Phytic acid (myo-inositol hexakisphosphate) or phytate is considered an anti-nutrient due to the formation of precipitated complexes that strongly reduces the absorption of essential dietary minerals. In this study, brown rice with reduced phytate was made by inoculation with Lactobacillus sakei Wikim001 having high phytase activity. The effects of brown rice extract treated with L. sakei Wikim001 (BR-WK) on osteoblast differentiation and osteoclast formation were investigated. The proliferation of SaOS-2 cells was measured by the MTT assay. Treatment with BR-WK increased cell proliferation by 136% at a concentration of $100{\mu}g/mL$. The Alkaline phosphate activity in SaOS-2 cells was 129% higher when BR-WK was processed at a concentration of $100{\mu}g/mL$. The proliferation of bone marrow macrophages decreased by nearly 60% in response to treatment with BR-WK. In addition, BR-WK reduced the number of tartrate-resistant acid phosphatase-positive ($TRAP^+$) multinucleated cells from bone marrow macrophages. These results indicate that BR-WK stimulates bone formation through its positive action on osteoblast differentiation and function and furthermore, decreases osteoclast differentiation.

<P>This study evaluated bactericidal effects of chlorogenic acid (CGA), caffeic acid (CFA), coumaric acid (CMA), and ferulic acid (FA), against Pectobacteriwn carotovorum subsp. carotovorum (PCC) on Chinese cabbage using suspension and direct inoculation tests. Among suspension tests with four phenolic acids, CGA at 5-7 mM or CMA at 7-10 mM for 30min effectively eliminated PCC, whereas CFA and FA effectiveness increased on prolonging treatment time to 60 min. For cabbage, CGA at 5-7 mM or CMA at 10 mM for 60 min achieved a log(10) reduction of a 3.98 log(10) CFU/g. On comparison of soft rot development on Chinese cabbage after treatment with phosphate-buffered saline (negative control), 1% sodium hypochlorite (positive control), and 5 mM of CGA at 20 degrees C for 72 h, the first soft rot symptoms were observed after 12 h only for PBS treatment, and there were no significant differences between positive control and CGA treatment up to 36 h, after which the decay rate increased significantly. These results suggest that CGA at 5-10 mM for 60 min might allow significant shelf life extension of cabbage and prevent quality loss in kimchi by controlling the spread of the soft rot symptoms on cabbage.</P>

토마스 만의 초기 단편 『토비아스 민더니켈』에 나타난 동정적/사디즘적 시선 - 장폴 사르트르의 ‘타자의 시선’ 개념을 토대로

본 연구에서는 사르트르의 ‘타자의 시선’ 개념을 활용하여 『토비아스 민더니켈』에서 토비아스 민더니켈의 ‘시선’이 어떻게 타자에 의해 ‘응시당한 시선‘에서 자신이 ‘응시하는’ 시선으로 바뀌게 되는지, 그러는 과정에서 민더니켈이 어떻게 사디즘적 양상을 노골적으로 표면화하면서 삶에 대해 복수를 하는지 고찰한다. 사회에서 소외된 토비아스 민더니켈은 자존감 없이 철저히 타자에 의해 ‘응시당하는- 존재’로 살아간다. 여기서 ‘응시당하는-존재’로 인식된다는 것은, 자신의 자유와 의지를 타인에게 빼앗긴 채, 자신의 존재성을 잃었다는 것을 의미한다. 그러다가 다친 아이를 동정하고 상처를 봐준 것을 계기로 그는 아이를 ‘응시하는-존재’로 승격되는데, 이때 느꼈던 “고통의 행복”을 재현하기 위해, 민더니켈은 노점에서 구입한 개를 거만하게 ‘응시 하고’ 개의 야성과 생명력을 억압하면서 사디스트가 됨으로써 타자에 대한 권력을 행사 하려고 한다. 결국 개(타자)가 ‘응시당하기’를 거부하고, 주인과 ‘시선 투쟁’을 유발하자, 민더니켈은 분노와 광기를 억제하지 못하고 개를 잔인하게 죽이는데, 이와 함께 삶에 복수를 하지만, 자신의 존재의 의미는 사라지고 만다. 이 작품은 토마스 만의 초기 단편이지만, 작가의 일관된 화두였던 삶과 죽음, 사디즘과 관용, 시민사회와 소외의 세계의 모순을 주인공의 정교한 심리 묘사를 통해 형상화 하여 이후에 나올 장편소설에서 보여줄 특징을 선취하고 있다. Im vorliegenden Beitrag wird anhand des Begriffs ‘der Blick des Anderen’ von Jean-Paul Sartre analysiert, wie sich der Blick Tobias Mindernickels im Werk Tobias Mindernickel von dem des ‘Erblickten’ zu dem des ‘Erblickenden’ wandelt, und wie Mindernickel seine bemitleidenden und sadistischen Züge während dieses Vorgangs in den Vordergrund bringt und sich damit auf seine Weise, jedoch ohne dass es ihm bewusst wird, am Leben rächt. Tobias Mindernickel, der von der Gesellschaft ausgeschlossen ist und von den Anderen mit Verachtung ‘erblickt wird’, lebt, ohne irgendwelche Selbstachtung zu haben, dahin. ‘Erblickt werden’ heißt, dass er von dem Anderen seiner eigenen Freiheit und seines eigenen Willens beraubt wird. Durch eine Gelegenheit, bei der Mindernickel aber zufällig einem durch eine Verletzung blutenden Kind (dem Anderen) hilft, gewinnt er bis zu einem gewissen Grad Selbstbewusstsein und wird zum das Kind ‘Erblickenden’ erhoben. Um das durch Herrscherposition errungene Gefühl des ‘schmerzlichen Glücks’ wiederzuempfinden, wirft er einmal einen bemitleidenden Blick, ein anderes Mal einen herablassenden Blick auf den Hund, den er einem Straßenhändler abgekauft hat, und unterdrückt die wilde Lebenskraft des Hundes. Auf diese Weise übt er Macht über ihn aus. Als letztendlich der Hund (der Andere) sich dem sowohl bemitleidend als auch sadistisch ‘erblickenden’ Blick Mindernickels verweigert und seinen Herrn zu einem ‘Blickkampf’ herausfordert, kann Mindernickel seine Wut und seinen Wahn nicht mehr unterdrücken und tötet den Hund auf grausame Weise mit einem Messer. Damit hat er sich ander lebendigen Bürgergesellschaft rächen wollen, zeigt aber nur seine zwiespältige Psyche und geht zugrunde.

Chiral-MGrid: 그리드 기반 광학이성질체 식별 서비스

현재 IT분야의 끊임없는 발전과 더불어 BT/NT 분야와의 협업이 활발히 진행되고 있는 가운데, 광학 이성질체에 대한 연구는 그 중요성이 점점 증가되고 있다. 광학 이성질체는 생체 내에서 작용할 경우 성질, 기능, 효과에서 정반대 결과를 일으키기에 제약 산업 등 응용분야에서는 사용을 위해 효과적으로 식별하여 분리할 필요성이 존재한다. 이런 실험은 단계가 복잡하고 결과를 분석하고 시각화하기 어렵다. 이를 해결하기 위해 본 논문에서는 광학 이성질체의 분리연구를 위한 그리드 기반의 Chiral-MGrid 시스템을 제공한다. Chiral-MGrid 시스템은 분리연구 관련 실험을 그리드 기반에서 one set operation으로 수행할 수 있는 서비스를 제공한다.

커피전문점의 서비스스케이프가 고객시민행동에 미치는 영향 : 경험적 가치와 브랜드몰입의 직렬다중매개효과

커피전문점은 외식업계의 불황에도 불구하고 뜨겁게 창업 시장을 달구고 있으며, 사람들이 서로 교류하며 라이프 스타일을 표현하는 장소가 되어가고 있다. 따라서 고객들의 니즈와 경험적 가치를 충족시킬 수 있고 고객 스스로 참여를 통하여 만족하고 더 나아가 용인 및 추천까지 이어지는 고객시민행동을 통해 커피전문점은 치열한 경쟁 시장에서 살아남을 수 있을 것이다. 본 연구는 국내에 소재하고 있는 커피전문점을 대상으로 커피전문점의 서비스스케이프가 고객시민행동에 미치는 영향에 대해서 알아보고 고객의 경험적 가치와 브랜드몰입의 직렬다중매개효과를 보기 위한 목적으로 진행되었다. 본조사는 2019년 2월부터 3월까지 진행하였으며, 총 400부의 설문지를 배포하였고 그중 374부의 표본을 실증분석에 활용하였다. 실증분석 결과를 요약하면 다음과 같다. 첫째, 서비스스케이프는 고객시민행동에 유의한 정(+)의 영향을 미치는 것으로 나타났다. 둘째, 서비스스케이프가 고객시민행동에 미치는 영향 관계에서 경험적 가치의 간접효과는 유의하였다. 셋째, 서비스스케이프가 고객시민행동에 미치는 영향 관계에서 브랜드몰입의 간접효과는 유의하지 않았다. 넷째, 서비스스케이프가 고객시민행동에 미치는 영향 관계에서 경험적 가치와 브랜드몰입의 직렬다중매개효과는 유의하였다. 결과를 종합하면 커피전문점의 무한 경쟁에서 살아남기 위하여 커피전문점이 궁극적으로 지향하는 소비자의 고객시민행동을 촉구하는 방안에 대한 유용한 시사점을 제공하고자 하였다. Despite the slump in the restaurant industry, coffee shops have heat up the start-up market, and become places where people interact with each other and express their lifestyle. Therefore, coffee shops will be able to survive in the fiercely competitive market through customer citizenship behavior that can meet customers’ needs and experiential value, satisfy customers themselves through participation, and further lead to acceptance and recommendation. The purpose of this research was to find out about the effects of servicescape of coffee shops on customer citizenship behavior and to see the serial multiple mediating effects of customer s experiential value and brand commitment in coffee shops located in Korea. This survey was conducted from February to March 2019. A total of 400 questionnaires were distributed and 374 of them were used for empirical analysis. A summary of the empirical analysis results is as follows. First, servicescape was shown to have a significant positive effect on customer citizenship behavior. Second, the indirect effect of servicescape on customer citizenship behavior through experiential value was significant. Third, the indirect effect of brand commitment in relation to the effect of servicescape on customer citizenship behavior was not significant. Fourth, the indirect effect of servicescape on customer citizenship behavior through experiential value and brand commitment in serial was significant. In sum, the results were intended to provide useful suggestions on how to urge consumers to take customer citizenship behavior that the coffee shop ultimately pursues in order to survive the endless competition of coffee shops.
