      • 자연농업에 의해 생산된 배추의 품질 및 조리, 가공적성에 관한 연구

        자연농업으로 재배된 배추와 일반 배추를 이용하여 김치를 담었을 때 숙성중 화학적, 미생물학적 및 관능적인 품질 변화를 알아 본 결과는 다음과 같았다. 자연배추가 일반배추보다 당질이 0.41%, 질산염은 약31배 정도 많았으며 기타 성분은 비슷하였다. 배추통김치의 담금실험에서 초기에 있어서 자연배추통김치의 호기성 전세균수는 일반배추보다 약 70% 이상 세균수가 적었으며 전 젖산균수가 담금 초기부터 급격히 증가하다가 적숙기를 지나서 감소하는 경향은 비슷하였다. 자연 및 일반배추통김치의 숙성기간 중 산도의 변화는 현저한 차이가 있어서 자연배추의 경우는 4주 후에도 식용할 수 있는 정도로 산도가 낮았으나 일반배추의 경우는 2주후부터 산도가 증가하여 식용할 수 없을 정도로 산패되었다. 배추통김치의 관능적 시험결과 자연배추통김치는 담근 2주후부터 일반배추통김치에 비하여 유의성 있게 현저히 우수하였으며 4주 수에도 기호도가 좋아서 일반배추통김치보다 가식기간을 두배 정도 연장할 수 있었다. Studies on chemical microbiological and sensory characteristics of cabbage and kimchi prepared by natural farming and usual farming. In the result, crude total sugar of natural Korean cabbage was 0.41% higher than usual Korean cabbage and other components were almost same. Total aerobic bacteria of natural farming Korean cabbage kimchi was about 70% compared with that of control at early stage of fermentation and total Lactobacilli was occurred vigorously after early stage and decreased gradually after optimum fermented stage at both sample. Changes of acidity of Korean cabbage kimchi during fermentation was remarkably different between natural and usual Korean cabbage kimchi. The acidity of natural Korean cabbage was as low as edible level after four weeks storage at ambient temperature but that of control was so high that usual kimchi could not eat them after two weeks storage. Sensory quality of natural cabbage kimchi was superior after two weeks fermentation compared with that of control and edible period of its could be prolonged twice.

      • 안성군 주부들의 영양교육을 위한 사전연구 : 제1보:영양지식과 식습관을 중심으로 Base on Nutrition Knowledge and Food Habits

        The completely answered questionaires were analyzed for the nutrition knowledge and food habits. The results were summarized as follows; 1. Taking care of the dietary life there were only about 10.7% of housewives were having planned meal and were able to take care of their own eating habits. 2. The greatest main cause which had influence on their family's eating habits was their husband's eating habits.(53.9%) 3. The educational level nor the age of the housewives had no effect on choice of cooking methods. 4. All groups tend to regard taste as the most important thing to regard. The older generation care more about nutrition. 5. The housewives said that they got the knowledge and information needed for their diet from the relatives and neighbours(34.9%), radio and television(28.8%), or from the newspapers and magazines(25.3%). 6. The subject they wanted on improvement of simplifying the dietary life on Korean food was that "There were too many dishes" took very high rate of 31.5%. 7. The spare time due to improvement of simplifying the dietary life, all the housewives wanted to have their own time to enjoy their hobbies. 8. The instant food should give sufficient nutritional suppliments and it should be harmless, economic and safe to satisfy the family member's tastes.

      • 신생아 집중치료실에서 퇴원한 환아 부모에게 전화상담한 내용과 간호중재에 대한 조사연구

        The purpose of this study was to identity the current status of nursing intervention by telephone. A head nurse of the intensive care unit wrote down the content of interview with parents of newborn discharged from hospital from 7 a. m. to 3 p. m. during the period of February through December in 1999. The content of 150 telephone calls except incomplete record among 460 calls were analyzed into frequency of general characteristics, content and nursing intervention by 11 categories. The findings of this study were as follows; 1. The proportion of males to females, male patients(50.0%) female patients(50.0%) by the ratio of 1:1 and the most common age was 1-2 weeks. 2. The most common admission period was within 1 week. 3. The most common diagnosis during admission period was jaundice, premature. 4. The most frequent contents were physical symptoms and vital sign, a jaundice and diarrhea among physical symptoms, fever and respiratory difficulty among vital sign. 5. Nursing intervention through telephone was identified with order to confirmation, direction, education, inducement. 6. The most frequent nursing intervention by telephone was good condition in confirmation, diarrhea in direction, feeding amount in education, follow up care in inducement. These results suggest that telephone call intervention program should be established as afield of extended pediatric nursing role in health care delivery system for the newborn.

      • 만성 간질환에 대한 DDB(Biphenyl Dimethyl Dicaboxylate)의 임상적 효과

        To investigate the effects of short-term administration of DDB(Biphenyl Dimethyl Dicarboxylate) for decreasing elevated serum aminotransferase levels in chronic liver diseases, authors applied 3 capsules of DDB per day at each meal time for 35 patients and compared with 35 patients treated with other conservative management. The following results were obtained. 1. Serum alanine aminotransferase (ALT) levels significantly decreased from 247.1± 180.0 IU/L of pretreatment level to 96.6±126.0 IU/L, 61.1±62.7 IU/L and 38.0±26.8 IU/L after 1, 3 and 6 months of treatment(p<0.05) and effective rates were observed in 60.0%, 71.4% and 88.6% of patients after 1, 3 and 6 months of treatment. 2. Serum aspartate aminotransferase (AST) levels decreased also significantly from 167.8±96.9 IU/L of pretreatment levels to 124.4±155.0 IU/L, 77.9±49.6 IU/L, 60.6± 46.9 IU/L after 1, 3 and 6 months of treatment(p<0.05), but decreasing pattern of serum AST was less significant than that of serum ALT. 3. No significant difference were observed in the serum ALT and AST changes according to the cause and duration of hepatitis. 4. No significant adverse effects were observed in whole patients treated with DDB. It is suggested that small dose administration of DDB is effective for decreasing serum aminotrans ferase levels in chronic liver disease in which other conservative management was not effective.

      • B형 만성 활동성 간염 환자에서 Prednisolone 단기이탈 및 Alpha Interferon 병합요법의 효과

        To evaluate the safety and efficacy of Pd withdrawal followed by recombinant alpha- Interferon 2b therapy. Nine patients were given a single daily subcutaneous injection of ^α-Interferon at a dose of 3 x 10 exp(6) units/day for first weeks and thrice weekly for next 15 weeks (maintenance) after pd tappered over 6 weeks. To evaluate the efficacy of therapy, we measured serum aminotransferase activities monthly during and after therapy, and also measured serm HBsAg, HBeAg and DNA probe before and after therapy. To evaluate the safety of therapy, all patients checked peripheral blood WBC, Hemoglobin, Platelet, BUN and Creatinine. The results were as follows : 1. In control group, the normalization of s-AST & ALT level, negative seroconversion of DNA probe & HBeAg were observed in 1/12(8%) & 7/10(17%), 0/10(0%) & 0/12(0%) at 6 months later, and maintained response in 1/11(9%) & 1/11(9%), 2/9(22%) & 2/11(18%) until 1 years later. 2. In treatment group, Serum AST and ALT returned to normal in 8/9 & 8/9 cases (89%) after 1 montns Tx. (mean serum AST : 33±8, ALT : 34±12 IU/ml) and maintained to normal response in 5/9(56%) & 6/9 cases(67%)after 6 months Tx. (mean s-AST : 55±43, ALT : 66±84 IU/ml), 3/9(33%) & 4/9 cases(44%) after 1 years Tx. It was statistically significant reponse except s-AST of after 1 years Tx. 3. In treatment group, s- HBeAg returned to normal in 3/9 cases(33%) after 1 months Tx., and maintained to normal response in 1/7 & 1/4 cases among follow up patients in after 6 & 12 months Tx. Serm DNA probe level were observed significantly negative seroconversion in 8/9 cases(89%) after 1 months Tx. (p<0.003), and maintained to negative response in 2/6 & 1/3 cases after 6 & 12 months Tx. 4. Serum AST, ALT, HBeAg and DNA probe were not significantly correlated with therapeutic response in relation to histologic diagnosis. 5. Fever and myalgia were noted in 9(100%) & 6(67%) cases. Headache, mild hair loss, anorexia, nausea, facial flushing & diarrhea were noted in few cases. Peripheral WBC(3cases) & platelet counts(3cases) were decreased transiently. This study shows that Pd withdrawal followed by recombinant alpha Interferon 2b therapy may be safe and effective in decrease the level of s-DNA probe, transaminase activity, loss of HBeAg and less adverse effect of clinical and hematologic examinations in patients with CAH type B. But it was necessary for study with large number of patients, more prolonged follow up duration and more strict control study.

        The purpose of this study was investigated historical background, kind, character and nutritional value of Jeot-Kal(fermented fish product). The result were as folows:(1) Edible history of Jeot-Kal was dated from acient times. (2) 30 kinds of Jeot-Kal found according to types and part of fish used. (3) Jeot-Kal is considered as a excellent food which is rich in protein, vitamin, inorganic substance, nucleic acid etc. caused by resolution of raw material substances in nutrition.

      • 안성읍의 식생활관리 실태에 관한 연구

        How scientifically and reasonably the meal management is done has a great influence upon domestic economy, I think. The purpose of this paper is to examine the problems of meal management. In order to investigate t도 actual conditions of food intake, I chose ramdomly 418 families living in Ansung-Eup, Kyunggi Province and had direct interviews with housewives. The main results of this study are as follows: (1) 92.6% of 418 families was furnished with New-fashioned kitchens, and 1.2% of them were without waterworks and drainage. (2) The ratio of the housewives who made a food budget was 71.1%, while the ratio of those who did not was as high as 28.9% the reason for that was they were not accustomed to doing it. (3) The time required for cooking was on an average 40.8 minutes and 70.4minutes a day. (4) In the process of cooking, favorite foods were considered first and next, taste and nutrition. (5) The cooking frequency was hige in such groups as the old-aged, large-familied and that of housewives with jobs. (6) The ration of husband's assistance for kitchen work was as low as 2.1% to 45.2%, while the ratio without husband's assistance was as hige as 39.1% (7) The examination showed that 25.4% of housewives would like to have more convenient appliances to simplify cooking.

      • 안성군 농촌지역의 취학전 어린이 영양에 관한 연구 : 제2보 : 이유실태조사 Dietary survey of weaning practices

        The purpose of this study was find out weaning practices for pre-school children in Ansung. This survey was performed by interview and questionnaire with 261 mothers, May.22 to June.19 of 1995. Following's are the conclusions of this survey: 1) The condition and health and sleep of infants were rather satisfactory. 2) only 52,5% of the subjects included began to be fed supplementary food before the age of 6 months. 3) As for methods of stopping breast feeding, 54.1% of the subjects were naturally terminated while 27.2% were forced to terminate by the application of sticking plaster of midicins to the mother's nipples 4) The reason that prevent them from weaning weaning was 48.3% of the dislikeness of their infants, 18.0% of the abonunance of breast milk, 15.0% of the having no time for it. 5) The motives for weaning were various such as; 77.6% of the breast milk no longer covers all nutriontal demand of the baby. 12.6% of the pregnancy during lactation. 5.8% of the insuffient secretion of breast milk to feed infants. 6) foodstuffs used in weaning is fruit juice (72.2%), beef(65.9%), egg(62.3%), rice gruel(61.1%), fish(59.8%), potato etc. 7) Most of the infants like fruit and fruit juice (22.2%), milk(18.6%), egg(16.4%), bread(14.6%), fish(12.3%), beef(10.5%), potato(5.6%) etc. 8) Most of the infants dislike hot taste (59.3%), carrot and vegetable, bean(23.7%) etc. If we review this survey, we could see that the mothers have little nutrition knowledgel of infants, nevertheles they were highly educated in this survey. The need of nutrition education is emphasized once more, because the difference is notable in the untrition management of infants according to their mother's education rank. Tht purchase in low price is needed urgently by mass production of adequate weaning foods.

        김장김치류의 담금방법에 관한 조사 연구

        서울, 충청도 및 강원도 지역의 김장김치 담금방법을 알고자 203개 가정에서 설문조사를 한 결과 3지역에서 김장김치류중 배추김치는 95%이상 남았는데 배추선택시 결구도를 가장 중요시 하였다. 배추는 천일염을 주로 사용하여(66∼78%)소금물에 적신 후 다시 소금을 뿌려 약 7∼10시간 동안 절였다. 김치숙성시 서울과 충청도는 배추상태가, 강원도는 양념이 가장 큰 영향을 미치는 것으로 인식되었으며 김치보관은 70%이상이 김치 항아리를 이용하였는데 김치보관용기와 주거형태(단독 및 아파트)간에는 x^2=49.87(P<0.000)로 유의적인 관계가 있는 것으로 밝혀졌다. A survey study was carried out on the preparation methods of the Winter Kimchies in Seoul, Chung Cheong and Kang Won area by questioning 203 homes individually. The reaults showed that the cabbage Kimchi was prepared more than 95% of total Kimchi a good heads of the Chinese cabbage were selected as proper quality of the cabbage. The cabbage were brined for 7∼10 hours with using sun dried salts mostly(66∼78%). In Seoul and Chung Cheong area the quality of Chinese cabbage was regarded as the primary factor and the seasoning materials in Kang Won area for good quality of Kimchi, more than 70% of the residents prepared Kimchi in Kimchi jar, and the correlation between the jar use kind of resident such as house or apartment was significantly high(p<0.000).
