        제주도 토종 돼지고기의 품질에 영향을 미치는 건조 감귤 부산물 급여 효과

        This study was carried out to investigate the possibility for utilization and the effectiveness of citrus byproducts on the nutritional composition and sensory score of Jejudo native pig meat. The groups are consisting of the Jejudo native pig loin without citrus byproduct ($JNP-T_0$) and the Jejudo native pig loin fed with 8% and 15% citrus byproduct during growing and fattening period($JNP-T_1$). The contents of moisture, crude protein, crude fat, crude ash, calorie, cholesterol content Mg, P, K, Na, vitamin $B_1\;and\;B_2$, total amino acid, and total free amino acid content were not significantly different between $JNP-T_0$ and $JNP-T_1$(p>0.05). It was found that palmitic acid($25.301{\sim}27.403%$) was the highest one among saturated fatty acid while oleic acid($42.234{\sim}43.061%$) was the highest among unsaturated fatty acid in both groups. In case of sensory score, the color and aroma of raw meat, and the flavor preference of boiled meat of $JNP-T_0$ were higher than those of $JNP-T_1$(p<0.05). But the taste, texture, juiciness and palatability of boiled meat were not influenced by feeding of citrus byproduct.

        한우등심의 이화학적 및 관능특성에 미치는 감귤박의 영향

        본 연구는 감귤박 급여가 한우등심의 이화학적 특성 및 기호성에 미치는 영향을 연구할 목적으로 수행하였다. 시료는 감귤박을 급여하지 않은 한우등심(TMR-0)과 감귤박을 급여한 한우등심(TMR-1)으로 하였다. TMR-0는 비육우용 배합사료와 건초를 분리 급여하면서 관행적으로 사육하였으며, TMR-1은 육성기 및 비육전기 일부(약 17개월)는 TMR-0와 같은 방법으로 사육한 후 나머지 10개월(비육전기 및 후기) 동안은 감귤부산물 TMR 사료를 급여하였다. 한우등심의 명도, 적색도 및 황색도는 TMR-0 및 TMR-1 사이에 유의적인 차이가 없었다. pH는 TMR-1이 TMR-0보다 유의적으로 낮았으며, VBN함량, TBARS값 및 EDA는 TMR-0 및 TMR-1 사이에 유의적인 차이가 없었다(p<0.05). 한우등심의 보수력, 동결감량 및 가열감량은 TMR-0 및 TMR-1사이에 유의적인 차이는 없었지만, 해동감량은 TMR-0(7.35%)가 TMR-1(3.04%)보다 유의적으로 높았다(p<0.05). 한우등심의 경도는 TMR-0가 TMR-1보다 높고, 탄성은 TMR-1이 TMR-0보다 유의적으로 높았으며, 응집성, 뭉침성, 저작성 및 전단력은 TMR-0 및 TMR-1 사이에 유의한 차이가 없었다. 저장 중 pH 및 VBN 함량은 TMR-0 및 TMR-1사이에 유의적인 차이가 없었지만, TBARS값은 저장 4주째 TMR-1이 TMR-0보다 유의적으로 낮았다(p<0.05). 생육의 색깔 및 향기는 TMR-0 및 TMR-1 사이에 유의한 차이가 없었다. 가열육의 풍미 및 연도는 TMR-1이 TMR-0보다 유의적으로 우수하였으며, 맛, 다즙성 및 전체적인 기호도는 TMR-0 및 TMR-1 사이에 유의성이 없었다(p<0.05). The purpose of this research is to study the effects of feeding dietary citrus byproducts TMR (total mixed ration) on physicochemical properties and sensory characteristics of Korean native beef loin (KNBL). The samples for experiment consist of the KNBL not fed with citrus byproducts (TMR-0) and the KNBL fed with citrus byproducts during fattening period (TMR-1). The control (TMR-0) KNBL was fed by general practical feeding (roughages and concentrates were fed separately), while the TMR-1 KNBL was fed by the same as TMR-0 until 17 months yearling but was fed by citrus byproducts feeding for 10 months after that. The $L^*(lightness),\;a^*(redness)\;and\;b^*(yellowness)$ value were not significantly different between TMR-0 and TMR-1. The pH of TMR-1 was lower than that of TMR-0 (p<0.05), the VBN content, TBARS value and EDA were not significantly different between TMR-0 and TMR-1. The water holding capacity, frozen loss and cooking loss were not significantly different between TMR-0 and TMR-1, but thawing loss of TMR-0 was higher than that of TMR-1 (p<0.05). The hardness of TMR-0 was higher than that of TMR-1, and the springiness of TMR-1 was higher than that of TMR-0 (p<0.05), but the cohesiveness, gumminess, chewiness and shear force were not significantly different between TMR-0 and TMR-1. The pH and VBN content during storage were not significantly different between TMR-0 and TMR-1, but the TBARS value of TMR-1 stored during 4 weeks was lower than that of TMR-0 (p<0.05). In case of sensory score, the color and aroma of raw meat, and the taste, juiciness and palatability of cooked meat were not significantly different between TMR-0 and TMR-1. But the flavor and tenderness of TMR-1 were superior than those of TMR-0 (p<0.05)

        『스튜어트 리틀』의 입양 내러티브

        The discourse of adoption has been dominated by adoption agencies and adoptive parents, not adoptees themselves. Under this situation, the adoptees' voice has been in silence for a long time. In transracial adoption, the grateful aspects of adoption that love sees no color are overly emphasized; racism working behind the scenes is often ignored. The aim of this study is to examine the adoption narrative, comparing the novel and the movie version of Stuart Little written by E. B. White. In the novel, Stuart wins the boat race without the help of his family and he becomes a substitute teacher in the school, which shows that he has a meaningful relation with the society he lives in. At the end of the novel Stuart leaves for the North of New York to find his ideal, feeling that he is headed in the right direction. This course of the novel means that Stuart is in a situation of retrieving and maintaining a connection with his culture of origin while fully participating in the dominant culture. However, Stuart portrayed as a white mouse in the movie reveals a strong desire to belong to a white family despite the difference from his appearance and size as a mouse. With Stuart assimilated into the white family, the movie shows that he relinquishes one's birth culture and fully embraces that of dominant culture.

        『샬롯의 거미줄』(Charlotte's Web)에 나타난 구원

        In E. B. White's Charlotte's Web, his frequent use of many different salvation-related words such as the thought of death, the fear of death, miracle, sermon, and a minister shows that this work deals with salvation as its main theme. Seen through the environmental lens, the meaning of salvation can be considered within the context of ecological theology, which concerns traditional Christianity as the cause of environmental crisis, and tries to overcome anthropocentric view of nature. The important reason for a pig's salvation is derived from the thought that nature is the creation of God and that man, a part of nature, is not separated from nature even though it is imperfect. The meaning of miracle can be found not only in the form of words in the Bible but also in the mystic ties between the little girl Fern and Wilbur on the barn. This paper discusses how White shows that the characters overcome the anthropocentric view and can get the harmonious relationship between man and nature.

        죽음에 대한 새로운 관점: 『아칸소의 곰』

        This paper discusses how new perspectives on death are introduced in American society and related to social and cultural changes toward children in the history of American children`s theatre. This paper also discusses how characters show their responses and accept death in the Arkansaw Bear written by Aurand Harris, based on Elizabeth Kubler-Ross` five stage of grief: denial, anger, bargaining, depression, and acceptance. Harris`s play, not following all the five stages and not sinking into the stage of depression, moves toward a new direction that life and death can be connected through art, which shows the uniqueness of Harris as a playwright for children, rising above Kubler-Ross` psychiatry concerning death responses. By the device of play-within-a-play, Harris` play compares and contrasts adult`s and children`s view on death, and shows itself the justification for play`s own existence. This device helps Harris raise questions about the adult`s old view on death and stress the need of new perspectives through children`s eyes on death. (Koje College)

        육성기 및 비육기에 급여한 감귤 부산물이 제주도 개량 흑돼지 고기의 품질특성에 미치는 영향

        본 연구는 제주도에서 폐기되고 있는 밀감 부산물을 돼지에게 급여하여 폐기물의 이용과 기능성 돈육의 생산을 위하여 실시하였다. 돼지는 밀감 부산물을 급여하지 않은 등심육 (TB-0) 및 육성기에 6% 급여한 후 비육기에 10% 급여한 등심육(TB-1)을 대상으로 여러 가지 영양성분 분석과 관능검사를 실시한 결과 수분, 조단백질, 조지방, 조회분 및 열량은 시료들 사이에 차이가 없었다. 콜레스테롤 함량은 TB-1(41.5 mg/100 g)이 TB-0(48.9 mg/100 g)보다 유의하게 낮았다. 무기질 중에서 Mg은 TB-0(192 ppm)가 TB-1(161ppm)보다 유의하게 높았으며, 비타민 B1 및 B2는 시료들 사이에 차이가 없었다. 총아미노산 함량은 TB-0 및 TB-1이각각 19.51 및 18.65%이고, 총유리아미노산 함량은 각각 469.44 및 479.45 mg/100 g으로 처리구간에 유의한 차이가 없었다. 포화지방산은 palmitic acid가 가장 많았고, 불포화 지방산은 oleic acid가 가장 많았다. 생육과 가열육의 맛, 조직감, 다즙성 및 전체적인 기호성은 밀감 부산물 급여에 의한 영향은 없었으며, 풍미는 TB-1이 TB-0보다 유의하게 높았다. The contents of cholesterol and the magnesium of TB-1 were lower than those of TB-0. Palmitic acid was the most abundant among saturated fatty acids while oleic acid was the most abundant among unsaturated fatty acids in both groups. In case of sensory score, the color and aroma of raw meat and taste, texture, juiciness and palatability of boiled meat were not influenced by feeding of citrus byproduct. But the flavor preference of boiled meat of TB-1 was higher than that of TB-0.

        『리어왕』의 생태 비평적 읽기

        During the storm scene, Lear in madness asks the question, “What is the cause of thunder?” Seen through an ecocritical lens, the question is about what relation there is between the moral of man and its containing universe. Examining the play`s answers to the question, this paper discusses how an anthropocentric view toward nature causes destructive results within the play. New environmental ethics which emphasizes human respect and ethical obligation for nature is suggested as a way to offset Lear`s anthropocentric attitude. As a metatheatrical element, the playwright`s aesthetic effort to overcome the binary thought between the realistic world and the fictive world is also discussed through the role-play within a role device. The example of Edgar shows that the realistic and the fictive coexist together at the same moment, crossing the border between them, which allows readers and audience to relate imagined nature shown in the play with real nature outside the play.

        온주밀감 부산물 급여가 교잡종 돈육 등심의 영양성분 및 기호성에 미치는 영향

        본 연구는 제주도에서 대량 폐기되고 있는 온주밀감 부산물을 돼지에게 급여하여 폐기물의 이용 가능성과 기능성 돈육 생산을 위하여 실시하였다. 시료는 온주밀감 부산물을 급여하지 않은 등심육(TP-0), 육성기에 온주밀감 부산물을 3% 급여한 후 비육기에 5% 급여한 등심육(TP-1), 그리고 육성기에 6% 급여한 후 비육기에 10% 급여한 등심육(TP-2)을 대상으로 제반 영양성분 분석과 관능검사를 행한 결과, 수분, 조단백질, 조지방 및 조회분 함량은 시료들 사이에 차이가 없었다. 열량은 TP-1이 높았으며, 콜레스테롤 함량은 온주밀감 부산물 급여량이 증가할수록 낮았다(0<0.05). 무기질 중 Na은 TP-2가 낮았으며, 비타민 B₁ 및 B₂는 시료들 사이에 차이가 없었다. 총아미노산 함량은 TP-0, TP-1 및 TP-2가 각각 18.86, 20.03 및 20.44%로 처리구간의 유의성은 없었다. 그리고 총유리아미노산 및 포화지방산 : 불포화지방산의 비율은 시료들 사이에 유의한 차이가 없었다. 육 및 가열육의 기호성은 온주밀감 부산물 급여에 의한 영향은 없는 것으로 나타났다. These studies were carried out to investigate the possibility for utilization of waste articles and the production of function characteristics pork by feeding unshiu orange byproducts. The samples consisted of the pork not fed with unshiu orange byproduct (TP-0), the pork fed with 3% and 5% unshiu orange byproduct during growing and finishing period, respectively (TP-1), and the pork fed with 6% and 10% unshiu orange byproduct growing and finishing period, respectively (TP-2). The moisture, crude protein, crude fat and crude ash were not significantly different among samples. It was found that TP-1 had the highest calorie. The cholesterol content was lowest in TP-2 (p<0.05). It was found that TP-2 had the lowest Na among minerals. Vitamin B₁ and B₂ were not significantly different among samples. The total amino acid contents of TP-0, TP-1 and TP-2 were 18.86%, 20.03% and 20.44%, respectively. Total free amino acid and saturated fatty acid vs. unsaturated fatty acid of pork loins were not significantly different among samples. The sensory scores were not influenced by feeding of unshiu orange byproduct.
