        감나무 수령과 감꽃 기관에 따른 휘발성 향기성분 분석

        This study was conducted to investigate volatile organic compounds (VOCs) of persimmon (Diospyroskaki Thunb) flower. VOCs of persimmon flower was collected via SPE (solid phase micro extraction) and determinedby GC-MS according to tree age and organs such as flower and calyx. The ratio of early bloom was higher inmore than 15 year old tree than other trees showing tree age was related with flowering rate. Major VOCs of persimmonflower was a-pinene, butane, caryophyllene, cubebene, lavandulol, D-limoneneylangene, ylangene, mainlyincluded green, fruit, and floral flavors. The number of VOCs in persimmon flower was 30 compounds in 5-9 yearsold tree, 24 compounds in 10-14 years old tree, and 32 compounds in more than 15 years old tree. In comparisonwith VOCs in organs of sweet persimmon ‘Fuyu’ cultivar, flower has 10 compounds of VOCs and 26.35% of relativepeak area, while calyx has 14 compounds and 46.28%, respectively. In astringent persimmon, flower has 6 compoundsof VOCs and 17.58% of relative peak area, while calyx has 9 compounds and 50.27%, showing calyx of bothcultivars has various volatile compounds. This study will contribute to provide a basic data for the fragrance industryto use the flavor of persimmon flower. 본 연구는 감꽃의 주요 향기성분을 알아보기 위해서감나무 수령별로 감꽃의 향기성분을 SPME를 이용하여분석하고, 기관을 꽃과 꽃받침으로 분류하여 향기성분을비교하였다. 감나무 수령별 감꽃의 만개율은 15년생 이상, 10-14년생, 5-9년생 순으로 수령이 오래될수록 초기만개율이 높았다. 감나무 수령에 따른 감꽃 향기성분 분석 시 동정된 주요 향기 성분은 a-pinene, butene,caryophyllene, cubebene, lavandulol, D-limoneneylangene,ylangene 등의 성분을 얻을 수 있었다. 대부분이 green향, fruit계, floral계의 옅은 향도 포함하고 있었다. 감꽃에 존재하는 휘발성 향기성분의 수는 5-9년생은 30종,10-14년생은 24종, 그리고 15년생 이상에서는 32종으로수령이 5년 미만과 15년 이상에서 많은 향기성분이 조사되었다. 감꽃을 꽃받침과 나누어 향기성분을 비교하면단감 ‘부유’ 품종 중 꽃의 향기 성분은 10개이고 상대적인 총 함량은 26.35%이며, 꽃받침은 향기 성분은 14개이고 상대적인 총 함량은 46.28%로 꽃에 비해서 더 다양한 향기성분이 존재하는 것으로 조사되었다. 반면 떫은감 ‘둥시’ 품종은 꽃에서는 6개의 향기성분이 17.58%,꽃받침에서는 9개의 향기 성분이 50.27%로, ‘부유’ 품종에 좀더 다양한 향기성분이 존재하였다. 본 연구는 감꽃향기를 이용하고자 하는 향기산업에 기초자료를 제공하는데 기여할 것이다.

        Antioxidative Properties of Different Solvent Extracts from Persimmon (Diospyros kaki cv. Fuyu) Flower-Buds

        After preparation of acetone, ethanol, methanol, and water extracts (10 g/300 mL) of dried persimmon (Diospyros kaki cv. Fuyu) flower-buds, total phenolic contents (TPC), 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity (RSA), 2,2-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) RSA, reducing power (RP), and tyrosinase inhibitory activity of the extracts were evaluated. The methanol extracts produced the highest TPC (113.39 mg gallic acid equivalents/g), DPPH RSA ($IC_{50}=40.25\;{\mu}g/mL$), ABTS RSA ($IC_{50}=58.17\;{\mu}g/mL$) and RP ($IC_{50}=69.43\;{\mu}g/mL$) activities while the water extracts generated the lowest values. The ethanol extract showed the highest tyrosinase inhibitor activity (88.90%) at a concentration of 1 mg/mL. These results indicated that persimmon flower-buds may be a useful source of natural antioxidants.

        품종별 감꽃 동결건조 분말의 유효성분 분석

        감 품종별(도근조생, 고종시, 갑주백목, 차랑, 월하시, 상주둥시)로 감꽃을 개화기에 채취하여 동결건조 분말화한 감꽃분말에 함유된 유효성분을 분석, 비교하였다. 조지방 함량은 도근조생이 57.26%로 가장 높은 값을 보였으며, 유리당 조성은 fructose가 95~310 mg%, glucose는 75~281 mg%, sucrose가 7~28 mg%의 함유량을 나타내었고, 유기산 중 malic acid가 갑주백목(6월4일)에 225 mg%로 가장 많았고, tartaric acid도 189 mg%로 가장 많았다. 유리아미노산 중 hydroxy-L-proline은 월하시에 25.33 mg%, L-citrulline은 상주둥시(5월28일)가 58.83 mg%, L-threonine은 상주둥시(5월28일)가 11.88 mg%로 가장 많았다. 페놀산으로 caffeic acid는 갑주백목(6윌4일)이 1946 μg/100 g, phydroxybenzoic acid는 상주둥시(5월29일)가 417.8 μg/100 g, protocatechuic acid는 갑주백목(6월1일)이 181.1 μg/l00 g으로 가장 많았다. 따라서 감꽃에도 감이나 감잎에 못지않게 유용한 식품성분들과 기능성 성분들이 다량 함유되어 있어 새로운 식품 및 기능성 신소재로서의 가치가 매우 높다고 할 수 있다. This study was carried out to analyze useful components in freeze-dried persimmon flower powder made from six cultivars. The cultivars were Dogunjosang, Kojongsi, Kabjubaekmok, Chalang, Weolhasi and SangjuDungsi. Powder of persimmon flower was prepared by milling after freeze drying at -70℃. Crude lipid was the highest in Dogunjosang (57.26%). Major free sugars of the persimmon flowers were fructose (95~310 mg%), glucose (75~281 mg%)and sucrose (7~28 mg%). Major organic acids were malic acid (225 mg% in Kabjubaekmok (Jun. 4th)) and tartaric acid (189 mg% in Kabjubaekmok (Jun. 4th)). Predominant free amino acids were hydroxy-L-proline(25.33 mg% in Weolhasi), L-citrulline (58.83 mg% in SangjuDungsi (May 28th)) and L-threonine (11.88 mg% in SangjuDungsi (May 28th)). Major phenolic compounds in the persimmon flowers were caffeic acid (1,946 μg/100g in Kabjubaekmok (Jun. 4th)), p-hydroxybenzoic acid(418 μg/100g in SangjuDungsi (May 29th)) and protocatechuic acid(181 μg/100g in Kabjubaekmok(Jun. 1st)). The results suggest that persimmon flowers be potential materials as useful food ingredients.

        히비스커스 꽃 추출액과 감물을 이용한 견직물의 복합염색

        The purpose of this research is to analyze the effects of persimmon juice and hibiscus flowers extract to perform combination dyeing of silk fabrics, with respect to color changes, fastness, and functionality. The optimal conditions as a result, were shown at 100% of dye concentration, 40oC of dyeing temperature and 30 minutes of dyeing time while in terms of dye uptake depending on the kind of mordants and methods. The highest K/S value was recorded at pH 3, pre-mordants of CuSO4, and SnCl2, post-mordanting. After repeated dyeing and post-mordanting, various color change occurred with mordant treatments. Color fastness of dyed fabrics with hibiscus flowers extract was improve considerably by combination dyeing with persimmon juice extract. In aspects of functional properties, it showed excellent results of 99% deodorization rate, 99.9% Staphylococcus aureus rate and 99.9% Klebsiella pneumoniae.

        Antioxidant Activity of Water Extracts of Persimmon Flower Buds

        Fresh, naturally dried, and artificially dried persimmon (Diospyros kaki cv. Fuyu) flower buds (PFBs) were extracted with deionized water (1 g/100 mL) at five temperatures (60, 70, 80, 90, and 100oC) for 4 soaking times (30, 60, 120, and 180 s). DPPH and ABTS radical scavenging activities were enhanced with increasing extraction time and temperature. Extraction time and temperature in fresh PFB extract led to little differences in total phenolic contents (TPCs). However, naturally and artificially dried PFB extracts significantly changed TPCs. The extracts of artificially dried PEB for 180 s at 100oC contained the highest TPC: 43.07 μg gallic acid equivalents/g. These results suggest that the drying method and soaking condition are important for the application of PFBs to a functional food material.
