        어성초 분말을 급여한 돼지 등심의 냉장저장 중 품질특성의 변화

        어성초 분말을 사료에 0%, 5% 및 10% 첨가하여 12주간 사육한 돼지 등심의 냉장저장 중 품질특성을 분석하였다. 어성초의 일반성분은 조섬유가 $56.8{\pm}2.6%$로 가장 높은 함량이었으며 불포화지방산인 oleic acid(C18:1)의 비율이 29.6%로 가장 높았다. 각 실험군의 관능평가 결과 어성초 분말 5% 첨가군이 연도와 누린내에서 기호도가 높게 평가되었으며 전체적인 선호도도 가장 우수하였다. 돈육 등심을 23일간 냉장 보관하면서 이화학적인 성분을 분석한 결과, 수분함량은 10% 어성초 분말 첨가 급이군에서 다소 높았으며 조지방 함량은 대조군에 비해 어성초 분말 첨가 급이군에서 유의적으로 낮은 함량이었다. pH는 실험군간 및 저장기간의 경과에 따른 유의적인 차이가 없었으며 육색 중 L값과 a값은 저장기간의 경과와 더불어 증가하는 경향이었고 b값은 저장 초기에 증가하였다가 이후에는 그 변화가 미미하였다. 전단가는 저장 2일에서 9일 사이에 가장 큰 폭으로 감소하였으며 그 이후에는 급격한 연도의 저하는 없었다. This study was carried out to investigate the influence of feeding eosungcho (Houttuynia cordata Thunb) powder on the meat quality of porks at chilled storage. Experimental groups were divided into control group (0%, C), 5% (T1) and 10% (T2) eosungcho powder feeding group, and then administered for 12 weeks. The results of sensory evaluation for softening value and scorched smell showed the highest preference in T1 group. Overall acceptability was also the highest in T1 group than the others. Physicochemical components were analyzed for pork loins that were stored at $4^{\circ}C$ for 23 days after vacuum packing. The moisture contents of pork loins were higher in T1 group than the others. Crude lipid contents were lower in T1 and T2 groups than the control group. The pH values were not significantly different in experimental groups during storage days. The Hunt L and a values increased significantly according to storage days. The Hunt b value was increased for the initial storage days but it did not change after 9 storage days. The Warmer-Bratzler share force of all experimental groups were greatly decreased between 2 and 9 storage days and then little exchanged afterwards.

        신선초를 혼합한 과채주스의 알코올 대사 효소 활성에 미치는 영향

        Excessive alcohol consumption can cause hangover symptoms, such as headache, drowsiness, dizziness, gastrointestinal distress, and anxiety. The aim of this study was to investigate alcohol metabolizing enzyme activities and antioxidant activities of fruit-vegetable juices containing Angelica keiskei prepared using a low speed masticating juicer in vitro. The acceleration rate of alcohol dehydrogenase (ADH) by A. keiskei-cherry tomato juice (ACJ) and A. keiskei-green grape juice (AGJ) were 163.8±4.3% and 148.2±6.9%, respectively. The acceleration rate of aldehyde dehydrogenase (ALDH) by ACJ and AGJ were 185.6±9.5% and 161.1±4.8%, respectively. Total polyphenol of ACJ and AGJ were 111.1± 1.6 mg/dL and 100.8±2.9 mg/dL, respectively. DPPH radical scavenging activities of ACJ and AGJ were 62.0±0.5% and 61.3±0.4%, respectively. Thus, these results indicate that alcohol degrading enzyme activities can be enhanced by fruitvegetable juices containing A. keiskei.

        마늘종 추출물이 고지방식이로 유도된 고지혈증 흰쥐의 지질개선에 미치는 영향

        고지방식이로 유도된 고지혈증 흰쥐에 마늘종 50% 및 75% 에탄올 추출물을 각각 200 및 400 mg/kg B.W./day 농도로 투여하여 혈중 및 간 조직의 지질 함량 변화에 미치는 영향을 비교하였다. 혈청 총 지질 및 중성지방 함량은 GSB-2군에서 가장 낮았고, 총 콜레스테롤 함량은 GSA-2와 GSB-2군이 대조군에 비해 유의적으로 낮았다. HDL-콜레스테롤 함량은 실험군 중 GSB-2군이 정상군과 유사한 수준을 보였고, LDL- 및 VLDL-콜레스테롤 함량은 GSB-1군 및 GSB-2군이 대조군에 비해 유의적으로 낮았다. AI 및 CRF 지수는 GSB-2군에서 각각 0.58 및 1.57로 가장 낮은 수준이었다. 혈청 AST, ALT 및 ALP 활성은 GSA-2 및 GSB-2군에서 대조군에 비해 유의적으로 낮았다. 간 조직 중 총 지질 함량은 모든 실험군이 대조군에 비해 낮은 함량이었으나 실험군간에 유의차는 없었다. 간 조직 중 총 콜레스테롤 및 중성지방 함량은 GSB-2군에서 가장 낮았다. 혈청 및 간 조직의 항산화 활성은 GSB-2군에서 각각 40.16% 및 47.41%로 가장 높았다. 혈청 및 간 조직의 지질과산화물 함량은 실험군 중 GSB-2군에서 가장 낮았다. This study was designed to investigate the effect of garlic shoot extract administration on serum and liver tissue lipid levels in hyperlipidemic rats. The rats were fed a 45% high-fat diet to induce hyperlipidemia. They were then administered garlic shoot extract (50%) and ethanol extract (75%) at 200 mg/kg B.W./day (GSA-1, GSB-1) and 400 mg/kg B.W./day (GSA-2, GSB-2) for 5 weeks. The total lipid and triglyceride contents in serum were lowest in the GSB-2 group, and the total cholesterol content was significantly lower in the GSA-2 and GSB-2 groups than in the control group. The high density lipoprotein (HDL)-cholesterol content of the GSB-2 group was similar to that of the normal group. The low density lipoprotein (LDL) and very low density lipoprotein (VLDL)-cholesterol contents were significantly lower in the GSB-1 and GSB-2 group than in the control group. atherogenic index (AI) and cardiac risk factor (CRF) were lowest in the GSB-2 group (0.58 and 1.57, respectively). Aspartate aminotransferase (AST), alanine aminotransferase (ALT), and alkaline phosphatase (ALP) activities were significantly higher in the control group than in the normal group, and the levels of AST, ALT, and ALP were significantly lower in the GSA-2 and GSB-2 groups than in the control group. The total lipid content in liver tissue was significantly lower in all the experimental groups compared to that of the control group, but it was not significantly different among the experimental groups. The total cholesterol and triglyceride content in liver tissue was lowest in the GSB-2 group. Antioxidant activity in serum and liver tissue was highest in the GSB-2 group (40.16% and 47.41%, respectively).The thiobarbituric acid reactive substance (TBARS) content in serum and liver tissue was lowest in the GSB-2 group, with the significant difference. Our results suggest that garlic shoot extracts may improve lipid metabolism in serum and liver tissue and potentially reduce hyperlipidemia.

        원발성 복막수염의 임상양상

        Background/Aims: Primary epiploic appendagitis (PEA) is a rare cause of focal abdominal pain in otherwise healthy patients. Patients with acute abdominal pain are often misdiagnosed clinically as acute appendicitis or diverticulitis. The purpose of this study was to describe the clinical presentation and characteristic computed tomography (CT) findings of PEA. Methods: We reviewed the clinical records and CT images of 23 consecutive patients in Korea who presented with acute abdominal pain between January 2005 and February 2009 and had radiologic signs of PEA. Results: Twenty-three patients (7 females and 16 males; average age, 42±14 years) were diagnosed with symptomatic PEA. Abdominal pain localized to the left (8 patients [44.5%]) and right (10 patients [55.5%]) lower quadrants as the leading symptom. CT findings specific for PEA were present in all patients except one. The symptoms resolved within 1 week (mean, 3.5 days) with or without antibiotic treatment. Conclusions: In patients with localized, sharp, acute abdominal pain not associated with other symptoms, such as nausea, vomiting, fever or atypical laboratory values, the diagnosis of PEA should be considered and the diagnosis confirmed by CT scan.
