        프로바이오틱스를 활용한 치즈 산업 활성화 방안

        The market size of functional health foods has experienced substantial growth driven by increasing consumer interest. In particular, the application of functional probiotics in various food products has resulted in consistent and progressive growth. One promising category is the application of probiotics in the manufacturing of cheese, which aligns with the rising demand for functional foods among consumers. The inherent advantages of cheese and probiotics provide consumers with a broad selection of functional foods. Therefore, it is crucial to identify functional probiotics that can withstand the cheese manufacturing process and exert significant effects on the flavor and taste of cheese. In this review, we discuss several strategies aimed at developing probiotic-supplemented cheeses for future dairy food markets.

        Effect of Probiotic-Fortified Infant Formula on Infant Gut Health and Microbiota Modulation

        Compared to infant formula, breast milk is the best source of nutrition for infants; it not only improves the neonatal intestinal function, but also regulates the immune system and gut microbiota composition. However, probiotic-fortified infant formula may further enhance the infant gut environment by overcoming the limitations of traditional infant formula. We investigated the probiotic formula administration for one month by comparing 118 Korean infants into the following three groups: infants in each group fed with breast milk (50), probiotic formula (35), or placebo formula-fed group (33). Probiotic formula improved stool consistency and defecation frequency compared to placebo formula-fed group. The probiotic formula helped maintaining the level of secretory immunoglobulin A (sIgA), which had remarkably decreased over time in placebo formula-fed infants (compared to weeks 0 and 4). Moreover, probiotic formula decreased the acidity of stool and considerably increased the butyrate concentration. Furthermore, the fecal microbiota of each group was evaluated at weeks 0 and 4. The microbial composition was distinct between each groups, and the abundance of healthpromoting bacteria increased in the probiotic formula compared to the placebo formulafed group. In summary, supplementation of probiotic infant formula can help optimize the infant gut environment, microbial composition, and metabolic activity of the microbiota, mimicking those of breast milk.

        아레테 성격 코칭 프로그램 적용에 따른 효과 연구 : 중년여성의 자아실현성, 자아존중감, 자아정체성, 중년위기감을 중심으로

        목적 본 연구에서는 아레테 성격코칭 프로그램을 활용하여 중년여성의 자아실현성, 자아존중감, 자아정체감, 중년기의 위기감에 대한 효과를 분석하였다. 방법 이를 위하여 부산시에 위치한 S심리클리닉에서 실험집단 10명, 통제집단 10명, 총 20명의 중년여성을 대상으로 10주간 아레테 성격 코칭 프로그램에 참여하고, 관련 효능을 측정하기 위해 사전⋅사후 검사를 실시하였다. 프로그램의 효과에 대한 자료 분석을 위해서는 SPSS 22.0 통계 분석 프로그램을 이용하였다. 결과 본 연구의 분석 결과는 첫째, 프로그램 적용 결과 중년여성의 자아실현성 수준이 증가하였다. 둘째, 프로그램 적용 결과 중년여성의 자아존중감이 증가하였다. 셋째, 프로그램 적용 결과 중년여성이 자아정체성이 증가하였다. 마지막으로 프로그램 적용 결과, 중년 위기감이 감소 되었다. 본 연구의 결과에 있어 정숙자(2017)에 의해 개발된 한국형 성격유형검사(APTI)를 바탕으로 한 아레테 성격 코칭 프로그램 총 8단계인 GET-IT-SEE 프로세스 참여를 통해 중년기의 자아실현성, 자아존중감, 자아정체감의 증진이 있었고, 중년위기감이 감소 되었다는 것을 확인하였다. 결론 이에 본 연구 결과는 동⋅서양의 성격 차이를 반영하여 개발된 한국형 성격검사 도구인 아레테 성격검사 도구 사용의 활성화 및 아레테 성격코칭 프로그램의 활용 가능성, 특히 중년기의 자아분석 및 자기개발과 성장을 위한 교육 프로그램으로 활용 가능성이 있음을 확인할 수 있었다. 앞서 많은 연구자들이 코칭 및 교육 프로그램의 모델을 다양하게 개발에 관한 연구를 하였으나 개발 후 프로그램 활용에 관한 효과성 검증에 대한 후속 연구들이 없어 프로그램의 신뢰도를 확보하기 어려운 실정이다. 이에 본 연구는 아레테 성격 코칭 프로그램의 개발 이후 활용 가능성을 위한 기초 자료로 제공될 수 있다는데 의미가 있다. Objectives In this study, the Arete personality coaching program was used to analyze the effects of middle-aged women on self-realization, self-esteem, self-identification, and mid-aged crisis. Methods To this end, 10 experimental groups, 10 control groups, and a total of 20 middle-aged women participated in the Arete personality coaching program for 10 weeks at the S Psychological Clinic located in Busan, and conducted pre- and post-examinations to measure their efficacy. The SPSS 22.0 Statistical Analysis Program was used to analyze the effectiveness of the program. Results The analysis results of this study showed that, first, the application of the program increased the level of self-realization in middle-aged women. Second, as a result of the application of the program, the self-esteem of middle-aged women increased. Third, the application of the program increased self-identification among middle- aged women. Finally, as a result of the application of the program, the sense of middle-aged crisis has been reduced. The results of this study confirmed that participation in the GET-IT-SEE process, which is a total of eight stages of the Arete personality coaching program developed by Jung Sook-ja (2015), enhanced middle-aged self-realization, self-esteem, and self-identification, and reduced middle-aged crisis. Conclusions This study confirmed that the use of Arete personality test tools, a Korean personality test tool developed to reflect differences in the East and the West, and the use of Arete personality coaching programs, especially as educational programs for middle-aged self-analysis, self-development and growth. Previously, many researchers studied various models of coaching and education programs, but it is difficult to secure the credibility of the program because there are no follow-up studies on verifying the effectiveness of the program after development. This study is meaningful in that it can be provided as basic data for the possibility of utilization after the development of the Arete personality coaching program.

        부모양육태도와 자아존중감이 스마트폰 과다사용에 미치는 영향: 자아존중감 매개효과-초등학생 고학년 중심으로

        본 연구는 부산 지역에 거주하는 초등학생 4, 5, 6학년 438명을 대상으로 부모양육 태도와 스마트폰 과다사용의 관계에서 자아존중감의 매개효과를 확인하였다. 이를 위해 SPSS 18.0 프로그램을 사용하여 신뢰도 분석, 기술통계, 상관분석 및 위계적 회귀분석을 실시하였으며 결과는 다음과 같다. 첫째, 부모 돌봄이 높을수록 초등학 생의 자아존중감은 높고, 스마트폰 과다 사용은 낮은 것으로 나타났다. 둘째, 부모 과보호가 높을수록 초등학생의 자아존중감이 낮고, 스마트폰 과다사용은 높은 것으로 나타났다. 셋째, 부모 돌봄과 초등학생의 스마트폰 과다사용의 관계에서 자아존 중감의 매개효과는 부분매개효과로 나타났고, 부모 과보호와 초등학생의 스마트폰 과다사용의 관계에서 자아존중감의 매개효과는 완전매개효과로 나타났다. 이는 초등학생의 스마트폰 과다사용이 부모양육태도의 직접적인 영향을 받을 뿐만 아니라 자아존중감의 매개에 따라 영향을 받을 수 있음을 알 수 있으며 초등학생의 스마트폰 과다사용을 예방하기 위한 정책으로 자녀의 자아존중감을 높여줄 수 있는 부모교 육의 필요성을 보여준다. The study identified the mediation effects of self-esteem in relation to parental attitudes and smartphone overusing among 438 elementary school students living in the Busan area. For this purpose, reliability analysis, technical statistics, correlation and hierarchical regression were conducted using the SPSS 18.0 program, which resulted in: First, the higher the parents care, the higher the self-esteem of elementary school students and the lower the number of smartphones they use. Second, the higher the parents overprotection, the lower the sense of self-esteem among elementary school students and the higher the use of smartphones. Third, in relation to parental care and overuse of smartphones by elementary school students, the mediation of self-esteem was shown as a partial effect, and in relation to parental overprotection and smartphone overusing by elementary school students. This shows that excessive use of smartphones by elementary school students is not only directly influenced by their parent s upbringing but can also be influenced by self-esteem, and that parents can increase their self-esteem with policies to prevent them from overusing.

        프로바이오틱스 섭취를 통한 비만 및 제2형 당뇨의 완화

        The beneficial effects of probiotics on human health have been extensively studied. Strains of Lactobacillus and Bifidobacterium have gained considerable attention, as they are major groups of probiotic bacteria that improve gastrointestinal health. Recently, probiotics have been found to have positive effects on obesity and type 2 diabetes mellitus (T2D) that go beyond the improvement of gut health. Probiotics can alter the secretion of substances such as leptin and adiponectin from white adipose tissue via certain mechanisms. Additionally, probiotics can modulate the adaptive immune system against low-grade inflammation caused by obesity. The potential role of probiotics in the treatment of T2D has garnered interest because of increasing evidence of the anti-diabetic effect of probiotics. In this review, we discuss the results of in vivo studies that have examined the use of probiotics to prevent obesity and T2D, while primarily focusing on the studies that explore the cellular and molecular mechanisms underlying the activity of promising probiotic strains. The conclusions of this review could be of help to researchers who are investigating the effects of probiotics on obesity or T2D, and to patients with these diseases.

        Effect of Consumption of Animal Products on the Gut Microbiome Composition and Gut Health

        The gut microbiome is critical in human health, and various dietary factors influence its composition and function. Among these factors, animal products, such as meat, dairy, and eggs, represent crucial sources of essential nutrients for the gut microbiome. However, the correlation and characteristics of livestock consumption with the gut microbiome remain poorly understood. This review aimed to delineate the distinct effects of meat, dairy, and egg products on gut microbiome composition and function. Based on the previous reports, the impact of red meat, white meat, and processed meat consumption on the gut microbiome differs from that of milk, yogurt, cheese, or egg products. In particular, we have focused on animal-originated proteins, a significant nutrient in each livestock product, and revealed that the major proteins in each food elicit diverse effects on the gut microbiome. Collectively, this review highlights the need for further insights into the interactions and mechanisms underlying the impact of animal products on the gut microbiome. A deeper understanding of these interactions would be beneficial in elucidating the development of dietary interventions to prevent and treat diseases linked to the gut microbiome.

        The current state of phage therapy in livestock and companion animals

        In a global context, bacterial diseases caused by pathogenic bacteria have inflicted sustained damage on both humans and animals. Although antibiotics initially appeared to offer an easy treatment for most bacterial infections, the recent rise of multidrug-resistant bacteria, stemming from antibiotic misuse, has prompted regulatory measures to control antibiotic usage. Consequently, various alternatives to antibiotics are being explored, with a particular focus on bacteriophage (phage) therapy for treating bacterial diseases in animals. Animals are broadly categorized into livestock, closely associated with human dietary habits, and companion animals, which have attracted increasing attention. This study highlights phage therapy cases targeting prominent bacterial strains in various animals. In recent years, research on bacteriophages has gained considerable attention, suggesting a promising avenue for developing alternative substances to antibiotics, particularly crucial for addressing challenging bacterial diseases in the future.

        Comparison study between single enzyme and multienzyme complex in distiller’s dred grains with soluble supplemented diet in broiler chicken

        Upregulation of the nutritional value of feed is the major target of various studies in the livestock industry, and dietary enzyme supplementation could aid in digesting the nondegrading nutrients of grains in feed ingredients. Dried distillers’ grains with solubles (DDGS) is a byproduct of the fermentation process in the beverage industry and can be used as a large supply source of fiber in feed. Therefore, we conducted an experiment with male broiler chickens to investigate the effect of various types of enzymes on DDGS and compare the efficacy of single enzyme and multienzyme complexes on growth performance and gut environments in broiler chickens. We used 420 1-day-old broiler chickens (Ross 308), and they were allotted into 4 dietary treatments with seven replications (CON, corn-soybean meal [SBM] diet; NC, DDGS supplemented diet; SE, 0.05 % of mannanase supplemented DDGS-based diet; MC, 0.10% of multienzyme complex (mannanase and xylanase, glucanase) supplemented DDGS-based diet. The dietary exogenous enzyme in the DDGS-supplemented diet could improve growth performance as much as the growth of the control group, and digestibility of dry matter, crude protein, and gross energy were significantly increased by enzyme addition in groups of chicks fed DDGS-supplementation diet. Moreover, the populations of pathogenic bacteria, coliforms, and Bacteroidetes were significantly decreased by enzyme supplementation, which might lead to improved gut mucus-secreting cells and inflammatory cytokines in the jejunum. Collectively, dietary single enzyme and multienzyme complexes could improve gut environments, including intestinal immune responses and gut microbial population, and lead to improvement of growth performance in broiler chickens.
