        증편 제조시 콩물과 반죽 내의 $\alpha$-amylase활성 및 특성에 관한 연구

        The activity and characteristics of ${\alpha}$-amylase in soy milk as well as in Jeungpyun batters were determined to investigate the enzyme system related to Jeungpyun preparation. ${\alpha}$-Amylase activity was detected in soy milk as well as in Jeungpyun batters. Soy milk had ${\alpha}$-amylase activity of 0.79 units/mg protein for gelatinized starch and 0.036 units/mg protein for raw starch. ${\alpha}$-Amylase in soy milk showed maximum activities at pH 5.92∼6.87 and at 60$^{\circ}C$ for both gelatinized starch and raw starch. ${\alpha}$-Amylase activities of Jeungpyun batters containing soy milk were 25.59 units/mg protein for gelatinized starch and 1.37 units/mg protein for raw starch. Jeungpyun batters without soy milk demonstrated ${\alpha}$-amylase activities of 3.37 units/mg protein for gelatinized starch and 0.49 units/mg protein for raw starch. ${\alpha}$-Amylase of Jeungpyun batters showed an optimal activity at pH 5.25 and at 60$^{\circ}C$ for both gelatinized and raw starch. The results demonstrated that Jeungpyun batters with soy milk showed significantly higher ${\alpha}$-amylase activity than the ones without soy milk.

        증편 제조시 콩물과 설탕의 첨가가 반죽의 이화학적 성질 및 저장 중 증편의 품질에 미치는 영향

        The study was attempted to investigate physicochemical and biological changes that would occur during preparation of Jeungpyun (rice cake prepared with rice wine). Furthermore, the effect of soy milk and sugar addition to Jeungpyun batters on textural changes of Jeungpyun during storage was studied in relation to physicochemical properties of Jeungpyun batters. 1. As fermentation continued, pH of Jeungpyun batters droped from 6.01 to 4.36. The addition of soy milk and 10% sugar to Jeungpyun batters resulted in significantly lower pH during fermentation. The volume of the batters with soy milk were significantly larger than those without soy milk. Jeungpyun batters with soy milk showed dramatic increase in viscosity after 2 hours of fermentation and the viscocity of other groups increased after 3 and half hours of fermentation. The reducing sugar contents of Jeungpyun batters containing 20% sugar increased rapidly during first fermentation and then decreased. The reducing sugar contents of Jeungpyun batters containing 10% sugar increased gradually during first fermentation and then rapidly increased after addition of 10% sugar during 3rd fermentation. 2. Sensory evaluation results demonstrated that hardness of Jeungpyuns increased and tenderness, springiness, moistureness, overall acceptability decreased during storage of 4 days at 4℃. QTS data showed that hardness, gumminess, chewiness of all the gruops increased and adhesiveness decreased during storage. Both of sensory evaluation and QTS data demonstrated that addition of soy milk and separate addition of sugar at first and during 3rd fermentation period induced slower changes in textural properties in Jeungpyuns during storage.

        지하수 모델의 주요 경계조건에 대한 민감도 분석 사례

        Appropriate representation of hydrologic boundaries in groundwater models is critical to the development of a reliable model. This paper examines how the model predictions are affected by the uncertainty in the conceptualization of the hydrologic boundaries including groundwater divides, streams, and the lower boundaries of the flow system. The problem is analyzed for a study area where a number of field data for model inputs were available. First, a groundwater flow model is constructed and calibrated for the area using the Visual Modflow code. Recharge rate is used for the unknown variable determined through the calibration process. Secondly, a series of sensitivity analyses are conducted to evaluate the effects of model uncertainties embedded in specifying boundary conditions for streams and groundwater divides and specifying lower boundary of the bedrock. Finally, this paper provides some guidelines and discussions on how to deal with such hydrologic boundaries in view of developing a reliable conceptual model for the groundwater flow system of Korea.

        쌍천 지하댐의 효용성 평가를 위한 지표수-지하수 통합 수문해석

        In this study, the usefulness of underground dam as a means for the sustainable development of groundwater, and its performance in the management of groundwater resources were analyzed. The fully integrated SWAT-MODFLOW was applied to the Ssangcheon watershed in Korea to evaluate the effectiveness of groundwater dam construction. After construction, the groundwater level raised in the upstream area of groundwater dam while lowered in the downstream area. Also, it is shown that the exchange rate of river-aquifer interactions increased in the upper area of the dam. Since the storage capacity of the aquifer largely increased in the upper area of the dam, the exploitable groundwater could be greatly increased as much. This study demonstrated that a groundwater dam was a very useful measure to increase the available storativity of groundwater aquifers. It also represented that the combined analysis using SWAT-MODFLOW was helpful for the design and opeation of groundwater dam in the Ssangcheon watershed.

        제주도 한천유역의 함양 지체시간 산정

        In this work, the delay time for groundwater recharge was estimated by comparing simulated recharges by means of SWAT(Soil and Water Assessment Tool) model and WTF(Water Table Fluctuation) method. The delay time for groundwater recharge means that the time when the water from rainfall travelled through vadose zone just after getting out of soil zone bottom. As measuring this delay time is almost impossible, we used to compare the estimated values from modeling(SWAT) and analytic method(WTF). The test site is Hancheon watershed which has 8 groundwater measurement stations. The results show that the altitude has a linear relationship with the estimated delay time values. To validate these results, we conducted corelation analysis between transformed groundwater levels and observed ones. The results showed that computed groundwater levels have good corelation(R2=0.97, 0.87, respectively). The estimated delay time would be used for the groundwater behaviour characteristics in vadose zone. As recharge rates vary according to the height, the delay time is thought to be an import variable for the proper groundwater recharge estimation.

        통합수문모형을 이용한 제주 한천유역의 지하수 변동 특성 모의

        To investigate groundwater variation characteristics in the Hancheon watershed, Jeju Island, an integrated hydrologic component analysis was carried out. For this purpose, SWAT-MODFLOW which is an integrated surface-groundwater model was applied to the watershed for continuous watershed hydrologic analysis as well as groundwater modeling. First, ephemeral stream characteristics of Hancheon watershed can be clearly simulated which is unlikely to be shown by a general watershed hydrologic model. Second, the temporally varied groundwater recharge can be properly obtained from SWAT and then spatially distributed groundwater recharge can be made by MODFLOW. Finally, the groundwater level variation was simulated with distributed groundwater pumping data. Since accurate recharge as well as abstraction can be reflected into the groundwater modeling, more realistic hydrologic component analysis and groundwater modeling could be possible.

        진천지역 지하수 함양량의 시공간적 변동특성

        Because groundwater recharge shows spatial-temporal variability due to climatic conditions, it is necessary to investigate land use and hydrogeological heterogeneity, and estimate the spatial variability in the daily recharge ratc based on an integrated surface-groundwater model. The integrated SWAT-MODFLOW model was applied to compute physically based daily groundwater recharge in the Jincheon region. The temporal variations in estimated recharge were calibrated using the observed groundwater head at several National Groundwater Monitoring Stations and at automatic groundwater-monitoring sites constructed during the Basic Groundwater Investigation Project (2009-2010). For the whole Mihocheon watershed, including the Jincheon region, the average groundwater recharge rate is estimated to be 20.8% of the total rainfall amount which is in good agreement with the analytically estimated recharge rate. The proposed methodology will be a useful tool in the management of groundwater in Korea

        제주 외도천 유역의 통합 물수지 분석

        Hydrologic component analysis was conducted to investigate water budget characteristics the Oedocheon watershed, Jeju Island. For this purpose, integrated SWAT-MODFLOW model was applied to this watershed for continuous surface water-groundwater modeling. Pasture and forest-deciduous are the major land use types and these affect general hydrologic component ratio. The spatio-temporal groundwater recharge can be obtained from SWAT and then distributed groundwater recharge can be reproduced by MODFLOW. The groundwater level variation was simulated with distributed groundwater pumping data. The water budget in this watershed was compared with the previous estimated result by Jeju-Do(2013). As this result considered discharge to the coastal side, the discrepancy was found. However, it was found that the overall tendency of both analyses were similar.
