1<sup>++</sup> 등급 거세한우의 부위별 이화학적 육질특성 및 영양성분조성

This study was conducted to investigate the nutritional composition and meat quality properties of Hanwoo steer beef by different cut. Ten cuts [Abjin (short plate), Bosup (top sirloin), Cheggt (striploin), Dngsim (loin), Guri (chuck tender), Hongduke (eye of round), Moksim (chuck roll), Sulgit (bottom round), Udoon (top round), Yanaji (brisket)] prepared from 10 Hanwoo steers (28-30 months old) were used for this experiment. The range of pH was 5.46-5.64. In the chemical analysis, Hongduke contained highest protein contents (21.15%) and Dngsim had lowest protein contents (16.94%) (p<0.05). Fat contents were higher in Dngsim whereas those of Guri, Hongduke and Udoon were significantly lower when compared to the other cuts (p<0.05). There were not significantly different in meat color (L, a and b values) properties only except that L values were significantly higher in Dngsim among 10 cuts (p<0.05). Cooking loss (%) was higher in Guri, Hongduke, Udoon and Yangji whereas it was significantly love. in Cheggt (p<0.05). Warner-Bratzler shear force (WBS) was significantly higher in Abjin $(6.24inch^2/kg)$, whereas Dngsim $(3.45inch^2/kg)$ and Cheggt $(3.50inch^2/kg)$ were significantly lower than the other cuts (p<0.05). There was no significant difference in water-holding capacity (WHC) among 10 cuts (p>0.05). Total amino acid contents were significantly higher in Hongduke (p<0.05). Hongduke was highest in most kinds of amino acids, however, Udoon had the highest methionine and histidine contents among 10 cuts (p<0.05). Glutamate contents were high in all cuts and followed by aspartate, leucine and lysin. With regard to mineral contents, Ca was ranged from 47.63-70.69 mg/kg and Fe was ranged from 15.09-26.68 mg/kg in 10 cuts. Zn was highly contained in Guri (50.56 mg/kg) when compared to the other cuts (p<0.05).
유기사료 급여가 거세한우의 성장 및 도체특성에 미치는 영향

본 연구는 유기사료 급여가 거세한우의 성장 및 도체 특성을 구명하고자 거세한우 30두에 대한 사양시험 결과는 다음과 같다. 1, 거세한우에 대한 유기 조사료 및 농후사료 급여 시 관행구에 비해 유기구의 발육성적은 유의적인 차이를 보이지 않았으나 사양시험 종료 체중이 유기구의 T1 및 T2의 581.5kg 및 573.3kg으로 관행 597.5kg에 비해 $2.7{\sim}4.1%$ 감소하였다. 2. 일당증체량에 있어서는 유기구인 T1 및 T2의 0.80 및 0.78kg에 비해 관행구는 0.83kg으로 통계적인 유의차는 인정되지 않았으나 대조구에 비해 일당증체량이 $3.6{\sim}6.0%$ 감소되었다. 3. 도체등급에 있어서 1등급이상 출현율은 관행구 T1이 50%이었고 유기구인 T2 및 T3이 각각 50% 및 70%이었다. 4. 등심부위에 대한 관능검사 결과 다즙성, 연도, 향미는 관행과 유기구간 차이를 보이지 않았다. 이상의 실험결과를 종합해 볼 때 유기건초 및 유기 옥수수사일리지 위주의 양질 조사료 사육과 볏짚 위주의 일반 관행사육 간에 성장 및 도체특성에서 유의적인 차이를 보이지 않았으나 양질 조사료를 급여한 유기구에서 근내지방도가 개선되는 경향을 보였다. This study was carried out to investigate the effects of the organic feed on weight gain, feed conversion rate, and carcass characteristics of Hanwoo steers. Three feeding treatments(T1 : rice straw and commercial concentrates, T2 : organic hay and concentrates, T3 : organic corn silage and concentrates) for 22 months (from 6 to 28 months) were used. As a result, weight gain was not significantly different among treatments throughout this study. Also T1 tended to improve weight gain and daily weight gain without significance. The percentage of meat quality grade over the first grads ($1,\;1^+,\;1^{++}$) were 50% in the carcass of Hanwoo steers fed T1 and T2, and 70% fed T3, respectively. T2 and T3 tended to improve marbling score and oleic acid content.

In general, livestock wastewater consists of many pollutants such as nitrogen, phosphorus, carbonic compounds and inorganic substances. Most carbonic and organic compounds are sufficiently removed by conventional secondary processes, but nitrogen, phosphorus and soluble inorganic compounds are little removed by traditional clarification process. These remained substances in wastewater, for instances, phosphorus and nitrogen are efficiently eliminated by advanced wastewater treatment or botanical removing process. Concentrations of $BOD_s$, SS, T-N and T-P in influent livestock wastewater used in this study were 126mg/l, 115mg/l, 45mg/l and 13mg/l, respectively. The hydraulic retention time(HRT) of wastewater was about 10 days in the pond packed with aquatic plants. A water-hyacinth and a water-dropwort were used as an experimental stuff plant. The removal ratios of nitrogen was 44.3% for the water-hyacinth and 40.2% for the water-dropwort. The removal efficiency of phosphorus in experimental ponds reached by 57.9% for the water-hyacinth and 58.5% for the water-dropwort for 10 days, respectively. Removal ratios of BODs and SS of livestock wastewater for 10 days were reached by 80.1%, 91.0% for he water-hyacinth, respectively. At the same condition, the removal ratios of BODs and SS were reached by 75.0%, 87.6% for the water-dropwort, respectively.
