        중립 내병 다수성 장류⋅두부용 콩 ‘늘찬’

        The soybean cultivar ‘Neulchan’ was developed for production of soy-paste and tofu. SS91501-9-1-1 and SS96205 (F2) were crossed in 1998, and F3 to F7 were selected by the pedigree method. A preliminary yield trial (PYT) and an advanced yield trial (AYT) were conducted from 2006 to 2008, and a regional yield trial (RYT) in nine regions was conducted from 2009 to 2011. In the RYT, ‘Neulchan’ was stable in variable environments and generated high yield. ‘Neulchan’ was determinate with white flower, light brown pod color, yellow spherical seed, and yellow hilum. Its flowering date and maturity date were Jul. 30 and Oct. 9, respectively. The plant height was shorter than that of ‘Daewonkong’ (a standard cultivar). ‘Neulchan’ had the same node number (14), higher first-pod height (12 cm), and lighter seed weight (21.7 g/100-seed weight) than those of ‘Daewonkong’ (14, 11, and 24.2 g/100-seed weight, respectively). ‘Neulchan’ had high resistance to bacterial pustule, and its resistance to soybean mosaic virus was similar to that of ‘Daewonkong’. The yield and color of ‘Neulchan’ tofu were similar to those of ‘Daewonkong’ tofu, but the hardness was lower than that of ‘Daewonkong’ tofu. The soybean malt scent, fermented soybean yield, and γ-polyglutamic acid (γ-PGA) of ‘Neulchan’ were 3, 215%, and 24.6 mg/g, respectively. Its yield in adaptable regions was 307 kg/10a, higher than that of ‘Daewonkong’. ‘Neulchan’ was expected to be cultivated and used widely for soy-paste and tofu production.

        장류 및 두부용 내재해성 대립 콩 신품종 『강풍』

        The soybean cultivar ‘Gangpoong’ was developed for soy-paste and tofu. Suwon 223 and SS 00419 were crossed in 1999 and their progenies were selected from F3 to F5 using the pedigree method. Preliminary yield (PYT) and advanced yield (AYT) trials were conducted from 2008 to 2010, and regional yield trials (RYT) were conducted at three locations from 2011 to 2013. In RYT, ‘Gangpoong’ was stable in variable environments. ‘Gangpoong’ was determinate, with white flowers, yellow elongated spherical seeds, and a light brown hilum. The flowering and maturity dates were July 27 and October 8, respectively. The plant height was 67 cm shorter than that of ‘Daewonkong’ (81 cm, standard cultivar). ‘Gangpoong’ had fewer node numbers (16) than that of ‘Daewonkong (18) and had a heaver seed weight (30.1 g/100-seed weight) than that of ‘Daewonkong (26.0 g/100-seed weight)’. ‘Gangpoong’ showed lodging tolerance. The tofu yield of ‘Gangpoong’ was 213%, and the physical characteristics of tofu were similar to those of ‘Daewonkong (208%, standard cultivar)’. The soybean malt scent and fermented soybean yield of ‘Gangpoong’ were 2 and 105%, respectively. The yield in adaptable regions was 3.4 MT/ha, which was 14% higher than that of ‘Daewonkong’. Therefore, ‘Gangpoong’ could be cultivated and used widely for soy-paste and tofu in the near future (Registration number: 5932).

        The soybean cultivar, ‘Saegeum’, has been developed for preparing soy-paste and tofu. The soybean cultivars ‘Daepung’ and ‘SS98207-3SSD-168’ were crossed in 2003 to obtain ‘Saegeum’. Single seed descent method was used to advance the generation from F3 to F5, and the plant lines with promising traits were selected from F6 to F7 by pedigree method. The preliminary yield (PYT) and advanced yield trials (AYT) were conducted from 2009 to 2010, and the regional yield trial (RYT) was conducted in 12 regions between 2011 and 2013. The morphological characteristics of ‘Saegeum’ were as follows: determinate plant type, white flower, tawny pubescence color, and brown pod color. Flowering and maturity dates were August 2, XXXX and October 17, XXXX, respectively. Plant height, first pod height, number of nodes, number of branches, and number of pods were 79 cm, 18 cm, 16, 2.3, and 44, respectively. The seed characteristics of ‘Saegeum’ were as follows: yellow spherical shape, yellow hilum, and the 100-seed weight was 25.4 g. ‘Saegeum’ was resistant to bacterial pustule and SMV in the field test, and its lodging resistance was mildly strong, whereas its shattering resistance was excellent. The ability of this cultivar to be processed into tofu, soybean malt, and other fermented products was comparable with that of ‘Daewonkong’. The yield of ‘Saegeum’ in the adaptable regions was 3.02 ton ha -1. Thus, ‘Saegeum’ is adaptable to mechanized harvesting because of its high first pod height, as well as lodging and shattering resistance. (Registration number: 5929)

        대립 내도복 다수성 된장·두부용 콩 품종 ‘선풍’

        Soybean cultivar ‘Seonpung’ was developed for soy-paste and tofu. Suwon 224 and YS1325-3S-2 were crossed in 2003 and selected from F3 to F5 by pedigree method. The preliminary yield trial (PYT) and advanced yield trial (AYT) were conducted from 2009 to 2010, and regional yield trial (RYT) in twelve regions was conducted from 2011 to 2013. In RYT, ‘Seonpung’ was stable in variable environments and a high yield cultivar. ‘Seonpung’ is determinate, white flower, yellow spherical seed and yellow hilum. Flowering date and maturity date were Aug. 5 and Oct. 19, respectively. Plant height was similar to ‘Daewonkong (standard cultivar)’. However ‘Seonpung’ has higher node number (16) and seed weight (25.9g/100-seed weight) than ‘Daewonkong’ (14 and 24.2g/100-seed weight). ‘Seonpung’ is resistant to root rot, and it also has high level of resistance to bacterial pustule and soybean mosaic virus. The yield of tofu of ‘Seonpung’ was 241%, and noticeably lighter, and solidity was higher than ‘Daewonkong’. Soybean malt scent, fermented soybean yield and γ-polyglutamic acid (γ-PGA) of ‘Seonpung’ were 4, 181% and 31.7㎎/g. The yield in adaptable regions was 340kg/10a (21% increase compared to ‘Daewonkong’). ‘Seonpung’ is expected to be cultivated and used widely for soy-paste and tofu. (Registration number: 5931)

        케이크 도넛의 흡유저감에 대한 두부 페이스트와 비전분성 탄수화물 고분자의 영향

        전량 폐기되는 파지두부로부터 제조된 두부 페이스트와 14종의 NSP들을 혼합하여 도넛의 흡유저감에 대한 효과를 조사하였다. 두부 페이스트만을 첨가한 도넛(두부도넛)의 흡유저감율은 10.8%이었으나, 두부 페이스트와 NSP를 함께 사용하는 경우 도넛(NSP-두부도넛)의 흡유저감율은 두부도넛에 비해 향상되었다. 두부 페이스트와 함께 첨가된 NSP들의 흡유저감율에 대한 효과는 NaA가 41.2%로 가장 높았으며, HMP>XAT>CN10T = LMP = ALMP λC>GG>LBG>ιC>κC>CN15U>GLG>CN40H 순으로 증가하였다. 또한 NSP 만을 흡유저감 소재로 첨가하였을 때보다 두부페이스트와 함께 사용하는 것이 도넛의 흡유저감에 더욱 효과적이었고, 그 효과는 음이온성 검류들에서 뚜렷하였다. 유탕처리 시 두부 페이스트의 갈변으로 인해 두부 페이스트 및 두부 페이스트-NSP를 첨가한 도넛들은 대조군에 비해 명도가 감소하고 황색도가 증가하였으나 그 차이는 미미하였다. 두부 페이스트와 함께 NaA, κC, LBG를 첨가하여 제조된 도넛의 비용적은 대조군과 유사한 수준을 나타내었다. 따라서 도넛의 흡유저감율과 비용적을 고려하면 두부 페이스트와 NaA를 흡유저감 소재로 함께 사용하는것이 흡유저감 도넛을 제조하는데 가장 적합한 것으로 판단된다. 그럼에도 NaA 보다는 흡유저감율이 적지만 κC과 LBG을 두부 페이스트와 혼합하여 사용하는 것도 차선책으로서 의미가 있을 것 같다. The objective of this study was to investigate the effects of combinations of tofu paste and non-starch polysaccharides (NSP) on the oil uptake reduction (OTR) of deep-fat fried cake doughnuts. OTR agents were tofu paste (from grinding tofu with deionized water, followed by passage through a 60 mesh sieve), and five neutral and nine anionic NSPs. A control doughnut (without tofu paste or NSP), tofu doughnut (with tofu paste) and NSP-tofu doughnut (with tofu paste and NSP) were prepared. The moisture and total lipid (TL) content, cross-section image, color characteristic, and specific volume were measured. The tofu and NSP-tofu doughnuts exhibited higher moisture and lower TL content than the control. OTR was 10.8% for the tofu doughnut, and between 13.2% and 41.2% for the NSP-tofu doughnut. The highest OTR (41.2%) was found in the NSP-tofu doughnut with a combination of tofu paste and sodium alginate (NaA). The specific volume of the NSP-tofu doughnuts with combinations of tofu paste with NaA (2.5 mL/g), locust bean gum (2.5 mL/g), and κ-carrageenan (2.4 mL/g) was very close to that of the control (2.6 mL/g). Considering the OTR and specific volume of doughnuts, the combination of tofu paste and NaA would be most effective in reducing the oil uptake of doughnuts during deep-fat frying.

        파지두부와 옥수수전분을 이용한 글루텐 프리 머핀의 제조와 특성

        파지두부와 옥수수전분을 이용하여 GF 머핀의 개발을 위해 두부 페이스트와 옥수수전분의 혼합비율을 결정하고자 하였다. 파지두부는 페이스트 형태로 옥수수전분과 다양한 비율로 혼합하여 박력밀가루를 전량 대체하였다. 대조군(밀가루 머핀)과 S100 (고형분 기준으로 박력밀가루의 전분 및 단백질 분획과 동일하도록 옥수수전분과 두부 페이스트를 혼합하여 제조된 글루텐 프리 머핀)은 수분함량, 중량, 굽기손실률, 부피, 머핀 속의 명도에 있어 유의적인차이를 나타내지 않았으나, 비용적은 낮은 수준을, 경도와 머핀 속의 적색도 및 황색도는 높은 수준을 나타내었다. 머핀의 중량과 굽기손실률을 제외하고 GF 머핀 반죽 내의 옥수수전분의 함량이 적어지면서 대조군에 비해 수분함량, 경도, 머핀 속의 적색도와 황색도는 증가하였으며, 부피, 비용적과 머핀 속의 명도는 감소하는 경향을 나타내었다. 모든 물리적 특성의 결과들을 고려할 때 S100이 대조군과 가장 유사한 GF 머핀이었다. 그러나 기호도 검사에 있어 대조군이나 S100과 상당한 차이의 부피, 비용적 및 경도를 보이는 S60 (건조중량 기준으로 두부 페이스트와 옥수수전분을 1:3.8의 비율로 혼합하여 박력밀가루를 대체하는 것)이 외관특성을 제외한 기호도 검사항목들에 있어 대조군과 유사하거나 높았다. 결과적으로 본 연구에서 박력밀가루의 단백질 및 전분 분획을 두부 페이스트의 두부 단백질과 옥수수전분으로 전량 대체하였을 때 밀가루 머핀의 물리적 특성들과 가장 유사한 GF 머핀(S100)을 제조할 수 있었다. 그러나 밀가루 머핀과 기호도가 가장 유사한 GF 머핀(S60)의 두부 페이스트와 옥수수전분의 혼합비율의 사용은 상업적인 측면에서 효용성이 높을 것으로 판단된다. 이와 같은 경우 밀가루 머핀의 부피, 비용적, 및 경도에 근접할수 있는 GF 머핀의 특성 개선에 대한 연구가 선행되어야 할 것이다. This study investigated the effects of the mixing ratio of tofu paste and normal corn starch on the characteristics of gluten-free (GF) muffins. Soft wheat flour for wheat flour-based muffins (control) was replaced with the mixture of tofu paste and normal corn starch (NCS). The mixing ratios of tofu paste and NCS were 1:6.4 (S100), 1:5.1 (S80), 1:3.8 (S60), 1:2.6 (S40), 1:1.3 (S20), and 1:0 (S00), based on their total solid contents. GF muffins of S40- S100 developed the porous, sponge-like structure without crumb collapse. The weight and baking loss did not significantly differ in the control and GF muffins. By decreasing NCS in GF muffin batters, the moisture content, firmness, and crumb redness/yellowness of GF muffins increased, while their volume, specific volume, and crumb lightness decreased. Nevertheless, these characteristics (except for firmness) of S100 were much closer to those of the control. In the preference test, however, S60 (possessing lower attributes than S100 and S80) was most favored among GF muffins, and was very similar in all evaluations (except for appearance) to the control. Overall, the mixture of tofu paste and NCS would be a potential material to replace soft wheat flour in muffins.

        A New Tofu and Soy-paste Soybean Cultivar, “Seonyu” with Large Seed and Early Maturity

        A new tofu and soy-paste soybean cultivar, Seonyu, was developed at the Yeongnam Agricultural Research Institute(YARI) in 2004. Seonyu was selected from a cross Suwon 162/YS 548. The preliminary, advanced, and regional yield trials forflower, gray pubescence, gray pod color, yellow seed coat, yellow cotyledon, globular seed shape, oval leaflet shape and large seedsize (29.6 grams per 100 seeds), and it was 8 days earlier in maturity than the check variety Taekwang. In the seed quality such anoil and isoflavone contents, Seonyu was better than those of check variety, and it has good adaptability for tofu and soy-paste. Itsoybean disease. The average yield of Seonyu was 2.44 ton per hectare in the regional yield trials (RYT) carried out for three yearsfrom 2002 to 2004 which was 1 percent lower than one of the check variety Taekwang.
