Physicochemical Properties of Gelatin from Jellyfish Rhopilema hispidum

The objective of this study was to elucidate the physicochemical characteristics of gelatin extracted from jellyfish Rhopilema hispidum. We investigated the proximate composition, amino acids, gel strength, gelling/melting points, dynamic viscoelastic properties, and viscosity of jellyfish gelatin. Jellyfish gelatin contained 12.2% moisture, 1.5% lipid, 2.1% ash, and 84.8% protein. Glycine, hydroxyproline, proline, and alanine were the predominant amino acids. The gelatin showed a gel strength of 31.2 kPa, a gelling point of 18.0°C, and melting point of 22.3°C. The gelatin was composed of α1-chain, α2-chain, β-chain, and γ-chain. During cooling and heating process, jellyfish gelatin showed lower elastic modulus (G') and loss modulus (G'') values than mammalian gelatin. Jellyfish gelatin did not show superior rheological properties to mammalian gelatin, like other fish gelatin; however, it can be used in various food and cosmetic products not requiring high gel strength.

The thermal oxidative properties of oils under general frying conditions (150-200℃) have been extensively studied; however, there is no information on the thermal oxidation of ultra-high temperature short-time (UHTST) processed oils. Here, we investigated the thermal oxidative properties of corn oil in seasoned laver that was prepared using the UHTST conditions (300℃ for 10 s). The oxidation induction times of corn oil (CO), heated corn oil (HCO), and heated corn oil from seasoned laver (HCO-SL) were found to be 5.3, 3.3, and 4.1 h, respectively. The acid value (0.1) and peroxide value (2.2) in CO were increased to 0.2 and 2.5, respectively, in HCO and 0.2 and 5.5, respectively, in HCO-SL. The radical scavenging activities of CO, HCO, and HCO-SL were 72.4, 63.8, and 74.8%, respectively. Although both HCO and HCO-SL were treated using the UHTST conditions, HCO-SL was found to have a better induction time and antioxidant capacity than HCO.
동종 반월상 연골 이식술의 임상적 결과 - 내측과 외측 및 동반 손상의 유무에 따른 비교 -

목적: 동종 반월상 연골 이식술의 결과를 내측과 외측 및 동반손상 유무에 따라 비교하고자 하였다. 대상 및 방법: 1999년 12월부터 2007년 6월까지 동종 반월상 연골 이식술을 시행하고 1년이상 추시가 가능했던 52례를 대상으로 하였다. 내측 이식군은 19례, 외측 이식군은 33례였고, 단독 손상군은 18례 동반 손상군은 34례였다. 평균나이는 34.2세(18세~51세) 평균 추시기간은 42.2개월(12개월~90개월)이었다. 임상적 결과의 판정을 위하여 슬관절 운동범위, VAS 점수, IKDC 주관적 평가 점수, Lysholm 점수, Tegner 점수, 환자 만족도 및 이차 관절경 또는 추시 MRI를 시행하였다. 결과: 수술 후 평균 관절운동 범위는 130.3도 였다. VAS 점수는 수술 전 5.96점에서 3.05점으로, IKDC 주관적 평가 점수 46.5점에서 64.52점으로(p<0.001), Lysholm 점수는 61.94점에서 79.58점으로(p=0.0019) Tegner점수는 수술 전 2.97에서 3.62점으로 향상되었으며 수술의 만족도는 '매우만족', '대체로 만족'이라고 대답한경우가 61.5% 였다. 수술 후임상적 점수의 향상이 있었지만 내측과 외측 이식술 군간 그리고 단독 손상군과 동반 손상군 간의 통계적 유의한 차이는 없었다. 이차 관절경을 시행한 18례중 10례에서 이식된 동종 반월상 연골의 변연부의 치유 소견이 관찰되었고 6례에서 부분파열이 2례에서는 복합 파열이 관찰되었다. 추시 MRI 촬영이 가능하였던 16례에서 아탈구는 12례에서 관찰되었다. 결론: 반월상 연골 이식술 후 내측과 외측 이식군 간의 임상적 결과는 차이가 없었으며 동반된 연골 손상이나 불안정성에 대한 치료를 병행한 경우 동반손상의 유무는 결과에 영향을 미치지 않았다. Purpose: To compare the clinical outcomes after meniscus allograft transplantation between lateral and medial or isolated and combined procedure groups. Materials and Methods: Of the patients who had undergone arthroscopic meniscal allograft transplantation between Dec. 1997 and Jun. 2007, 52 patients were available for retrospective evaluation. Patients were grouped into lateral(33 cases) and medial(19 cases) transplant groups as well as those with isolated(18 cases) and combined(34 cases) procedure. The average age was 34.2 years and the mean follow-up period was 42.2 months. Postoperative range of motion (ROM), visual analog scale (VAS), International Knee Documentation Committee (IKDC) subjective score, Lysholm score, Tegner score, patient's subjective satisfaction, $2^{nd}$ look arthroscopy and MRI were evaluated retrospectively. Results: Mean postoperative ROM was $130.3^{\circ}$. The VAS showed an improvement from 5.96 to 3.05 at the last follow up. IKDC subjective score and Lysholm score also showed an improvement from 46.5 to 64.5 and from 61.9s to 79.58 respectively. Tegner score was improved from 2.9 to 3.6. Overall, 61.5% of patients reported they were completely or mostly satisfied with procedure. There were no significant differences noted between lateral and medial groups as well as isolated and combined groups. In 2nd look arthroscopy, 10 of 18 cases showed good pheripheal healing and there were 6 cases of partial and 2 of complex tear. We observed graft subluxation or extrusion in 12 of 16 cases who were evaluated with follow-up MRI. Conclusion: Meniscus allograft transplantation alone or in combination with other procedure showed an improvement in knee pain and clinical score. But there were no significant difference between lateral and medial groups or isolated and combined procedure groups.

Seasoned laver Pyropia spp. is one of the most well-known Korean traditional seafoods, and is becoming more popular worldwide. Various mixed oils are used in the preparation of seasoned laver; however, there is no information available regarding the effects of the blending ratio of oils on the quality of seasoned laver. In this study, the effects of the blending ratio of corn, sesame, and perilla oils on the oxidation and sensory quality of seasoned laver were monitored and optimized using a response surface methodology. An increase in the proportion of corn and sesame oils resulted in an excellent oxidation induction time, whereas a high ratio of perilla oil reduced the thermal oxidative stability of the mixed oil. In the sensory test, the seasoned laver with the highest proportion of sesame oil was preferred. The optimal blending ratio (v/v) of corn, sesame, and perilla oils for both oxidation induction time (Y1) and sensory score (Y2) was 92.3, 6.0, and 1.7%. Under optimal conditions, the experimental values of Y1 and Y2 were 4.41 ± 0.3 h and 5.58 ± 0.8 points, and were similar to the predicted values (4.34 h and 5.13 points). Our results for the monitoring and optimization of the blending ratio provide useful information for seasoned laver processing companies.
Physicochemical Profiles of Chub Mackerel Scomber japonicus Bones as a Food Resource

The present study was conducted to characterize physicochemical properties of chub mackerel bones (CMB) to evaluate its potential as a food resource. The proximate composition of CMB showed 40.4% moisture, 13.8% crude fat, 15.2% crude protein, and 28.7% ash. The major minerals in CMB were calcium (26.27 g/100 g) and phosphorus (15.88 g/100 g). The amino acids were rich in glycine, proline, glutamic acid, and alanine. The contents of total and neutral lipids, glycolipid and phospholipid were shown to be 16.05%, 95%, 2.32%, and 3.15%, respectively. The major fatty acids were C22:6, C16:0, C18:1, C20:5, C18:0, C17:0, C14:0, C20:1 in order. The fatty acid contents of total and neutral lipid were in a range of 39.25% and 44.54% for saturated and 33.61% and 34.05% for polyunsaturated, respectively. The breaking strength and hardness of intact CMB were 10.01 and 50.03 kgf/cm2, whereas those of CMB heated for 45 min at 121°C were 0.40 and 1.94 kgf/cm2, respectively.
Arousal Inhibitory Effect of Phlorotannins on Caffeine in Pentobarbital-Induced Mice

Sleep is vital to maintain health and well-being; however, insomnia is currently a widespread health complaint worldwide. In particular, caffeine, a psychoactive component of coffee, tea, and caffeine beverages may lead to sleep disorders such as insomnia. In this study, our primary objective was to investigate the inhibitory effect of high-purity phlorotannin preparation (HP-PRT) on caffeine-induced wakefulness. The sleep test of pentobarbital-induced mice was used as an in vivo animal model. Caffeine (50 and 100 mg/kg) showed significant arousal effects (an increase in sleep latency and a decrease in sleep duration). Co-administration of caffeine (50 mg/kg) and the sedative-hypnotic diazepam (DZP, 1 mg/kg) did not result in similar arousal activity. HP-PRT (500 mg/kg) also inhibited caffeine-induced wakefulness. Our results suggest that HP-PRT would be a useful additive for developing coffee products without the arousal effect.
