Vol.6 No.4

Although breastfeeding is recognized to be vital to the health and well-being of children and women, the rate of breastsfeeding among Korean women has continuously decreased. One barrier to breastfeeding has been identified to be associated with health care providers. Health care professionals do not give sufficient advice and encouragement, next do hospitals provide supportive environments for breastfeeding by separating infants from mothers or providing formula. The purpose of this study was to investigate prenatal breastfeeding education and infant feeding practices in public health centers and baby-friendly hospitals. A telephone survey was carried out on 57 public health centers located in the Seoul and Chungcheong areas and 13 baby-freindly hospitals from February to April in 2000. Among the public health centers, 43.8% offered periodic prenatal education for pregnant women who visited the centers. Most of them used leaflets or pamphlets developed by the Ministry of Health and Welfare or UNICEF. Twenty six percent of the public health centers developed their own educational materials. All of the 13 baby-friendly hospitals gave additional fluids to infants, did not allow mothers and infants to stay together 24 hours a day, and did not foster the establishment of breatfeeding support groups among the mothers. Most of the baby-friendly hospitals gave artificial teats, did not help mothers initiate breastfeeding within a half-hour of birth. Findings indicate that current practices even in the baby-friendly hospitals are not consistent with the '10 steps to success breastfeeding'. Therefore, deliberate efforts should be made to incorporate adequate breastfeeding education into prenatal program in both public health centers and hospitals, and create environments to support breastfeeding in hospitals, even in baby-friendly hospitals.

Vol.9 No.1

Food intake patterns and iron nutritional status of mate and female college students were studied based on dietary iron density. Dietary data were collected using the method of 24-hour recalls for 3 consecutive days from 106 students, and fasting blood were drawn to measure iron nutritional status indicators such as total iron binding capacity, serum iron, hematocrit, hemoglobin, and red blood cell count. Mean daily iron intakes of male and female students were 13.3mg and 10.0mg, which were 107% and 63% of the RDA, respectively. However, dietary iron density were similar between male and female students as 5.9mg/l,000㎉ and 5.7mg/l,000㎉, respectively. The diets were divided into two groups according to iron density; high iron density group (6mg/1,000㎉ or more) and low iron density group(less than 6mg/1,000㎉). The students in high density group had lower intakes of energy, especially fat, than those in low density group. Female students in high density group showed significantly higher intakes of iron, and non-heme iron and folate than those of low density group. The students in high density group consumed more rice, hamburger, and eggs, while those in low density group consumed more Ra-myon and alcoholic beverages. The students in high density group consumed greater proportions of iron from plant-origin foods. Vegetables, legumes and seasonings were the food groups that female students in high density group consumed significantly more than those in low density group. Also the percentages of female students with iron deficiency were higher in low density group. These results suggest that diet with high iron density is important to improve iron nutritional status of women, and further research about the effective way to increase iron density in our diet is needed.

Vol.2 No.-

A dietary survey with 24-hour recall method was performed to female college students, and the food intake data were converted to nutrient intakes using two different computer programs. The mean daily energy intake calculated with DS24 program was 1598kcal(79.9% of RDA) while 1840kcal with CAN program. The mean intake of other nutrients was also mostly higher with CAN program than with DS24 program. Therefore, when we assess nutrient intake using CAN program, we must consider the possibility of the overestimation of the intake before interpreting the data. Each 24-hour recall was evaluated for the consumption of items from the dairy, meat, grain, fruit, and vegetable groups. Failure to consume any foods from the fruit, meat, and dairy group was reported by 60.9%, 30.4%, and 21.7% of the subjects, respectively. Consumption of food from all five food group was associated with higher nutrient intake. The results emphasize the need for nutrition education directed at increasing the diversity of the diet. The index of measuring diet quality will be further evaluated.

Microplate Reader

Vol.4 No.4

Microbiological method using a 96-well microplate reader for folate assay was established, and folate intake and blood folate concentrations of 23 female college students were assessed. To evaluate folate intake, dietary data were collected by a 3-day weight food record, and serum and RBC folate concentrations were measured by the new method. The coefficient of variation for the new method was less than 10%. Mean daily folate intake of the subjects was 126.7${\mu}g$ which is only 50.7% of the RDA. The mean concentrations of serum and RBC folate were 7.46ng/ml and 294.4ng/ml, respectively, which were within the normal range. These results indicate that folate intake seems to be underestimated due to incomplete food composition database. Therefore, folate database should be appropriately in order to asses folate intake accurately.

Vol.8 No.3

The purpose of this study was to develop a nutrition education website for children, especially those around the 4th-6th grade levels. Among the already existing websites providing nutritional information for children, 7 websites with comparable amounts of information were evaluated in terms of their topics, credibility, content, ease of use, and aesthetics. In addition, a survey was conducted to assess the need for nutrition information among 305 elementary students. The food pyramid was the topic offered most often on those websites. Information on nutrients, digestion, food safety, nutrition labeling, and healthy eating habits were available on the websites. Some of those websites also provided games or quizzes to attract the children's interest. However, some of the websites did not give any information on the person responsible for providing the information, which is most important in determining the credibility of the website. Other problems were that some information was too difficult for children, and some of the websites did not provide a way to search for information. According to the survey results, the topics that children wanted to know about were 'desirable weight', 'cooking', 'correct food choice', 'weight control method', 'calories consumed during exercise', but, they did not have a high interest in 'asking questions' 'books with nutrition messages', 'underweight', 'negative effect of weight control' and 'helping hungry children'. Based on these results, we developed a new nutrition education website, ifood' (http://ifood.or.kr). We focused on helping children develop healthy eating habits by providing information which is easy and practical for children. However, we neither included the program to assess their dietary intake, nor provided entertaining background sounds, which children like. Also, the game section is composed mainly of quizzes. Therefore, we need to further develop exciting games to teach nutrition to children. In the near future, the newly developed website should be evaluated by children regarding understandability and coverage of the contents as well as usability and design, and then revised to improve the educational effect.

Vol.2 No.1

To investigate the perception and consumption of imported and organic produce, a survey was conducted using a questionnaire in Seoul, Taejon and Cheongju from February to March in 1995. The responses of 350 housewives were analyzed. Most of the subjects (96.8%) know an increase of imported produce, and 86.3% thought that imported produce was not safe. Ninety-two percent of the subjects preferred domestic produce to imported produce. The reasons were for the support of domestic farming (36.7%), hazardous chemicals in imported produce (25.0%), good taste (24.1%) and high quality of domestic produce (13.1%). Seventy-eight percent of the subjects had purchased imported produce. The reasons for purchase were cheap price (67.7%), high quality (16.2%), and good taste (5.4%). Imported produce were purchased in the following order ; fruits such as banana, kiwi, orange and grapefruit, seasonings such as garlic and sesame, vegetables such as onion, braken and green onion, and beans and grains such as soybean, red bean, and barley. Most of the subjects (94.3%) had been informed on organic produce. Among these, 45.2% obtained the information by TV or radio. However, son for purchase was low residual chemicals (64.6%). The reasons against purchase were inconvenience of purchase (42.3%), high price (25.4%), and disbelief of low residual chemicals (19.7%). Therefore, domestic produce should be good in quality and taste, and be safe without residual chemicals in order to compete with imported produce with cheap price. Informations on organic and imported produce should be provided to consumers, and the distribution system of organic produce should be improved for consumers convenience.

A dietary surrey with 24-hour recap 1 method was conducted in order to assess cholesterol intake of college students. The subjects of this study were 33 male and 47 female students in Chungbuk National University. Nutrient intakes were calculated using DS24 program with a new cholesterol database updated in Seoul National University. Average cholesterol intakes of male and female students were 332.3mg and 329.3mg, respectively. These values were much higher than the other cholesterol intake data of the previous studies as well as the recommended level, that is, no more than 300mg. Foods contributed to cholesterol intake of the subjects were eggs, frozen dumplings, common squid, pork, chicken, anchovy, milk, in the order. Average cholesterol intakes of the subjects according to some factors affecting nutrient intake were analyzed. Among the factors, resident type, interest in diet, and nutrient in caution were affected on their cholesterol intake, The average intake of self-cooking students was significantly higher than that of home-living students. And the lower the interest in diet was, the higher the average intake was. The average intake of the students who responded that they were concerned about fat or cholesterol was actually higher than that of the other group. These results emphasize the need for nutrition education directed at having attention to their diet and decreasing cholesterol intake through food selection or food preparation, especially to self-cooking students. In addition, to validate the new cholesterol database, cholesterol intake should be further assessed among a variety of groups.
