        2011-2019년 식품용 기구 및 용기·포장의 제외국 부적합 정보 분석

        The foreign trends of noncompliance occurring frequently in food contact materials during the period of 2011-2019 was investigated by analyzing the food safety risk information DB in the National Food Safety Information Service (NFSI). A total of 2,042 cases of noncompliance of food utensils, containers, and packages were classified into 5 violation categories; administrative procedures, manufacturing and processing standards, residues and migration standards, labeling and advertising, and quality standards. This was again subcategorized according to non-compliance causative factors. The non-compliances in residues and migration standards comprised the largest proportion (76.4%) of the violative categories. The number of noncompliance information collected in 2011 was 88 cases and increased to 373 cases in 2019. A 72.8% of the non-compliance case was identified to be products of 4 countries (China 64.2%, Germany 4.0%, Japan 3.2%, and Taiwan 3.1%), those produce large quantities of containers and packaging products. During the period of 2011-2019, the number of illegal use of hazardous materials and illegal recycling of waste synthetic resins has decreased to less than one a year since 2014. On the other hand, after 2016, inconsistency of heat-resisting temperature labeling (Taiwan), non-compliance in paper container’s strength standards, violation of printing standards, and the risk of consumer injury while using the products were newly reported due to the strengthening of consumer safety protection regulations. Migration of hazardous substances in synthetic polymer products such as heavy metals, melamine and formaldehyde in melamine tableware, primary aromatic amines which are colorant components in kitchenware such as ladles and spatulas, and phthalate plasticizers have been continuously reported with high frequency.

        Ant Colony Optimization Heuristics and Graph Optimization Algorithms of an Aisle-Based Order Picking System

        For aisle-based order picking systems the travelling times of pickers are crucial to the productivity of the whole system. We consider two aisle routing policies: the graph optimization algorithm (GOA) and the ant colony optimization (ACO) heuristic. The GOA gives an optimal tour but needs to be changed depending on the layout of aisles. On the other hand, the ACO heuristic may not yield optimal tours but turns out to be effective and flexible. Comparing two methods by real data, our ACO heuristic can generate fairly good solutions within a few seconds.

        우편물수집문제를 위한 개미집단 최적화 휴리스틱

        This study deals with an application of ant colony optimization for a postal collection problem (PCP) in the Seoul International Post Office (SIPO). The subcontractor of SIPO collects express mail parcels using different types of vehicles. The PCP has the unique cost structure which considers only effective traveling distances. An ant colony system heuristic with λ- interchange improvement is proposed to solve the PCP. For a real PCP, our heuristic reduces the number of vehicles and the total distance less than those of previous studies.

        양식뱀장어 생산단계 안전성 조사를 위한 베이지안 네트워크 모델의 적용

        The Bayesian network (BN) model was applied to analyze the characteristic variables that affect compliance with safety inspections of farmed eel during the production stage, using the data from 30,063 cases of eel aquafarm safety inspection in the Integrated Food Safety Information Network (IFSIN) from 2012 to 2021. The dataset for establishing the BN model included 77 non-conforming cases. Relevant HACCP data, geographic information about the aquafarms, and environmental data were collected and mapped to the IFSIN data to derive explanatory variables for nonconformity. Aquafarm HACCP certification, detection history of harmful substances during the last 5 y, history of nonconformity during the last 5 y, and the suitability of the aquatic environment as determined by the levels of total coliform bacteria and total organic carbon were selected as the explanatory variables. The highest achievable eel aquafarm noncompliance rate by manipulating the derived explanatory variables was 24.5%, which was 94 times higher than the overall farmed eel noncompliance rate reported in IFSIN between 2017 and 2021. The established BN model was validated using the IFSIN eel aquafarm inspection results conducted between January and August 2022. The noncompliance rate in the validation set was 0.22% (15 nonconformances out of 6,785 cases). The precision of BN model prediction was 0.1579, which was 71.4 times higher than the non-compliance rate of the validation set.

        비지 단백질로 제조한 가식성필름의 기계적 및 물질투과특성

        두부생산시 부산물로 다량 생산되는 두부비지를 효과적으로 이용하기 위해 이로부터 가식성 필름을 제조하였으며, 가소제로서 glycerol과 sorbitol을 사용하였을때 필름형성용액의 pH와 가소제의 농도가 가식성필름의 기계적특성(인장강도와 신장률), 수분투과도, 산소투과도 및 유지투과도에 미치는 영향에 대하여 조사하였다. 건조하지 않은 두부비지에 10배의 물을 가하여 pH 11에서 1시간동안 교반하면서 단백질을 추출한 후, 등전점(pH 4.3) 처리하고 동결건조하여 농축단백질 시료를 만들고, 이로부터 solution casting 법으로 가식성필름을 제조하였다. 필름용액의 pH를 10으로 조절하여 제조한 가식성필름의 인장강도와 신장률이 우수한 것으로 나타났으며, 제조된 가식성필름의 인장강도는 가소제의 농도가 증가함에 따라 15.0 MPa에서 2.9 MPa로 감소하였으며 특히 sorbitol을 첨가하였을 때 가장 높은 인장강도와 신장률을 보였으며. 수분투과도는 첨가된 가소제의 양과 종류에 따라 $0.48{\sim}0.83nm{\cdot}m/m^2{\cdot}s{\cdot}Pa$의 범위를 보였으며 많은 양의 가소제가 사용될수록 수분투과도가 높았다. 또한 가소제로서 sorbitol을 사용하였을 때가 glycerol을 사용하였을 때보다 수분투과에 대한 차단효과가 전 가소제 농도 범위 ($0.4{\sim}0.8g$ plasticizer/g protein)에 걸쳐 우수하였다. 또한 이들 필름들은 낮은 산소투과도($29.5{\sim}61.1aL{\cdot}m/m^2{\cdot}s{\cdot}Pa$)와 유지투과도를 보여 산소와 유지의 투과에 대한 차단성이 높은 것으로 나타났다. Edible films were prepared from proteins extracted from soybean curd residue by alkaline extraction and isoelectric precipitation. Effects of film forming solution pH and plasticizers on mechanical and barrier properties of edible films were studied. films were formed within pH $7{\sim}11$ with tensile strength (TS) of $2.9{\sim}3.3$ MPa. Films produced under pH 10 had the highest TS and Elongation (E) (3.3 MPa and 60.1%) but no significant difference was observed among water vapor permeabilities (WVP) of film. Glycerol, sorbitol and its mixture (1:1, w/w) were added as plasticizers. The concentration and mixing ratio of plasticizers also affected the TS, E and WVP of films. TS of films decreased from 15.0 MPa to 2.9 MPa as plasticizer concentration increased from 0.4 to 0.8 g plasticizer/g protein. At a plasticizer concentration, the highest TS was observed when sorbitol was used whereas the highest E was measured when mixture of glycerol and sorbitol was used as plasticizer WVP of films increased as the plasticizer concentration increased. Films plasticized with glycerol showed the highest WVP among the films with the same plasticizer concentrations. Edible films prepared from soybean curd residue protein showed very low oxygen permeabilities ($29.5{\sim}61.1aL{\cdot}m/m^2{\cdot}s{\cdot}Pa$) and oil resistance at all plasticizer concentration level tested.
