        전통 고추장을 이용한 소스의 제조 및 특성

        To develope a sauce using Gochujang which can give foreigners good overall acceptance such as good flavor, taste, color, viscosity and versatility to many foods, we studied on the rheological properties and color control, recipes with spices, herbs, syrup, salt and flavor ingredients and sensory evaluation by Chinese, American and Japanese including Korean. From the survey, the Americans suggested that the proper fellow food of Gochujang sauce be fried chicken, barbecue, hamburger and pizza, and hoped to reflect red color, low viscosity, hot taste, low sweetness, salty and sourness and diet effect. The Chinese suggested pork and fried food as a fellow food with Gochujang sauce and showed similar opinion in the sensory attributes like the Americans except sweetness. When 5% of starch and xanthan gum was added to sauce, respectively, the yield stress of Gochujang sauce showed 33.21 Pa similar to tomato ketchup. In fluidity measured by voistic flow meter, Gochujang sauce showed 6.2 cm/30sec more or less faster than tomato ketchup which showed 4.7 cm/30sec. Gochujang sauce tended to show strong red color and lightness as pH decreased. The pH adjustant and Paprica oleoresin(2%) improved a value to 12.11 and L value to 24.24 similar to tomato kechup(a:12.42, L:25.48). The 1st gochujang sauce product showed 4.50 to 5.75 points in the overall acceptance in the consumer test including foreigners and koreans. However, the 2nd Gochujang sauce product showed 5.90 points and 6.30 points in the pizza and fried chicken, respectively, in the same consumer test. Therefore, we propose that Gochujang can be used for developing sauce products which is most acceptable for various foreigners.

        홍게 껍질 부산물의 탈회분 공정 중 젖산 분비 미생물의 효과

        Lactic acid-producing bacterium Lactobacillus delbrueckil subsp. delbrueckil KCTC-1047 was applied to decalcify red crab shells with variable particle sizes (A:12.7~5.0 mm, B:5.0~1.68 mm, C:1.68~0.84 mm, and D:0.84~0.25 mm). At day 5, cell growth in particle size D showed the highest value of 11.4 log cfu/ml, and pH in particle size D was the lowest value of 4.1. The residual dry weight in the culture broth was the lowest in particle size C. During the fermentation, total titratable acidity of particle size D was increased to 19.4% at day 5. Demineralization rate of crab shell in D, A, B, and C particle size was 66.37%, 64.37%, 62.02%, and 61.86%, respectively, at day 5 after fermentation of the lactic acid bacteria. Residual glucose concentration in the culture broth of particle size A was the lowest value of 1.08%. All together, these results indicate that the effect of particle size on the demineralization of crab shells by the lactic acid-producing bacteria is limited.

        협력교수 기반 사회정서 프로그램이 통합학급 유아의 사회성 기술과 정서조절에 미치는 영향

        본 연구의 목적은 협력교수 기반 사회정서 프로그램이 통합학급 내 모든 유아의 사회성 기술과 정서조절에 미치는 영향을 알아보는 것이다. 서울특별시 소재 S초등학교 병설유치원 만4세반의 모든 유아와 교사가 본 프로그램에 참여하였고, 혼합연구설계를 통해 그 효과를 살펴보았다. 양적자료를 분석한 결과, 통합학급 유아들의 사회성 기술에서는 통계적으로 유의한 향상이 나타나지 않았으나 정서조절에서는 통계적으로 유의한 변화가 나타났다. 장애유아와 정서행동장애위험유아의 경우 프로그램 참여 후 사회성 기술과 정서조절 점수의 향상을 확인할 수 있었다. 본 프로그램이 통합학급 유아들의 사회성 기술과 정서조절에 미치는 영향을 질적으로 확인하기 위해 통합학급 교사를 대상으로 면담을 실시하고 이를 질적 분석한 결과, 사회성 기술의 변화, 정서조절의 변화, 학급 분위기의 변화라는 3가지 대주제와 그에 따른 9개의 하위주제가 도출되었다. 면담을 통해 교사들은 본 프로그램이 통합학급 내 모든 유아의 사회성 기술과 정서조절을 향상시켰고 학급 분위기도 긍정적으로 변화되었음을 다양한 사례와 함께 제시하였다. 본 연구는 통합학급 차원에서 일반교사와 특수교사의 협력교수를 통해 실시할 수 있는 사회정서 프로그램을 개발하고 효과를 검증하였다는 의의가 있다. The purpose of this study is to investigate the effects of a co-teaching social emotional program on the social skills and emotional regulation of young children in an inclusive class. All children and teachers in the 4-year-old class at the kindergarten attached to S Elementary School in Seoul participated in this program, and its effects were examined through a mixed research design. Asa result of analyzing the quantitative data, there was no statistically significant improvement in the social skills of children in the inclusive class, but there was a statistically significant change in emotional regulation. In the case of children with disabilities and children at risk for emotional and behavioral disorders, social skills and emotional regulation scores were improved after participating in the program. In order to qualitatively examine the effects of the program, interviews with teachers of the inclusive class were conducted and the transcripts were analyzed qualitatively. As a result, three major themes and nine subthemes were derived: changes in social skills, changes in emotional regulation, and changes in class atmosphere. Through interviews, teachers presented various examples of how this program improved the social skills and emotional regulation of children as well as changing the classroom atmosphere in a positive way. The significance of this study is that it developed a social emotional program that can be used in inclusive classes through co-teaching between general and special teachers and demonstrated its effectiveness.

        급성 허혈성 신손상 백서에서 α-Melanocyte Stimulating Hormone이 아포프토시스와 Fas 발현에 미치는 영향에 대한 연구

        Apoptosis frequently occurs in acute renal injury but molecular mechanisms responsible for this distinct form of cell death are largely unknown. Fas belongs to the TNF/nerve growth factor superfamily and engagement by Fas ligand induces apoptosis in various epithelial cells. To investigate the role of apoptosis and associated molecular mechanisms, we examined the occurrence of apoptosis and Fas expression as well as the therapeutic effect of α-MSH, a potent anti-inflammatory cytokine in ischemic ARF rat model as well as its effect on Fas expression. The expression of Fas was studied by western blot analysis and semiquantitative RT-PCR. Apoptosis was assessed by the TUNEL method and the degree of apoptosis and Fas expression, as well as biochemical, histological data were compared between the α-MSH and the vehicle treated groups in 40 minute renal artery clamping ischemic ARF rat models. Intraperitoneally administered α-MSH significantly reduced renal injury, measured by plasma blood urea nitrogen, creatinilevel and the degree of tubular necrosis(106.5±13.3/54.7±5.45mg/dL for BUN, 1.77+0.29/1.03±0.06mg/dL for creatinine 24 hours after ischemia)(p=0.003, p=0.01), (5.4±1.94/2.6±0.7 for injury score 24 hours after ischemia)(p=0.01). Ischemia caused significant upregulation of Fas mRNA and protein and was accompanied by morphological evidence of apoptosis. α-MSH significantly reduced the degree of apoptosis, as well as Fas[(mean apoptotic cell: 23.7±12.5/11.0±5.7 per 200 field at 4 hours after ischemia(p=0.04), 31.6±24.7/18.1±11.5 per 200 field at 24 hours after ischemia(p=0.25)]. (Fas protein expression: sham: 1409±355DI(densitometric index)) 2818.3±1100/1306±643.4DI at 24 hours and 5541.5±1597.5/2866.7±788.9DI at 72 hours after ischemia)(p=0.07, 0.047). These results suggest that Fas upregulation induced tubular cell apoptosis may contribute to the pathogenesis of ischemic ARF and the beneficial effect of α-MSH is partially mediated by these inhibitory effects on Fas system.

        시사프라이드의 대장내시경 전처치 용액의 감량 효과

        Background/Aims: Polyethylene glycol (PEG) electrolyte lavage solution is now commonly used for peroral colonic preparation. However, the need to ingest a large volume reduces patient acceptance and may limit compliance, thereby resulting in improper preparation. This study was designed to assess whether adding of magnesium oxide or cisapride to PEG solution decreased the volume of PEG solution required without compromising the quality of the preparation. Methods: One hundred thirty seven patients undergoing outpatient colonoscopy were randomly chosen to receive one of three preparations (Group A: 4 L PEG; Group B: 2 L PEG plus cisapride 20 mg; Group C: 2 L PEG plus magnesium oxide 2 g). Endoscopist was blinded as to the method of preparation and scored the degree of colonic preparation (1 to 4). Results: Mean scores of preparation in group A, B, and C were 2.85, 2.69, and 2.20, respectively (p=0.001). There were significant differences of the degree of preparation between group A and group C, between group B and group C, but not between group A and group B. Conclusions: Two liters of PEG plus cisapride induced equally effective colonic preparation compared to four liter PEG solution. This results show that the addition of cisapride to PEG solution can reduce volume of PEG solution during colonoscopy preparation.

        <P>We investigated the in situ phase transition of the nanoscopic patterns on block copolymer thin films during nanoindentation by using a transmission electron microscope (TEM) with a specially designed nanoindenter. For the first time, we observed directly an in situ phase transition from lamellar microdomains to disordered states during the nanoindentation on a baroplastic polystyrene-block-poly(n-pentyl methacrylate) copolymer (PS-b-PnPMA) film. Through the in situ TEM observation, the mechanism of the nanoscopic pattern formation on a block copolymer thin film by indentation is fully understood.</P>

        Alternative of Phosphate by Freeze- or Oven-Dried Winter Mushroom Powder in Beef Patty

        This study investigated freeze- or oven-dried winter mushroom powder (FDP or ODP, respectively) as an alternative to phosphate in beef patties. The beef patties were prepared with four treatments: no addition of phosphate and winter mushroom (control), addition of 0.3% sodium pyrophosphate (BP), addition of 1% FDP (BFW), and addition of 1% ODP (BOW). The pH of FDP and ODP was 6.73, and 7.00, respectively. FDP and ODP contained phenolic compound at a level of 3.50 and 5.45 g gallic acid equivalent/kg, respectively. The cooking loss of beef patties was the highest in the control and lowest in BP (p<0.05). BFW had lower cooking loss than the control (p<0.05), and BOW showed similar cooking loss as that of the control (p>0.05). Inhibition of lipid oxidation was found in BP and BOW as compared with control (p<0.05). BFW was similar to the control in terms of the degree of lipid oxidation (p>0.05). BOW showed lower L* and higher a* values than those of the control, BP and BFW (p<0.05). Texture properties such as hardness, springiness, cohesiveness, gumminess, and chewiness were the highest in BP (p<0.05). A slight increase in hardness and springiness was observed in BOW compared to those of the control (p<0.05). The results showed that FDP and ODP did not exhibit all the properties of phosphate in beef patties. Therefore, FDP and ODP can be used for partial substitution of phosphate in beef patties.
