        경남 지역 세시음식의 시행 및 학교급식에서의 적용에 관한 연구

        This is the research on the observing annual customs, the annual custom foods and the application of the annual custom foods to the school foodservice. We sample 419 housewives live in Kyungnam area and 174 dieticians work at the primary and secondary schools. Annual customs the housewives and dieticians observe at high degree are Chuseok, Seolral, Jeongwoldaeboreum, Dongji, Chopail, Sambok etc. The housewives observe more Seolral, Chuseok and Dongji than the dieticians and the dieticians observe more Sambok than the housewives.(P<.001) When they provide school foodservice, the dieticians observe Dongji at the highest degree. In Kyungnam they eat most the gakjongnamul as annual custom foods on Chuseok and Seolral. They eat most ogokbap and mugeunnamul on Jeongwoldaeboreum, minarinamul on Chopail, and samgyetang on Sambok and patjuk on Dongji as the annual custom foods. Most of dieticians (94.3%) answer that it is good to provide annual custom foods as the school foodservice on annual customs. However, they indicate some practical problems to do such as inadequacy of the school cooking facilities, its not suiting students' tastes, etc. The rate of housewives' answers that we have to transmit annual customs is higher than that of dieticians.(P<.001) Seolral topped the list of annual customs both housewives and dieticians answer must be transmitted, followed by Chuseok, Jeongwoldaeboreum, Dongji. Dongji is followed by Chopail(P<.001) in the housewives' answers while Sambok(P<.001) in the dieticians' answers. Though most of the tespondents know the origins, dates and details of annual customs they think must be transmitted, they don't know well those of the other ones. By their mothers both housewives and dieticians have come to know about annual customs and mostly affected. Secondly housewives affected by their mothers-in-law while dieticians by their school education.(P<.001)

        구조화된 환자교육에 대한 연구논문 분석 : 고혈압 환자를 중심으로 forcused on the patients with hypertension

        This study was conducted to analyze the nursing research methodology and the key concepts used in articles related hypertension published in the RICH. The purpose of this study was for reflecting the trends of the research on the structured patient education focused the hypertensives. The results were as following. 1. There were 119 research studies related hypertension in RICH from 1994 to 2002. The number increased in 1997. Research studies of 98 have done since 1997 and it is 82% of the total research studies. 2. The most of the research studies are non-degree research studies. Research studies with fund have been rapidly increased in 2000 year. 3. The prevailing research design were the non-experimental design, quasi-experimental and pre-experimental designs in order. 4. The data collection method used most often physiologic measures(32.8%). 5. The domain of the key concepts that prevailed was health domain(51.8%), nursing domain(22.9%), and human being domain(20.5%) in order. And environmental domain (4.8%) were relatively low.

        지방 산조성이 다른 수종의 유지를 흰쥐에 급이하여 혈청 및 간장중의 지질농도에 미치는 영향을 실험하여 다음과 같은 결과를 얻었다. 1. 식이섭취량과 증체량은 각 군간에 유의성이 없었다. 2. 혈청의 총 콜레스테롤 농도는 4군 (5% 라드+5% 말쥐치기름)은 높았다.HDL-콜레스테롤 농도는 각 국간에 큰 차이는 없으나 5군 (5% 라드+5% 말쥐치기름), 3군 (5% 라드+5% 콩기름)이 비교적 높았으며 총 콜레스테롤에 대한 HDL-콜레스테롤의 비율은 3군(5% 라드+5% 콩기름)이 가장 높았다. 3.간장의 총 콜레스테롤 농도는 각 군간에 큰 차이는 없으나 4군(5% 라드+5% 말쥐치기름)이 비교적 낮았으며 2군(5% 라드+5% 올리브기름)이 가장 높았다. 4. 혈청중의 중성지질 농도는 각 군간에 큰차이는 없으나 4군(5% 라드+5% 들깨기름), 5군(5% 라드+5% 말쥐치기름)이 약간 낮은 경향이었으며 인지질 농도는 3군 (5% 라드+5% 콩기름)이 비교적 낮았다. 5. 간장의 중성지질 농도는 대조군에 비하여 4군(5% 라드+5% 들깨기름), 5군 (5% 라드+5% 말쥐치기름), 2군(5% 라드+5% 올리브기름)이 비교적 낮았으며 3군(5% 라드+5% 콩기름)이 가장 높았다. 인지질 농도는 각 군간에 큰차이는 없으나 3군(5% 라드+5% 올리브기름)이 비교적 높았다. 6. 혈청 및 간장의 과산화지질 농도는는 대조군에 비하여 4군(5% 라드+5% 들깨기름),5군(5% 라드+5% 말쥐치기름)이 현저히 높았다. In order to investigate the aspect of nutritional physiology of various dietary fats and oils with different composition of fatty acids, it was experimented that the effect if dietary fats andoils on lipid concentration in serum and liver of rats. The results were as follows: 1. Body weight gain and amount of food intake were not significantly different among all groups. 2. Concentrations of total cholesterol in serum were significantly lower in group 4 (5% lard+ 5% perilla oil) and group 3 (5% lard + 5% soybean oil0 than control group(10% lard) 3. High density lipoprotein cholesterol concerntrations in serum were the highest in group 3 among all groups, the ratio of those to total cholesterol was significantly higher in group 3 and group 4 than control group. 4. Concentrations of total cholesterol in liver were remarkably lower in group 4 than any other groups. 5. Triglyceride concentrations in serum were significantly lower in group 4 and group 5 than other groups adn phosphospholipid concentrations were the lowest in griup 3 among all groups. 6. Concentrations of triglyceride and phospholipid in liver were the lowest in group 4 among all groups. 7. Concentrations of lipid peroxid in serum and liver were remarkably higher in group 4 and group 5( 5% lard +5% file fish oil) than control group.

      • 두경부에서 생긴 림프종에서 EBV와 HTLV-1의 검색

        Background and Objectives : Extranodal non-Hodgkin's lymphoma(NHL) of the head and neck(H&N) accounts for 10-20% of all cases of NHL. Despite their frequency, the cause of these lymphomas is still poorly understood. Recently, the role of viral origin in NHLs, including Epstein-Barr virus(EBV), as the main cause of sinonasal lymphomas of T/NK cell phenotype and HTLV-1 as a cause of acute T-cell lymphoma/leukemia has been well documented. We investigated the clinicopathologic findings, immunophenotypic profile, and status of EBV and HTLV-1 DNA of patients with H&N lymphoma. Materials and Methods : Twenty-seven patients with NHL of H&N region were studied. There were 15 males and 12 females with the median age of 50 years. All patients were reclassified according to the Working formulation(WF) and REAL classification. EBV genome DNA and HTLV-1 RNA were surveyed by PCR assay using formalin-fixed and paraffin-embedded tissue blocks. Results : The tonsil was the most commonly involved site(44.4%) followed by nasal cavity(18.5%), nasopharynx(18.5%) and orbit(7.4%). Immunophenotyping revealed 19 cases of B cell lineage, 7 cases of T cell lineage and one case of null cell type. Most of B-cell lymphomas were diffuse large cell lymphomas(58%). Tonsillar lymphomas were all B-cell origin. Four of the five nasal cavity lymphomas and one nasopharyngeal lymphoma showed an angiocentric T/NK cell phenotype with strong association with EBV. EBV genome was detected in 15 of 26 H&N NHLs(57.7%). Seven of 19 B-cell lymphomas(36.8%) and all T/NK or null cell type lymphomas were positive for EBV DNA. However, there was no HTLV-1 positive cases found. Conclusions : It could be concluded that the high incidence of EBV of angiocentric T/NK-cell lymphomas of the nasal cavity may indicate a probable role of EBV in the development of these lymphomas.

        중학교 남녀학생별 가정교과에 대한 인식 및 학습효과 : 경남지역을 중심으로

        The aims of this research study is to clear the differences of the learning effects and the cognition of Home Economics by sex in the middle school and to collect the future-oriented educational datas, after implementing the 6th education curriculum. The results of the study are as follows ; 1. Most of students had the cognition that Home Economics is a subject matter of a needful knowledge and skill for the family life, half students a cultural subject matter for the modern life. The former was supported by female students, the latter by male students. 2. Most of students were interested in actual training fields of cooking and hand-sewing, had a strong interest about a field of physical and social-psychological growth. The differences by sex were statistically significant in these fields. 3. Most of students had positive responses in the learning effects of Home Economics. The most useful field was cooking and the worst was the structure and method of sewing machine. 4. The shortage and the dissatisfaction in the learning of Home Economics were lacking of the actual training hours, the old-fashioned teaching methods and the shortage of teaching materials etc.

      • 돈지, 들깨유 및 달맞이꽃 종자유의 혼합급이가 흰쥐의 간장, 뇌 및 고환의 지질 성분에 미치는 영향

        돈지 및 들깨유와 달맞이꽃 종자유등 2종 식물 종자유와의 혼합급이가 흰쥐의 체내 조직의 지질 성분에 미치는 영향을 구명하기 위해 S·D계 숫쥐에게 돈지 2.55및 들깨유와 달맞이꽃 종자유의 혼합비율을 달리하여 4주간 급이 사육한 후 간장,뇌 및 고환의 지질 성분을 분석 검토한 결과는 다음과 같다. 간장의 총콜레스테롤 함량은 D군이 대조군에 비해 유의적으로 낮았으며, 인지질 함량은 각 군간의 유의적인 차이가 없었고, 중성지질 함량은 B및 C군이 대조군에 비해 현저하게 낮았다. 콜레스테롤 급이군의 간장 총콜레스테롤 함량은 대조군에 비해 c,d및 e군이 유의적으로 낮았고, 인지질 및 중성지질의 함량은 b군이 낮게 나타났다. 뇌의 총콜레스테롤 함량은 대조군에 비해 B및 C군이 유의적으로 낮았으며, 인지질 및 중성지질의 함량은 대조군에 비해 전 군이 유의적으로 낮데 나타났다. 콜레스테롤 급이군에 있어 뇌의 총콜레스테롤 함량은 각 군간의 유의적인 차이가 없었고, 인지질 함량은 c군이 중성지질 함량은 e군이 대조군에 비해 낮게 나타났다. 고환의 총콜레스테롤 및 인지질 함량은 각 군간의 유의적인 차이가 없었으나, 중성지질 함량은 대조군에 비해 전 군이 유의적으로 낮았다. 콜레스테롤 급이군은 콜레스테롤 무급이군과 거의 유사한 경향을 나타내었다. In order to observe the effects of the feeds mixed with the lard and two vegetable seed oils, which mixed with 2.5% lard and various level of perilla oil and evening primrose oil were administered to the male rats of Sprague Dawley for 4 weeks on lipid components of liver, brain and testes. In livers , total cholesterol contents were remarkably lower in the D group(2.5% lard+2.5% perilla oil+5.0% evening primrose oil,free cholesterol) than in the control group , and phospholipid contents were not significant difference in each groups. Triglyceride contents were remarkably lower in the B(2.5% lard+7.5% perilla oil+5.0% ,free cholesterol) and C(2.5% lard+5.0% perilla oil+2.5% evening primrose oil,free cholesterol) group than in the control group. In the supplemented cholesterol groups, total cholesterol contents were significantly lower in c(C group+cholesterol diet), d(D group+cholesterol diet) and e(2.5% lard+7.5% evening primrose oil,free cholesterol) group, phhspholipid and triglyceride contents were lower in the b group(B group+cholesterol diet) than in the control groups than in the control group, phospholipid and triglyceride contents in brain were considerably lower in the other groups than in the control group. In the supplemented cholesterol groups, total cholesterol contents were not significant difference in each groups. Phospholipid and triglyceride contents were conspicuously lower in the c and e groups. respectively. In testes, total cholesterol and phospholipid contents were not significant difference in the groups, but triglyceride contents were lower in the all groups except for control group The contents of total cholesterlo, phospholipid and triglyceride were similar between the supplimented cholesterol groups and the nonsupplemented cholesterol groups.

        Nutritional Quality of Fermented Soy Foods in Thailand

        Soybean has been favored by many Thai people and it has been prepared by numerous different methods. Collected samples are as follows: Thua-nao paste from Chiangrai province, dried Thua-nao for Jatujak Market, Bangkok, 3 types of commercial soybean paste, soybean sauce and 2 types of fermented soybean curd cakes with other ingredients. Moisture contents of fresh and dried Thua-nao were 68.5 and $7.6\%$, respectively; therefore the shelf-life of dried Thua-nao can be extended to 1 year with proper packaging. The remainder of the soy foods had moisture contents of 55.4 to $64.4\%$. Fat contents of fresh and dried Thua-nao were 7.4 and $19.7\%$, respectively, whereas other samples contained less than $3\%$. Dried Thua-nao had the highest CHO (carbohydrates) content $(37.4\%);$ in contrast, soybean sauce contained only $4.5\%$. Calcium content was highest in dried Thua-nao followed by fresh Thua-nao; the other fermented soy foods had less than 44.7 mg/l00 g. Salt was added to samples other than Thua-nao resulting in high Na contents. Free and total daidzein contents of dried Thua-nao were 355 and 676 ug/g; similarly free and total genistein contents were 293 and $616.5\;\mug/g$, respectively.

        어유 및 식물 종자유의 급이가 흰쥐의 간장, 뇌조직의 지방산 조성에 미치는 영향

        S-D계 흰쥐에 중성지방 혈증 유발을 위하 12% 야자종실유와, 시험유지로서 올리브유, 돈지(豚脂), 어유, 들깨유, 옥수수유, 고추종자유 및 달맞이꽃종자유를 각각 3%씩 급여하여 4주간 사육한 후 간장 및 뇌지질의 지방산 조성을 분석 검토한 바, 간장 인지질의 지방산 조성은 SFA의 함량이 많고 MUFA는 적었으며, 중성지질에서는 MUFA의 함량이 SFA보다 약간 많은 편이었고 콜레스테롤 에스테르는 SFA 함량은 적고 MUFA는 월등히 많았다. 각 획분 모두 PUFA의 함량은 적었으며 PUFA중 C_(18:2)(n-6)의 함량이 가장 많았다. n-3계 PUFA는 어유 및 들깨유 급여군에 비교적 많은 반면 n-6계 PUFA는 옥수수유, 고추종자유 및 달맞이꽃종자유 급여군에 많았다. 뇌인지질의 지방산 조성에서 SFA의 함량은 적은 반면 PUFA의 함량이 현저히 많았으며, n-3계 PUFA로서는 C_(20:5)와 C_(22:6)이 n-6계 PUFA로서는 C_(18:2)가 주요 지방산을 이루고 있었다. This study was designed to observe the effects of the fish oil and some seed oils on the improvement of the fatty acid compositions of liver and brain tissue in rats. In order to induce the hypertriglyceridemia in the rats of the Sprague-Dawley, 12% coconut oil and 3% each of olive oil, lard, fish oil, perilla oil, corn oil, red pepper seed oil and evening primrose oil were administered to the rats for 4 weeks. In the fatty acid composition of liver lipid, n-3 PUFA contents were most in the fish oil and perilla oil groups of phospholipid fraction, and n-6 PUFA contents were most in the corn oil, red pepper seed oil and evening primrose oil groups of triglyceride fractions. Fatty acid composition of liver lipid fractions were influenced from the fatty acid composition of the test lipids. In the fatty acid composition of brain phospholipid, n-3 PUFA contents (8.8~17.2%) were most in the fish oil group, and n-6 PUFA (34.6~38.2%), though it contains high percentage, showed little difference between groups.

        어유 및 종자유의 급이가 흰쥐의 혈청 지질 성분에 미치는 영향

        n-3계 EPA 및 DHA를 함유하고 있는 어유 및 α-linoleic acid 함량이 많은 들깨유와 n-6계 linoleic acid의 함량이 많은 옥수수유 및 고추종자유, n-6계 inoleic acid 함량이 많고 r-linoleic acid를 약 10% 함유한 달맞이꽃종자유가 흰쥐의 혈청 지질 개선에 미치는 영향을 알아보기 위해 혈청 지질 성분을 분석한 결과, 총콜레스테롤 농도는 어유, 들깨유, 옥수수유 급여군이 대조군인 올리브유 급여군보다 낮은 반면 고추종자유, 달맞이꽃종자유 급여군에서 높았다. HDL-콜레스테롤 농도는 고추종자유, 달맞이꽃종자유 급여군에서 약간 높게 나타났다. 총콜레스테롤에 대한 HDL-콜레스테롤 농도비는 전 실험군에서 대조군보다 높았다. 유리콜레스테롤은 고추종자유 급여군을 제외한 전 실험군에서 대조군에 비하여 유의성있게 낮았으며 특히 어유, 들깨유 및 옥수수유 급여군에서 더욱 낮게 나타났다. 클레스테롤 에스테르 농도는 n-6계 다불포화지방산 함량이 많은 고추종자유, 달맞이꽃종자유 군에서 높았다. 총콜레스테롤에 대한 대한 콜레스테롤 에스테르 농도비는 대조군인 올리브유 급여군(62%)보다 전 실험군(70.0%~74.4%)에서 높게 나타났다. 인지질 농도는 어유 및 들깨유 급여군에서 낮았고, 중성지질 농도는 대조군에 비해 들깨유, 어유, 달맞이꽃종자유 군에서 현저히 낮았다. LCAT 활성은 대조군보다 豚脂 급여군에서 높은 반면, 다른 실험군에서는 낮게 나타났다. This study was designed to observe the effects of the fish oil and some seed oils on the improvement of the lipid composition in rats. In the ratio of HDL-cholesterol concentrations to total cholesterol concentrations, all groups were higher percentage than the control group. Cholesteryl ester concentrations of serum were high in n-6 PUFA rich red pepper seed oil and evening primrose oil group. In the ratio of cholesteryl ester concentrations to total cholesterol, all groups(70.0-74.4%)were higher than the control group(62%). Phospholipid concentrations of serum were low in the fish oil and perilla oil groups and triglyceride concentrations were remarkably lower in the fish oil and evening primrose oil groups than in the control group. LCAT activities of serum were higher in the lard group than in the control group, but lower in the other groups.
