        Quality Characteristics of Processed Meat Products by Spices

        Processed meat products are prone to oxidation and spoilage due to prolonged storage. By using natural spices that are harmless to the human body and have antioxidant and antibacterial effects to replace synthetic preservatives in consideration of consumers' qualitative consumption patterns that pursue nutrition and safety, and stimulate appetite with taste, aroma, and color of food. The purpose of this study was to study the effect on the quality characteristics of processed meat products. The spice group had a low crude fat for both the loin and sirloin cuts. Brightness, redness, and yellowness in the chromaticity of beef jerky and PYUNYUK added with spices were different from those of the control group and increased. In terms of texture, all the beef jerky groups increased firmness and friability, and there was a difference between refrigeration and room temperature storage. The elasticity and stickiness decreased with the lapse of storage period. In the PYUNYUK, the flavor of the spice group was low and the meat quality was soft. It was found that the addition of natural spices to replace synthetic preservatives had different effects on processed meat products and had a positive effect on general ingredients, mechanical properties, physicochemical properties, and sensory quality properties.

        자동생검총을 이용한 CT유도하 흉부 경피생검의 합병증 및 진단 성적

        Purpose : To determine the frequency of complications and diagnostic accuracy of CT-guided percutaneousautomated gun biopsy, and to compare the results with those reported for fine needle aspiration. Materials andMethods : Using automated biopsy devices, 118 CT-guided percutaneous biopsies of pulmonary lesions were performed.An 18-gauge needle was used. Final diagnosis was made with operation or other methods. We retrospectively analyzedthe frequency of complications and diagnostic yields of 118 biopsies. Result : Four of 118(3.3%) patientsdeveloped pneumothorax and two of these required chest tube insertion. Other complications were resolvedspontaneously. 106 biopsies (89.8%) yielded sufficient tissue for pathologic evaluation. For cases of malignantand of benign disease, sensitivity was 91.8% and 87.7% respectively ; the corresponding figures for diagnosticaccuracy were 88.5% and 78.9%. Conclusion : CT-guided automated gun biopsy of the pulmonary lesions is safe, witha pneumothorax rate comparable to that of fine needle aspiration. In the absence of a trained cytologist at thetime of biopsy, the diagnostic accuracy of automated gun biopsy of pulmonary lesions compared favorably with thereported accuracy of fine needle aspiration.

        젖소 17두의 주목나무 독성 중독

        We found seventeen dairy cattle with the abnormal signs in cardiovascular and gastrointestinal systems after feeding of the yew foilage. Among them three cattle were dead due to yew poisoning. Among the remaining fourteen dairy cattle, four cattle showed similar symptoms as did dead cattle. Although the remaining ten dairy cattle did not show any abnormal signs, we conducted a therapy of forced magnesium sulfate infusion because the yew consumption might have been occurred in all cattle. As a result of the therapy, we could not found further signs of yew poisoning. The performance of the therapy and the treatment procedures adapted by the therapy could be concluded as follows: The cardioselective toxicity and inhibition of peristaltic activity by the taxine in yew foilage might be involved in the symptoms of acute poisoning as anorexia, dullness, muscle tremor, dyspnea, and sudden death. We also performed the dose response relationship of taxine to the range of clinical symptoms and examined recovery performances. Through the autopsy of the cattle, we could confirm the presence of yew foilages that might have caused the poisoning in the gastrointestinal tract. However, we could not identify further abnormalities in other organs. In this case report, we demonstrated that practice of the forced magnesium sulfate infusion in yew poisoning was helpful for the attenuating the taxine poisoning by blocking the further proceeding of the toxic effect.

        골드키위, 와송 혼합주스의 항산화 활성 및 품질 특성

        After COVID-19, healthy drinks, especially with taste and nutrition, has been increasing. This study intends to develop mixed juice using delicious Gold kiwi and nutritious Wa-song. The Gold kiwi and Wa-song were extracted in a weight ratio (a) of A (10:0), B (7:3), C (5:5), D (3:7), E (0:10) and volume ratio (b) of F (7:3), G (5:5), and H (3:7). There was no difference in pH according to the juice method, and the higher the mixing ratio of wa-songs, the higher it was. The sugar content was (a) Brix% in which mixed juice was higher than (b). The values for red was affected by the content of gold kiwi, and the values for yellow increased as the content of wa-song increased. The brightness decreased over time except for sample G. The higher the Gold kiwi content, the higher the DPPH radical scavenging activity, and the lower the IC50 value, the more showing higher radical scavenging ability. If you develop mixed juice, which is a sample B (7:3) of gold kiwi and wa-song (a), it will be excellent in quality and taste and effective in antioxidant.

        등유-산소 층류 확산화염의 길이 변화 특성에 관한 실험적 연구

        The flame length in coaxial diffusion flame configurations was investigated when the kerosene fuel flow rate, temperatureof the oxidizer stream, and inert gas concentrations in the oxidizer stream were varied. The diffusion flame wasphotographed using a Schlieren camera under each of the experimental conditions and the obtained images were thendigitized to measure the flame length. The measured flame lengths were proportional to the kerosene fuel flow rate andincreased with increasing temperature of the oxidizer stream. In addition, increases in the inert gas concentration in theoxidizer stream resulted in stretching of the flame. In particular, the flame was further elongated in the oxidizer steamdiluted with helium gas. Inert substitutions in the oxidizer stream that can adjust the viscous drag are believed to be oneof the important mechanisms that affect the length of the coaxial diffusion flames. 등유-산소 동축류 확산화염 버너에서 연료의 유량, 버너 외축에 공급되는 산화제의 온도, 불활성가스로 희석된 산화제의 특성이 화염 길이 변화 특성에 미치는 영향을 고찰해 보았다. 각 실험 조건에서 생성된 동축류 확산 화염은쉴리렌 카메라를 이용하여 촬영한 뒤 디지털 이미징 프로세싱 기법을 적용하여 그 길이를 측정하였다. 실험결과를통해 측정된 화염길이는 등유 연료의 유량과 산화제의 온도에 비례하여 증가하는 것을 확인할 수 있었다. 아울러,산화제에 첨가되는 불활성가스의 희석량이 증가할수록 화염 길이는 증가하는 하였고, 특히 동일한 산소 농도에서질소가스로 희석된 경우가 헬륨가스로 희석된 경우에 비해 화염길이가 큰 폭으로 증가하였다. 이는 유체의 점성 저항에 영향을 미치는 불활성가스의 희석이 화염 길이 변화에 영향을 미치는 주요 메카니즘이기 때문으로 판단된다.
