      • 대두 식이섬유를 이용한 특수 영양식품의 유효성 평가

        In the development of enteral foods for the patients with diarrhea, soybean hull, by-products of soybean processing, was used to prepare crude dietary fiber extracts (soybean hull fiber, SHF). Total dietary fiber content of SHF is 85% and their composition are 86.1% cellulose, 8.1% hemi-cellulose, and 4.7% lignin. The effects of SHF on the prevention of diarrhea were studied in animal. Spraque-Dawley (SD) rats were fed AIN93G diets containing 5% dietary fiber for 3days simultaneously inducing diarrhea with the phenolphthalein Mg citrate solution. On day 4, feces were collected at different time point. Dietary fibers used for the animal study were SHF, soybean cotyledon fiber (SCF), psyllium husk fiber (PHF), and chicory fiber (CF). α-cellulose was used as a control. Body weight gain, calorie consumed and food efficiency ratio among the experimental groups were not different. However, water content in the feces of SHF group was significantly lower by 10%, compared with other groups at 24hrs. time point. This effect was even greater in the feces collected later than 24 hrs. time point. SHF seems to have a greater effects on slow the symptom of diarrhea. Based on the previous results, enteral food enriched with SHF were prepared and its effect was compared with other commercially available products from domestic or imported ones. Weight changes among experimental groups were not different, but the moisture content of feces consumed SHF enriched products were lower than that of other products. Approximately 10% decrease in water content was observed from feces collected at 24 hr time point. According to the sensory evaluation, overall acceptability of the enteral food enriched with SHF was 3.24 out of 5 indicating that taste of this product is acceptable. 대두가공에 부산물로부터 얻어지는 대두 식이섬유를 이용하여 설사환자를 위한 경장 영양 식이를 개발하기 위하여 쥐에게 투여한 후 체중증가율, 변의 수분감소, 사료효율 등을 측정하여 다음과 같은 결과를 얻었다. 대두피 중의 식이섬유함량은 85% 이었고 cellulose 가장 높았으며 hemi-cellulose, lignin의 순 이었다. 대두 식이섬유가 대조구에 비하여 체중 감소율은 약간 낮았고 사료효율은 약간 높았다. 대두 식이섬유를 섭취시킨 쥐가 치커리 식이섬유, 차전자 피에 비하여 24시간 후의 변의 수분함량은 10% 낮았다. 대두 식이섬유를 첨가한 경장영양식이로 사육한 쥐의 체중변화와 사료효율은 3제품 간에 차이가 없었으나 다른 하나의제품은 대조군에 비하여 낮았다. 대두 식이섬유를 이용하여 가공한 경장영양식이 다른 상업용 제품에 비하여 실험쥐의 변 수분함량은 10% 이상 낮았다.

        콩나물의 지방산 및 식이섬유 함량 분석

        전통식품인 콩나물의 고부가가치화를 위한 우량 나물콩 품종 육성의 기초 자료를 제공하고자 특성이 다른 5종의 장려품종 나물콩으로 재배한 콩나물의 지방산 및 식이섬유 함량을 분석한 결과는 다음과 같다. 1. 생콩나물과 데친 콩나물의 지방산 조성은 큰 차이가 없어 가열 처리가 지방산 조성에는 영향을 끼치지 못하였다. 2. 전체 콩나물과 콩나물의 자엽 부위 지방산 조성은 원료콩과 비슷하였으나 배축 부위는 원료콩에 비해 포화지방산 함량이 높았으며 변이도 자엽 부위보다 컸다. 3. 가열 처리된 콩나물이 생콩나물보다 식이섬유 함량이 높았다. 4. 지방산 조성과 식이섬유 함량은 품종별로 차이가 있었다. Soy sprout is a traditional food in Korea. It has been a source of protein, lipid and vitamin etc. as cooked and fresh vegetable supplying throughout the year. Soy sprouts of five soybean cultivars were analyzed fatty acid composition and dietary fiber contents. The compositional analysis confirmed that soy sprout contained five major fatty acids(16:0 palmitic, 18:0 stearic, 18:1 oleic, 18:2 linoleic and 18:3 linolenic). Fatty acid levels in soy sprout were not significant statistically between fresh and boiled soy sprout, the result support a conclusion that boiling treatment could not affect the fatty acid composition in soy sprouts. Fatty acid levels in whole and cotyledon part of soy sprout were not changed during sprout production, whereas the content in hypocotyl increased by approximately 13.2% of total unsaturated fatty acid compared to whole soy sprout. In case of dietary fiber, boiled soy sprouts showed higher contents than in fresh soy sprouts. These changes were associated with an increase in the mean level of insoluble dietary fiber expecially. Fatty acid levels and dietary fiber contents varied with soybean cultivars suggesting chemical composition of soybean seed was important to soy sprout characters.

        대두피로부터 분리한 식이섬유가 설사개선에 미치는 영향

        대두 가공 부산 폐기물로부터 발생되는 대두피에서 식이섬유를 분리하여 대두 자엽 및 타 식물 유래 식이섬유와 설사개선에 미치는 효능을 비교 평가하였다. 설사를 유발시킨 Sprague Dawley 수컷 흰쥐를 불용성 식이섬유인 셀룰로오스(CON), 불용성과 수용성 식이섬유가 혼합된 대두 자엽 유래 식이섬유(S-COTL), 불용성 대두피 추출 식이섬유(S-HULL) 및 수용성인 치커리 식이섬유(CHI)가 각각 동량 함유된 식이의 네 군으로 나누어 24시간 동안 실험 식이를 공급한 결과 CON과 S-HULL에서 S-COTL과 CHI보다 약 10-20% 가량 높은 변수분 감소 효과를 나타내었다. 그리고 탈수 증상의 척도인 혈청 삼투압 변화 측정 결과 역시 네군 중 CON과 S-HULL에서 가장 높은 감소율을 보였다. 이 결과를 통해 대두피에서 추출한 식이섬유의 설사 개선 효과가 기존의 타 식이섬유에 비해 우월하다는 사실을 생화학적으로 해석할 수 있었다. 나아가 현재 경관급식 환자식에 대두 자엽 유래 식이섬유 및 기타 수용성 식이섬유 등이 사용되고 있음에도 자주 발생하는 잠재적이고도 심각한 위협이 되는 설사증상을 본 연구 결과에서 제시한 대두피 추출 식이섬유원으로 대체하는 것에 의해 해결할 수 있을 것으로 기대해 볼 수 있다. In this study, we evaluated the recovery effects of dietary fiber extracted from soybean hulls on diarrhea in rats. Diarrhea-induced Sprague-Dawley male rats were divided randomly into 4 groups and fed experimental diets for 24 hours. The diets, based on the AIN93G diet, were as follows: CON (control diet), S-COTL (67.2 g/kg soybean cotyledon fiber diet), S-HULL (59.6 g/kg soybean hull fiber diet), CHI (55.6 g/kg chicory fiber diet). The results showed significant (10-20%) reductions of fecal water content in the CON and S-HULL groups, as compared to the S-COTL and CHI groups. The change in serum osmolality, a measure of dehydration symptoms, was significantly reduced in CON and S-HULL as compared to the S-COTL and CHI groups. Based on the results, it is suggested that soybean hull fiber functions well for diarrhea recovery in rats. Consequently, soybean hull fiber is an important food source that could be used as a medical food in patients suffering from diarrhea.

        식이섬유를 첨가한 냉동 떡볶이 떡의 품질특성

        Purpose: Dietary fiber (DF) supplemented Topokki Garaetteok was prepared and its quality characteristics were investigated. Methods: Topokki Garaetteok was prepared by adding rice flour, salt, and water, after which agar, chicory fiber (CF), or soybean fiber (SF) were mixed at the level of 10% of rice flour. The prepared Garaetteok was then freeze-stored (-20°C) for two weeks. Results: The addition of DF significantly increased the moisture content of all Garaetteok and cooking loss was increased by the addition of all DF except SF. The effect on physical properties, color, and taste of Garaetteok varied depending on the type of DF. The addition of CF did not produce significant differences in hardness, adhesiveness, and chewiness compared to the control, but springiness and cohesiveness were decreased. SF addition produced the highest hardness and the least springiness and cohesiveness; no significant changes were observed in adhesiveness and chewiness. Both CF and SF had high whiteness of rice cake. The physical properties of rice cake with agar were similar to those of rice cake with added CF and SF. However, with agar, the off-taste during chewing and the aftertaste were the strongest and the whiteness of the rice cake was the lowest. The aftertaste was increased in all DF-added groups, but CF produced the lowest increase in aftertaste among all DF. There was no significant difference in off-taste between SF- and CF-added Garaetteok. Conclusion: CF was the most suitable material when added at a level of 10% due to the whiteness, physical properties such as hardness, adhesiveness, and chewiness, and less off-taste despite the disadvantage of high cooking loss.

        Okara, a Soybean by-Product, Prevents High fat Diet-induced Obesity and Improves Serum Lipid Profiles in C57BL/6J Mice

        This study aimed to validate the anti-obesity effect of okara, a soyfood byproduct, in diet induced obese mice. Thirty two C57BL/6J male 4 week old mice were divided into four dietary groups (n=8) fed either normal diet (ND), high fat diet (HD), HD with 10% okara (OL), or HD with 20% okara (OH) for 12 weeks. Body weight gain and epididymal fat weight of OL and OH group were significantly lower than HD group. Similarly, the serum and hepatic lipid profiles in OH were significantly lower than HD group. The fecal triacylglycerol and TC levels in OL and OH increased compared to HD. Also, the expression of PPAR-α was higher in OH than HD group; PPAR-γ and FAS levels were lower in OH compared to HD. In this study, okara consumption appears to protect mice against diet induced obesity (DIO) and metabolic dysregulation related to obesity.
