        1600년대-1940년대 조리서에 등장한 화채류의 종류 및 조리법 특성

        Purpose: This study aimed to characterize the recipes of Hwachae in Korean cookbooks published from the 1600's to 1940's. Methods: We conducted a content analysis of thirteen old cookbooks (Eumsikdimibang, Jubangmun, Jeungbosallimgyeongje, Kyugonyoram, Imwonsibyukji, Gyuhapchongseo, Sieuijeonseo, Buinpilji, Chosunyorijebub, Chosunmusangsinsikyorijebub, Ganpyeonchosunyorijebub, Chosunyori, Chosunyoribub). We collected a total of 99 recipes of Hwachae and analyzed the ingredients used and characteristics of the recipes according to five groups of Hwachae: noodle type Hwachae, dumpling type Hwachae, fruit Hwachae, flower Hwachae, and the others. Results: The noodle type Hwachae included Changmeyon, Smyeon, Nanmyeon, and Waemyeon. Mung bean (81.0%) and Schisandra (95.2%) were mostly employed as solid ingredient and as beverage base, respectively. In the noodle type Hwachae, Wonsobyeong and Sudan belonged to the dumpling type Hwachae, in which mung bean (51.7%) was mostly used as solid ingredient and just water without any additive was used as the most popular beverage base (62.1%) unlike in other types of Hwachae. There were various types of fruit Hwachae, which used different fruits as solid ingredient such as pear, peach, cherry, strawberry, etc. Pears (44.4%) have been employed as the most popular ingredient and sweets such as honey and sugar have been used in all the fruit Hwachae. The flower Hwachae included Hwamyeon, Sunchaehwachae, Jangmihwachae, and Bomhwachae. In all the flower Hwachae, schizandra has been used as a beverage base. Conclusion: These findings provide basic information required for developing standard recipes of traditional Hwachae.

        관리자의 담당의지에 따른 포천시 교육·보육기관 텃밭의 운영실태 및 인식

        School gardens are known to be effective for increasing vegetable consumption in children. This study was carried out to examine the perception of garden program leaders for actual conditions and barriers to promote school gardens according to their sense of dedication. The 49 garden program leaders at schools and child care centers in Pocheon city were surveyed and grouped into two groups: dedicated (57.1%) and less dedicated (42.9%) as program leaders. Compared to dedicated leaders, leaders in the less dedicated group less advocated promotion of school gardens (P<0.001) and were less willing to attend training for school garden (P<0.01), despite less experience as program leaders (P<0.01) and past training (P<0.05). Moreover, leaders in the less dedicated group less acknowledged the educational results of school garden in every aspect (P<0.001, respectively), less perceived support from parents and colleagues (P<0.05, respectively), and less used garden produce in more active activities such as donation and literature (P<0.05, respectively), compared to the dedicated group. The most answered barrier against the promotion of school gardens was work burden, followed by manpower shortage, shortage of technique, knowledge, and information, and time shortage. The results of this study provide evidence that developing strategies is needed to make more teachers and child care providers more dedicated as garden program leaders.

        일부 농촌 지역에서 회합 급식을 하는 여자 노인의 우울 정도, 신체계측 및 영양섭취실태 조사

        This study was carried out to determine the depression symptoms and nutritional status of elderly females that ate congregate meals at lunch in rural Pocheon. The subjects were 18 elderly females aged over 65 ($75.7{\pm}4.6$ years) and information on smoking, subjective health status, depression symptoms and malnutrition risk were collected using a questionnaire administered with the help of trained research assistants. Measurements included mid-arm circumference and calf circumference. Food consumption for 3 days during breakfast and supper were determined by 24-hour recall and food consumption at lunch was determined as the difference between the amounts served and the plate waste. All data were compared between two age groups (${\leq}75$ and > 75). The subjects had the lowest nutrient adequacy ratio (NAR) for vitamin $B_6$ (0.523), followed by calcium and niacin and the lowest index of nutrient quality (INQ) for calcium (0.738). The older elderly had significantly lower NAR for vitamin $B_1$, vitamin $B_2$, vitamin $B_6$ and niacin as well as significantly lower mean adequacy ratio (MAR) compared to the young elderly. They also had significantly lower INQ for vitamin $B_1$ and vitamin C and significantly thinner arm circumference (28.3 cm vs. 31.3 cm). They consumed more than 40% of their daily intake for each nutrient at lunch. Higher proportions of nutrient intake from lunch provided evidence of the importance of congregate meals, suggesting that the government and society should support congregate meals to improve nutritional status.

        초등학생의 식품알레르기 교육 프로그램의 효과 평가

        This study aimed to evaluate the educational effects of an education program about food allergies in elementary school children. We conducted an education program consisting of eight classes for a total of 4,744 students at 100 elementary schools in Seoul and investigated changes in knowledge and awareness about food allergies in participants using a questionnaire. A total of 576 students (12.1%) reported that they have taken medical treatment because of a food allergy. After education, the knowledge score of participants significantly increased from 2.7 to 3.3 out of 5.0 (p<0.001). The ratio of having a friend with a food allergy decreased from 24.7% to 19.8% (p<0.001). The participants responding as having helped a friend with a food allergy significantly increased from 15.5% to 17.7% (p=0.003). Before education, 16.8% of respondents answered that they felt pity for friends with food allergies, whereas this percentage significantly decreased after education (p=0.034). Among 576 students with food allergies, 21.5% reported that they felt depressed due to their food allergies before education. However, the percentage significantly decreased after education (p<0.001). These results suggest that the education program about food allergies for elementary school students needs to be extended more widely to children.

        서울지역 일부 여고생의 다이어트 경험에 따른 체중조절 행동, 섭식장애 위험도 및 우울정도의 비교

        This study was conducted in order to compare weight control behaviors, eating disorder risk, and depression in female adolescents according to dieting experience during the last year. The subjects were 707 students attending a girls’ high school in Seoul, and all the information was collected by self-administered questionnaire. Eating disorder risk and depression were determined by using EAT-26 (Eating Attitude Test-26) and PHQ-9 (Patient Health Questionnaire-9), respectively. Data were compared between subjects with experience of dieting (320) and those without (387). More of the subjects with dieting experience were unsatisfied with their own body weights (76.9% vs. 44.2%, P<0.01) and weighed themselves frequently (P<0.01) compared to those without diet experience. EAT-26 (11.63±8.3 vs. 5.99±4.7, P<0.01) and PHQ-9 scores (7.05±4.6 vs. 6.00±4.4, P<0.01) were higher in subjects with dieting experience compared to their counterparts. Therefore, we concluded that dieting is associated with several undesirable psychological aspects such as eating disorder risk and depression in adolescent girls, and thus providing proper education is urgently needed to emphasizing importance of healthy weight and the danger of unnecessary dieting.

        자외선에 의해 자외선 차단 효율이 상승하는 선크림 제형 개발

        자외선에 의해 자외선 차단 효율이 상승하는 선크림에 대한 연구를 수행하였다. Ethylhexyl methoxycinnamate (OMC)는 가장 널리 쓰이는 자외선 차단제이고, OMC에 대한 광안정성 연구는 오랫동안 수행되어왔다. OMC는 자외선에 의해 trans구조가 cis구조로 변하거나, dimer를 비롯한 광반응물을 생성하여 자외선 차단효율이 떨어진다고 알려져 왔다. 하지만 본 연구에서는 OMC나 isoamyl p-methoxycinnamate (IMC)와 같이 메톡시신나메이트 구조를 공유하는 자외선 차단제들이 실제 사용조건과 유사한 조건에서 자외선에 노출 시키고 잘 설계된 실험 방법으로 in vitro SPF 수치를 측정하였을 때 오히려 자외선 차단 효율이 증가하는 것을 발견하였다. 이것은 자외선에 의해서 생성된 광반응물과 OMC간의 π-π stacking을 통한 π-π* 전이 에너지 변화(UV activated transition) 때문인 것으로 생각된다. 이 발견을 선크림 개발에 적용하기 위해서는 함께 사용되는 에몰리언트의 극성 및 상용성을 적절히 고려해야 한다. 상용성이 좋은 극성 에몰리언트를 포함하면 자외선에 의해 OMC가 광반응물을 생성하지 않기 때문에 발견의 효과가 감소하는 것으로 보인다. 이러한 작용 기전(UV activated SPF boosting)을 바탕으로 상업용 수준의 선크림을 제조하여 평가해보았다. 그 결과 자외선(2 MED)에 노출되었을 때 in vitro SPF 수치는 50.69에서 72.33으로 42.69%로 증가하였고 in vivo SPF 평가에서는 53.7을 얻어 같은 조건의 대조군의 선크림(SPF 34.4 이하) 대비 56.10% 이상 높게 측정되었다. 따라서 OMC와 IMC가 특정 조건에서 UV sensor처럼 작용하여, 자외선에 노출 되었을 때 자외선 차단 효율을 높일 수 있는 선크림을 제조할 수 있었다. This study is investigated sunscreen formulation that enhances UV absorption efficiency by UV light. Ethylhexyl methoxycinnamate (OMC) is one of the most common UV filters. Many studies have been conducted about photostability of OMC. It is well known that under the UV exposure, trans-OMC could turn to cis-OMC, or produce various photoproducts including its dimers. Those chemical structure changes were understood as the reason of a decrease in UV absorption efficiency upon UV exposure. However, it was found that OMC and isoamyl p-methoxycinnamate (IMC) could even enhance its UV absorption efficiency when it was exposed to UV light in an environment similar to actual use. In order to develop sunscreen formulation that enhances UV absorption efficiency by UV light, emollient with high polarity and compatibility should be avoided from the formular. Those emollient seemed to prevent OMC or IMC from producing photoproducts under UV light. Finally, a sunscreen formulation (UV sensing SPF boosting formular) enhancing UV absorption efficiency by UV was developed by the UV activated SPF boosting technology, and the effect of the sunscreen was evaluated. in vitro SPF of the sunscreen was increased from 50.69 to 72.33 when it was exposed to UV light and its in vivo SPF (53.7) was 56.10% higher than that of the control sunscreen (below 34.4).

        경기도 지역 초등돌봄교실의 급 · 간식 운영 현황

        본 연구는 경기도 소재 초등돌봄교실의 돌봄전담사를 대상으로 집단면담조사 및 설문조사를 실시하여 도시와 농촌의 급 · 간식관리 현황을 비교 분석하였으며, 그 결과를 요약하면 다음과 같다. 첫째, 돌봄전담사 7명을 대상으로 한 집단면담조사 결과, 관련 지침이나 전문가의 도움 없이 돌봄전담사가 급 · 간식 운영을 전담하고 있었으며, 예산 부족으로 인한 질적 저하가 문제점으로 나타났다. 또한 초등돌봄교실의 급 · 간식을 공동관리할 수 있는 전문기관의 필요성이 도출되었다. 둘째, 돌봄전담사 101명을 대상으로 한 설문조사 결과, 학기 중 간식비는 평균 1,463원, 방학 중 급식비는 평균 4,062원이었으며, 학기 중 간식비 (p = 0.015)와 방학 중 급식비 (p = 0.039)는 농촌이 도시보다 유의적으로 적었다. 학기 중, 방학 중 급 · 간식 모두 완제품을 구매해서 제공하는 학교가 가장 많았으며 도시와 농촌 간 차이는 없었다. 셋째, 급식 영양관리기준이 있는 학교는 10% 미만에 불과하였다. 급식식단을 별도로 작성하고 있는 학교는 101개교 중 47개교였으며, 이 중 30개교 (63.8%)는 도시락공급업체로부터 식단을 제공받고 있었고, 17개 (19.3%)에서는 돌봄전담사가 식단을 작성하고 있었다. 간식식단을 작성하는 학교는 80개교로, 이 중 45개교 (44.6%)에서는 돌봄전담사가 식단을 작성하고 있었다. 농촌은 도시에 비해 돌봄전담사가 급식식단을 작성하는 비율이 높은 경향이 있었다 (p = 0.054). 넷째, 위생관리 기준이 있는 학교는 101개교 중 34개교(33.7%)에 불과하였으며, 31개교는 급 · 간식 제공 전 검식을 하지 않고 있었고 정기적인 건강검진을 하지 않는 돌봄전담사도 56.4%에 달했다. 급 · 간식 위생관리 현황은 지역에 따른 차이가 나타나지 않았다. 다섯째, 돌봄전담사가 응답한 적정 1회 간식비는 1,924원으로 실제 간식비보다 높아 적정 간식비에 대한 검토가 필요해 보였다. 바람직한 급 · 간식의 운영형태에 대한 의견에서는 초등돌봄교실 전문 급 · 간식지원센터 설치가 바람직하다는 응답이 48개교로 가장 많았다. 본 연구결과, 초등돌봄교실의 급 · 간식 운영에서는 지역구분과 관계없이 식단관리 및 위생관리 등에서 문제점이 나타났다. 초등돌봄교실에 참여하는 어린이들에게 위생적이며 영양이 풍부한 급 · 간식을 제공하기 위해서는 돌봄전담사가 식단작성 등 관련 업무를 담당하고 있는 현실을 고려하여 현장에서 효율적으로 활용할 수 있는 구체적인 급 · 간식 운영지침 마련이 시급하며, 돌봄전담사를 대상으로 한 영양 · 위생 교육 프로그램 개발이 필요하다. 또한 초등돌봄교실 급 · 간식 권장패턴 및 참고식단 개발이 필요하며, 정부 차원의 효율적인 제도 마련과 지원이 요구된다. 특히 농촌은 도시에 비해 급 · 간식의 단가가 낮고 돌봄전담사가 식단을 작성하는 경우가 많아 급 · 간식 단가의 상승을 우선적으로 고려할 필요가 있으며, 체계적인 급 · 간식 관리를 위한 제도 도입이 선행되어야 할 것이다. Purpose: This study aimed to investigate the current status of food service management in elementary care classes. Methods: A focus group interview with seven care class managers and a survey with 101 care class managers using a self-administered questionnaire in Gyeonggi province were conducted. Results: In the focus group interview, purchased meals and snacks were evaluated as low quality by the care class managers. Frequent use of frozen or processed food and products with low prices were also reported as problems. Care class managers were in charge of meal and snack planning without any guidelines or expert advices. The results of the survey show that most schools serve purchased snacks and meals. The average unit costs of one meal and snack were 4,062 and 1,463 Won, respectively. The average unit costs of snacks during semester (p = 0.015) and vacation (p = 0.039) were significantly lower in rural than urban areas. The percentages of schools that prepared nutrition standards for meal and snack planning in elementary care classes were only 7.4% and 10.9%, respectively. The meal menus were mostly provided by catering service companies, and the snack menus were planned mostly by the care class managers. Menu planning by the care class managers was more usual in rural than urban areas (p = 0.054 for meal planning and p = 0.008 for snack planning). Just 33.7% of schools introduced safety standards for food service in elementary care classes, and more than half of the respondents (56.4%) did not do a regular medical check-up. Only 33.7% of the respondents received education for food safety. Conclusion: These results show the necessity for establishment of detailed guidelines for food service in elementary care classes and for the introduction of a food safety and nutrition education program customized for care class managers.
