우리나라 영 유아용 조제식의 규격기준의 개선방안을 다음과 같이 제시하고자 한다. 조제유류와 영아용 조제식으로 이원화된 기준을 CODEX 규격안과 같이 '영 유아용 조제식'으로 통합하고 사용 대상을 6개월 이내의 영 유아로 한정하도록 제시한다. 영 유아용 조제식의 유단백질에 대한 질소계수를 CODEX 규격안과 동일한 수준으로 변경하고, 단백질 급원에 따른 함량별 차이와 모유내의 필수아미노산 성분을 단백질 함량 규격에 제시한다. 또한 영 유아를 위한 필수지방산인 $\alpha$-linolenic acid, DHA와 EPA, trans fatty acid 함유량을 지방 함량 규격에 제시한다. 영 유아용 조제식의 비타민과 무기질 및 기타 영양소의 성분기준을 선진국과 동일한 중량(100 g)당에서 에너지(100 kcal)당 영양소 함량으로 개선하도록 제시한다. 현행 규격에는 일부 비타민(비타민 A, D)과 무기질(나트륨, 칼륨 및 염소)의 최대값만 지정되어 있으므로 모든 비타민과 무기질의 최대값을 설정하도록 제시한다. CODEX 규격안, EU, 호주 및 뉴질랜드 영 유아용 조제식 관련 규격에서 제시한 모유내 면역증진성분으로 알려진 nucleotide 5종(cytidine, uridine, adenosine, guanosine, inosine 5'-monophosphate)과 치아 건강 유지에 도움이 되는 불소의 함량 규격을 설정하도록 제시한다. The purpose of the present study was to propose some amendments on nutrient standard regulations of infant formula in Korea. For this purpose, we compared and analyzed the nutrient regulations of Korea, CODEX, U.S.A, Japan, EU, Australia and New Zealand. Some developing aspects of Korea's nutrient standard regulations for infant formula need to be examined as follows: firstly, both milk-based formula and soy-based formula standards would be unified into an infant formula, and the user of infant formula would be categorized for babies less than 6 month old. Secondly, nitrogen conversion factor of milk protein in the infant formula would be 6.38, which is the same as that of CODEX Revised Standard. Protein quantities could be differentiated by protein sources, and essential amino acids in human milk would be standardized according to protein contents. Thirdly, $\alpha$-linolenic acid, docosahexaenoic acid (DHA), and eicosapentaenoic acid (EPA) as essential fatty acids and trans fatty acid would be standardized in terms of the contents. Fourthly, it is recommended that the unit of vitamins and minerals would be changed from g/100 g to g/100 kcal, and individual vitamins and mineral would have their maximum values. Finally, 5 nucleotides (cytidine, uridine, adenosine, guanosine, inosine 5'-monophosphate) and fluoride would be required for the strengthening the immunity and the development of teeth, respectively. In conclusion, the scientific studies on amendment scheme of nutrient standard regulations of infant formula is very important to fortify nutritional completeness for Korean infants and young children.

        소규모 베이커리에서의 HACCP적용을 위한 미생물학적 위해도 평가

        Recently, the HACCP(Hazard Analysis Critical Control Point) system has been emphasized in food processing industries throughout the world. However, the system has, as yet, not been applied very well to domestic food industries. Due to the increase in the consumption of bakery products, more studies are required on the application of HACCP to establish the system in small-scale bakeries. This study was designed to provide basic data for setting management standards for HACCP, based on microbiological hazard evaluations of bakery products. Red bean paste filled breads, custard cream filled breads and cakes covered with fresh whipping cream were collected, and microbiological evaluations conducted on the raw materials, the manufacturing processes and potential hazards. The result showed the presence of coliforms in fresh cream of cakes and the soybean paste of soybean paste breads at levels as high as 105 CFU/g on the hazard analysis of the raw materials. Moreover, the general levels of bacteria and coliforms were over those of the standards during the intermediate fermentation and molding processes. Furthermore, high levels of coliforms were detected on the hands of the salesmen and bakers themselves. This suggests that the CCPs (Critical Control Points), such as fresh cream and red bean paste manufacturing process desperately require better management. There is also a requirement for education relating to personal hygiene for the production of hygienic bakery products and for the publics health.

        자열(煮熱) 새우의 건조방법(乾燥方法) 및 저장중(貯藏中) 지질(脂質)의 산화(酸化)와 유효성(有效性) Lysine의 변화(變化)

        Lipid oxidation is one of the major factors affecting on deterioration of nutritional quality in boiled and dired fish products. In this paper, the relationship between oxidized products of lipid, brown pigments, and available lysine during the drying and the storage of boiled and dried shrimp (Metapenaeus joynri) was investigated. Fresh shrimps were bioled in 5% sodium chloride solution. The boiled shrimps were treated in two ways, sun drying and hot air drying at $30{\pm}5^{\circ}C$. And the two dried products were stored at $30{\pm}5^{\circ}C$ for one month. The results obtained are as follows: TBA value increased up to 20 days and hereafter gradually diminished. POV was increased for processing and increased 15 days of storage. TBA value and POV increased rapidly while available lysine diminished during the sun drying and hot air drying. Brown pigment was increased during lipid oxidation but it was not statistically significant. This result implicits that the drying had greatly influenced on the oxidation of lipid and makes amino acids 'unavailable'. But there is no remarkable difference between the sun dried shrimps and the hot air dried shrimps so far as the lipid oxidation and available lysine. 수산식품의 품질보존에서 문제시되고 있는 지질의 산화생성들이 단백질의 영양학적 변화에 미치는 영향을 검토하기 위하여 새우를 시료로하여 건조과정과 저장중에 생성되는 지질의 산화생성물과 유효성 lysine간의 반응과 갈변반응에 미치는 영향을 실험한 결과는다음과 같다. 새우를 5%식염수에서 자숙한 후 $30{\pm}5^{\circ}C$에서 30시간 열풍건조 및 천일건조하였을 때 과산화물값은 열풍건조한 시료에서 12시간후, 천일건조한 시료에서는 18시간후에 증가하여 저장 15일경에 최고도에 달하였다. TBA값은 건조과정중에 급격히 증가하였으며 저장 25일경부터는 서서히 감소하였다. 유효성 lysine은 건조과정중 지질이 산화됨에 따라 감소되었으며, 특히 감소현상은 건조초기에 현저하였다. 지질이 산화됨에 따라 갈변색소는 증가하는 경향을 나타내었으나, 큰 차이는 없었다. 이상의 결과로부터 새우는 건조과정에서 지질이 산화됨에 따라 유효성 lysine의 량이 감소됨을 알 수 있었으나 건조방법에 의하여서는 큰 차이가 없었다.

        각종 위해성 평가를 통해 안전하다는 보고가 있지만 소비자들은 살포된 농약이 잔류되어서는 안 된다는 'zero' '무결점'만을 고집하고 있다. 이러한 '있다' '없다'의 흑백논리 때문에 농약사용에 대한 반감이 가시지 않는 것이다.

        시판한우 부산물 중 미량금속 함량의 비교조사

        This study inverstigated the contamination of trace metals on edible visceras ; tongue, intestine, lung, testis, gira, blood, liver, stomach, and kidney. The edible visceras were selected at random from ten markets in Seoul. The edible visceras underwent freeze drying prior to analysis. The contents of arsenic, cadmium, cobalt, chromium, copper, magnases, molybdenum, lead, and zinc were detected by ICP(Inductively Coupled Plasma Spectrophotometry). The results showed that the levels of trace metals in all the samples fall within the tolerance limit and cadmium in lung tended to be high(>0.1 ppm). Therefore, we may study and investigate continuously on the food contamination of heavy metals for the public health.

        A Quantitative Structure-Activity Relationship Model for Radical Scavenging Activity of Flavonoids

        A quantitative structure-activity relationship (QSAR) study has been carried out for a training set of 29flavonoids to correlate and predict the 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity (RSA) values obtained frompublished data. Genetic algorithm and multiple linear regression were employed to select the descriptors and to generate thebest prediction model that relates the structural features to the RSA activities using (1) three-dimensional (3D) Dragon(TALETE srl, Milan, Italy) descriptors and (2) semi-empirical descriptor calculations. The predictivity of the models was es-timated by cross-validation with the leave-one-out method. The result showed that a significant improvement of the statisti-cal indices was obtained by deleting outliers. Based on the data for the compounds used in this study, our results suggest aQSAR model of RSA that is based on the following descriptors: 3D-Morse, WHIM, and GETAWAY. Therefore, satisfactoryrelationships between RSA and the semi-empirical descriptors were found, demonstrating that the energy of the highest oc-cupied molecular orbital, total energy, and energy of heat of formation contributed more significantly than all other descrip-tors.

        Beta-glucan이 Azoxymethane을 투여한 F344 Rats의 대장 암화 과정에 미치는 영향

        This study was designed to investigate the preventive effect of the β-glucan on colon cancer using forty 21-day old male Fisher 344 rats. The colon cancer was induced by injections with colon carcinogen azoxymethane (15 mg AOM/kg body weight/time) at 4 and 5 weeks of age. All the rats were divided into control and experimental groups (n=10/group, β-glucan 1, 10, 100 ppm). The rats were fed normal diets ad libitum, and β-glucan was supplemented by intragastric intubation for 5 weeks. On week 5, all the rats were sacrificed. Body weight, food consumption weight, cecum pH, aberrant crypt (AC), aberrant crypt foci (ACF) were measured. Body weight and food consumption were not differ among control and experimental groups. The cecum pH and the number of AC in experimental group (β-glucan 10, 100 ppm oral feeding groups) were significantly lower than those of the control groups (p<0.05). The number of ACF in experimental group (β-glucan 100 ppm oral feeding groups) was significantly lower than that of in control groups (p<0.05). These results show that β-glucan may inhibit colon carcinogenesis through diverse mechanism. Therefore, further studies are needed to identify the mechanisms by which β-glucan inhibit colon cancer.         Bamboo Salts Have Antioxidant Activity and Inhibit ROS Formation in Human Astrocyte U373MG Cells

        Bamboo salt (BS) has been used for the purpose of prevention and treatment of various diseases in Korea for a long time. It is a specially processed salt that is made of special ingredients including normal salt, bamboo, pine tree firewood, pine resin, yellow soil, and high level of fire handling technology. We investigated the protective effects of BS on ROS production against the oxidative stress in U373MG cells. We further examined the SOD activity of BS as an antioxidant to determine the effectiveness of BS in regard of inhibition of ROS formation. BS inhibited ROS formation by 2.2 to 2.9 times compared with NaCl and even by 23 to 45% higher than Vitamin E. The SOD activity of BS-treated cells, as an antioxidant, was 4.5∼7.2 times higher than that of NaCl and even 3.3∼7.1 times higher than that of vitamin E. BS is considered to be a potent antioxidant to inhibit and even eliminate ROS. (Cancer Prev Res 12, 225-230, 2007)
