        Effect of Gaeddongssuk (Artemisia annua L.) Powder on Quality and Shelf Stability of Emulsion Sausages during Refrigerated Storage

        The objective of this study was to evaluate effects of Gaeddongssuk powder (GP) on quality characteristics and shelf stability of emulsion sausages during storage. Proximate composition properties showed no significant differences in all treatment (p>0.05). Control showed the highest cooking loss while the treatment with GP showed decreased cooking loss depending on increasing GP content (p<0.05). Apparent viscosity of batter was increased as the amount of GP increased, whereas hardness of emulsion sausages was decreased with increasing GP level. In sensory evaluation, emulsion sausage with 0.1% GP resulted in the highest score in overall acceptability. The pH values of all treatments decreased at the early storage stage, followed by gradual increase. The lightness and redness of treatments were decreased when the level of GP was increased. However, the yellowness of sausages with GP were higher than that of control (p<0.05). The addition of GP inhibited lipid oxidation of emulsion sausages during storage depending on its level. The aerobic bacteria population and VBN was unaffected by addition of GP during the storage (p>0.05). Therefore, Gaeddongssuk powder up to 0.1% has a potential as a natural antioxidant for meat products because it can inhibit lipid oxidation of sausages without decreasing their sensory properties.

      • 경계성 난소 종양 환자의 진단과 치료에 있어서 혈청 CA-125치의 임상적 의의

        종양 표지물질인 CA-125는 악성 난소 종양의 진단 및 치료에 있어서 유용한 것으로 되어 있다. 그러나 경계성 난소 종양에 있어서는 아직 충분히 확립되지 못한 실정이다. 이에 저자들은 1989년 1월부터 1995년 12월까지 만 7년동안 인제대학교 의과대학 부속 서울백병원 산부인과에서 경계성 난소 종양으로 진단받았던 15명의 환자와 악성 난소 종양으로진단받았던 54명의 환자를 대상으로 각각에 대한 치료 전 및 치료 후 혈청 CA-125 치를 측정하여 비교 분석하여 경계성 난소 종양 환자의 진단과 치료에 있어서 혈청 CA-125치가 유용한지를 알아보고자 이 연구를 시행하였다. Serum tumor marker, CA-125 has been investigated extensively for it's usefulness in the diagnosis and management of malignant ovarian tumors. However, the role of serum CA-125in the diagnosis and management of patients with borderline ovarian tumors has not beenestablished. Retrospective analysis of serum CA-125 levels was performed in 15 patientsbefore operation and after treatment for borderline epithelial ovarian tumors at the Seoul Paik Hospital between 1989 and 1995. The result obtained were as follows : 1.The incidence of borderline malignant ovarian tumor among 69 cases of total group was 21.7%. 2.According to FIGO classification the patients were classified as: stage Ia (66.6%), stage Ib (6.7%), swage Ic (13.3%), stage IIc (6.7%), stage IIIa (6.7%). 3.The tumor sizes between patients with normal(less than 35 U/ml) and positive (over than 35 U/ml) of serum CA-125 were 15.43±5.06 cm and 15.78±4.91 cm, respectively and there was no statistical difference between the two groups (p> 0.05). 4.100% of serous and 46.2% of mucinous tumors had elevated CA-125 levels, and there was no statistical difference between the two groups(p> 0.05). 5.Combining both cell types, 6(46.2%) of 13 patients with swage I disease and 2(100%) of 2 patients with stage II and III disease had positive preoperative levels. Serum CA-125 level was no statistical difference between the two groups (p=0.467). 6.Serum CA-125 revels in patients with serous tumors (N=2) were decreased after surgery from 259.00 U/ml to 152.23 U/ml(p=0.04), and wish mucinous tumors (N=13) from 152.23 U/ml to 12.98U/ml (p=0.04) 7.CA-125 levels in patients with positive CA-125 level(N=8) were decreased after surgery from 294.57 U/ml to 18.01 U/ml (p=0.04), and with normal CA-125 level (N=7) from 7.61 U/ml to 5.25 U/ml (p=0.01). 8.Preoperative serum CA-125 levels in patients with malignant epithelial ovarian turners were 372.85 U/ml, and with borderline epithelial ovarian tumors were 166.47 U/ml. There was statistical difference between the two groups (p=0.006). These data suggest that preoperative serum CA-125 level correlates with stage of disease and serum CA-125 levels decrease after surgery regardless the initial level before treatment.

      • 지연 임신에 대한 임상적 고찰

        주산기 이환율 및 사망율과 밀접한 관계가 있는 있는 지연임신은 산과영역에서 중요한 문제로 취급되지만 아직 이의 원인, 처치 및 태아와 모성에 미치는 위험에 관하여서까지도 의견의 일치를 보지 못하고 많은 논란의 대상이 되어오고 있다. 저자는 지연임신이 신생아 및 산모에 미치는 영향을 비교 검토하여 태아 및 모성관리에 임상적 도움이 되는데 본 연구의 목적을 두고 있다. A clinical observation has been made on 50 cases of postterm pregnancies out of 2,823 cases delivered at the Dept. of Obstetrics & Gynecology, Seoul Paik Hospital from April 1, 1993 to July 30, 1996. A total of 370 among 2,580 cases of full term deliveries of 38 to 42 gestational weeks conducted in same period were used as the control group for this study. The results were as follows : 1.The Incidence of postterm pregnancy was 1.77% with the highest incidence occuring in the 26-30 years of age group. The incidence of postterm pregnancy in primipara(2.74% ) was greater than total of multipara(1.59%). 2.In postterm pregnancies, the gestational weeks of 42 was most prevalent(84%) and 43weeks was the next(14%) . 3.The modes of labor onset in postterm pregnancy showed spontaneous 28.00%, induction 52.70%, and cesarean section without labor 20.00%. 4.The incidence of fetal distress was 3.82% and 10.00% in the control group and postterm group respectively. The incidence of fetal distress in the postterm pregnancy was about 2.62 times greater than that of control group and it increased markedly as the gestational weeks were prolonged. 5.The modes of delivery in postterm pregnancy showed : spontaneous vaginal delivery 52.00% vacuum extracted delivery 6.00% cesarean section 42.00% 6.As the indication of cesarean section in postterm pregnancies, the cephalopelvic disproportion was the most prevalent indication and failed induction, fecal distress, previous cesarean section were the next in order. 7.The incidence of large fetus(weight over 4,000gm) was 10% and 3.24% in the postterm group and control group respectively, and postterm group was about 3.08 times greater than that of control group. 8.The incidence of 1min Apgar score under 7 was 14.00% and 8.11% in the postterm group and control group respectively.

        Distribution Channel and Microbial Characteristics of Pig By-products in Korea

        The distribution channel of meat by-products from the pig farm to the final consumer can include a meat processor, whole-sale market, wholesaler, retailer, and butcher shop. Bacterial contamination at any of these steps remains to be a seriouspublic health concern. The aim of this study was to evaluate the distribution channel and microbial characteristics of pig by-products in Korea. Upon evaluation of pig by-products in cold storage, we found that the small and large intestine weresignificantly (p<0.05) higher in pH value compared to the heart and liver. The total plate counts were not significantly dif-ferent among offals until cold storage for 7 d. The coliform count after 1 d of cold storage was significantly (p<0.05) higherin small and large intestine than in the other organs. The coliform count of heart, liver, and stomach showed a highercoliform count than small and large intestine until 7 d of cold storage. As determined by 16S rRNA sequencing, contamina-tion of major pig by-products with Escherichia coli, Shigella spp., and other bacterial species occurred. Therefore, ourresults suggest that a more careful washing process is needed to maintain quality and hygiene and to ensure the safety of pigby-products, especially for small and large intestine.

        Effect of Ultra-sonication Treatment on the Quality Characteristics of Baked Eggs

        The effect of ultra-sonication on quality characteristics and flavor of baked eggs was studied. One hundred and twenty eggs were cooked and assigned to six treatments groups (n=20 each) that were then soaked in saline solution at various concentrations (5, 10 and 18%) with/or without further ultra-sonication treatment at 35 kHz for 1 h. The pH values were lower in the ultra-sonicated samples in comparison with the non-ultra-sonicated samples (p<0.05). The values for texture traits were higher in the samples soaked in 10% saline solution with ultra-sonication in comparison with other remaining treatments or control (p<0.05). The sodium content in samples soaked in 10% saline solution with ultra-sonication was similar to that of the ones soaked in 18% saline solution without ultra-sonication. The higher flavor scores were also given for the ultra-sonicated samples in comparison with the control or non-ultra-sonicated ones. These results suggest that the application of ultra-sonication may produce a faster sodium penetration into baked eggs, simultaneously improves some textural traits (e.g., hardness) as well as flavor of the products.

        Mg2+, PO4 3--P공급원에 다른 Struvite 형성과 축산분뇨 내의 암모니아 제거

        Struvite crystallization is good for high removal efficiency of nitrogen and phosphate in wastewater. In this study, comparison between NH4 +-N and PO4 2- removal in artificial, swine wastewater has been performed. In artificial wastewater treated with MgO, the value of pH was increased to 11 and the electrical conductivity (EC) was decreased possibly due to struvite generation. Ammonia was sharply decreased to about 80% and became very low in concentration upon addition of H3PO4. Removal efficiency of PO4 2- was 90%. In swine wastewater pH was increased like artificial wastewater. Ammonia was also decreased. However, it was decreased only 40% due to effect of chemicals already present in swine wastewater.

        가열온도 및 시간이 구운 계란의 품질 특성에 미치는 영향

        & & 본 연구는 가열처리와 온도가 구운 계란의 품질에 미치는 영향을 구명하고자 수행하였다. 구운 계란은 80, 90, 100, 105 및 110℃ 의 온도에서 시간을 달리하여 5, 6, 7 및 8시간 동안 상업용 가열기(OF-22, JEIO TECH, Korea)를 이용하여 제조하였다. 가열감량은 최종 110℃에서 가열된 8시간 처리구가 최종 105℃에서 가열된 처리구들에 비해 유의적으로 (p<0.05) 높게 나타났다. 난백의 pH는 가열시간이 가장 짧은 5시간 처리구가 다른 처리구에 비해 유의적으로(p<0.05) 높게 나타났다. 난황의 pH는 모든 처리구 사이에 유의적인 차이가 없는 것으로 나타났다. 가열온도와 가열시간에 따른 구운 계란의 경도와 응집성은 처리구간 유의적인 차이가 없는 것으로 나타났다. 최종 110℃에서 가열된 8시간 처리구의 백색도 값은 최종 105℃에서 가열된 처리구들에 비해 유의적으로(p<0.05) 낮고, 적색도와 황색도의 값은 유의적으로 (p<0.05) 높게 나타났다. 난백 및 난황의 수분 함량은 가열시간 증가와 함께 감소하는 경향을 나타내었다. 이상의 결과를 종합해 볼 때 구운 계란의 제조를 위한 적합한 시간은 8시간이며, 최종 온도는 105℃에서 5시간 이상 또는 110℃에서 2시간 이상 가열하는 것이 적절한 것으로 사료된다. & & This study was conducted to investigate the effect of heating temperature and time on the quality of baked egg. Eggs were baked at various temperatures (80, 90, 100, 105 and 110℃) for different times (5, 6, 7 and 8 h) using a commercial heater. Our results revealed that heating loss in the 110℃ treatment was significantly (p<0.05) higher than those of other remaining treatments. The pH value of egg white in the 5 h treatment was significantly (p<0.05) higher compared to those of other treatments. While, no significant differences in pH values of egg yolks occurred among the treatments. Regarding the texture, hardness and cohesiveness values were not significantly different among the treatments. Regarding color, the 110℃ treatment samples had lower lightness value whereas had higher redness and yellowness values compared to the 105℃ treatments (p<0.05). Moisture content of baked eggs showed an decreased tendency as increasing the heating temperature and time. These results suggested that the proper conditions were 8 hours for total baking time including more than 5 h at 105℃ or 2 h at 110℃.
