      • 고구마의 貯藏期間과 調理에 關한 硏究Ⅲ : 저장기간에 따른 Carotene과 Vitamin C의 含量變化 및 相互 關係

        食糧 資源으로서 價値를 가지는 고구마를 carotene 含量이 大中小에 屬하는 3品種 Porto Rico 충승 100호 紅美를 擇하여 收穫後 120日間 고구마의 貯?? 條件에 알맞는 半 地下室에 貯??하면서 各 期間別로(0,30,60,90,120일) 生體와 調理後의 Carotine과 vitamin C 含量을 分析한 結果는 다음과 같다. 1.各 品種의 고구마를 120日間 貯??한 後 變化한 生體中의 carotene과 vitamin 含量은 收穫時의 80%以上 殘存率을 가졌다. 2.調理後 carotene과 vitamin C 含量은 調理 方法 器具 條件에 따라 많이 差異가 있었다. 3.各 貯?? 期間에 있어서 調理 方法 器具 條件에 따르는 carotene과 vitamin C 含量의 減少率은 비슷한 傾向이었다. 4.生體에서 carotene과 vitamin C 含量이 높았던 品種은 全 貯?? 期間 동안 調理後에도 높은 殘存率을 가졌기 때문에 Porto Rico는 carotene의 含量이 生體와 調理後에도 第一 높았다. 5.carotene 含量의 殘存率은 aluminum 찜통에 쪘을때 坪均 94.0%로 第一 높았고 壓力솥을 使用해서 찐것이 61.9%로 第一 낮았다. 튀기기에 있어서는 튀김 껍질로 밀가루만 使用한것이 72.1% baking powder를 使用했을때 68.7%의 殘存率을 가졌다. 6.vitamin C의 含量은 貯?? 期間 동안 Porto Rico가 第一 높았고 紅美 충승 100호의 順이었다. 7.vitamin C의 殘存率은 調理 方法中 찌기가 70.8%로 튀기기의 55%보다 15.8% 높았고 調理 器具는 壓力솥을 使用하는 것이 72.9%로 aluminum찜통의 68.6%보다 4.3% 높았다. 튀기기에 있어서는 튀김 껍질에 밀가루만 使用한 것이 55.6%로 baking powder를 使用한 것 54.3%보다 1.3% 높은 殘存率을 나타내었다. 8.carotene과 vitamin C의 含量 減少의 相關度는 충승 100호 0.97 Porto Rico 0.97 紅美 0.89로 높은 正의 相關 關係를 갖고 있었으며, 두 相關 係數는 5% 水準에서 有意差가 있었다. 3品種 모두 貯?? 期間 길어짐에 따라 減少量이 많아 졌다. Three varieties of sweet potato which had high medium and low content of carotene in previous studies Porto Rico, Chung Sung 100 Hong Mi were used for this experiment. Those were stored in various period 30, 60,90,120 days in a half cellar and culculated carotene and total vitamin C in 2 different cooking method steaming and frying various cooking materials and conditions. Spectrocolorimeter method for carotene and 2-4 dinitrophenol hydrazine method for total vitamin C. The results were summerized as follows: 1.Percentage of retention of carotene and total vitanuin C content in which all of these three varieties was over 80% compare with harvesting time standard. 2.Content of carotene and vitanin C after cooking was very different by cooking method, material and condition. 3.Retention carotene and vitamin C showed same tendency by cooking method, material and condition on each storage period. 4.Porto Rico had the highest carotene content in raw and after cooking among the three varieties because variety Which had high carotene content in raw had also its high content after cooking on all storage periods. 5.Retention carotene was the highest on aluminum steaming kettle (94.0% as mean) Pressure cooker was the lowest (61.9%) Only flour using was 72.1% while baking powder added was 68.7% as frying material. 6.Porto Rico had the highest content of vitamin C and next was Hong Mi, Chung Sung 100 in order on all storage period. 7.retention vitamin C was 70.8% in steaming, 55% in frying, 72.9% in pressure cooker, 68.6% in aluminum steaming kettle, 55.6% in only flour using and 54.3% in baking powder added as frying material. 8.Relation-ship of decrease of carotene and vitancin C content had highly significant correlation. 0.97 in Chung Sung 100, 0.87 in porto Rico, 0.97 in Hong Mi and had significance as 5% level.

        「 인간 교육 」중심으로 살펴 본 FROBEL 의 아동교육론

        The purpose of this study was to analyze Frobel's main work Die Menschenrziehung, to review the idea of Child Education involved in the work. Frobel was influenced by Die Menschenrziehung, which belonged to Deutsch romanticism and the passive way of education that claimed man is essentially good therefore all the aptitudes should be developed harmoniously. From the view point of educational history, he was affected by Commenius, Rousseau, Pestalozzi, accepting all their backgrounds, adding his own experiences and forming his own idea. As the basis of Frobel's educational idea, God, nature and humanbeing can be cited. Frobel's God is based on the idea that God "moves on its own accord, incessantly creating for himself and acts, through which He moves everything". That is God ultimately unified with creative power tantamount to the cosmic spirit. Again, Frobel's nature can be said God's plateau with His spirit, which is a nature as a source of man's intrinsic power : it is a nature which is active and creative as an organic being. Since Frobel viewed that man is governed by God, he saw that mari s original nature is good and that man alone can control things of God. In the theory of Child Educaton revealed in Frobel's Die Menschenrziehung in the light of the above background, he saw the unlimited potential as sacrosanct by claiming as the purpose of education "From birth, man is possessed of an unlimited potedtial endowed by God." Defining that as man's original nature, he said demonstration of the divine nature which is man's original nature is the purpose of education, Thus, as the principle of Die Menschenrziehung for reaching the goal of education he adopted as basis the principle of unity which maintains all things are governed unified by God, he insisted on the the principle of one's own creative activity so that the child can materialize the divine nature. In addition, he also claimed that the child is a being with developmental potential, unceasingly growing : therefore, man who is originated from systematic developmental principl as perpetual living being wants to express through action since birth. With all these as a basis, Frobel cited as a suggestion of what to teach religion, nature and mathematics, language and arts. Especially in childhood peculiar notice was paid to as a period of establishing self, and dealt each as religion is the essence of the spirit, nature and mathematics is for recognizing all beings and arts for expressions including the language is an intermediary for those. On such Ideological background for Die Menschenrziehung, as to the actual application of Frobel's idea of the child education to reality this study was directed through games which are the whole of a child's life, by going through creative self activity called on by hims and practical side of games in an attempt to help the child achieve creative self activity existing within the child. For teaching material in the classroom, Frobel devised things and work with deep significance and value for a practical way to carry out creative self activity along with religious education, a basis and essence for child education. For reference to the importance of home education and mother education, he published "Mother's Song and Song of Caressing", corroborating his theory concerning songs and motional activities ; for outdoors activity, he cited the following as important : teach so as to the child familiarize himself with Nature ; to consider the surrounding nature as belong to oneself : and to infiltrate into oneself and place above oneself the God's spirit existing in nature. Thus Frobel's idea studied with its center on Die Menschenrziehung can be found to gave made great contribution not only to the current indergarten education but is influencing all phases of human education. Also the following points are found to hold great significance in the current child education to develop the theory on creative self activity cherish the values of games and work : to emphasize the nature of the child toward society within the two above. Accordingly, though we are not in the position to accept as they are the faith and praction originated in the age of Frobel, faced with the reality of the current society which has lost humanity and the way of educating a man to become functional and used as a means, we admit that Frobel's idea holds a great deal of educational significance. Finally, I hope a great number of scientific stufies on Child will be carried out for further development of Child Education in our country.

        사각근간 접근에 의한 상박신경총 차단마취의 임상적 고찰

        We performed the interscalene technic of brachial plexus block for an operation of the upper extremity in 94 patients. We used 1%, 1.5% or 2% lidocaine solution with or without 1:200,000 epinephrine. There were paresthesias in all cases of needle puncture with the interscalene approach. The results were as follows: 1) Onset of anesthesia was observed in 3~10 minutes(average: 5 min.) 2) Complete anesthesia was observed in 10~30 minutes(average: 18 min.) 3) The mean interval of anesthesia to operation was 22 minutes. 4) We observed astisfactory blocks in 81 cases, unsatisfactory block in 8 cases and failure in 5 cases. 5) There were not any complications such as pneumothorax, dyspnea, convulsions, subarachnoid or epidural injection, etc.

        교육과정 변천에 따른 유치원 통일교육의 변화

        본 연구는 국가고시 유치원 교육과정의 변천에 따른 통일교육을 분석함으로써 앞으로의 유아 통일교육에 대한 시사점을 제시하기 위한 것이다. 이를 위해 제 1차 유치원 교육과정부터 현행 3∼5세 연령별 누리과정까지의 유치원 교육과정 고시문서, 교육과정 해설서, 그리고 교사용 지도서 등에 나타난 통일교육 관련 목표, 내용, 활동 등을 분석하였다. 유치원의 통일교육은 반공교육에서 통일안보교육, 그리고 통일교육으로 변화하였다. 구체적으로 살펴보면 제 1차 유치원 교육과정에서부터 제 3차 교육과정까지 통일교육은 북한 및 공산주의에 대한 적대감과 반공통일을 강조하는 `반공교육`으로 특징지을 수 있다. 교육활동은 북한의 위협과 북한 주민들의 비참한 생활을 강조하는 것이었다. 제 4차 교육과정에서는 북한을 경계의 대상이자 언젠가는 함께 할 대상으로 보는 `통일안보교육`의 성격을 띤 것이었다. 교육과정 구성 방향으로는 평화통일을, 목표 및 내용에서는 분단 현실 인식을 제시하였으나 북한에 대한경계를 담은 활동들이 포함되었다. 제 5차 교육과정부터 현행 누리과정까지의 통일교육은 민족공동체로서의 북한에 대한 이해와 평화통일을 강조하는 `통일교육`으로서의 특징을 지니고 있었다. 그러나 지속적으로 고시 교육과정의 사회관계 영역의 내용에 포함되었던 통일과 북한 관련 내용이 누리과정에서는 명시되지 않고 있다. 이러한 결과에 기초하여 유치원 교육과정에 통일교육에 대한 내용의 명시를 비롯하여 유아 통일교육과 관련한 제언을 하였다. The purpose of this study was to analyze the changes of the National Kindergarten Curriculum about unification education. To this end the objectives and contents of the National Kindergarten Curriculum, from the 1st to the 6th revision, the 2007 Revised Curriculum, and the current 3∼5 Nuri Curriculum, were analyzed. The `Curriculum Manual` and the `Kindergarten Teacher`s Guidebooks for Curriculum Activities` were also included as analysis resources. Unification education in the National Kindergarten Curriculum has been changed from anti-communism education to unification security education, and to unification education, both on the notification level, which is promulgated by Ministry of Education, and practical level, which is presented in the guide books for teachers. In the 1st to the 3rd curriculum, the unification education is characterized as `anti-communism education`. The objectives, contents, and activities related to unification attempts to ply kindergarteners into having negative views of communism and justify unification. In the 4th Curriculum, the unification education is characterized as `a national security education`. The term `anti-communism` was not used, but instead `peaceful unification` was used. The objectives and contents exposed the reality of division between the two countries. But some of the activities included vigilance against North Korea. From the 5th Curriculum to the current Nuri Curriculum, unification education is characterized as `unification education`, emphasizing a more objective understanding of North Korea, national community, peaceful unification. Based on the results, some suggestions and strategies were discussed to develop the future curriculum for unification education.

        제호탕의 일반영양성분에 관한 연구 - 2. 유기산 및 휘발성 향기성분 조성

        제호탕의 유기산 함량은 formic acid 739.5ppm(0.07%), lactic acid 2162.1ppm(0.22%), acetic acid 3204ppm(0.32%), citric acid 31763.7ppm(3.2%)이었으며 가장 특이한 것은 citric acid가 3.2%를 함유하는 것으로 나타나 제호탕의 신맛에 근원인 것으로 생각되었다. GC/MSD 사용하여 확인된 제호탕의 향기성분은 39종으로 이들의 구성 성분을 분류하면 hydrocarbon류(30.81%) 17종, adehyde류(7.18%) 1종, ketone류(4.79%) 2종, terpene류(25.96%) 8종, acid류(16%) 4종, alcohol류 (5.42%) 2종, phenol류(2.76) 2종, 그리고 기타 향기 (7.68%) 3종이었다. 이 결과로 볼 때 hydrocarbon류, terpene류, acid류가 전체 향기성분의 70% 이상을 차지하여 이들이 제호탕의 특유한 향기성분이었다. 제호탕의 색소 추출액은 200~400㎚에서 최대 흡수파장을 나타내어 황색~적색 계통의 여러가지 색소가 혼합되어 있음을 알 수 있었다. Organic acid content and volatile aroma components in Jehotang were investigated. Organic acids were detceted by HPLC and it is composed of formic acid(0.07%), lactic acid(0.22%), acetic acid (0.32%), and citric acid(3.17%), the last of which is one of the noteworthy features of Jehotang, contributing greatly to its sour flavor and taste. Among the 39 volatile aroma components, whose peaks were identified by GC/MSD, and whose structures were analyzable, 17 kinds of hydrocarbon(30.81%), one kind of aldehyde(7.18%), 2 kinds of ketone(4.79%), 8 kinds of terpene(25.96%), a variety of acids (16%), 2 kinds of alcohol(5.42%), 2 kinds of phenol(2.76%) and 3 kinds of the others(7.68%) were found. The hydrocarbons, terpenes and acids occupied 70% of the aroma components, contributing to and also composing the particular flavor of Jehotang. Extracted pigments from the Jehotang showed maximum light absorbance in the wave length ranges of 200~400㎚, showing a high degree of light adsorption of yellow to red color.

        세대별 가치관과 의복행동에 관한 연구

        The purpose of this study is to identify the difference of value and clothing behavior by generation, and to suggest a device for family concord by overcoming a generation gap. Data was obtained from 106 families(daughter, mother, and grandmother in one family), of which the daughter was attending Ewha Womans University. And it was analyzed by ANOVA, Duncan-test, x^2-test, ANCOVA ant two-way ANOVA. The results of this study were as follows. 1. Each generation showed different values. Mother and grandmother perceived greater importance for each value except political value. 2. Each generation has its own clothing behavior characteristics. Style, silhouette, skirt length, and neckline preferrences were different by generations. In general, mothers and grandmothers showed similar characteristics. Wearing size and subjective feeling for suitability were also different by generation. Finally in consumption behavior, preferred clothing price and expenditure were also differed by generation.
