        This study was carried out to examine the qualities of soybean curd residue for utilizing as foodstuff. The content of moisture, crude protein, crude fat and ash were 80.98, 3.32, 0.94 and 0.82%, respectively. The major fatty acids were linoleic acid, oleic acid, linolenic acid and stearic acid. The hydrolysate of protein of sobean curd residue was composed chiefly of aspartic acid, glutamic acid, glycine, alanine, arginine and threonine, but the major free amino acids of soybean curd residue were arginine(234.1), ethanolamine (91.6), γ -amino-n-butyric acid(60.2), glutamic acid(55.8), valine(49.8), asparagine(47.3) and Iycine(48.3μ mol/100g).       • HIV 감염자에 대한 달팽이 엑기스의 혈액면역학적 효과

        A unique sialic-acid-binding lectin from giant African snail Achatina fulica(AF) has a T cell mitogenicity. It was also noted that acetone extracts of AF have a anti-HIV effect in vitro. Thirty HIV-infected individuals(HIV+) were treated with AF extract(40% Chunho extract) for average 5. 5 months. Peripheral blood sampling and questionnaire were done every month after take. There was a significant decrease of WBC from 4 months after take. As a result, lymphocyte counts also decreased(P<0.01). However, there was a significant increase of CD4+T cell percentage from 1 month(P<0.01). The mean increase of CD4+T cell count was significant for first one month(39/pl)(P<0.05). Body weight also increased significantly(P<0.05). Over 90% HIV+ ex-pressed symptomatic improvement and wanted to be treated with AF extract continuously after the end of this study. In one HIV+ treated with AF for 19 months, the increases of CD4+T cell percentage and counts over 11 times after AF extract take were mean 67% and 85%, respectively, compared to baseline value. These data strongly suggest that aqueous AF extract has a immune enhancing effect on HN+.

        비지분말 첨가에 의한 설기떡의 품질특성

        This study was carried out to investigate the acceptable ratio of Sulgidduk with added soybean curd residue powder. The moisture content of Sulgidduk with added soybean curd residue powder (0~10%) ranged from 40.5 4~41.38%, and there were no significant differences between the addition of soybean curd residue powder and control. There were also no significant differences in swelling power and pore ratio from control to the addition of 4% soybean curd residue powder. However, these decreased with increasing addition of soybean curd residue powder of more than 6%. The L (lightness) value decreased with increasing addition of soybean curd residue powder, but the a (redness) and b (yellowness) values increased significantly. As the amount of soybean curd residue powder increased, the hardness, cohesiveness, springiness and gumminess decreased, and, the decrease was especially significant with addition of more than 6%. With increases in the storage period, the hardness, springiness and gumminess increased, while cohesiveness decreased for all additions of soybean curd residue powder. In sensory evaluations, Sulgidduk with the addition of 4% soybean curd residue powder was the most preferred with regard to overall quality. These results indicated that the Sulgidduk with 2% and 4% added soybean curd residue powder exhibited the best quality.

      • 대장직장암에서 예후인자로서 DCC 단백질의 역할

        Purpose: Even though the entire resection is only option for primary cure in case of the localized colorectal cancer. However, recurrence rate is relatively high(30%). The evaluation for chromosome 18 long arm status in the patients who have stage II colon cancer gives a important information about a prognosis and evaluation of the patients. This study was undertaken to evaluate the possible prognostic role of the expression of deleted in colorectal cancer (DCC) protein in the patients with stage II colon cancer. Materials and Methods: The present study analysed 22 patients with stage II &II (AJC TNM 1992 classification) colorectal adenocarcinoma who were admitted to the Chosun University Hospital between March 1989 and February 1992. Clinicopathologic parameters including age, sex, TNM stage, adjuvant chemotherapy, location and tumor differentiation and DCC status were examined. Results: The survival rate of the patients expressing DCC was found to be significantly higher in the patients in whom the DCC was expressed, while 4 (18%) in the other who had not the expression of DCC(P= 0.044). Although the patients with the stage II of the TNM stage have a better prognosis than those with stage III (P=0.046), no significant difference was found between these two groups in terms of the eastern cooperative oncology group (ECOG) performance status of patients (P= 0.525). Conclusion: when the expression of DCC protein is negative in patients with colon cancer staged II need a more aggressive treatments like in the patients with staged III colon cancer and thereafter the more exact operative method is required identifying the expression of DCC protein using the frozen biopsy during operation and thereafter the consideration for the chemotherapy and radiation therapy will be possible.

        저질이 천연수중 구리와 카드뮴의 화학종 분포에 미치는 영향

        In order to predict the distribution of chemical species of copper and cadmium in water, conditional stability constant and complexation capacity between copper or cadmium and natural aquatic sediment have been determined in a shallow lake in Haman, Kyungnam. Kinetic parameters were calculated by Langmuir isotherm equation. Conditional stability constant was log K_cdses=4.78 and log K_cdsed=4.45. Complexation capacity was 1.70×10 exp (-4) moles/g for copper and 5.54×10 exp (-4) moles/g for cadmium. Accuracy of experimental values of conditional stability constant was checked by comparing the calculated concentration of the metals with the measured one. Relatively good agreement between these values was obtained. Relative errors were 8.9% for copper and 6.5% for cadmium. Data of the measured conditional stability constant were put into data base of MINEQL computer program, and concentration of various chemical species of copper and cadmium in a model aquatic system was calculated. Aquatic sediment was associated with copper at the concentration of 10^-5M(0.059g/ℓ) and with cadmium at the concentration of 10^-6M(0.018g/ℓ), and it significantly influenced on the distribution of chemical species of the metals. This result showed that prediction of chemical species of the heavy metals in an aquatic system should be taken into account the influence of the sediment.

      • 볶음 조건별 참기름의 관능적 평가

        참기름을 製造하기 위하여 採油전에 行하는 볶음 過程에서 볶음 온도와 시간이 채유한 참기름의 향미에 미치는 영향을 調査하기 위하여 官能檢査로써 비교한 結果, 고소한 냄새와 달콤한 냄새는 200℃보다 300℃에서 볶았을 때가 강한 것으로 나타났고 t-檢定에서 각각 0.1%와 1%水準에서 有意하였다. 綜合的 香氣의 評價도 200℃보다 300℃가 좋았으며 5% 水準에서 有崙하였다. 또한 100℃와 300℃에 대한 고소한 냄새의 비교에서는 300℃가 강하였으며 t-檢定結果 1% 水準에서 有意함을 알 수 있었다. 그러나 그외의 냄새와 맛에 대한 評價는 統計的인 有意性이 없는 것으로 나타나서 고소한 냄새만은 300'c에서 볶은 후 採油한 참기름이 100℃ 및 200℃보다 강하다고 判斷되었다. 볶음 시간의 變化에 따른 참기름의 香味에 대한 評價는 고소한 냄새가 60<90<120분의 順으로 강하였으며 30분은 他 處理에 比할 때 有意性이 없었다. 또한 60분간 볶은 것이 他 處理보다 쓴맛이 강하다는 評價가 5% 水準에서 有意性이 있었다. Sesame oils, which were extracted from sesame seeds roasted under various heating conditions, were evaluated by sensory analysis. In sensory analysis of sesame oil flavor, the sensory score of sesame oil like and candy odor were higher in the roasted at 300℃ than 200℃, then those were significant at 0.1% and 1% level, respectively. Therefore, sensory evaluation of the roasted at 300℃ was better than 200℃, and this was significant at 5% level. In compared with 100℃, the roasted at 300℃ evaluated to have much odor of sesame oil like with significance at 1% level, but in the evaluation for the other odor and taste had no significance.

        전라북도지방 전통고추장의 제법조사(製法調査)와 성분

        Brewing method and quality of 15 samples of traditional kochuzang in Junrabookdo area were investigated. Average combination ratio of glutinous rice: Meju (soybean Koji); red pepper powder was 2 : 0.7 : 1.1. In order to improve the taste of Kochuzang, some amount of natural soysauce was added in the Kochuzang at early stage of fermentation. Average content of sodium chloride was 7.32%; amino nitrogen, 123.3%; total sugar, 31.9%; reducing sugar, 19.4%; ethyl alcohol, 1.13% and the activity of acid protease was 0.07; liquefying amylase, 9.67 and saccharogenic amylase was 15.82. Five samples were selected as excellent Kochuzang through sensory evaluation. These samples were similarly strong in hot and sweet taste with alcoholic flavor, glossy surface and brownish red color.

        수계내 저질에 대한 구리 및 카드뮴의 분배 특성

        Selective extraction procedure has been used to quantify copper and cadmium in association with the various phases of aquatic sediment such as exchangeable/adsorbed, carbonate, manganese oxides, organic matter and iron oxides. Changes of pH influenced on the partitioning of copper in carbonate and exchangeable/adsorbed phases and of cadmium in carbonate phase of aquatic sediment. Addition of NTA and EDTA, copper and cadmium associated with carbonate phase were released from sediment to water. Total partitioning coefficient was 8.361 for copper and 0.497 for cadmium. The relative binding strengths of copper and cadmium to each solid phase can be ranked by using the partitioning coefficints. For copper it was observed that carbonate > organic matter > exchangeable/adsorbed > manganese oxides > iron oxides and for cadmium it was observed that exchangeable/adsorbed > carbonate > manganese oxides > organic matter > iron oxides.

        Freeze Denaturation of Squid Actomyosin

        Denaturation of actomyosin from the obliquely striated mantle muscle of squids (Todarodes pacificus) was studied by measuring the changes in $Ca^{2+}$-ATPase activity, relative viscosity, and solubility during frozen storage at three different temperature zones of maximum ice crystal formation $(-3^{\circ}C,\;-\;-5^{\circ}C)$, the eutectic point $(-11^{\circ}C)$, and $-20^{\circ}C$. The logarithms of $Ca^{2+}$-ATPase activity, relative viscosity and solubility of the actomyosin solutions (0.6 M KCl) and suspensions (0.05 M KCl) tended to decrease during frozen storage. The denaturation of squid actomyosin at the zone of maximum ice crystal formation significantly differed by only two degree of temperature difference between $-3^{\circ}C$ and $-5^{\circ}C$, and it (0.05 M KCl) at $-3^{\circ}C$ was less than those of other temperature. The denaturation at $-11^{\circ}C$ was more rapid than at $-5^{\circ}C$. The logarithms of $Ca^{2+}$ -ATPase activity, relative viscosity, and solubility were changed slower in the suspensions (0.05 M KCl) than the solutions (0.6 M KCl) at all experimental temperatures.

      • 구기자 추출물이 납중독 흰쥐 혈액 중의 납축적에 미치는 영향

        구기자 추출물이 납중독된 흰쥐의 혈액성분에 미치는 효과를 관찰하기 위해 흰쥐에게 1% 납 식이와 구기자 추출물을 제한없이 주면서 사육하여 얻는 결과, 체중증가량, 식이섭취량은 납급여군이 대조군보다 감소를 보였으며, 구기자-납급여군과 납단독급여군 사이의 차이는 보이지 않았다. 헤마토크릿치와 혈중 DALAD활성은 납단독급여군에서만 감소를 보였다. ALT와 AST모두 납급여군에게 증가를 보였으며, AST 의 경우 구기자-납급여군이 납단독급여군보다 낮게 나타났다. 혈청의 납함량은 대조군보다 납급여군에서 높게 나타났고, 구기자-납급여군에서 납단독급여군보다 감소를 나타냈다. 이상의 결과를 종합해 볼 때 구기자 추출물의 급여는 납중독을 완화시킬 수 있을 것으로 사료된다. This study was designed to investigate the effects of Korean Lycii fructus extract in lead-administered rats. Pb exposed rats were given 1% Pb in the diet. Hematocrit value and DALAD activity were decreased with Pb administration and were higher in the Lyc-Pb group than in the C-Pb group. ALT and AST were increased by Pb added and AST was lower in Lyc-Pb group a than in C-Pb group. Lead content of serum was reduced by Lycii fructus.
