        남북한 관광협력을 통한 동북아 중심 국가 건설방안

        This paper argues that south-north tourism cooperation lead to cooperation mood and peaceful environment in the korean peninsular and korea would become an axis in era of East Asia in the 21st century, the so-colled participation government should propose the construction of economic axis of the East Asia as one of the state issues, the government has emphasized that korea become the center of distribution and finance, but it should also be the center of tourism besides the physical exchanges in order to the center of the area in the real sense of the words. Korea should expand railroad lines such as Gyung-ue-seon and Gyung-Won-seon as international traffic network as it is located in between Asia giants. China and Japan having geo-political advantages.<br/> Korea should to be recognized by the world of its peace tourism images by promoting convention industry, Guemgangsan-Soraksan tourism and other culture tourism areas.

        새로 조성된 초지에서 서로 다른 방목관리가 초지의 식생 , 총건물생산량 ( 總乾物生産量 ) 및 계절적 분포에 미치는 효과

        In order to find out the effect of different grazing system at early stage of newly established pasture on the botanical composition, seasonal herbage distribution and total dry matter yield, the treatment used were (A) lenient grazing-intensive grazing-followed by cutting, (B) intensive grazing-intensive grazing-followed by cutting, (C) lenient grazing-followed, by cutting (D) intensive grazing-followed by cutting. The results obtained are as follows: 1. Main species affecting total herbage production was Dactylis glomerata and the species holded from 50 to 58 percent of total DM according as treatments applied while, in terms of seasonal herbage distribution DM yield at second and third harvest formed 55 to 65 percent of total DM yield. 2. The influence to botanical composition of the pasture from grazing was not permanant, but temporary in this kind of treatment. Such a result was proved by the fact that, in spite of different grazing treatment, botanical composition after the third harvest was almost same as the first. 3. Intensive grazing at early stage of newly established pasture (treatment B. D) suppressed the growth of Italian ryegrass, resulting temporarily in a decrease in herbage production, but this treatment favored the regrowth of Dactylis glemerata so that this result made contribution to an increase in terms of total DM yield. 4. The total DM yield was increased in order of treatment B, D, A and C. Above results suggested that grazing at early stage of newly established pasture (next year spring) raise the rate of the botanical composition of main species such as orchard grass and tall fescue when Italian ryegrass is included in seed mixture.

        특수미 품종에 따른 식혜의 이화학적 특성

        품종에 따른 식혜의 제조 적성을 평가하기 위하여 일품, 설갱, 백진주, 백진주1호 및 동진찰벼 쌀의 품종별 도정특성, 품위특성 및 이화학적 특성 등의 원료특성과 제조된 식혜의 이화학적 및 관능적 특성을 측정한 결과 제현율, 현백율 및 도정율은 일품이 가장 높은 것으로 나타났으며, 천립중은 동진찰이 가장 무겁고 설갱이 가장 가벼운 것으로 나타났다. 알칼리붕괴도는 찹쌀보다 반찰이나 멥쌀이 높게 나타났으며, 단백질함량은 각각 5.4, 7.3, 6.2, 6.8 및 5.9%로 나타났다. 아밀로스 함량은 멥쌀인 일품과 설갱은 18.9 및 19.3%로 나타났으며, 반찰계열인 백진주와 백진주1호는 9.1 및 11.5%로 나타났고 찹쌀인 동진찰은 검출되지 않는 것으로 나타났다. 제조된 식혜의 당화 완료 후 당도는 백진주가 10.00oBx로 가장 높게 나타났고 탁도를 측정한 결과 동진찰이 가장 맑은 것으로 나타났고 pH는 일품 식혜가 5.52로 낮게 나타났다. 식혜의 색도를 측정한 결과 L-value는 동진찰에서 24.91로 가장 낮은 수치를 보였고 일품으로 제조한 식혜가 44.62로 가장 백색을 많이 띠는 것으로 나타났다. a-value는 동진찰에서 -0.70로 가장 높은 수치를 보였고 b-value는 백진주1호, 백진주, 일품, 설갱, 동진찰 순으로 높은 수치를 보이는 것으로 나타났다. 식혜의 maltose의 함량은 백진주(6.269 g/100 mL) 및 백진주1호(6.589 g/100 mL)가 높은 함량을 보이는 것으로 나타났다. 상대비교법으로 관능검사를 실시한 결과 전체적인 기호도는 설갱이 동진찰과 유사한 것으로 나타났으며, 색은 전체적으로 흰색을 많이 띠어 선호도가 떨어지는 것으로 나타났으며, 색과 맛은 유의적인 차이가 없는 것으로 나타났다. This study was carried out to compare the physicochemical characteristics and sensory quality of Sikhye (a Korean traditional rice beverage) prepared with specialty rice varieties. The results showed that Ilpum had higher hulling recovery, milled/brown rice ratio, and milling recovery than Sulgaeng, Baegjinju, Baegjinju 1, and Dongjinchal. The alkali digestive value, protein content, and amylose contents of Sulgaeng were 6.3, 7.3% and 19.3%, respectively. The highest brix degree was 10.00°Bx in Baegjinju Sikhye. The turbidity appeared at 0.4440, 0.4100, 0.3828, 0.3372, 0.1414 in Ilpum, Baegjinju, Baegjinju 1, Sulgaeng, and Dongjinchal Sikhye, respectively. There were no significant differences in pH and maltose contents among the groups. The highest L-value was 44.62 in Ilpum Sikhye. The a-value and b-value were -1.66~-0.70 and -9.18~-5.19, respectively. Finally, the sensory evaluation results indicated that there were no significant differences in appearance, aroma, and taste between the groups, and the Sulgaeng Sikhye showed higher overall quality than the Dongjinchal Sikhye as the control.

      • 버섯폐배지를 이용한 셀레늄강화 기능성 한우고기 생산에 관한 연구 II. 셀레늄강화 버섯폐배지 첨가가 한우의 근육조직 내 셀레늄 축적과 혈중 glutathione peroxidase(GSH-Px)활성에 미치는 영향

        This study was conducted to investigate effects of spent composts of Se-enriched mushrooms as the dietary Se source on muscular Se deposition and plasma glutathione peroxidase (GSH-Px) activity in the finishing Hanwoo steer. Twenty Hanwoo steers were used in the experiment and they were divided into four groups in a randomized complete block design with five replicates. Treatments were four levels (0.1, 0.3, 0.6 and 0.9ppm as fed basis) of dietary Se from the combination with spent composts of Se-enriched mushrooms and/or Se non-enriched mushrooms, in which each treatment was formulated with corn and corn gluten meal and so forth. Treatment diets were fed to Hanwoo steers for 90 days until the slaughter. Dry matter intakes had no significant differences among treatments and there were no significant differences for performances such as total BW gain and ADG among treatments. The Se concentration in blood was linearly increased with increasing dietary selenium levels and reached a plateau level after 8 weeks (p<0.001). Plasma GSH-Px activities had the similar trends to blood Se concentrations by showing that the increased dietary Se level significantly increased plasma GSH-Px activities of both total and Se-dependent (p<0.001). Muscle Se contents of Se-supplemented groups were linearly increased by 1.35 ~ 1.68 folds compared with the control group (0.1ppm; 0.273㎍/dry g) and especially those of the hind legs for 0.9ppm treatment showed the highest Se content as shown 0.457㎍ per dry gram (p<0.01) corresponding to approximately 70% increase of the control group. Se retention rate in the muscle of dietary Se originated from spent composts of Se-enriched mushrooms was estimated of maximum approximately 30% and dietary Se content showed the significant correlation with plasma GSH-Px activities and muscle Se contents (p<0.01). Accordingly, Se present in spent composts of Se-enriched mushroom as the dietary Se source not only had great bioavailabilities showing higher blood Se concentration and plasma GSH-Px activities, but also increased Se deposition in the muscle for Hanwoo beef cattle.

        β-Glucan 추출에 미치는 온도, 용매 농도 및 pH의 영향

        추출조건에 따른 귀리겨 ${\beta}$-glucan의 추출조건을 확립하기 위하여 추출온도($40{\sim}60^{\circ}C$), 추출용매의 에탄올 농도(0~20%) 및 pH(5~9)를 변수로 중심합성계획법으로 설계하여 ${\beta}$-glucan 추출특성을 조사하였다. 추출시간의 증가에 따라 ${\beta}$-glucan의 추출속도는 추출초기에 급격히 증가하였으나, 이후에는 완만하였다. 총괄물질전달계수는 $3.363{\sim}8.552{\times}10^{-6}cm/min$ 범위로 낮은 추출온도에서는 추출용매의 농도가 낮을수록, 높은 추출온도에서는 추출용매의 농도가 높을수록 증가하였지만 pH에 의한 영향은 적은 것으로 나타났다. 추출용매의 pH는 중성일 때보다 산성이나 알칼리성일 때 ${\beta}$-glucan의 추출량이 증가하였다. 추출조건에 따라서 ${\beta}$-glucan 수용액의 점도는 유의적인 차이를 보였으며, 총괄물질전달계수가 높을수록 crude ${\beta}$-glucan 수용액의 점도가 높게 나타났으며, 점도, 추출율 및 총괄물질전달계수의 상관관계를 분석한 결과, 각각의 요인들이 높은 양의 상관관계(p<0.01)를 나타내었다. This study investigated the effects of temperature, solvent concentration, and pH on the ${\beta}$-glucan extraction. Oat bran ${\beta}$-glucan was extracted with different extraction conditions, using various combinations of experiment factors, such as temperature (40, 45, 50, 55, and $60^{\circ}C$), ethanol concentration (0, 5, 10, 15, and 20%), and pH (5, 6, 7, 8, and 9). Under the various extraction conditions, ${\beta}$-glucan extraction rate and overall mass transfer coefficient of oat bran ${\beta}$-glucan, and viscosity of oat bran extracts were investigated. As increasing the extraction time, the extraction rate of ${\beta}$-glucan increased. The overall mass transfer coefficient of ${\beta}$-glucan ranged from $3.36{\times}10^{-6}$ to $8.55{\times}10^{-6}cm/min$, indicating the lowest at the extraction condition of $45^{\circ}C$, 15% and pH 8, and the highest at $50^{\circ}C$, 0% and pH 7. It was significantly greater with increasing extraction temperature and decreasing ethanol concentrations of extraction solvent, except for solvent pH. There were positive correlations among the overall mass transfer coefficient, the extraction rate of ${\beta}$-glucan, and the viscosity of extract.
