The texturization characteristics of textured vegetable protein (TVP) were investigated based on the extent of soybean decoating during the pretreatment of defatted soybean flour used for TVP. The raw materials for TVP consisted of 50% defatted soybean flour, 30% gluten, and 20% corn starch. The weight ratios of soybean seed coat to soybean flour were 9%, 6%, 3%, and zero. Extrusion was performed using an extruder equipped with a cooling die, maintaining a barrel temperature of 190℃ and screw speed of 250 rpm, Water was injected at a rate of 9 rpm using a metering pump. Regarding the textures of the extruded TVPs produced from defatted soybean flour, an increase in the soybean seed coat content led to a decrease in the apparent fibrous structural layer and an increase in hardness. However, there were no significant changes in elasticity and cohesion. Moreover, as the soybean seed coat content increased, the pH of TVPs decreased. A higher soybean seed coat content also tended to lower the moisture content, increasing water absorption, solids elution, and turbidity. These results suggest that an increased seed coat content reduces the proportion of protein, and the fibers present in the seed coats prevent texturization.

Usefulness of Measuring Airway Length with Cephalometry in Pediatric Subjects with Obstructive Sleep Apnea

Background and Objectives: This study was designed to analyze the relationship between measurement of airway lengthwith cephalometry and AHI in children with OSA and to assess the correlations between cephalometric parameters and salivarycortisol level. Subjects and Method: Three parameters of the upper airway were measured by cephalometry: distance from the posteriornasal spine to the hyoid bone (PHy), distance from the mandibular plane to the hyoid bone (MP-Hy), and distance from the posteriornasal spine to the mandibular plane (P-MP). Ratios for each segment were also determined. Results: Subjects with OSAS had longer P-Hy and MP-Hy than the control group. In particular, MP-Hy was significantly longerin the moderate-severe group than the other groups. In the OSAS group, there were significant correlations between MP-Hy,Ratio1, Ratio3 and m-Cor, s-Cor. Conclusion: Length of upper airway and ratio parameters of cephalometry may be more useful indices in moderate-severeOSA than absolute distance parameters, and Ratio1 may be valuable for prediction of activating HPA axis.

In this study, the quality characteristics of texturized vegetable proteins (TVP) produced from defatted soy flour (DSF) were analytically compared with those of texturized vegetable proteins produced with isolated soy protein (ISP) and non-defatted soy flour (SF). The base raw material formulation consisted of 50% soy proteins, 30% gluten, and 20% corn starch. A cooling die-equipped extruder was used with a barrel temperature set at 190℃ and screw rotation speed of 250 rpm. With respect to the hardness of isolate soy proteins, that of soy flour and defatted soy flour was 22.4% and 68.8%, respectively, and gumminess was 17.6% and 44.3%, respectively. Defatting increased chewiness, shear strength, and springiness. Moisture content was higher in soy flour than in defatted soy flour, while there were no significant differences in terms of water absorption and turbidity. The pH was higher with soy flour than with defatted soy flour. Concerning color, the L and b values were higher with soy flour, while the a value was higher with defatted soy flour. These results suggest that defatting soybeans can improve the quality of plant-based proteins. Further research is needed to address the quality differences from those of isolated soy proteins.

Cases of olfactory neuroblastoma from sphenoid sinus, in which olfactory epithelium rarely exists, have been rarely reported. Although nasal ob-struction and epistaxis are the most common presenting symptoms of olfatory neroblastoma, our patient presented with headache onditions should not be excluded without thorough evaluation. The authors experienced a rare case of olfactory neuroblastoma from sphenoid sinus that had ben confused as isolated sphenoid sinusitis. Development of a Program for the Story-based Integrated Teaching through Storytelling in Elementary English Education

The purpose of this study is to apply storytelling in elementary English education in order to suggest a story-based integrated teaching method which enhances educational effects. In order to do so, the theoretical backgrounds of integrated education in English education and integrated education through storytelling were observed. Furthermore, the methods in which integrated education through storytelling was applied in the main English textbooks of the currently revised curriculum were analyzed. In order to implement story-based integrated teaching which is based upon storytelling, teachers must first scan through various books and select books with consideration of students’ perceptual and language levels, characteristics and interests. Next, teachers can establish a story-based syllabus once they have extracted story-based integrated teaching factors from storybooks by taking the age, conceptual level, demands and interests, language levels, prior language learning experiences, organizational characteristics and other elements of students into consideration. Furthermore, once teachers brainstorm the various integrated subject activities which can be implemented through story books, they are divided into pre-, while-, and post-storytelling activities. A story-based program which may either be used over one semester or one year is completed based upon this. Not only the language functions/structures and vocabulary which will be taught through each story but also the various cross-curricular storytelling activities which will be integrated through a teacher’s lesson plan must be suggested. It is considered that a continuous and multilateral research on the story-based integrated teaching method, which applies storytelling and can be applied effectively and efficiently,is necessary.

번역 그 소통의 미학 - 문화를 알아야 번역이 보인다

문화와 문화, 지평과 지평이 만나(cross‐cultural event) 융합하는 데서 의미가 발생할 때 이것을 번역이라고 말한다. 그래서 해석학에서는 번역을 두 문화를 이어주는 다리라고 부른다. 그 다리는 튼튼하면서도(전달, 건너감) 아름다움을 갖춘 작품(미학)이어야 한다는 의미에서 번역은 소통의 미학이다. 개인적으로 번역을 프라하의 카를대교라고 부르고 싶다. 다리 자체가 조각품이면서 수많은 관광객이 딛고 건너는 튼튼한 다리이기 때문이다. 번역에서 문화적인 요소는 전달 기능이 있을 때는 이 국적인 요소를 그대로 살리는 이질화(foreignize)를, 전달이 되지 않을 때는 모국어 속에 동일화(domesticate)를 선 택하게 된다. 이때 문화적인 배경을 모르고서는 정확한 번역을 할 수가 없다. 예를 들어 “Fault is not in the stars but in ourselves.” 이 대사는 잉그릿드 버그만과 그레고리 펙이 주연한 영화 ‘백색의 공포(Spellbound)’에 나오는 대사지만 셰익스피어 희곡 <줄리어스 케사르>에서 따 온 말이다. star를 말 그대로 ‘별’로 해석하면 전달력이 약하다. 서양문화 속에서 star 가 가지는 문화적인 배경을 생각해서 정확한 뜻을 파악해야 한다. 로미오와 줄리엣 중 “I defy you, stars!”, 12야(夜) 중 “Jove and stars are praised!” 등 많은 작품에서 셰익스피어는 star를 ‘하늘’, ‘운명’, ‘행운’ 또는 ‘타고 난’ 등의 의미로 사용하고 있다. 서양은 점성술로 운명을 점치는 문화이므로 따라서 위의 말은 “잘못은 운명에 있는 게 아니라 우리 자신에게 있다”로 번역 된다.

The pathophysiology and exact mechanism for sleep-disordered breathing (SDB) have not been fully understood and the role of nose obstruction in SDB has been still controversial. However, considering that the nasal resistance contributes about half of total airway resistance and nose is the largest source in total airway resistance, it is hard to say there is no relation between nose and sleep/sleep disordered breathing. The transition from wakefulness to sleep causes major changes in many aspects of the human body, and many sleep factors (body position, sleep stage, air flow, etc.) can influence nose. Although many studies have attempted to elucidate the relationships between SDB and nasal obstruction or an improvement in nasal obstruction, there is general consensus that nasal obstruction is related to SDB, but the roles of nasal surgery alone in the treatment of SDB have been still on debate.
