fatty acid components separatedand quantified using a SP-2560 capillary columnin a gaschromatograph (GC) with flame ionization detector (FID). Trans fatty acid and total fatty acid contents were measuredin 21 corn oils. Ranges of values for trans fatty acid (tFAs) contents of total fat (as g/100g fatty acids) were corn oils0.65 0.31. Corn oils were heated at 175 5oC for 5mins (0~15 times). The contents of tFAs (g/100) were increasedfrom 0.292 (0 time) to 2.585 (15 times) in corn oil. When frying oils (15 times) were incubated at 20 5oC for 150days, the contents of tFAs (g/100g) were increased from 2.585 to 3.683 in corn oil. - The possibility of rapid non-destructive qualitative and quantitative analysis of vegetable oils such asperilla, corn, soybean and rapaseed oils in sesame oils was evaluated. A calibration equation calculated byMPLS(Modified Partial Least Squares) regression technique was developed and coefficients of determination forperilla oil, corn oil, soybean oil and rapaseed oil contents were 0.9992, 0.9694, 0.9795 and 0.9790 respectively.According to the data obtained from validation study, R2 of contents of perilla, corn, soybean, rapaseed oils were0.997, 0.848, 0.957 and 0.968, and SEP of content of them 0.747, 5.069, 3.063 and 3.000 by MPLS respectively. Theresults indicate that the NIRS procedure can potentially be used as a non-destructive analysis method for the rapid andsimple measurement of sesame oil mixed with other vegetable oils. the NIRS for perilla oil,corn oil, soybean oil and rapaseed oil were presumed as 2%, 15~20%, 15~20% and 10%, respectively.

The strains of Salmonella othmarschen and Norovirus isolated from outbreak A, the funeral ceremonies incidents in Ouri-shi of Oyeonggido in, 2007, were subjected to genotyping by using PFGE and extraction of RNA by using RT-PCR. 24 Salmonella othmarschen were isolated from 37 cases (patients 12 cases, cookers 4 cases, foods 7cases, knife, kitchen board, dish towel 4 cases, etc) and PFGE patterns showed that 22 strains isolated from the same incident were almost of the same pattern and 2 strains exhibited 50% of the pattern. Antimicrobial susceptibility patterns were such that there were 22 case susceptibility patterns and 2 case resistance patterns (strain 4: AM, CF, CIP, NA, TE TIC and strain 13: CF, CZ). Norovirus G1 (1case), Norovirus G2 (7cases), Norovirus G1,G2 (1case) were detected by using RT-PCR. The fine typing ability and reliability of PFGE and BioNumerics are helpful for establishing out the foodborne pathogens of outbreaks.

A survey of total aflatoxin levels was conducted on 158 samples (nuts, fermented foods and their processed products) collected in local markets in Gyeonggi-do and Domestic Internet Site. The total aflatoxins were quantified by the immunoaffinity column clean-up method followed by high performance liquid chromatography (HPLC)-fluorescence detector (FLD). Aflatoxins were found in 45(28.5%) samples including 34 nuts and nut products, 7 soybean pastes, 1 meju, 1 bean product and 2 corn snacks with a range of 0.02 ~ 3.96 μg/kg. These results show that the contamination level of aflatoxin in foods consumed in Korea is low compared with the standard in Korea Food Code(10 μg/kg as aflatoxin B₁). Aflatoxin B₁ content was increased in peanuts and corn snacks during storage but it was decreased in doenjang (soybean paste). This study was performed to survey and evaluate contents of Pb and Cd in colored plastic kitchenwares by Korea Food Sanitation Act. The tested samples were 160 products(32 PE, 65 PP, 10 PS, 18 ABS and 35 MF) in a local market. The Pb and Cd contents range in the samples were ND~357.l㎎/㎏ and ND~376.6㎎/㎏. Pb contents in 6 samples(1 PE, 1 PP, 2 PS and 2 MF) and Cd contents of 2 samples(1 PE and 1 ABS) were above the legal limits. Among the illegal smples, Pb contents were 140.8㎎/㎏, 283.4㎎/㎏, 134.0㎎/㎏, 329.2㎎/㎏, 357.l㎎/㎏ and 218.3㎎/㎏, respectively and Cd contents were 123.l㎎/㎏ and 376.6㎎/㎏. Pb and Cd in various food simulants were not detected in migration test for illegal samples. Simulants were tested at 25℃ and 60℃ for n-heptane and 4% acetic acid, and 60℃ and 95℃ for water.
