        飼料加工에 對한 衛生學的 硏究

        A study was carried out on the isolation of fungi flora from the corn feed in Korea, which were important not only in the Feed technical Science and Veterinary Science but also in animal and human health. It hoped that the information will be used for reference in future endeavors of study in the field of feed science and technology. The obtained are summerized as follows: 1. Ninety strains of fungi isolated were classified on a accordance with key(Barron’s generic key of Hypomycetes, Ainsworth’s classification of the fungi and Raper and Fennell’s Group or species key of Aspergillus): 10 strains (11.1%) were Phycomycetes, 60 strains(66.6%) were Ascomycetes and 20 strains (223.3%) were Fungi imperfecti(Deuteromycetes). The genus of fungi isolated from corn feed were Abisidia(1.1%), Rhizopus (10.0%), Aspergillus (51.1%), Penicillium (15.5%), Candidia (6.7%), Trichosporon (6.7%), Geotrichum (1.1%) Fusarium (6.7%) and Wallemia (1.1%). It was found that Aspergillus and Penicillium group were more dominant over other groups. 2. Forty-six strains of Aspergillius obtained were subdivided into 9 stains of A. flavus, which formed 19.6% of total isotateds 6 strains or 13.0% of A. terrus and A. chevalieri, 5 strains or 10.9% of A. fumigatus and A. cnadidus, 4 strains or 8.7% of A. niger, strains or 4.3% of A. flavus var. columnaris, A. oryzae and A. repens, and one strain or 2.2% of A. clavatus, A. versicolor, A. sydowi, A. janus and A. sulphureus, repectively. 3. The fungi isolates varied according to condition of corn feeds. a) In the case of contamination of fungi in imported corn was more than that in native corn. b) Tn the case of contamination of fungi in corn storage of Sac form was higer than that of Bulk form. c) In the case of isolated rate of fungi in corn by feed processing course of Simple system was more than that of Complex system.

        계육의 냉장중 품질변화에 관한 연구

        This experiment was carried out to investigate the physical and chemical changes of chicken leg muscle during cold storage. The chicken leg muscle was stored at 0 ± 1℃ for 6 weeks and analyzed every week. The results obtained are summarized as follows; 1. The drip loss was increased gradually from 1.62% at 0 week to 6.73% ac 6th week. pH of drip rose a little in the course of storage, ranging from 6.2 to 6.6. Protein content of drip was increased gradually from 1.75% at 0 week to 4.84% at 6th week. 2. pH of chicken leg muscle rose a little, ranging from 6.2 to 6.6. 3. W.H.C. was decreased gradually from 62.71% at 0 week to 49.54% at 6th week. 4. Total extractable protein was 42.27% at 0 week and was about 55-60% during cold storage. Actomyosin was extracted 20.76% at 0 week and was about 30% during cold storage. Sarcoplasmic protein was decreased continuously in the course of storage, ranging from 24.62% to 13.35%. 5. Peroxide value was 4.67 at 0 week, increased significantly to 39.71 after 2 weeks, and from 3th week decreased continuously to 11.43. Thiobarbituric acid value was increased gradually in the course of storage, ranging from 0.089 to 0.821. 6. Total bacterial count and coliformbacterial count were increased gradually in the course of storage.

        기계골발계육 ( 機械骨拔鷄肉 )을 이용한 Sausage 의 인산염 효과에 관한 연구

        This study was designed to utilize the waste by-products of chicken in food. The meat of neck parts of chicken were separated and prepared by means of Paoli deboning machine for this experiments. Mechanically deboned chicken meat were accordingly mixed in the course of sausage processing. The phosphate was added to this MDCM sausage according to the design of this experiment and its physical and chemical properties were examined, determined and compared. The results obtained were summarized as follows; 1. In chemical composition, the more MDCM in sausage, the more moisture, fats, ash and calcium were contented, but the less protein and carbohydrate in it. Ash and calcium were increased with addition of phosphate. The contents ranged from 62.78-64.36% moisture, 11.54-13.07% protein, 17.21-17.75% fat, 1.05-2.07% ash, 4,51-5.61% carbohydrate, and 10.07-327.66 ㎎% calcium. 2. pH ranged from 6.0-6.2 at 0 week. With addition of phosphate and MDCM, pH increased slightly and rose to the extent of 0.2-0.3 during cold storage. 3. Water holding capacity ranged from 81.39-92.74% and decreased with addition of MDCM. But it was somewhat compensated with addition of phosphate. 4. In texture, compression value and Warner-Bratzler shear force decreased with addition of MDCM, but somewhat increased with addition of phosphate. 5. In sensory test, the addition of MDCM effected adversely on panel test but those of phosphate was slightly well result. All experimental lots were determined as above medium except for T_(30) experimental lot. 6. Peroxide value and TBA number increased with addition of MDCM for storage period, but was reduced slightly with addition of phosphate. Peroxide value and TBA value ranged from 4.66-16.36 and 0.178-0.240 respectively, which means lipid oxidation was very slight. 7. In the content of VBN, there was not a correlation between addition of MDCM and phosphate, but a trend to increase with storage periods. VBN rangc,d from 7.25-11.23 ㎎% and there was no sign of denaturation. 8. In microbial quality, coliformbacteria was not detected and viable bacterial counts were slowly increased during cold storage but even the highest count, 4.8×10⁴ cells/g, was acceptable for the standard basis.

        소아 장중첩증의 새로운 임상적 분류의 제안

        목 적: 임상적, 방사선과적인 소견을 근거로 소아장중첩증의 새로운 분류를 제안하고자 하였다. 방 법: 2003년 3월부터 2005년 7월까지 장중첩증으로 진단된 88예를 대상으로 의무 기록 정보를 분석하였다. 분류를 위해 환자의 나이, 장중첩증의 위치, 증상의 유무, 치료 방법, 비후된 장간막 림프절의 유무, 초음파 소견 이상의 6가지 요소를 후향적으로 검토하였다. 결 과: 1) 장중첩증의 발병 연령에 따라 신생아형 1예(1.1%)와 소아형 87예(98.9%)로 나눌 수 있었다. 2) 소아형은 발생 위치에 따라 소장형 14예(16.1%)와 소장-대장형 73예(83.9%)로 분류되었다. 소장형은 증상이 있는 군 12예와 증상이 없는 군 2예로, 증상이 있는 군은 일과성 장중첩증 8예(66.7%), 수술군 3예(25.0%), 관장 정복 1예(8.3%)였으며, 무증상 군은 복부 컴퓨터 단층 촬영에서 우연히 관찰된 2예였다. 소장-대장형은 수술군 19예(26.0%)와 비수술군 54예(74.0%)로 분류되었다. 3) 일과성 소장형 장중첩증 8예를 수술을 받은 소장형 6예, 정복된 소장-대장형 54예, 수술을 받은 소장-대장형 19예와 비교 분석한 결과, 일과성 소장형 장중첩증의 연령은 $38.0{\pm}22.9$개월로 다른 형태에 비해 의미 있게 높았고(p=0.003), 혈변은 전체 8예 중 1예(12.5%)로 의미 있게 낮았으며(p=0.022), 기면은 모든 예에서 관찰되지 않았다. 단순 복부 엑스선 사진상 일과성 소장형 장중첩증에서 복부 종물(p=0.015)과 기계적 장폐쇄증(p=0.001)은 상대적으로 낮게 관찰되었으며, 초음파상에서 종물의 크기는 일과성 소장형에서 $20.8{\pm}2.7mm$로 의미 있게 작은 크기를 보였다(p=0.0001). 4) 비후된 장간막 림프절 유무와 치료 방법 및 동반 질환과의 관련성 연구에서는 의미 있는 차이를 보이지 않았다. 5) 초음파상 과녁 모양인 경우 11예 중 7예(63.6%)가 일과성 소장형 장중첩증이었고, 나머지는 모두 정복이 가능하였으며 4예 중 3예는 소장-대장형이었으나, 1예는 회장-회장-대장형이었다. 도넛 모양인 23예 중 저에코성 외곽 테두리의 두께가 8.9 mm 이상인 8예(34.8%) 모두에서 수술을 요하였고, 8.5 mm 미만인 15예(65.2%) 모두는 정복이 가능하였다. 결 론: 소아 장중첩증은 영상학적인 소견과 임상적 특성에 따라 새롭게 분류될 수 있으며, 각 유형에 따라 적절한 치료를 유도하는데 중요한 지침이 될 수 있을 것으로 판단된다. Purpose: We proposed a new classification of pediatric intussusception based on clinical and radiologic findings. Methods: Data from 88 consecutive patients with intussusception were reviewed. We retrospectively analyzed six factors; patient age, sites of intussusception, symptoms, therapeutic methods, existence of enlarged mesenteric lymph nodes, and ultrasonographic (US) findings from clinical records. Results: 1) There was one neonatal case (1.1%), the others (98.9%) were infants and children. 2) These 87 infant and child cases consisted of 14 cases (16.1%) of small bowel intussusception (SBI) and 73 cases (83.9%) of ileo-colic intussusception (ICI). Of the 14 SBI cases, 12 cases were symptomatic and 2 cases were asymptomatic. The symptomatic group comprised 8 transient cases (66.7%), 3 operative cases (25.0%), and 1 enema-reduction case (8.3%). Two asymptomatic cases were incidentally captured by computed tomography. Of the 73 ICI cases, 19 cases (26.0%) required operation, and 54 (74.0%) enema-reduction. 3) When transient SBI cases were compared with operated SBI cases, enema-reduced and operated ICI cases, the age ($38.0{\pm}22.9$ months) of transient SBI cases were significantly higher than those of the others (p=0.003). Mean mass size ($20.8{\pm}2.7mm$) in transient SBI was significantly smaller than in the others (p=0.0001). 4) No correlation was found between the existence of enlarged mesenteric lymph nodes and therapeutic method or concomitant illness. 5) Most of the target types observed by US were in transient SBI cases, the remainder were in the enema-reduced ICI cases. In terms of the doughnuts type, all 8 cases (34.8%) with an external hypoechoic rim thickness of >8.9mm were treated surgically. Conclusion: Pediatric intussusception may be classified based on clinical and radiologic findings, which are likely to indicate appropriate therapies.

        쌀 단독 알레르기 1예

        Rice allergen has low antigenicity, and thus, anaphylactoid reactions to rice are exceedingly rare. We experienced a case of isolated rice allergy in a 5 month-old girl who had been fed a milk formula without incident. However, after feeding a powdered weaning milk formula containing rice, she developed symptoms of projectile vomiting and diarrhea, at this time rice specific antigen tests were all negative. One month later a challenge test was performed using a rice gruel, and her symptoms recurred. Endoscopic and microscopic findings showed hyperemic mucosa in the duodenum and subtotal villous atrophy. Thereafter, she showed no adverse reaction to almost all foods appropriate for her age, but after feeding rice gruel at 10 months, she developed symptoms of cyanosis and vomiting. However, none of the allergic symptoms were demonstrated at 13 months upon repeated challenge test. Currently, she is 28 months old and tolerates all foods including rice. 쌀은 비교적 낮은 항원성을 보이는 것으로 알려져 있으나 영유아기 식품 알레르기 질환의 원인이 될 수 있으며, 다른 식품에는 과민 반응없이 쌀 단독으로 알레르기를 보이는 경우도 있고, 항원성이 매우 낮은 것으로 알려진 쌀미음에도 반응이 나타났으며, 나이가 들면서 저절로 호전을 보이는 영유아기의 일시적 경과를 보인다. 쌀 단독 알레르기 1예를 문헌 고찰과 함께 보고하는 바이다.

        주기성 구토증으로 추적 관찰 중 진단된 PFAPA 증후군 1예

        PFAPA syndrome is characterized by periodic fevers associated with aphthous stomatitis, pharyngitis, and cervical adenitis and is unusual in infants and children. We report on a case of PFAPA syndrome mimicking cyclic vomiting syndrome in a 42-month-old girl. She had experienced multiple episodes of cyclic vomiting with abdominal pain from age 20 to 30 months. When she was 30 months old, periodic fever with pharyngitis was combined with cyclic vomiting, and when 40 months old, aphthous stomatitis and cervical adenitis were added. These periodic symptoms and signs were not treated with prokinetics or antibiotics. Symptom duration of an episode was 3 days. After cimetidine therapy (150 mg three times daily for 6 months), her febrile and cyclic vomiting episodes ceased. At the time of writing she had not received therapy for 10 months and has remained well without periodic attack. 주기성 구토증의 심하에 추적 관찰 중 주기적인 발열, 아프타성 구내염, 인두염 및 경부 림프절염 등의 특징적인 임상증상을 보여 소아에서 주기적 발열을 일으키는 원인들을 증상과 검사실 소견을 통 해 배제함으로써 PFAPA 증후군으로 진단된 1예를 경험하였기에 문헌고찰과 함께 보고하는 바이다.

        저장온도 20℃ 가 적색 돈근육의 생화학 , 물리적 변화에 미치는 영향

        The influence of the storage temperature at 20℃ on the biochemical and structural changes in the red porcine muscles (M. cleidomastoideus) postmortem were studied. The results obtained were summarized as follows: 1. 45 minutes to 1 hour postmortem the pH-value had already dropped to 6.4-6.3, after 5 or 6 hours at 20℃ it had reached its final pH-value (5.6). 2. The cause of the rapid glycogenolyses was the fast turnover of ATP. Within 3 hours postmortem ATP had already reached a concentration of about 1μuMol/g muscle. At this level of concentration at 20℃ rigor mortis sets in. At this point most of the glycogen had already been broken down. 3. The irreversible loss of extensibility, i.e, the onset of rigor mortis, arose at 20℃ between 1 and 2 hours postmortem at pH 6.2 to 6.1 and R-value between 1.00 to 1.05. The complete loss of extensibility was reached after 5 hours at pH 5.9. 4. At 20℃ the shortening of the sarcomeres reached approximately 40%. 5. The viscosity of salted homogenates increased considerably as the pH fell below 6.1 and at R values above 1.1.

        pH , 팽윤온도 , 팽윤시간 , 산의 종류가 돈피 Gelatin gel 의 생산량과 물리화학적 성질에 미치는 영향

        This study was carried out to investigated the effects of the various conditions on the swelling capacity of pigskin and the physical properties of gelatin gel extracted. The conditions were confined to the kinds, concentrations, pH, soaking temperatures and soaking times of acid solutions. The results obtains were summarized as follows: 1. The most effective pH range in the capacity of swelling, the increase of thickness was 2-3; 127% and 57% at pH 2, respectively. 2. Variations in the swelling capacity, the extract yields and the components of gelatin gel according to the kinds of acids were investigated. The 5% acetic acid solution resulted in the highest swelling capacity (195%) but the 5%o L-96 solution showed the highest extract yield (12.5%). The 5% sulfuric acid resulted in the lowest swelling capacity. 3. The soaking temperature affected the swelling of pigskins and the room temperature (20±2℃) resulted in higher swelling capacity than that of cold temperature (3±2℃) but the temperature difference did not affect the extract yield. 4. The melting points of extracted gelatin gel were 31.90-34.15℃ in the room temperature group and 32.70-34.80℃ in the cold temperature group but did not show significant difference (P$gt;0.05).
