        The Development of Predictive Growth Models for Total Viable Cells and Escherichia coli on Chicken Breast as a Function of Temperature

        The aim of this research was to estimate the effect of temperature and develop predictive models for the growth of total viable cells (TVC) and Escherichia coli (EC) on chicken breast under aerobic and various temperature conditions. The primary models were determined by Baranyi model. The secondary models for the specific growth rate (SGR) and lag time (LT), as a function of storage temperature, were developed by the polynomial model. The initial contamination level of chicken breasts was around 4.3 Log CFU/g of TVC and 1.0 Log CFU/g of E. coli. During 216 h of storage, SGR of TVC showed 0.05, 0.15, and 0.54 Log CFU/g/h at 5, 15, and 25℃. Also, the growth tendency of EC was similar to those of TVC. As storage temperature increased, the values of SGR of microorganisms increased dramatically and the values of LT decreased inversely. The predicted growth models with experimental data were evaluated by Bf, Af, RMSE, and R2. These values indicated that these developed models were reliable to express the growth of TVC and EC on chicken breasts. The temperature changes of distribution and showcase in markets might affect the growth of microorganisms and spoilage of chicken breast mainly.

        Estimation of Shelf-life of Frankfurter Using Predictive Models of Spoilage Bacterial Growth

        The aim of this research was to develop predictive models for the growth of spoilage bacteria (total viable cells, Pseudomonas spp., and lactic acid bacteria) on frankfurters and to estimate the shelf-life of frankfurters under aerobic conditions at various storage temperatures (5, 15, and 25oC). The primary models were determined using the Baranyi model equation. The secondary models for maximum specific growth rate and lag time as functions of temperature were developed by the polynomial model equation. During 21 d of storage under various temperature conditions, lactic acid bacteria showed the longest lag time and the slowest growth rate among spoilage bacteria. The growth patterns of total viable cells and Pseudomonas spp. were similar each other. These data suggest that Pseudomonas spp. might be the dominant spoilage bacteria on frankfurters. As storage temperature increased, the growth rate of spoilage bacteria also increased and the lag time decreased. Furthermore, the shelf-life of frankfurters decreased from 7.0 to 4.3 and 1.9 (d) under increased temperature conditions. These results indicate that the most significant factor for spoilage bacteria growth is storage temperature. The values of Bf, Af, RMSE, and R2 indicate that these models were reliable for identifying the point of microbiological hazard for spoilage bacteria in frankfurters.         1920년대 <운영전>의 여러 양상 - 일역본 <운영전(雲英傳)>과 한글본『연정 운영전(演訂 雲英傳)』, 영화 <운영전-총희(雲英傳-寵姬)의 연(戀)>의 관계를 중심으로

        창작된 이래 필사본으로 소수의 사대부들 사이에서 향유되었던 <운영전>은 1920년대에 들어와 일역본(日譯本)과 한글활판본․영화 등 다양한 대중매체와 만나게 된다. 이들 세 종(種)의 <운영전>의 관련양상을 살펴보면 다음과 같다. 지금까지 한문본을 토대로 만들어진 것으로 논의되어 왔던 한글활판본 연정 운영전 은 호소이 하지메가 번역한 일역본을 저본으로 중역(重譯)된 것이다. 한글본과 일역본의 텍스트 비교를 통해 이를 확인할 수 있다. 다음으로 1925년 개봉한 영화 「雲英傳-寵姬의 戀」와 일역본에 관계에 대해 논의하였다. 현대적인 의미의 시나리오 작법이 갖추어지지 않았던 당시의 제작여건 상 고소설을 영화화한 작품의 대본은 해당 고소설 자체였다. 그런데 영화 「운영전」이 나오기 전까지 일역본을 제외하고는 <운영전>은 활판본은 물론 어떤 형태의 상업출판도 이루어지지 않았다. 또한 당시의 조선영화는 기획부터 개봉까지 모든 단계가 일본인들과의 협업을 통해 이루어졌다. 이런 정황을 감안할 때 영화 「운영전」은 일역본을 대본으로 하여 만들어진 것이라 보아야 할 것이다. 영화는 비록 흥행에 성공하지는 못했지만 대중들에게 <운영전>을 알리는 계기가 되었던 것으로 보인다. 영창서관이 한글활판본 <운영전>을 기획하고 간행한 것은 이러한 영화의 후광이 상업적인 성공을 가져다줄 것이라는 판단 때문이었다. 영화를 연상시킬 수 있는 소설을 만들기 위해서는 영화의 토대가 되었던 일역본이 필요했으며, 영창서관본이 일역본을 중역한 것은 이러한 상황이 반영된 결과로 보인다. 지금까지 <운영전>은 한문본을 중심으로 한 연구가 활발히 이루어졌으나 일역본과 영창서관본은 고소설 연구자들에게 큰 관심을 받지 못했다. 일역본은 번역자인 호소이 하지메의 주관이 강하게 개입되어 좋은 번역이라 할 수 없지만, <운영전>이 활판본 한글소설과 영화라는 대중매체로 거듭나는 동인이 되었다는 점에서 의의를 찾을 수 있다. “Wunyeongjeon(雲英傳)”, distributed only as a manuscript since its creation, has been encountered in various mass media such as a Japanese version, a printed book written in Korean, and a movie in the beginning of 1920s. In looking into the relationship between those three “Wunyeongjeon”, the following may be noted. “Yeonjeong Wunyeongjeon(演訂 雲英傳)”, discussed as based on a Chinese character version, is a re-translated version from Japanese one. The study presumed what was the script of the movie, “Wunyeongjeon-Chongheuieui Yeon(雲英傳-寵姬의戀․)”, which was first shown in 1925. Given the conditions of the times when the writing technique of a scenario in a contemporary meaning was not prepared, the script of the work used for the film of the old novel was the old novel itself; however, before the release of the movie “Wunyeongjeon”, except for a Japanese version, not only the printed book but also any form of commercial publication of “Wunyeongjeon” was made. Also Joseon movies back then were produced in cooperation with the Japanese in all stages from planning to screening. Given this situation, it would be reasonable to see the movie “Wunyeongjeon” as being created with the Japanese version as a script. Although the movie was not a box office hit, it became an opportunity to promote “Wunyeongjeon” to the public. The reason that Yeongchang seogwan(英昌書館) planned and published “Wunyeongjeon”, the printed book written in Korean, must be because of the judgment that the halo of such a movie would bring about a commercial success. It was necessary to have a Japanese version, which became the basis of the movie, in order to create a novel that may remind us of the movie, and the re-translation of the Japanese version appears to be an outcome of the reflection of such a situation. Up to date, the Japanese version and Yeongchang seogwan version have failed to draw great attention from researchers of old novels. Although it may not be a good translation since the subjectivity of its translator was strongly involved, it is meaningful in that “Wunyeongjeon” became the driving force to be reborn as items of mass media, namely the printed novel written in Korean and the movie.

      • 연령 추정을 위한 주요 주름영역 선택에 관한 연구

        In this paper, we proposed a new method to search the optional set of wrinkle areas, which maximize the accuracy while reducing the number of areas. We calculate a wrinkle density of each of 8 wrinkle areas and use them to estimate the age of a face. Support Vector Machine is used to predict the age of a face using wrinkle densities as features for classification. Backward elimination method is used to reduce the number of features. We also provided experiment result, in which only 4 percent of accuracy is decreased while using only 2 features instead of 8.
