        겨울철 자연 동결 건조에 의한 노계 육제품의 제조

        The objective of this study was to manufacture spent layer chicken meat products by natural freeze-drying. The spent layers of chickens that were slaughtered at 80 wk were obtained from a local slaughter house and separated into two halves of carcasses. The samples were divided into the following groups: 1) control (non-curing), 2) curing, and 3) curing with 2% trehalose before drying. The cured meats were placed at $2^{\circ}C$ for 7 d and then transferred to a natural drying spot located in Injae City, Gangwondo, Korea. The experiment was conducted from January to March in 2008. The average temperature, RH, and wind speed were $-1.5^{\circ}C$, 63%, and 1.8 m/sec, respectively. The cured treatments showed higher pH, lower Aw and lower shear force value compared with the control. Based on the results of TBARS (2-thiobarbituric acid reactive substances) level and volatile basic nitrogen value, lipid oxidation and protein deterioration were inhibited in curing treatments during drying. Trehalose acted as a humectant because it maintained a lower water activity despite the relatively higher moisture content during drying. The polyunsaturated fatty acids content and sensory attributes were higher in cured treatments than in the control during drying. Most of the bacterial counts in the treated groups were lower by 2 Log CFU/g after 1 mon of drying, and Salmonella spp. and Listeria spp. were not found in any treatment. There was also no microbial safety problem associated with dried meat products. Based on the results of this experiment, dried meat products could be manufactured from precured spent layer chickens by natural freeze-drying during winter.

        마늘 추출물(Garlic Extract)의 첨가가 육계 생산성, 영양소 소화율, 도체 성상 및 계육 특성에 미치는 영향

        본 연구는 마늘 추출물(GE)의 급여가 육계 생산성, 영양소 소화율, 도체 성상 및 계육 특성에 미치는 영향에 대해 조사하기 위하여 1일령 Hubbard 종 Broiler(체중 $44.72{\pm}1.76\;g$) 1,200수를 공시하여 3처리 4반복, 반복당 100수씩 완전 임의 배치하였다. 3개의 처리구는 각각 대조구, 마늘 추출물 (GE) 100 ppm, 200 ppm 첨가구로 나누어, 육계 전기(0~3주)와 육계 후기(4~5주) 총 5주 동안 사양 시험을 진행하였다. 마늘 추출물(GE) 100 ppm과 200 ppm을 사료에 첨가하여 실험한 결과 증체량과 사료 섭취량에서는 GE 100 ppm 첨가구가 대조구에 비해 높게 나타났지만 통계적 유의성은 인증되지 않았다(p>0.05). 후기의 사료 요구율은 GE 100 ppm 첨가구가 대조구에 비해 개선되었다(p<0.05). 영양소 소화율에서는 GE 100 ppm 첨가구와 GE 200 ppm 첨가구의 건물 소화율이 대조구에 비해 개선되었다(p<0.05). 산패도는 계육의 보존 기간을 늘려주는 주요한 요소인데, 마늘 추출물 급여시 계육의 산패도가 저장 8일과 12일차에 대조구에 비해 유의적으로 낮게 나타났다(p<0.05). 육색 측정에서는 가슴살의 명도, 적색도와 황색도를 조사하였는데, 명도에서 GE 200 ppm 첨가구가 대조구에 비해 높게 나타났다(p<0.05). 본 실험의 결과 육계 사료 내 GE의 첨가는 육계의 생산성에는 영향을 미치지 못한 것으로 나타났다. 그러나 계육의 보존 기간을 늘려주는 주요한 요소인 산패도와 소비자들의 기호성을 높여주는 육색(명도)을 개선시킨 것으로 볼 때 육계 사료 내 GE의 첨가는 계육의 육질 개선에 효과가 있는 것으로 판단된다. The objective of the current study was to evaluate the effects of garlic extract (GE) supplementation on growth performance, nutrient digestibility, carcass characteristics and meat composition in broilers. Dietary treatment were control (corn-soy based diet, 0 ppm), and diets added with 100 or 200 ppm GE. Starter and finisher diets were fed from 0 to 3 wk and 4 to 5 wk, respectively. Supplementation of GE had no effect on weight gain, but there was trend towards improvement in growth rate in birds fed diets containing 100 ppm GE during overall period, while birds fed 100 ppm GE had better feed efficiency (p<0.05) than birds fed control diet during finisher period. Birds fed GE had greater (p<0.05) nutrient digestibility of dry matter than birds fed control diet. The TBARS values of breast muscle obtained from birds fed 100 and 200 ppm GE were lower than breast muscle of control birds on day 8 and 12 of storage. The breast muscle of birds fed 200 ppm GE had higher (p<0.05) $L^*$ values than breast muscle of birds fed control and 100 ppm GE diets. The carcass characteristics, meat and bone composition, CIE $a^*$ and $b^*$ values did not differ among the dietary treatments. In conclusion, supplementation of GE enhanced feed efficiency and nutrient digestibility in broilers.

        희토원소 세륨과 란타늄의 첨가가 육계 생산성, 영양소 소화율, 도체 성상과 육색에 미치는 영향

        본 연구는 희토 성분인 Ce(cerium)과 La(lanthanium)의 단독 또는 혼합 급여가 실용 육계의 생산성, 영양소 소화율, 골격성분, 그리고 도체 성상과 육색에 미치는 영향을 조사하기 위하여 1일령 Hubbard종 암평아리(체중 45 g) 1,600수를 공시하여 4처리 4반복으로 반복당 100수씩 완전 임의 배치하였다. 4개 처리구는 T1, 무첨가 대조구; T2, Ce 100 ppm 첨가구; T3, La 100 ppm 첨가구; T4, Ce 100 ppm과 La 100 ppm 혼합 첨가구로 하였으며, 전기(0~3주)와 후기(4~5주)로 나누어 5주간의 사양 시험을 실시하였다. 전기의 증체량은 T4에서 다른 처리구에 비하여 다소 높았으며, 대조구에 비해서는 유의하게 높았다(p<0.05). 전체 기간에서도 T4의 증체량이 가장 높았지만 통계적 유의성은 인정되지 않았다(p>0.05). 사료 섭취량은 각 단계 및 전체기간에서 처리구간 유의적인 차이가 나타나지 않았다(p>0.05). 사료 요구율은 전기에서 T4가 T3에 비하여 개선되었으며(p<0.05), 후기에는 각 처리간에 차이가 없었지만(p>0.05) 전체기간으로 볼 때 T4가 대조구에 비하여 유의적으로 개선되었다(p<0.05.). 소화율에서 건물 소화율은 T3에서 가장 높았으며(p<0.05) T2와 T4도 대조구에 비하여 개선되었다(p<0.05). 조단백질 소화율은 T3가 가장 높았으며(p<0.05), T2에서도 대조구에 비해 개선되었다(p<0.05). 조회분, 에너지, 칼슘과 인의 소화율도 T3에서 가장 높게 나타났다(p<0.05). 뼈의 성분 분석에서 칼슘의 함량은 Ce과 La을 급여한 처리구가 대조구에 비해 높게 나타났지만 처리구간 유의적인 차이는 나타나지 않았으며(p>0.05), 도체 성상 조사와 육색의 측정에서도 처리구간 유의적인 차이는 나타나지 않았다(p>0.05). 본 연구의 결과, 육계 사료내 La의 첨가는 영양소 소화율을 뚜렷하게 개선하였다. 또한 육계 사료내 Ce과 La의 첨가는 육계의 소화율을 개선시켰으며, 육성 초기의 증체량과 사료 요구율 개선에 효과가 있는 것으로 판단된다. An experiment was conducted to investigate the effects of dietary supplementation of cerium (Ce), a rare earth, individually and in combination with lanthanium (La), a rare earth, in the basal diet on growth performance, nutrient digestibility, bone composition, breast meat composition, carcass characteristics and meat color in broiler chicks. A total of 1,600 day-old broiler chicks were randomly allotted to four dietary treatments with four replicates in a completely randomized block design. Treatments were T1) CON (control diet), T2) 100 ppm Ce, T3) 100 ppm La, T4) 100 ppm Ce+100 ppm La. There were no significant differences in feed intake among dietary treatments during the whole experimental period (0 to 5 weeks). Body weight gain for the first three weeks was greater in birds T4 than birds fed T3 diet. Feed conversion ratio (FCR) was better in birds fed T4 diet (p<0.05) than birds fed T3 diet during 0~3 weeks, and better FCR for 0~5 weeks was noticed in birds fed T4 diet than birds fed T1 diet. Nutrient digestibility was greatest in birds fed T3 diet (p<0.05) compared with other treatments. Bone composition, carcass characteristics and meat color were no statistically different among the treatments. These results suggest that Ce supplementation, alone and combination with La could improve performance of broilers.

        국내산 초유의 가공방법에 따른 품질특성 연구

        The characteristics of Holstein colostrum according to the methods that were employed in processing it were analyzed in this study to improve its industrial utilization. Colostrum samples were collected from the dairy farm of the National Institute of Animal Science (NIAS). The milk fat, protein, lactose, and SNF contents of colostrum were 4.34, 6.99, 3.37, and 11.10%, respectively. The effects of spray drying, freeze drying, freezing, acidification, and inoculation of lactic-acid bacteria on the characteristics of colostrum were then compared. The freezing of colostrum was found to be proper for long-term storage in a farm. Freeze-dried colostrum powder could not meet the processing requirements and the component standards for animal products in terms of the total bacterial and coliform bacteria counts, but spray-dried colostrum powder could meet the microbiological requirements because of its bactericidal effect during the spray-dry treatment. The inoculation of lactic-acid bacteria showed a better inhibitory effect on coliform than the acidification treatment, but protein precipitation appeared because of the low pH and the high acidity. To estimate the effects of the processing methods employed on the IgG of colostrum, the IgG contents of the milk treated by long temperature long time (LTLT) ($65^{\circ}C$, 30 min), by inoculating the lactic acid bacteria starter, by spray drying, and by freeze drying were measured. The IgG contents of the colostrum were changed significantly by the processing treatment employed, from 53.98 mg/mLto 33.28, 34.82, 21.98, and 36.89 mg/mL, respectively.

        경기지역의 착유회수에 따른 초유의 이화학적 특성

        Colostrum samples were collected from 36 dairy farms in Gyeonggi-do and one dairy farm in the National Institute of Animal Science (NIAS) for testing. Colostrum samples were analyzed for phisycochemicals (specific gravity, pH, titratable acidity), general components (fat, protein, lactose, total solid, solid non-fat (SNF)), fatty acids, amino acids, minerals, microflora, somatic cells, and Ig (Immunoglobulin). The first colostrum revealed the following data: fat contents were $6.16{\pm}2.39%$, proteins were $14.78{\pm}4.30%$, lactose $2.57{\pm}0.77%$, total solid $24.28{\pm}4.36%$, and SNF $18.12{\pm}4.08%$, whereas the 2nd (or $12^{th}$) colostrum revealed $5.56{\pm}1.76%$ fat, $3.46{\pm}0.41%$ proteins, $4.19{\pm}0.43%$ lactose, $13.90{\pm}1.76%$ total solid, and $8.34{\pm}0.81%$ SNF. Also, the first colostrum revealed the contents of major amino acids as 0.89% aspartic acid, 0.71% threonine, 0.86% serine, 1.75% glutamic acid, 0.64% valine, 0.95% leucine, 0.83% lysine, and 0.95% proline, and those in the 10th colostrum were 0.25% aspartic acid, 0.15% threonine, 0.19% serine, 0.59% glutamic acid, 0.19% valine, 0.35% leucine, 0.31% lysine, and 0.34% proine. Major amino acid contents rapidly decreased as milking times increased. In the first colostrum, the following mineral contents were observed: there were 2,168 ppm in Ca, 1,959 ppm in P, 914 ppm in K, 761 ppm in Na, 287 ppm in Mg, 1.7 ppm in Fe, 14.3 ppm in Zn, and 1.0 ppm in Cu; while in the 10th colostrum, the following ppm contents were 1,389 in Ca, 1,323 in P, 838 in K, 427 in Na, 131 in Mg, 1.0 in Fe, 4.7 in Zn, and 1.3 in Cu. The mineral contents in a colostrum rapidly decreased as milking times increased.

        D Lite의 수준별 첨가가 육계의 사양성적, 영양소 소화율, 도체성상 및 육질에 미치는 영향

        본 연구는 규산염 광물질인 D Lite의 수준별 첨가가 육계의 사양성적, 영양소 소화율, 도체성상 및 육질에 미치는 영향에 대해 조사하기 위하여 평균 체중이 40 g인 육계(Ross종, 1일령) 640수를 공시하여 4처리 4반복 반복당 40두씩 완전임의 배치하였다. 각각의 처리구는 D Lite를 첨가하지 않은 무첨가 대조구, D Lite 0.15%, 0.30% 및 0.45% 첨가구로 나누고 전기(0~21일)와 후기(21~35일)로 나누어 총 5주간 사양 시험을 실시하였다. 시험 전 기간 동안 증체량 및 D Lite 0.15% 첨가구가 다른 처리구에 비해 증체량 및 사료 섭취량이 유의적으로 높게 나타났으며(p<0.05), 0.15% 이상의 수준에서는 증체량이 감소하는 것으로 나타냈다(p<0.001). 에너지 및 칼슘 소화율은 D Lite 0.15% 첨가구가 다른 처리구에 비해 유의적으로 높게 나타났다(p<0.05). 도체성상, 장기 무게 및 가슴살 성분에서는 전처리구 간에 유의적인 차이가 나타나지 않았다(p>0.05). 그러나 가슴살 TBARS 분석에서는 저장 8일째까지 전처리구간에 유의적인 차이가 나타나지 않았으나(p>0.05), 저장 12일째 D Lite 첨가구가 대조구에 비해 유의적으로 낮게 나타냈으며(p<0.05), D Lite 첨가 수준이 증가할수록 가슴살의 산패도 억제 효과가 나타나는 것으로 관찰되었다(p<0.05). 따라서 이러한 결과를 종합해볼 때, 육계 사료 내 D Lite 0.15% 첨가는 증체량 및 영양소 소화율을 개선시키며, D Lite의 첨가는 가슴살의 산패도 억제 효과가 있는 것으로 판단된다. An experiment was conducted to investigate the effects of dietary supplementation of a silicate mineral (D Lite) on growth performance, nutrient retention, carcass characteristics and meat quality in broiler chicks. A total of 640 broiler chicks were randomly allotted to four dietary treatments in a randomized complete block design. Each treatment had four replicates comprising 40 broilers in each replicate. Dietary treatments were as follows: control (0% D Lite), and diets supplemented with 0.15%, 0.30% and 0.45% of D Lite. The starter and finisher diets were fed from d 0 to 21 and d 21 to 35, respectively. Body weight gain during starter (p<0.05), finisher (p=0.057) and overall (p<0.001) experimental period and feed intake (p<0.05) during starter period decreased quadratically with increasing dietary D Lite levels. The birds fed 0.15% D Lite showed the greatest (p<0.05) overall weight gain, feed intake and retention of gross energy and calcium. There were no differences (p>0.05) in carcass characteristics, organ weights and breast meat composition. However, as the level of D Lite was increased in the diet there was a linear decrease in the TBARS values of breast meat (p<0.05) at d 12 of storage. These results suggest that D Lite supplementation at the level of 0.15% is shown to be effective in improving performance and nutrient retention in broilers.

        가속 열 노화시험을 이용한 침매터널용 고무 씰 소재의 사용수명 예측

        This paper considers accelerated thermal degradation tests which are performed for rubber seal materials used for undersea tunnels constructed by immersion method. Three types of rubber seals are tested; rubber expansion seal, omega seal, and shock absorber hose. Main ingredient of rubber expansion seal is EPDM(Ethylene Propylene Diene Monomer) and that of both omega seal and shock absorber hose is SBR(Styrene Butadiene Rubber). The accelerated stress is temperature and an Arrhenius model is introduced to describe the relationship between the lifetime and the stress. From the accelerated degradation tests, dominant failure mode of the rubber seals is found to be the loss of elongation. The lifetime distribution and the service life of the rubber seals at use condition are estimated from the test results. The acceleration factor for three types of rubber seals are also investigated.
