Purpose: The purpose of this study was to understand the degree of depression, sleep quality, job stress and their association among office workers. Method: A self-administered questionnaire was distributed to 147 workers employed in 5 big enterprises, and 5 small and medium enterprises from October 21 to November 21, 2012. The questionnaires included socio-demographic and health-related characteristics, job-related characteristics, sleep quality, job stress (KOSS) and depression (CES-D). Result: Among all subjects, 23.1% was in the depression group (21 points and over in the CES-D score). Depressive level was positively correlated with job stress and quality of sleep. The adjusted odd ratio for the effects of sleep quality and job stress on depression significantly increased in the depression group compared to that of the normal group. Multiple regression analysis revealed that the following factors of influence had combined explanatory powers on depression: BMI, life satisfaction, quality of sleep, and job stress. Conclusion: The study revealed that complicated influences were exerted on the level of depression by variable factors, as well as socio-demographic characteristics, health-related characteristics, quality of sleep, and job stress. Specifically, the level of depression was influenced by the quality of sleep and job stress.

This study evaluated the quality properties of naturally cured sausages with pre-converted vegetable solution (PCS) including two types of starter cultures. The PCS consisted of Chinese cabbage powder, starter culture, and water. As starter cultures, Staphylococcus hominis (SH) and Staphylococcus carnosus (SC) were used. Samples were included: negative control (NC, no NaNO₂); positive control (PC, 70 ppm NaNO₂); TRT 1 (6.29% PCS-SH, 35 ppm NaNO₂); TRT 2 (5.98% PCS-SC, 35 ppm NaNO₂); TRT 3 (12.50% PCS-SH, 70 ppm NaNO₂); and TRT 4 (11.89% PCS-SC, 70 ppm NaNO₂). TRTs 3 and 4 had the highest (P<0.05) cooking loss, probably due to lower (P<0.05) pH. However, All TRTs showed similar (P>0.05) CIE a* to PC. Although TRTs 3 and 4 contained the same concentration of NaNO₂ as PC, residual nitrite in PC was the highest (P<0.05), but they showed higher (P<0.05) nitrosyl hemochrome and curing efficiency than PC. Hardness, gumminess, and chewiness were increased (P<0.05) with the level of PCS. Consequently, the PCS levels may affect the cured color developments of naturally cured sausages, whereas types of starter cultures had limited effects.
Epigenetic Changes in Asthma: Role of DNA CpG Methylation

For the past three decades, more than a thousand of genetic studies have been performed to find out the genetic variants responsible for the risk of asthma. Until now, all of the discovered single nucleotide polymorphisms have explained genetic effects less than initially expected. Thus, clarification of environmental factors has been brought up to overcome the ‘missing’ heritability. The most exciting solution is epigenesis because it intervenes at the junction between the genome and the environment. Epigenesis is an alteration of genetic expression without changes of DNA sequence caused by environmental factors such as nutrients, allergens, cigarette smoke, air pollutants, use of drugs and infectious agents during pre- and post-natal periods and even in adulthood. Three major forms of epigenesis are composed of DNA methylation, histone modifications, and specific microRNA. Recently, several studies have been published on epigenesis in asthma and allergy as a powerful tool for research of genetic heritability in asthma albeit epigenetic changes are at the starting point to obtain the data on specific phenotypes of asthma. In this presentation, we mainly review the potential role of DNA CpG methylation in the risk of asthma and its sub-phenotypes including nonsteroidal anti-inflammatory exacerbated respiratory diseases.

In this study, we characterized lung underlying mechanism in plasma and gDNA of asthmatics and to assess the effect of different mechanism compositions on the changes of lung function in F/U duration. We analyzed lung ROS, SOD, TAC, 8-OHdG and 5mC by using ELISA of the plasma and the gDNA paired sample of 60 asthmatics who were followed up for 1 year; 20 subjects with normal post-bronchodilator FEV1 (A), 20 patients with decreased FEV1 under 60% which showed a substantial increase lung function (B), and 20 patients with decreased FEV1 under 60% which did not increase during the follow up period (C). Compared with A, B groups, C groups had higher the relative increase of the SOD and TCA for F/U duration (p<0.01) in the plasma sample. However, the ROS was lower (p=0.014). Compared with A, B groups, C groups had a higher relative decrease of the 5mC for F/U duration in the gDNA sample (p=0.001). Significant alteration of oxidant, antioxidant, DNA damage and methylation in plasma and DNA were observed according to the refractory state of asthmatics. The asthma trajectory profiles may provide novel aspects for investigating pathophysiology and for developing a biomarker for refractory asthma. [funded by 2015-ER7402-00)]

For the past two decades, a huge number of genetic studies have been conducted to identify the genetic variants responsible for asthma risk. Several types of genetic and genomic approaches, including linkage analysis, candidate gene single nucleotide polymorphism studies, and whole genome-wide association studies have been applied. However, the genetic impacts of these studies are minimal because asthma is a complex syndrome affected by interaction with many environmental factors mediated by epigenetics. Epigenetics is alteration of genetic expression without changes of DNA sequence. Three major forms of epigenetic is DNA methylation, histone modfications and specific microRNA expression that are known to have vast effects on gene expression. However, knowledge regarding the epigenetic effect on the development of asthma and its traits is limited up to date. Recently, new data on epigenetics have been brought up to explain the phenotypic alterations of asthma. In this review, we present general concept of epigenetics, environmental factors inducting epigenetic changes and the background mechanisms in epigenetics behind development asthma and epigenetic therapy. 이화학적·관능적 품질 특성에 기반한 참외의 소비자 기호도 예측

본 연구는 참외의 소비자 기반 품질 지표를 제공하기 위하여 이화학적 특성 및 관능 특성을 조사하였다. 참외는 착과 후 20일, 25일, 그리고 30일에 수확하였으며, 각 수확 시기에 따라 부피별로 소, 중, 대를 구분하여 총 9그룹의 특성을 분석하였다. 착과 후 25일 및 30일에 수확된 그룹은 20일에 수확된 그룹에 비하여 CIE a*와 b*값, 그리고 가용성 고형분 함량(SSC)이 높았으며, CIE L*값과 경도는 낮았다. 또한 착과 후 25일 및 30일에 수확된 그룹은 전반적인 기호도가 높았다. 특성간 상관성 분석결과 이화학적 특성(CIE 값, SSC, 산도, 그리고 경도)과 전반적인 기호도는 1% 유의수준에서 상관성이 있었다. 관능 특성 평가결과 수확 시기가 늦을수록 당도와 황색도는 높고 경도는 낮았으며, 이러한 특성은 전반적인 기호도의 증가와 연관이 있었다. 주성분 분석결과 제 1주성분과 제 2주성분은 각각 62.16%와 17.91%의 설명력을 보여주었으며 전체 설명력은 80.07%였다. 제1주성분 점수의 변화 경향을 활용하여 전반적인 기호도와 직선회귀식을 산출한 결과 r<SUP>2</SUP>은 0.87이었다. 본 실험결과 이화학적 특성인 CIE 값과 SSC, pH, SSC/적정 산도(TA) 및 경도와 관능적 품질 특성인 과피의 황색도, 향, 풍미, 단맛, 조직감, 이미, 그리고 태좌부의 상태를 참외의 품질지표로 활용하여 소비자 기호도 예측이 가능하였다 We investigated the physicochemical and sensory characteristics of oriental melon (Cucumis melo L.) to provide a consumer-oriented quality index. Oriental melon fruits were harvested at 20, 25, or 30 days after fruit set (DAFS), and each group was sorted by size (small, medium, and large). Fruits harvested at 25 and 30 DAFS had higher CIE a* and b* values, higher soluble solids content (SSC), and lower CIE L*, firmness, and titratable acidity (TA) values than fruits harvested at 20 DAFS. Fruits harvested at 25 and 30 DAFS scored more highly for overall acceptance. A significant correlation was found between physicochemical characteristics and overall acceptance. In the delayed-harvest sample, increased sweetness and yellowness, and decreased sensorial texture were associated with an increase in overall acceptance. In principal component analysis, F1 and F2 explained 62.16% and 17.91% of the total variance (80.07%), respectively. Regression analysis of overall acceptance and F1 gave a coefficient of determination (r<SUP>2</SUP>) of 0.87. Our results show that consideration of the physicochemical characteristics (CIE value, SSC, pH, SSC/TA ratio, and firmness) and sensory characteristics (yellowness, placenta area condition, oriental melon odor, sweetness, oriental melon flavor, texture, and off odor) of oriental melon in this way can be used as quality indices to predict consumer acceptance.
