        「飮食冊」의 調理에 관한 分析的 考察

        Eum Sik Check is a cooking book written in old Korean by a woman called Dan Yang Daek. In this study, the contents of the book are interpreted in modern Korean, and are analyzed, compared, and examined in the point of view of cooking. The book shows 1) the methds of the setting of a large table, of a table for ancestor-memorial services, of decorative seasonings, 2) 11 methods for making rice cakes, 3) 21 methods for side dishes, and 4) 7 methods for brewing rice wine.

        감잎가루를 첨가한 설기떡의 품질 특성에 관한 연구

        Sulgiduk is a typical Korean rice cake made by steaming rice powder with syrup and salt added. This study has measured moisture content, water activity, color, texture, and sensory evaluation of sulgiduk when persimmon leaves powder was added. The material used was sulgiduk to which the 0%(C), 1%(S₁) 2%(S₂), 3%(S₃), and 4%(S₄) of persimmon leaves powder were added. The moisture content of the raw rice powder for making sulgiduk was 32.40%, and that of the rice powder with syrup added was 37.97%~37,46%. The moisture content of the produced sulgiduk was 38.98%~37.93%, and the water activity was 0.97. In chromatic characteristics, the product had L value : of 73.86~59.16, a value: of -2.86~1.79 and b value: of 19.25~23.13. The texture characteristics such as hardness, fracturability, gumminess, cohesiveness chewiness and elasticity were not affected significantly by the persimmon leaves powder. In sensory evaluation, color, flavor, astringency, bitterness and overall quality were adversely affected with statistical significance (p<.001) by the addition of persimmon leaves. The juiciness and softness were also decreased as the persimmon leaves powder increased. In conclusion, it is recommended to add 1~2% of persimmon leaves powder to sulgiduk.

        결명자 종실의 볶음조건에 따른 이화학적 특성변화

        Physicochemical characteristics of Cassia tora seeds roasted at different conditions were investigated. Intact Cassia tora seeds were composed of water 11.6%, crude protein 13.1%, crude fat 4.4%, crude fiber 13.8%, N-free extract 47.2% and ash 4.9%. Stacking volume ratio was increased generally by swelling, but soluble solids were decreased by roasting process, L and b values decreased conspicuously as roasting temperature increase, but △E value increased. The content of anthraquinones was 1,200㎎ % in unroasted Cassia tora seeds, it increased as roasting time and temperature increase and reached maximum amount at 190℃-30min, 210℃-20min, and 230℃-10min. after that it decreased remarkably. Optimum roasting condition of Cassia tora seeds was 210℃-20min.

        「임원십육지」의 곡물 조리가공 (밥·죽)에 관한 문헌 비교 연구(Ⅰ)

        Imwonshibyukji was a copying manuscript written around 1825, the 27th year of king Soonjo of the Josu˘n Dynasty. It was a massive home encyclopedia of total 52 books and 100 volumes. The unpublished 'Jeongjoji' of its 17~20th volumes analyzed the cooking methods on the steamed rice and gruel and studied the degree of their usefulness and medical values in the light of the cooking process science. The cooking method on the steamed rice was composed of 14 items, and the general introduction outlined 6 kinds of the rice. These were all quoted from Chinese literatures. The 11 items present the methods on the general production of the rice, 2 on the cooking process, and 1 on the preservation. The main material of the rice was rice, and others were naked barley, prosomillet, foxtail millet, glutinous millet, etc., and the secondary materials were glutinous rice, small red bean, black soybean, potato, bamboo seed, jujube, taro, gaertner, chestnut powder, persimmon power, julib(Zizania caduciflora), mangcho(Erigeron canadensis), namchok(Nandina domestica), licorice root, nitrous, peach, palmicha(schizandra, jinseng, cheonmoondong(Asparagus), and honey are mixed), etc. The literatures quoted in the rice were all 33, in which 23 were Chinese (69.7%) and 10 were Korean(30.3%). In the case of gruel, the cooking methods on the general gruel were described in 41 items, and on the gruel for a medical treatment were in 48 items, in which there was not a cooking method on the gruel but only its medical values were presented. The materials used for the general gruel were approximately 60 kinds: rice, glutinous rice, munbean, job's tears, rye, soybean, black sesame seed, antler of cervidae, chicken, crucian carp, and various medical materials, etc. The gruel was mainly used for protection and medical treatment, and partly for food for hungry people. The literatures quoted in the gruel were total 57, in which 26 were Korean(45.6%), and 31 were Chinese(54.4%). It can be their characteristics that Almost all of the Chinese literatures on the methods of the steamed rice and gruel do not exist.

      • 급성 지주막하 출혈에 동반된 관상동맥 연축에 의한 심근경색증 1예

        In many cases, acute cerebrovascular disease is accompanied by abnormal electocardiograms. Also, though rather uncommon, acute myocardial infraction is also seen. The mechanism of its occurance is uncertain but it is thought to be related to coronary artery spasms, an abnormal autonomic nervous system, and a catecholamine increase. A female patient of 34 years of age came to the hospital because of sudden headache accompanied by substernal chest pain. A subarachnoid hemorrhage due to a cerebral aneurysm rupture had occured, and there was ST segment elevation in lead II, III, and aVF of the electrocardiogram. A cardiac enzyme test, an echocardiography, and a coronary angiography were performed, and she was diagnosed to have acute myocardial infarction due to coronary artery spasm. Clipping of the aneurysm was performed. With the use of nitrate and an angiotension converting enzyme inhibitor, the condition of the patient improved.

        신체적 기능상태에 따른 장애인의 비급여 의료비용 및 추가비용 : 의료보호 장애인을 대상으로 in Medical Aid beneficiaries

        This study is to measure the impact of disability on medical cost and additional cost not in Medical Aid allowance. It has three specific aims. The first aim is to identify how much extra expenditure needs in the disable using medical care. The second aim is to examine the relationship between the cost of disability and physical functioning levels of the disabled. The third aim is to examine the difference of medical cost and additional cost by disability level and type. Participants were the 864 subjects who were beneficiaries of National Mdcal aid and lived in 10 areas of Korea. A questionnaire was distributed during August to September 2001 through public offices. Social workers in public office helped this survey and it was conducted to visit the disabled families. Physical function of the disabled was examined by ADL, IADL. Medical cost and additional cost in medical care were examined by one month. The focus of this study is in relationship between physical functioning levels and medical cost and additional cost as a result of disability in medical care. Medical cost and extra expenditure per capita by one month did not increased with poorer physical function. But the cost were different from each physical functioning level, disability level and type. The Reevaluation of Medical Aid allowance range and supports for the disabled person will be enlarged to lessen economic burden of the disabled. Besides the disabled need more medical care and a huge amount of medical resources than non-disabled person. Cost-effective intervention programs for disability prevention urgently need to reduce medical care and its additional cost.

        초기 톨루엔 농도가 톨루엔-NO_(x)-공기 혼합물의 광산화 반응에 미치는 영향 : II. 입자상 물질의 생성 및 성장 II. Aerosol Formation and Growth

        An experimental investigation of the gas-phase photooxidation of toluene-NOx-air mixtures at sub-ppm concentrations has been carried out in a 6.9 ㎡, indoor smog chamber irradiated by blacklights. Measured parameters in the toluene-NO_(x) experiments included aerosol, O₃, NO, NO₂, NO_(x), CO, SO₂, toluene, and air temperature. The initial toluene concentration ranged from 225 ppb to 991 ppb and the initial concentration ratio of toluene/NOx in ppbC/ppb was in the range of 5~20. It was found that the variation of aerosol number concentration with irradiation time caused by the photooxidation of toluene-NOx-air mixtures depended on the initial toluene concentration for similar concentration ratio of toluene/NO_(x). The dependency of initial toluene concentration on the photooxidation of toluene-NO_(x)-air mixtures for toluene/NOx=5~6 seemed to be opposite to that for toluene/NO_(x)= 10~11. The maximum number concentration of aerosols formed by photooxidation and the aerosol yield depended on both initial toluene concentration and initial concentration ratio of toluene/NO_(x). In this study, the aerosol yield, defined as aerosol formed per unit toluene consumed, was found to be 0.01~0.16.
