        오징어 건조 및 조리 중 콜레스테롤 산화물 생성

        Cholesterol oxidation products(COPs) such as 7-ketocholesterol, 7 ${\alpha}$, 7 ${\beta}$-hydroxycholesterol and 25-hydroxycholesterol were analyzed for ensuring the safety of squid during its drying and cooking. In addition. changes of malonaldehyde in squid during its drying and cooking were also investigated. Cholesterol was detected 636.4m9/1009 in fresh sample, which was decreased during its drying and cholesterol contents in dried sample were 468.9mg/100g, 486.8mg/100g, respectively, while COPs contents of sun and hot air dried samples increased about 6.2 times more than those contents of fresh sample. Regardless of cooking methods, the contents of COPs in dried products increased after cooking. Especially, those contents were determined 127.3 mg/g in sun dried samples were cooked by microwave oven. The malonaldehyde contents of dried products increased after cooking, its contents in cooked samples by an microwave oven after sun dried were about 4.3 times more than in control products. In general, a small quantity of COPs were formed in dried samples which were cooked by a steam.

      • [산ㆍ학ㆍ연 논단] 수정로 음용이 당뇨성 흰쥐의 혈당 및 지질 성분에 미치는 영향

        당뇨병 환자의 예방과 치료식으로 민간요법에서 제조되어 사용되는 수정로의 섭취가 streptozotocin으로 유발한 당뇨쥐의 혈당 강하 효과와 체내 지질개선에 미치는 영향을 조사하기 위하여 S.D계 웅성 흰쥐를 정상군, 당뇨대조군, 50% 및 100% 수정로 음용군으로 나누어 식이를 6주간 급여하였다. 식이 섭취에 따른 체중증가는 당뇨 대조군에 비해 유의적으로 차이가 나타났으며, 식이섭취 6주 후의 혈당 강하 효과는 50% 수정로 음용군이 당뇨 대조군보다 42.1%의 혈당 저하 효과를 나타내었다. 혈청 콜레스테롤의 함량은 당뇨 대조군에 비하여 50%와 100% 수정로 음용군이 유의적으로 낮게 나타났지만, 간에서의 중성지질의 함량은 50% 수정로 음용군이 정상군과 유의적인 차이를 보이지 않았다. 결론적으로 흰쥐에게 수정로를 음용시키면 혈당 강하와 체내 지질개선 효과를 나타냈으며, 특히 50% 수정로 음용군이 대체로 100% 수정로 음용군보다 효과적이었다.

        흑마늘 추출물을 첨가한 돈육햄의 품질특성

        This study was performed to examine the quality and antioxidant activity of pork ham with various levels of black garlic extracts. Pork ham manufactured from black garlic extracts with 15 brix (1% (H1), 1.5% (H2), 2% (H3)) and 30 brix (0.2% (H4), 0.5% (H5), 1% (H6)) were stored for 28 days at 8±1℃ and analyzed with an interval of 7 days. In the sensory evaluation, the garlic odor was increased as the garlic extract adding level larger, whereas color, flavor, juiciness, texture and acceptability were not showed significant differences. The pH values of pork products were increased as the level of black garlic extracts increased. The shear force value of groups (H4~H6) with the addition of 30 brix extracts addition were significantly higher than those groups with 15 brix extracts addition (H1~H3) throughout the storage period. Furthermore, the TBARS (thiobarbutric acid reactive substance) content of the pork ham containing various levels of black garlic extract were lower than that of the control group as storage period increased. Thus, black garlic extracts have a potential application for the pork products to inhibit of lipid oxidation.

        아동기본법의 입법 방향 소고

        「제2차 아동정책 기본계획(`20~`24)」은 아동권리·아동중심 원칙을 확산하기 위한 실행기반 중 하나로 가칭 아동기본법을 제정하여 아동 권리 실현을 위한 법적 환경 조성을 구상하였다. UN아동권리협약의 당사국으로, 각각의 개별법을 통하여 아동의 권리를 보호하고 있는 현행법체계에서 모든 아동을 대상으로 하는 종합적인 법률을 제정하려는 것은 상당히 의미 있는 시도이다. 이에, 본 연구에서는 아동 관련 주요 법률 현황을 검토하였으며, 향후, 입법 시 고려할 사항을 제시하였다. 그 내용을 요약하면 다음과 같다. 첫째, 아동 중심 권익실현체계 정립 및 이를 위한 관련 데이터 구조화 등이 중요하다. 즉, 아동 중심의 권익 실현 및 기본적 권리 강화를 위하여 아동에 대한 세밀한 이해를 전제로 한 다양한 수요공급 현황분석이 뒷받침되어야 한다. 둘째, 아동이 개인으로서, 주체적이고 능동적인 권리주체임을 이해하고, 공급자적 규정 또한 최대한 아동을 중심으로 구성되어야 하며, 아동 권리 실현을 위한 수요자 중심의 법안 마련을 지향한다. 셋째, 현행 법체계에서 아동기본법의 역할을 정립하고, 관련 법체계와의 정합성을 고려하는 등 정치한 법 연결망을 통하여, 기본법의 구속력 확대·강화를 도모할 필요가 있다. 넷째, 장기적으로는 체계적이고 융합적인 아동법제를 지향함으로써, 향후 종합법적 아동법전으로 발전해가기를 기대한다. 아동기본법 제정은 아동에 대한 세밀한 이해를 전제로, 법률 전체의 균형과 조화를 고려한 신중한 작업이어야 한다. 이러한 논의가 진정한 아동 중심의 입법 시스템 구축에 일조가 되기를 바란다. “2nd master plan for child policies” has designed the legal environment to realize the children’s rights by enacting the “Framework Act on Children” as one of the implementation Fundamental for expanding the children’s rights and children-centered principle. In Korea which is a party to Convention on the Rights of the Child, it is a very significant try to enact the comprehensive laws for all children in the existing legal system under which the children’s rights have been protected through each law of the system. Therefore, this study reviews the main children’s laws and suggests the considerations for future enactment. The considerations can be summarized as follows. First, it is critical to establish the children centered rights realization system and structuralize the related data for this. It means that, for the realization of the children centered rights and strengthening of the Fundamental Rights, the analysis of various demands and supplies shall be made based on the deep understanding of children. Second, based on the understanding that the children shall be the subjective and active rights holders as individuals, the regulation shall be organized based on the children to the maximum and the children centered legal drafts shall be prepared for the realization of children rights. Third, under the current legal system, the role of “Framework Act on Children” shall be established and the consistency with the related laws shall be considered, thus trying to expand and the strengthening the binding power of the Framework Acts through the well-organized legal network. Fourth, it shall pursue for the systematic and integral restructuring of children’s law system and play the roles of comprehensive children’s law as an integral law. The enactment of “Framework Act on Children”shall be the sincere work considering the balance and harmony in the total legal system based on the full understanding of the children. It is expected that the discussion on this topic contributes to the construction of true children-centered legal system.

        사회경제적 위치에 따른 청소년의 건강과 건강 관련 행태의 차이 : 한국청소년패널 조사 결과

        Objective : This study examined the socioeconomic differentials for the health and health related behaviors among South Korean middle school students. Methods : A nationwide cross-sectional interview survey of 3,449 middle school second-grade students and their parents was conducted using a stratified multi-stage cluster sampling method. The response rate was 93.3%. The socioeconomic position indicators were based on self-reported information from the students and their parents: parental education, father's occupational class, monthly family income, out-of-pocket expenditure for education, housing ownership, educational expectations, educational performance and the perceived economic hardships. The outcome variables that were measured were also based on the self-reported information from the students. The health measures included self-rated health conditions, psychological or mental problems, the feelings of loneliness at school, the overall satisfaction of life and the perceived level of stress. The health related behaviors included were smoking, alcohol drinking, sexual intercourse, violence, bullying and verbal and physical abuse by parents. Results : Socioeconomic differences for the health and health related behaviors were found among the eighth grade boys and girls of South Korea. However, the pattern varied with gender, the socioeconomic position indicators and the outcome measures. The prevalence rates of the overall dissatisfaction with life for both genders differed according to most of the eight socioeconomic position indicators. All the health measures were significantly different according to the perceived economic hardship. However, the socioeconomic differences in the self-rated health conditions and the psychosocial or mental problems were not clear. The students having higher socioeconomic position tended to be a perpetrator of bullying while those students with lower socioeconomic position were more likely to be a victim. Conclusions : The perceived economic hardships predicted the health status among the eighth graders of South Korea. The overall satisfaction of life was associated with the socioeconomic position indicators. Further research efforts are needed to explore the mechanisms on how and why the socioeconomic position affects the health and health related behaviors in this age group.

        채소류와 과칠류 중의 질산염 및 아질산염의 함량

        질산염 및 아질산염의 주요 급원인 각종 채소류 및 과실류에서 이들의 분포를 조사하고자 엽채류 23종, 과채류 4종, 근채류 $\boxUl$종, 향신채소류 7종 및 과실류 15종의 질산염, 아질산염을 Ion-Chromatography(IC)를 이용하여 분석하였다. 엽채류에서 아질산염은 총 10종에서 검출 되었으며,재래종 상치가 평균 0.6 mg/kg으로 가장 낮은 함량이었고 개량종 상치가 평균 349 mg/kg으로 가장 높은 함량이었다. 질산염은 취나물이 평균 578.3 mg/kg으로 그 함량이 가장 높았으며, 다음이 겨자잎(415.7mg/kg), 청경채(348.6 mg/kg)의 순이었다. 과채류 중 아질산염은 본 실험의 조건에서는 검출되지 않았으며 질산염은 애호박이 평균 86.2 mg/kg으로 가장 높은 함량이었으며 오이가 0.6~24.7 mg/kg(평균 5.5 mg/kg)으로 가장 낮았으나 모든 시료가 개체에 따라 함량의 차이가 컸다. 근채류에서도 아질산염은 검출되지 않았고 질산염은 무가 0.2~ 580.0 mg/kg으로 월등히 높은 함량이었고 향신채소류는 질산염의 함량이 대체로 낮은 반면 마늘을 제외한 전 시료에서 아질산염이 불검출에서 29.8 mg/kg까지 검출되었다. 파의 경우 아질산염은 잔파가 더 높은 함량이었으나 질산염은 대파가 평균 4.3 mg/kg으로 잔파에 비해 약 6배 더 높은 함량이었고, 고추에서도 아질산염은 적고추가 더 높은 함량이었으나 질산염은 청고추가 약 7배나 더 높았다. 과실류의 질산염은 사과가 평균 0.5 mg/kg으로 가장 낮은 함량이었고 자두가 1.6~206.2 mg/kg, 평균 76.6 mg/kg으로 다른 시료에 비하여 월등히 높은 함량이었다. A total of 53 vegetables and fruits, consisting of 23 leaf vegetables, 4 fruits vegetables, 4 edible roots,7 spice vegetables and 15 fruits were analyzed for contents of nitrate and nitrite by ion chromatography. Nitrite was detected 10 of 23 kinds of leaf vegetables, which was dominant in lettuce by average 349.9 mg/kg. Nitrate contents of leaf vegetables were average 578.3 mg/kg, 415.7 mg/kg, 348.6 mg/kg in wild plant, mustard leaf and chinese vegetable, respectively. Nitrite was not detected in fruits vegetables and rootcrops but the nitrate contents were abundant and the highest in squash(average, 86.2 mg/kg) and radish(average, 297.5 mg/kg), respectively. In spice vegetables, mate contents were from 0 to 29.8 mg/kg, but not detected in garlic. In welsh onion, its nitrite were higher in small type than large type, while nitrate contents were higher 3 times in the latter. Nitrate contents of fruits were lower in apple(average, 0.5 mg/kg) and higher in plum(average, 76.6 mg/kg) than other samples.

        연구논문 : 흑마늘 추출 분말을 첨가한 기능성 머핀의 품질특성

        This study was performed to examine the quality and antioxidant activity of muffin containing black garlic extract powder that was stored for 9 days at room temperature. Black garlic extract powder was added to the muffin batter at concentrations of 0, 1, 4, 8, and 12%. Specific gravities of muffin batters increased as black garlic extract powder increased, whereas, height and specific volume of the muffins decreased. For the color of muffin crust and crumb, lightness decreased as the level of garlic extract powder increased, whereas redness and yellowness increased. For sensory evaluation, the color, flavor, softness, and chewiness of the muffins containing 1% black garlic extract powder were superior compared to those of other samples. Scores for taste and overall acceptability were the highest in muffin containing 4% black garlic extract powder. The antioxidant activity of muffins measured by DPPH(2,2-diphenyl-1-picrylhydrazyl) radical scavenging assay increased as the level of black garlic extract powder increased. Further, the TBARS(thiobarbutric acid reactive substance) content of the muffins containing various levels of black garlic extract powder was lower than that of control.

        어성초 분말의 혼합 급이가 돈육의 cholesterol 및 산화물에 미치는 영향

        어성초 분말을 돼지 사료에 5%, 10%씩 첨가하여 12주간 사육시킨 후 등심부위를 냉장보관하면서 지질성분의 변화를 분석하였다. 돈육 등심의 저장 중 TBARS는 어성초 분말 급 이군에서 유의적으로 낮게 검출되었고, 지방산의 함량은 저장 2일에 대조군의 불포화지방산이 52.5%였으나 5% 및 10% 어성초 분말 첨가 급이군에서는 각각 53.7% 및 54.1%로 대조군에 비해 높은 비율로 정량되었다. 콜레스테롤 함량은 저장 2일에 5% 어성초 급이군에서는 $39.1{\pm}0.2\;mg/100\;g$, 10% 어성초 급이군에서는 $37.8{\pm}0.3\;mg/100\;g$으로 대조군$(48.9{\pm}0.2\;mg/100\;g)$에 비해 어성초 급이군에서 더 낮게 검출되었다. 돈육 등심 중 콜레스테롤 산화물의 농도는 저장기간이 길어질수록 증가하는 현상을 보여 $7{\beta}-hydroxycholesterol$의 경우 2일간 저장한 대조군에서는 $0.6{\pm}0.65\;{\mu}g/g$였으나 저장 23일 후에는 $2.3{\pm}0.3\;{\mu}g/g$으로 6.5배 증가하였고 10% 어성초 급이군에서는 저장 2일에 $0.3{\pm}0.01\;{\mu}g/g$, 23일에서는 $0.9{\pm}0.15\;{\mu}g/g$로 대조군에 비해 증가량이 유의적으로 낮았다. 19-hydroxycholesterol과 ${\alpha},{\beta}-epoxide$도 어성초급이군에서 대조군보다 더 낮은 함량이었다. The study was designed to investigate the influence of feeding Eosungcho(houttutnia cordata Thunb) on the meat quality of porks. Experimental groups were divided into control group(C), 5%(T1) and 10%(T2) Eosungcho powder feeding group, and than administered for 12 weeks. And then pork's loins were storaged at $4^{\circ}C$, for 23 days after vaccum packed. TBARS was increased(P<0.05) during storage days in all samples, while it's contents were lower Eosungcho feding groups than control group. Total cholesterol contents of pork's loin, were $48.9{\pm}0.2\;mg/100\;g$ in control group, $39.1{\pm}0.2\;mg/100\;g$ in T1 group and $37.8{\pm}0.3\;mg/100\;g$ in T2 group. 4 kinds of cholesterol oxides($7{\beta}-hydroxycholesterol$, 19-hydroxycholesterol, ${\alpha}-$ and ${\beta}-epoxide$) detected in pork's loin. Cholesterol oxides concentration of pork's loin was increased during storage and lowest in T2 group.
