시판 어육연제품의 조직감 평가는 국내인, 미국인, 독일인에 의한 관능검사 및 기계적 압착실험에 의해 수행되었다. 구미인들이 선호하는 중요한 어육연제품의 조직감 요소는 촉촉한 정도로 나타났으며 국내인은 탄력성과 씹힘성이 높은 어육연제품을 선호하는 경향을 보여주었다. 관능적 측정치와 기계적 측정치간의 관계에서는 70% 입착율에서 좋은 상관관계를 보여주었다. 미국인은 씹힘성을 제외하고는 대부분의 조직감 요소과 좋은 상관관계 (r=0.92-0.99)를 보여 주었고 독일인은 단지 탄력성 (r-0.98)과 씹힘성 (r=0.91)에 좋은 상관관계를 보여 주었다. Commercial surimi-based products having different texture characteristics were evaluated by three different sensory panels (Korean, American, German) and instrumental tests of compressive force. Sensory moistness appears to be the textural characteristic which determines the overall acceptability of commercial surimi-based products for Westerner panelist. Korean panelists had a preference for chewy and firm texture fo commercial surimi-based products. Good correlations between sensory and instrumental test parameters were found in the 70% compression ratio. Compression-springiness and -chewiness were correlated with the sensory parameters evaluated by German panelists (r-0.98; r=0.91) while good correlations (r=0.92-0.99) between instrumental and sensory parameters except chewiness were found by American panelists.
白鼠 急性虛血性 骨격筋의 組織學的 및 組織化學的 變化에 미치는 Dimethyl Sulfoxide의 影響

This experimental study was carried out to investigate the effect of dimethyl sulfoxide on the experimentally induced ischemic injury of skeletal muscle. The ischemic injury of the skeletal muscle was induced by the atraumatic clamping of the common iliac artery, and then reperfused after 1 hour and 5 hours, respectively. Immediately after reperfusion, experimental group were received 5㎖ of 20% solution of DMSO intravenously with a constant rate(0.5㎖/min) using infusion pump,and control group were received an equal volume of physiologic saline. histological and enzyme histochemical stains for H&E, trichrome, PAS, SDH and reversed myosin-ATPase on the flash-frozen sections of soleus muscle were performed on the 24hours after operation. The following results were obtained. 1.The soleus muscle ischemic for 1 Hour revealed only focal edema of the endomysium and perimysium. And the muscle ischemic for 5 hours exhibited pyknosis and focal disappearance of the sarcolemmal nuclei, flocculation of the sarcoplasm, endomysial and perimysial edema, and discoidal degeneration of muscle fibers. But there was no difference between the control and DMSO-treated group. 2.The total number of muscle fibers per unit area in the group of 5 hours ischemia was decreased in comparison with the normal rats. But the difference between the control and DMSO-treated group was not significant. 3.The proportion of muscle fiber types in both ischemic groups equally showed decrease in S-type onPAS stain. But there was no difference between the control and DMSO-treated group. These experimental results demonstrated that dimethyl sulfoxide revealed no protective effect against the acute ischemic injury of the skeletal muscle.
