In order to know the residual pattern of pesticides and predict to the degradation period until below MRL, we experimented diazinon, iprodinon and chlorfenapyr for shallot. They were the most detected pesticide in shallot by NAQS (National Agricultural product Quality management Service) survey. In this experiment, we sprayed those pesticides 15days before harvest and analyzed 0, 1, 2, 3, 5, 7, 10, 14 day sample to establish logical equation and to calculate DT_(50). During the cultivating period, the residue amount of diazinon was changed from 1.02 mg/kg (0 day) to 0.01 mg/kg (14 day), DT_(50) was 2.19 days, and iprodione was changed from 1.45 mg/kg (0 day) to 0.14 mg/kg (14 day), DT_(50) was 4.15 days, and chlorfenapyr was changed from 1.5 mg/kg (0 day) to 0.01 mg/kg (14 day), DT_(50) was 1.97 days. The DT_(50) of double amount in those pesticides, diazinon was 2.24 days, iprodione was 4.82 days, and chlorfenapyr was 2.24 days, respectively.

This study was performed to evaluate effects of dietary variety scores (DVS) and dietary diversity scores (DDS) on the nutritional quality of the diets of Korean college students, and to examine the association between food group intake patterns and nutritional adequacy. This study examined the relationship of dietary diversity scores (DDS), dietary variety scores (DVS), and food group intake patterns with nutrient intakes using 24-hour recall data (n=.358). The .DDS was calculated from the sum of each of the five food groups consumed as a score of 'I'. DVS was determined by counting the number of food items consumed daily. Food group intake patterns were expressed with the presence or omission of five major food groups-dairy, meat, grain, fruit, and vegetable. The four most prevalent food group patterns and the proportion of the population reporting them were as follows; no dairy and fruit, $23\%;\;no\;dairy,\;20\%;$ no dairy, meat, and fruit, $15\%$; all food groups, $14\%$. Even though the DDS or DVS was higher, the majority of this study population failed to meet the Korean RDA for calcium in both genders and iron in women. Higher DVS scores $(\geq31)$, within all DDS groups, were associated with the largest proportion of individuals consuming more than $75\%$ of the Korean RDA for selected nutrients. The consistency of these results indicates that screening diets to evaluate the overall dietary variety and variety among the major food groups including food group intake patterns provide meaningful information about their quality.

Characteristics and Nutritional Status of Elders Who Under-report Intake on 24 Hour Recalls in USA

The objectives of this study were to determine whether older Americans would provide valid energy intake information using a 24-hr recall method and to determine which characteristics were predictive of under-report of energy intake. We conducted 24-hour recalls on 83 male and 105 female community-dwelling older adults(66-87y) in the USA to assess energy(EI) and nutrient intakes. Basal metabolic rate(BMR) was calculated from age-and gender-specific equations of Schofield. Under-reporting was defined a priori as EI : BMR<0.9. Subjects volunteered demographic information, underwent depression and cognition exams, and completed a Level II Nutrition Risk Screen. Differences between under- and adequate-reporters were assessed using t-tests for characteristics and macro-nutrient profile. Stepwise regression analyses were used to predict under-reporting status. Under-reporting of EI occurred in 34% of the sample. Neither geriatric depression scale(GDS) score, nor self-reported weight loss were related to under-reporting. On average, under-reporters had higher body mass indices. The most significant variables for the main effect to predict the ratio of energy intake to estimated basal metabolic rate(EI : BMRest) were BMI and age. Using a standard cut-off of 76% of the recommended dietary allowances for Americans, under-reporters were consistently more likely to be classified as having inadequate nutrient, as well as energy, intakes. 고등학교 급식시설 운영실태 및 ATP Bioluminescence를 이용한 위생상태 조사연구

An investigation was conducted to evaluate the hygienic status of 53 high school foodservice systems in Gyeonggi province by using hygiene management guide checklist, ATP bioluminescence assay of food utensils were conducted during process. The 5 hygiene management guide checklist groups about personal hygiene, cooking facilities control, cross contamination control, cook and storage control, management control were checked by experts and had good grades but there were some inadequate behaviors on observation. Total cleaning levels were inadequate, including hand, rubber gloves, aprons, knives, food tray, machine and instruments. The possibility of cross contamination is also noted in handles for refrigerators, ovens, food dryers, hand washing. It was also noted that there were too much work on the nutritionist and cook, additional personnel need to be added. lack of space, deterioration of facilities were identified in some high school foodservice systems. ATP bioluminescence assay was conducted on surface of food facilities, ATP ranged 1,393±5,041.2 RLU on yellow gloves, 244±258.7 RLU on pink gloves, 3,780±11,418.6 RLU on apron, 49,056±62,831.4 RLU on refrigerator grip, 41,422±61,259.8 RLU in oven, 31,407±41,344.9 RLU on hand cleaning board.
아동복지시설 미취학 아동들의 신체 발육과 영양 실태 조사

아동복지시설 7곳의 미취학아동 70명을 대상으로 신체발육과 영양실태를 조사한 결과 다음과 같은 결론을 얻었다. 조사대상 아동들의 신장, 체중 및 머리둘레는 한국 소아 발육 표준치보다 다소 적었으며 가슴둘레는 거의 비슷한 경향으로 나타났다. 따라서 이들의 체격발달이 일반 한국 소아의 발육에 비해 다소 떨어짐을 알 수 있다. 또한 식이섭취조사결과 한국인 영양 권장량에 비해 모든 아동에게서 칼슘의 섭취량이, 또 일부 아동에게서 열량, 철분, 비타민 B₂의 섭취량이 다소 낮아서 이들 영양소의 섭취를 보충해야 할 것으로 판단된다. 조사대상 아동들의 생화학적 검사결과 철분 결핍 발현율은 hemoglobin으로 판정시에는 12.9%, hematocrit으로 판정시에는 18.6%이었으며 혈청 철분 정상 판정기준 미만인 아동들은 총 인원의 4.3%에 해당하였다. 혈청 총 단백은 정상인 것으로 판명되었다. 따라서 영양상태가 취약한 아동복지시설에서의 영양 관리가 효율적으로 이루어지기 위해서는 영양관리 담당 전문 인력의 확보 및 여러 사회기관에서의 급식비에 대한 보조지원으로 아동들이 충분히 영양섭취를 할 수 있는 적극적인 지원이 있어야 할 것으로 사료된다. This study was conducted to investigate nutritional status and anthropometry of preschool children in orphanage. The height, weight and head circumference of preschool in orphanage were lower than that of Korean growth standards, but not chest circumference. The average daily intakes of Ca by all subjects, the average daily intakes of Fe, riboflavin and ascorbic acid in some subjects were lower than those of the Korean RDA. The prevalence rates of iron deficiency assessed by hemoglobin, hematocrit were found to be 12.9% and 18.6%, respectively. When assessed with serum iron, the prevalence rate of iron deficiency was 4.3%. Serum total protein and serum albumin level were turned out to be normal. Considering this results of the survey, financial help from social work organization for meal service and more aggressive efforts should be made to improve nutritional status of the subjects in orphanage.
