        고속원심분쇄기로 제조한 자색 통밀가루의 제면 적성

        Purpose: This study investigated the quality characteristics and the noodle-making performance of whole wheat flour milled with purpled-colored wheat ‘Ariheuk’. Methods: Purple-colored whole wheat flour samples were obtained using an ultra-centrifugal mill using two sieve sizes (0.5 and 1.0 mm) and two rotor speeds (6000 and 14000 rpm). A commercial purple-colored whole wheat flour was used as a control. Various quality parameters, including solvent retention capacity (SRC), pasting properties, SDS-sedimentation volume, and dough mixing patterns, were analyzed. In addition, the noodle-making performance of whole wheat flour was evaluated. Results: Flour milled with the ultra-centrifugal mill had larger particle sizes than the control. Furthermore, milling conditions significantly impacted quality characteristics, such as damaged starch content, SRC, SDS-sedimentation volume, and dough properties. The ultra-centrifugal milled flour outperformed the control for noodle-making, as evidenced by cooking water turbidity and noodle texture, which highlighted the influences of particle size and damaged starch. Conclusion: Ultra-centrifugal milling effectively produced high-quality whole wheat noodles from ‘Ariheuk’. Careful control of particle size and damaged starch content through milling conditions is essential for superior noodle quality.

        G20 관련 뉴스에 투영된 한국 민족주의 프레임 연구

        To explore the media presentations about nationalism, this study investigated news stories regarding ‘G 20 Seoul Summit 2010’ featured in five major Korean newspapers. The results of quantitative content analysis showed that Korean newspapers altogether heavily reported the nationalism with ‘developmental frame’ and ‘open-nationalism frame’ compared to ‘resistant frame’ and ‘cosmopolitanism frame’. The ‘developmental frame’ represents the efforts to resurrect the national wealth with the economic growth, ‘open-nationalism frame’ focuses on the mature citizenship rooted in Korea’s national identity, ‘resistant frame’ stands for the closed nationalism based on identical ethnic and cultural background and ‘cosmopolitanism frame’ for the open-door and world-citizenship aspects beyond national territories. At the same time, Chosun, Joongang, and Dong-A, the so-called conservative newspapers, collectively and actively maintained positive angle in reporting nationalism in general, which represents re-imagined communities based on brotherhood and sense of solidarity, while the progressive newspapers, Kyunghyang and Hankyoreh, were divided in that the former showed lukewarm positive but the latter negative angles to the nationalism.

        인스턴트 메신저 대화 상황에서 이모티콘 단서에 따른 학령기 아동의 간접화행 이해 능력

        Objectives: This study aims to examine if there is a difference in indirect speech comprehension ability based on grade level and to identify which type of emoticon is most helpful in the students’ understanding of indirect speech. Methods: A total of 60 students were gathered, consisting of 20 children each from the second, fourth, and sixth grades of elementary school, who lived in Seoul and Gyeongi-do. The indirect speech comprehension task divided the emoticons into four types: facial expression clue, motion clue, object clue, and no clue. The experiment was conducted using a slideshow, where students read sentences and answered clues. They were then required to select the meaning of the underlined part in the last sentence of the article among three answer choices: the correct answer, example of surface meaning answer, and example with weak connection answer. The task consisted of a total of 32 questions, with 8 questions for each emoticon type and an additional 16 questions involving direct conversations as filler questions. Results: A statistically significant difference was observed in indirect speech comprehension scores between second and fourth graders, as well as between second and sixth graders. Statistical significance was found in the indirect speech comprehension task with regard to grade level and emoticon types. In addition, the effect of interaction between grade level and emoticon type was statistically significant. There was a decreasing trend in the overall frequency of error types as grade level increased. Conclusion: This study revealed that, as the grade level increases, individuals develop the ability to comprehend indirect speech accurately, even when the meaning is not explicit on the surface, by understanding the social context and utilizing their knowledge of the world. For future research, it is essential to examine the tendencies of children with disabilities or conversational language difficulties compared to non-disabled children.

      • 청소년 사이버불링 실태 및 대응방안 연구

        최근 들어 사이버불링에 대한 관심이 높아지고 관련 연구나 조사가 활발해지고 있지만 아직까지 사이버불링의 원인이나 영향에 대한 연구는 외국에 비해 턱없이 부족한 실정이다. 이에 본 연구는 사이버불링의 위험으로부터 청소년을 보호할 수 있는 정책적 방안을 마련하고자 4,000명의 청소년을 대상으로 설문조사를 실시하였고 청소년 8명을 심층인터뷰 하였다. 먼저, 설문조사결과 사이버불링피해와 가해경험을 동시에 가진 청소년들의 비율이 높게 나타났다. 즉 청소년들의 14.6%가 사이버불링피해만 경험한 것으로 나타났고 가해경험만 있는 청소년은 전체의 6.3%였다. 반면 사이버불링피해 및 가해경험을 동시에 가지고 있는 집단은 전체의 13.1%에 달했다. 또한, 학교폭력은 사이버불링과 매우 밀접한 관련을 지니고 있었다. 즉 오프라인공간에서 일어난 학교폭력이 사이버공간의 폭력으로 이어지고 있다는 것이다. 사이버불링피해 및 가해유형으로는 게임을 통한 사이버불링, 카카오톡 상에서 친구신청을 거부하거나 친구 초대시 배제하는 경우, 채팅이나 소셜네트워크 서비스를 통한 사이버불링이 높은 빈도를 나타냈다. 또한 응답자들은 사이버불링피해를 당했을 경우 경찰이나 부모에게 이러한 사실을 알리는 경우는 극히 드물었다. 사이버불링을 목격했을 때도 절반 약간 넘는 청소년들이 그냥 상황을 지켜봤다고 응답했다. 사이버불링피해경험에 영향을 미치는 변인들을 살펴본 결과 사이버불링가해경험이 가장 큰 영향을 미쳤고 학교생활 만족도는 부적인 영향을, 사이버자신감은 정적인 영향을 미친 것으로 분석됐다. 사이버불링 가해경험에 영향을 준 변인들은 사이버윤리의식과 인지적 공감으로 나타났다. 즉 사이버윤리의식이 높고 인지적 공감능력이 높은 청소년이 사이버불링에 덜 가담한 것으로 나타난 것이다. 이 같은 발견은 학교생활만족도를 높이고 사이버윤리의식수준을 높이며 인지적 공감능력을 키울수록 사이버불링이 발생할 가능성이 적어진다는 것을 제시해 주고 있다. 질적 연구결과에서는 재미나 장난삼아 이뤄지는 사이버불링이 피해자들에게는 큰 상처를 주고 있다는 것이 밝혀졌다. 인터뷰참가자들은 사이버불링의 해결방안으로 같이 어울리고 서로를 이해할 수 있는 기회를 많이 만들 것을 주장했다. Recently there have been many studies related to cyberbullying but there are few studies dealing with the cause and effect of cyberbullying compared with foreign countries. Therefore this study conducted survey of 4,000 young people and interviewed 8 young people to prepare for measures to protect youths from the danger of cyberbullying. As a result, the percentage of those who had cyberbullying and cyberbullied experience was high. That is, 14.6% had only cyberbullied experience while 6.3% had only cyberbullying experience. Surprisingly 13.1% had both experience. In addition, school violence was strongly related to cyberbullying. That is, school violence which occurred offline world was connected to cyberbulling online. The main cyberbullying types were cyberbullying through game, rejection of making friend or excluding someone from chatting room on Kakaotalk, and cyberbullying by chatting or social network service. Few people announced police or parent when they were cyberbullied. Half of respondents did not take any action when they observed cyberbullying situation. Cyberbullying experience had a big influence on cyberbullied experience while satisfaction with school had negative effect and cyberconfidence had positive effect. Cyberethics and cognitive emphathy affected cyberbullying experience. That is, students who had a higher cyberethic and cognitive emphathy tended to engage in cyberbullying less. This result suggests that cyberbullying can be lessened by enhancing satisfaction with school life, cyberethics and cognitive symphathy. Qualitative study showed that cyberbullying which was made by joke had a serious effect on victims. Intreviewees suggested making many opportunities to play together and understand each other as a measure to prevent cyberbullying.

        알러지 저감 오프리 밀가루의 머핀 제조 적합성

        Purpose: This study explored the suitability of low-allergy wheat “O-free” flour (OF) for making muffins compared with commercial soft wheat f lour (SWF) as a control. Methods: Flour quality characteristics were analyzed by moisture and protein content, solvent retention capacity (SRC), sodium dodecyl sulfate (SDS) sedimentation volume, and pasting properties. The muffin-making performance of the flour was evaluated by moisture content, weight, height, volume, porosity, and color of the muffin. Furthermore, moisture content and firmness of muffins were measured during storage at 4℃ for 7 days. Results: The analysis revealed that OF exhibited higher protein content, SRC, and SDS sedimentation volume compared to SWF. Although pasting viscosity values of SWF were lower than those of OF, their RVA curves were similar in pattern. Interestingly, muffins formulated with "O-free" flour (MOF) demonstrated a significantly larger volume and appeared to have more pores in their cross-section compared to those made with soft wheat flour (MSWF). During storage, the moisture content in both types of muffins exhibited minor changes, showing no significant difference between MSWF (19.5% to 18.0%) and MOF (18.9% to 17.0%). However, MOF displayed lower firmness and a reduced tendency for retrogradation compared to MSWF, indicating its superior quality in terms of muffin texture. Conclusion: Based on the overall findings, "O-free" flour proves to be well-suited for making muffins and can successfully produce excellent-quality muffins with reduced allergens.

        읽기 위험 및 부진 아동의 읽기이해 관련 국내 연구 동향: 언어능력을 중심으로

        Purpose: This study aimed to analyze research trends in reading comprehension, focusing on the language ability of children at risk for reading and with poor reading, to find directions for future research. Method: A total of 68 studies were selected and analyzed according to the year of presentation, study participants, selection criteria for participants, research methods, and dependent variables. Result: Research has continued actively, starting with one paper published in 2005. Participants were primarily from 4th, 5th, 3rd, and 6th grades, in that order; in terms of grade groups, the most commonly researched was the 3-4th grade (middle grade), 4-6th grade (upper grade), and 3-6th grade, in that order. When the participants were classified into 13 types according to the diagnostic name used by the researchers, the frequency of using the diagnostic name was high in the order of poor reading comprehension, poor reading, reading disorder, and low reading achievement. Most criteria for selecting research participants were based on a combination of two or more tests, including intelligence and reading ability tests. Most research used offline methods, and research using online methods were not highly proportional. Regarding the dependent variable, research on inference was the most common, followed by research on reading comprehension, vocabulary, and syntax. Conclusion: Based on the results of this analysis, we propose directions for future research on reading comprehension, focusing on the language abilities of children with reading difficulties.
