To furnish basic data for the utilization of leaf mustard as a raw material of salted and fermented vegetable food, the contents of carotenoids and chlorophylls of Dolsan Leaf Mustard(DLM) were investigated. Total carotenoid content of DLM was 4.75 ㎎%, and the compositions were β-carotene(80.91%), lutein(13.07%), lutein epoxide(3.93%). The contents of chlorophyll a and b were 4.1 and 1.5 ㎎%, and leaf was 7.4- and 8.1-fold, respectively, higher than leaf stalk. The ratios of chlorophyll a/b in leaf (2.7:1) and leaf stalk(3.0:1) were similar to those of other vegetables.
Safety evaluation of cricket(Gryllus bimaculatus) extract in Sprague-Dawley rats

Recently, research investment in the improvement of food safety as a food source and specializing of nutritional source of edible insects is being actively conducted. Cricket especially has been attracting considerable interest in entomophagy; however, research on the safety assessment of cricket is limited. This study investigated the effects of cricket ethanol extract when orally administrated in Sprague-Dawley rats. Here, we performed a 4 wk repeated oral dose toxicity test in Sprague-Dawley rats following the Organization for Economic Cooperation and Development test guidelines 407 under Good Laboratory Practice regulation. Rats were randomly allocated 4 groups: vehicle control, 250, 500, 1,000 mg/kg test groups and administrated based on body weight for 28 d. The animals were observed for mortalities and clinical signs, body weight changes, food and water consumption. At the end of treatment period, blood and urine were collected and analyzed. Subsequently, the animals were sacrificed and subjected to gross pathological examination and organ weight measurement. The organs were preserved for histopathological examination. The results showed that there were no systemic toxicological effects related with the cricket ethanol extract in the 4 wk oral repeated dose toxicity study. It is considered that NOAEL of cricket ethanol extract is greater than 1,000 mg/kg/d and there was no target organ detected.

본 연구에서는 25개 양돈장의 사육돼지를 대상으로 혈청학적 및 미생물학적 모니터링을 실시하여 살모넬라의 유병율과 감염 양상을 분석함으로써 향후 한국 양돈장의 살모넬라 제어 프로그램 구축의 기초자료로 활용하고자 하였다. 25개 양돈장의 모돈과 사육단계별 돼지 혈청 총 848두에 대한 항체검사 결과, 전체 항체 보유율은 28.4%로 나타났으며, 사육단계별로는 모돈의 항체양성율이 83.1%로 가장 높았고, 20일령 이후 모체이행항체가 소실되고, 농장에서의 사육기간이 길어질수록 살모넬라에 노출되는 빈도가 높아지는 것으로 나타났다. 조사대상 25개 양돈장의 모돈군은 최소한 1두 이상의 항체 양성모돈을 보유하고 있어 향후 우리나라 살모넬라 방역에 있어 종돈장의 살모넬라 감염 통제 및 음성 후보돈 공급체계 확립이 가장 시급한 것으로 판단되었다. 25개 양돈장에서 채취한 사육단계별 돼지 분변에 대한 세균 분리 동정 결과, 혈청학적으로 감염유형인 16개 양돈장 중 3개 양돈장(12.0%)에서 살모넬라 균이 분리되었다. 이러한 결과는 양돈장 사육 돼지집단에 대한 살모넬라 감염상황을 정확하게 파악하기 위해서는 세균검사법만으로는 한계가 있으며, 돈군 내의 준임상감염축 또는 잠복감염축을 진단할 수 있는 혈청검사를 병행해야 함을 시사해준다. 또한 향후 우리나라의 양돈장 살모넬라 통제 프로그램을 구축하기 위하여 다양한 양돈장 모니터링 기법을 개발하고, 현장 효용성을 확인하기 위한 확대 시험이 필요하다. The aim of this study was to determine the prevalence and infection status of Salmonella species (spp.) in 25 conventional pig farms by traditional fecal culture and serological methods to develop a Salmonella control program for Korean pig farms. The individual seroprevalence of Salmonella spp. in pigs reared in the 25 pig farms was 83.1% in sows and 6.4-32% in different aged pig groups, with the total seroprevalence 28.4% (141/848). The seroprevalence of the tested pigs increased in accordance with the decrease in maternal antibody and the rearing period on these farms. Of note, all the 25 pig farms contained at least two or more anti-Salmonella antibody-positive sows. In the fecal cultures Salmonella spp. were isolated only in three (12.0%, 3/25) of 16 serologically Salmonella-suspected farms (64.0%, 16/25), showing the limitation of the fecal culture method and the need for serum assays to understand the exact status of Salmonella infection in swine herds, which likely contain subclinically infected pigs or carriers. The results highlight the need to establish a supply system of Salmonella-free gilts for the promotion of a national Salmonella control program on swine farms in Korea. Further studies will be needed to develop an effective monitoring system for the implementation of a national Salmonella control program.

갓은 배추 등 다른 십자화과 채소에 비하여 특유의 맛과 향기가 강한 침채류 발효 식품 재료로서 그 활용 방안을 모색하기 위한 기초자료를 얻기 위하여 돌산갓의 일반성분, 산도, 알칼리도, 총당, 유리당, 구조아미노산 및 유리아미노산 등을 분석하였다. 돌산갓은 수분 87.5%, 조단백질 3.8%, 조지방 0.3%, 조섬유 1.3%, 그리고 조회분 1.4%로서 다른 한국산 재래종 갓 및 일본 갓에 비하여 조단백질은 많았고, 조섬유 및 조지방은 오히려 적은 함량을 나타내었다. 잎과 잎줄기의 pH는 5.7, 5.8이었고, 적정산도는 687㎎, 318㎎유산/신선물 100g이였으며, 알칼리도는 2.5, 5.2로서 알칼리성 식품이었다. 유리당은 주로 포도당이였고 잎줄기에는 잎보다 약 2배 많았으며, 과당은 미량으로 분리되었다. 잎과 잎줄기의 총당 및 환원당은 각각 574㎎%, 820㎎% 그리고 352㎎%, 538㎎%였다. 신선물 잎과 잎줄기의 총 구성아미노산은 각각 8.0%, 2.5%로, 잎이 잎줄기보다 3.2배 많았으며, glutamic acid, proline이 공통적으로 가장 많았는데 아미노산 패턴은 차이를 보였다. 총 유리아미노산은 각각 3074㎎%, 298㎎%로서 잎줄기가 잎보다 10.3배 많았으며, 특히 glutamic acid, aspartic acid가 공통적으로 많았고, 필수아미노산은 869㎎%, 68㎎%로서 전체 유리아미노산에 대하여 22.9%와 28.3%였다. To furnish basic data for the utilization of leaf mustard as a raw material of salted and fermented vegetable food, major chemical compositions of Dolsan Leaf Mustard(DLM) were investigated. The moisture and ash contents of DLM were 87.5% and 1.4%, respectively. Compared with other Korean traditional or Japanese leaf mustard, DLM contained more crude protein (3.8%) but less crude fat(0.3%) and crude fiber(1.3%). As an alkali food, leaf and leaf stalk had pH of 5.7 and 5.8, titratable acidity of 687 and 318㎎/100g and alkalinity of 2.5 and 5.2, respectively. The major free sugar in DLM was glucose and fructose was also detected in a small amount. The contents of total and reducing sugar in leaf and leaf stalk were 574, 352, 820 and 538㎎%, respectively. Total amino acid contents of leaf and leaf stalk were 8.0 and 2.5% on wet basis. Although the amino acid compositions of leaf and leaf stalk were different each other, glutamic acid and proline were the major amino acids in both of the leaf and leaf stalk. Significantly higher amount (ca.10. 3-fold) of free amino acid was present in leaf (307 4㎎%) than in leaf stalk (298㎎%). Glutamic acid and aspartic acid were the major free amino acids and essential amino acid contents in leaf and leaf stalk were 869 and 68㎎% being 22.9 and 28.3% of total free amino acids.
개와 고양이에서 분리된 Enterobacteriaceae 와 Pseudomonas aeruginosa 의 항균제 내성 및 내성 유전자의 분포

This study was carried out to investigate the antimicrobial resistance pattern and distribution of resistance gene in 44 Enterobacteriaceae and 21 Pseudomonas (P) aeruginosa isolated from hospitalized dogs and cats in animal hospital from 2010 to 2011 in Daegu. Among Enterobacteriaceae, Escherichia (E) coli was highly resistant to ampicillin (56.7%), followed by tetracycline (53.3%), cephalothin, streptomycine, sulfamethoxazole/trimethoprim, gentamicin and norfloxacin (40.0∼43.3%). The remaining isolates of Enterobacteriaceae had high resistance to ampicillin (64.3%) and streptomycin (42.9%). Whereas, P. aeruginosa was low resistant to all antimicrobials tested (less than 15%). int I 1 gene was detected in 20 (57.1%) of 35 antimicrobial resistant Enterobacteriaceae and 2 (9.5%) of 21 P. aeruginosa., but int I 2 gene was not detected in all isolates. The eight resistance genes were found either alone or combination with other gene (s): blaTEM, aadA, strA-strB, clmA, tetA, tetB, sul I and sul II. About 78% of integron-positive isolates were resistance to more than four antimicrobial agents. The findings suggest that class I integrons are widely distributed in E. coli among Enterobacteriaceae from dogs and cats and multi-drug resistance related to the presence of class I integrons. The prudent use of antimicrobials and continuous monitoring for companion animals are required.

This study was conducted to investigate the antimicrobial resistance, presence of β-lactamase genes and integrons in 83 ESBL-producing Escherichia coli isolated from Nakdong river and Geumho river in Daegu. Among the β-lactam antimicrobials, all isolates were resistant to ampicillin, cephalothin, cefamandole and cefotaxime, followed by piperacillin (98.8%), ampicillin/sulbactam (86.7%), aztreonam (60.2%) and cefepime (59.0%), whereas resistance to piperacillin/tazobacram, ticarcillin/clavulanic acid and cefoxitin was less than 30%. Many of the ESBL-producing Escherichia coli were also resistant to non-β-lactams antimicrobials such as nalidixic acid (83.1%), sulfonamides (72.3%), ciprofloxacin (62.7%) and gentamicin (38.6%). All isolates showed resistance to seven or more antimicrobial agents.The most frequently detected gene was blaTEM+CTX-M (49.4%), followed by blaCTX-M (27.7%), blaTEM (6.0%) and blaOXA (1.2%). But blaSHV was not found. Class 1 integrons were found in 61.4% (51 isolates) of isolates, however, class 2 and 3 integrons were not detected. The results showed water from Nakdong river and Geumho river is contaminated with ESBL-producing E. coli isolates. These results suggest the need for further investigation of antibiotic resistant bacteria to prevent public health impacts in the water environment.
