자색고구마-쌀누룩으로 제조된 막걸리 발효 중 품질 특성과 항산화 효과

막걸리는 한국 전통주로 쌀로부터 알코올 함량 6-8%로 발효시킨 술이다. 누룩은 분쇄된 밀 혹은 쌀에 물을 가하고 성형하여 자연의 미생물로 번식시킨 발효제이다. 본 연구에서는 기능성이 밝혀져 있는 자색고구마를 첨가하여 쌀누룩을 제조하고 이 누룩을 이용하여 막걸리를 제조하였다. 자색고구마-쌀누룩(PSP-RN)은 PSP를 0-10%로 쌀에 첨가하여 제조하였고 막걸리 발효 과정 중 품질 특성과 항산화 효과를 확인하였다. 막걸리 발효 중 pH는 발효 초기 각각 4.27(0% PSP-RN), 4.59(2.5%), 4.50(5.0%), 4.46(7.5%) 및 4.43(10.0%)에서 발효 종기 4.12, 3.82, 3.67, 3.71 및 3.66로 감소하였다. 당도는 발효 초기 0.4°Bx에서 8.0-8.4°Bx로 증가하였고 알코올 함량은 발효 종기 13.0%(0% PSP-RN), 13.2% (2.5%) 및 12.8%(5.0-10.0%)로 증가하였다. 한편, 수용성 anthocyanin과 phenolics 함량은 발효 초기 각각 0.001-0.121 g/L와 0.2-0.27 g/L에서 발효 종기 0.002-0.166 g/L와 1.65-1.87 g/L로 증가하였고 이에 상응하여 항산화 활성은 20-50% 증가하였다. Makgeolli is the oldest Korean traditional wine made from rice, and contains 6-8% alcohol. Also, nuruk is traditionally prepared by exposing moistened ground wheat or rice to the air, and there contained airborne microorganism. In this study, purple sweet potato (PSP) was used as a raw material in the rice nuruk- and makgeolli-making processes. PSP rice nuruk (RN) was made with rice and 0-10% (w/w) PSP, and the characteristics of makgeolli were studied during fermentation. The pH during fermentation decreased from 4.27 (0% PSP-RN), 4.59 (2.5%), 4.50 (5.0%), 4.46 (7.5%), and 4.43 (10.0%) of initial fermentation day to 4.12, 3.82, 3.67, 3.71, and 3.66, respectively, at day 7. The sugar contents increased from 0.4°Bx of the initial day to 8.0-8.4°Bx, and the levels of alcohol increased to 13.0% (0% PSP-RN), 13.2% (2.5%), 12.8% (5.0, 7.5, and 10.0%) by day 7, respectively. In addition, the contents of soluble anthocyanins and phenolics increased from 0.001-0.121 and 0.2-0.27 g/L on the initial fermentation day to 0.002-0.166 and 1.65-1.87 g/L, corresponding to increases in levels of antioxidant activities of 20-50%, respectively.
Rhizopus oryzaeCCS01로 제조된 쌀누룩을 이용한 곡류 막걸리의 품질 특성

본 연구에서는 시판누룩에서 분리한 Rhizopus oryzae CCS01로 쌀누룩을 제조하고 이를 이용하여 곡류 막걸리 제조하였다. R. oryzaeCCS01로 제조한 쌀누룩은 시판누룩보다 탄수화물 함량은 높았으나, 수분 및 회분, 조단백질, 조지방 함량은 낮았고 당화력은 약 2.2배 정도 높게 나타났다. R. oryzaeCCS01로 제조된 쌀누룩으로 제조한 막걸리는 pH와 알코올 함량은 시판누룩보다 높게 나타났으나, 당도 및 산도, 젖산균수, 효모균수, 갈변도는 낮게 나타났다. 특히 쌀 누룩으로 제조한 찹쌀(GUR) 막걸리의 경우 다른 막걸리들 보다 알코올 함량이 가장 높았다. 이 결과로 R. oryzae CCS01로 제조된 쌀누룩을 이용하여 새로운 곡류 막걸리 제조가 가능할 수 있을 것으로 판단되었다. For the production of Korea traditional cereal wine makgeolli, a rice fermentation starter nurukwas Rhizopus oryazeCCS01 commercial nuruk. The carbohydrate content of rice nurukwas higher, the levels of moisture, ash, crude protein, and crude fat were lower. In particular, the saccharifying activity of rice nurukwas 2.2 times higher than commercial nuruk. pH, alcohol, and viable yeast cells of makgeollimade rice nurukwere higher than those of makegollimade commercial nuruk. In contrast, the levels of acidity, oBrix, viable lactic acid bacteria (LAB) cells, and browning of makgeollimade rice nurukwere lower than those of makgeollimade commercial nuruk, the alcohol content of glutinous rice (GUR) makgeollimade rice nurukhigher other samples. These results suggest that rice nuruk R. oryzae CCS01 make new type cereal makgeolli.
Tunnel-type β-FeOOH cathode material for high rate sodium storage via a new conversion reaction

<P><B>Abstract</B></P> <P>We have investigated a tunnel-type β-FeOOH cathode material for rapid sodium storage. Rietveld refinement of the X-ray diffraction (XRD) data obtained for β-FeOOH indicated that the structure was stabilized into [2 × 2] hollandite tunnel structure, and the adhesion of the β-FeOOH onto carbon nanotubes (CNTs) led to a high electrical conductivity of 3Scm<SUP>−1</SUP>. As a result, the β-FeOOH/CNTs composite electrode showed excellent electrode performance, with a discharge capacity of 205 mAh g<SUP>−1</SUP> and a coulombic efficiency of 88.5% in the voltage range of 1.1–4V during the first cycle, 131 mAh g<SUP>−1</SUP> after 200 cycles, and a capacity retention of 70% over 300 cycles at 10C (1920mAg<SUP>−1</SUP>). Based on the XRD, X-ray absorption, and time-of-flight secondary-ion mass spectroscopy results, we suggest a new conversion mechanism for the β-FeOOH cathode material in Na cells, namely, FeOOH + Na<SUP>+</SUP> + e<SUP>-</SUP> → FeO + NaOH. This conversion reaction produces NaOH as a byproduct, and the reaction is fairly reversible even at 10 C-rates.</P> <P><B>Highlights</B></P> <P> <UL> <LI> β-FeOOH/CNTs composite is suggested as an cathode material for Na-ion batteries. </LI> <LI> β-FeOOH/CNTs composite is activated by a new conversion reaction via Fe<SUP>3+/2+</SUP> redox. </LI> <LI> β-FeOOH/CNTs composite shows a high electric conductivity, 3Scm<SUP>−1</SUP>. </LI> <LI> β-FeOOH/CNTs composite is fairly reversible at high rates for a long term. </LI> </UL> </P> <P><B>Graphical abstract</B></P> <P>We report on tunnel type β-FeOOH nano-stick particles embedded in carbon nanotubes. <P>We report the first case of a 62‐year‐old man with a sclerosing pneumocytoma (SP) combined with a typical carcinoid (TC) and pulmonary adenocarcinoma in different lung lobes. Computed tomography revealed two nodules. The radiological diagnosis was primary lung cancer and a metastatic nodule; however, no enlarged lymph nodes were observed. Histological and immunohistochemical analyses defined the 1.7 cm nodule in the right upper lobe as adenocarcinoma and the 1.3 cm nodule in the left lower lobe as SP combined with TC. This case is noteworthy because of the rarity of SP combined with TC, the comprehensive examination of frozen and permanent sections, and the clinical implications of the differential diagnosis of lung nodules.</P>
