코로나19 이후 가정 내 어머니의 식사준비 스트레스와 먹거리 소비패턴 변화에 관한 질적연구

This study examined the mothers’ stress level as it related to meal preparation and a change in food consumption during the Covid-19 pandemic. I asked mothers about the difficulties related to meal preparation, changes in food consumption, and their interest in food and health information using in-depth research methods. As a result, food delivery and online food consumption have markedly expanded as eating out has decreased. Mothers tried to serve fresh food at home because they perceived delivery food as unhealthy. They stick to it more vigorously with their younger children. As the result of analysis on determinants of food consumption, their interest in organic food is higher when mothers’ ages are younger with higher income. However, mothers with a low level of education tend to be uninterested in it. Therefore, the ages of the children and mothers, household income, and education levels all had an effect on food consumption behaviors. 본 연구는 코로나19 이후 가정 내 식사 비중이 증가함에 따라 어머니들이 식사준비 시 느끼는 스트레스와 먹거리 소비패턴 변화를 조사하기 위해 20세 이하의 미성년 자녀를 둔 30∼40대 어머니를 대상으로 개별적인 심층면담을 통한 질적연구를 수행하였다. 주요 결과를 요약하면 다음과 같다. 코로나19 이후 대면 교육의 확대로 자녀들이 가정에 머무르는 시간이 길어지면서 어머니의 직업유무에 상관없이 식사준비가 스트레스로 작용하고 있었다. 외식 빈도는 현저히 감소한 반면, 가정 내 배달음식 이용과 온라인 장보기 빈도는 크게 증가했음에도 불구하고 배달음식의 위생문제와 영양불균형에 대한 우려로 자녀의 식사는 신선한 음식으로 골고루 직접 준비하고자 하였으며, 특히 자녀의 연령이 낮을수록 이러한 경향이 높았다. 먹거리 소비 결정요인을 분석한 결과, 어머니들의 연령이 낮고 가구소득이 높을수록 유기농 먹거리에 대한 관심이 높았으며, 학력이 낮을수록 먹거리 및 건강관련 정보에 무관심한 태도를 보였다. 건강에 대한 관심 증가로 건강기능식품을 이전에 비해 꾸준히 섭취하고 있었으며, 백신을 미접종한 자녀의 면역력 향상을 위해 건강기능식품을 추가로 구매한 경우가 많았다. 이상의 결과를 바탕으로 영유아나 어린이를 대상으로 한 다양한 유기농 밀키트 제품의 개발과 함께 고위험시대에 대응하기 위한 건강하고 안전한 가정 내 먹거리 지침 및 식생활관련 교육의 필요성을 제기하는 바이다.

Ceramide has been involved in cell death, and acted as a lipid mediator of stress responses. Elevation of ceramide level was reported to occur against oxidative stress and lead to cell death in many cell types. This study was undertaken to elucidate a protective role of ginsenoside Rg1 in cell death induced by oxidative stress. When LLC-PK1 cells was treated with H2O2 at a concentration of 400 μM for 5 hr, cell death was observed and a released LDH activity indicative of cytotoxicity was increased. H2O2 exposure to LLC-PK1 cells was shown to elevate the content of total ceramide by approximately 2 folds compared to control cells. Ceramide level was hypothesized to be a key to a reversal of cell death to survival. Ginsenoside Rg1 at the concentrations ranging from 12.5 to 250 μM per ml protected LLC-PK1 cells from cell death caused by H2O2 at 400 μM for 5 hr, and decreased the ceramide level relative to H2O2. Ginsenoside Rg1 inhibited neutral human ceramidase by 71% of controls, while sphingomyelinase was not inhibited. These results suggest that ginsenoside Rg1 show the protection against cell death via the modulation of ceramide metabolism, and ceramide may be a promising therapeutic target for human diseases related to cell death.

Thermally activated building system (TABS) has been regarded as one promising technology for energy saving and green-house gas reduction due to the efficiency improvement of a cooling/heating equipment, and feasibility of combining other promising technologies such as ground source heat pumps or cooling towers. TABS can be achieved by running hot/cold water through pipes embedded in a building’s construction. Compared to conventional HVAC systems, TABS delivers higher water temperatures for cooling, and lower water temperatures for heating due to large heat exchange areas. Furthermore, water systems have less transport energy and ductwork spaces compared to existing air systems, due to high thermal capacitance of water. Because of the surface condensation problems in hot and humid weather conditions, TABS needs to be integrated with dehumidification system such as variable air volume (VAV) system or dedicated outdoor air system (DOAS). This study aims to evaluate the cooling energy consumption characteristics of thermally activated building system (TABS) integrated with DOAS in office building compared to the TABS with VAV system. In this study, the design cooling load in office building was firstly evaluated and indoor thermal environment was discussed by considering the surface condensation risk. Finally the cooling energy consumption of TABS with DOAS was compared with TABS and VAV system operation. When the total cooling energy consumption during the cooling period is compared, it is found that the integrated operation of TABS with DOAS is 24% more energy-efficient than integrated operation of TABS with VAV. Night-time electric energy consumption accounts for 34% of the total cooling energy consumption.
Optimal Protocol for Mass Propagation of Aloe vera

We established an advanced protocol for in vitro propagation of Aloe vera via comparison of basal media, sucrose contents,growth hormone combinations, and additional supplementation with various polyamines. The maximal number and growth of shootsafter 5 weeks was obtained using MS media including 30 g L-1 sucrose supplemented with 1.0 mg L-1 BA and 0.1 mg L-1 NAA. Toimprove shoot production, various concentrations of putrescine, spermidine, and spermine were added under optimal growth hormoneconditions (MS media supplemented with 30 g L-1 sucrose, 1.0 mg L-1 BA, and 0.1 mg L-1 NAA). Maximal shoot number andgrowth after 5 weeks were achieved with supplementation of 50 mg L-1 spermidine. Regenerated plants were successfully acclimatizedin soil with 100% efficiency. Cytogenetic inspection revealed that the regenerated plants maintained intact chromosomes identicalto those of plants grown in field conditions. This protocol provides a valuable alternative for mass production of elite Aloe vera.
